For cooking you will need the following ingredients:

Wheat or pearl barley in a volume of 2 cups;
whiskey or cognac - a tablespoon;
nuts (hazelnuts, walnuts, almonds, pistachios) - half a glass;
poppy - 1 glass;
dried fruits (dates, cranberries, dried apricots, raisins, etc.) - 150 grams;
liquid honey - half a glass;
ghee - 3 tablespoons.

The recipe is as follows:

1. Soak barley or wheat for several hours, or better overnight. Then put the cereal in cold water (1 glass of porridge - 2, 5 glasses of water) and simmer under a lid. Ready porridge leave to "rest" under the lid for 15 minutes.
2. While the groats are being prepared, fill the poppy with boiling water for half an hour. Pound the steamed seeds in a mortar - the so-called "poppy milk" should stand out.
3. Simultaneously with the poppy seeds, soak in hot water all dried fruits. After steaming, cut them into small cubes.
4. Crush the nuts to a medium crumb.
5. Mix the cooled porridge with nuts and dried fruits, season with warm liquid honey and poppy milk with seeds.
6. 10 minutes before serving, add butter and brandy to the kutya, stir.

Vereshchak

Traditional recipe for the main meat dishpork ribs.




For the vereshchaka, take the following ingredients:

Fresh (not frozen) pork ribs - half a kilo;
lard or cracklings - 50 g;
onion - 2 medium heads;
carrots - 2 medium;
city \u200b\u200broll - 1 small;
garden greens;
spices (coriander, salt, pepper mix, rosemary and cilantro, turmeric, mustard seeds, etc.);
beets - half a kilo.

How to cook vereshchaka
1. The recipe involves the preparation of a traditional beet kvass, which will take you up to 5 days. Pour grated or finely chopped beets with a liter cold water and leave warm until sourness appears.
2. On the day of the Old New Year, marinate the ribs with spices for 2 hours.
3. Place the marinated ribs in a deep hot skillet (for example, a rooster) and fry until crisp.
4. Pour half a liter of beet kvass into the finished ribs and send the dish to the oven for half an hour.
5. Cut the loaf into cubes and add to the stewed ribs for 5 minutes.
6. Meanwhile, sauté grated carrots and chopped onions in a pan with bacon. Add the resulting fry to the main dish and simmer for another 10 minutes.
7. Sprinkle the finished heather with fresh herbs and distribute in portions in a deep bowl.

Lard snack

A cold appetizer table should be arranged before serving hot meals. Traditionally, jellied meat and simple snack with lard for vodka and borschik.




For its preparation, there are always products in the house:

Rye or bran bread;
garlic - to taste, but not less than 2-3 cloves;
home-milled black pepper (ground store does not give the desired aroma);
spices (curry, ground nutmeg, spices);
lard, preferably without a slot.

The secrets of this simple dish
1. To obtain perfect filling the ingredients must be scrolled in a meat grinder. To do this, take frozen lard (by no means soft) and peeled garlic cloves.
2. Add salt, spices and pepper to the resulting minced meat, mix well.
3. Leave the mixture to infuse for several hours, then spread on bread and sprinkle with fresh herbs.

Jellied meat "Assorti" without gelatin

Along with the appetizer, a rich generous jellied meat prepared from 3 types of meat is served on the table. The denser the dish is, the more successful the year will be for the owners. Keep in mind that in the old days they did not know gelatin, so the dish should freeze on its own.




For cooking rich jellied meat do not skimp on ingredients:
beef or pork shank - 1 PC.;
turkey, pork and veal fillets - half a kilo each;
garlic - 2 heads;
egg - 2-3 pcs.;
fresh herbs from the garden with twigs;
carrot - one;
onion - 2-3 heads;
laurel leaf - 4-5 pcs.;
peas - 7 pcs.;
salt to taste.

Cooking jellied meat takes a lot of time, so free the day before the holiday.

1. Rinse all meat thoroughly. Send the shaft to a large pot (from 4 liters) and fill cold water... Boil until noisy appears, then drain and add new water. Cook over low heat for at least 5 hours, remembering to remove noise.
2. Add meat to broth and cook for another 1.5 hours. Remove foam and noise in a timely manner.
3. While the broth is boiling, peel the onions and carrots, coarsely chop the last.
4. Add vegetables to broth. Rinse the greens, tie with a thread and send to the vegetables. Also add peppercorns, laurel leaf. The broth with vegetables should boil for half an hour.
5. Boil and peel eggs, cut lengthwise into rings to preserve the pattern. Peel and chop the garlic.
6. Ready broth salt and cool, then strain well.
7. Separate the meat from the bones, disassemble into fibers. Cut the carrots into rings.
8. Arrange the meat, carrots and garlic in the pots, add 2 thin rings of boiled egg to each. The broth is poured in volume to cover the meat by at least 2 fingers.
9. Cool the finished jellied meat to room temperature, then send it to the refrigerator to freeze for at least a day.

Dumplings with potatoes

Not a single New Year's holiday could do without molding and cooking dumplings. Each family prepared the dish differently and with various fillingsbut classic recipe dumplings with potatoes and fried are considered.

For cooking, you traditionally need:

Egg - 2 pieces;
onion - 2 heads;
flour - a pound;
lard with a slot - 200 grams;
vegetable and butter oil - 2 tablespoons each;
homemade salt and pepper to taste;
potatoes - half a kilo.

Making holiday dumplings is not at all difficult.

1. Sift flour twice. Pour in 250 ml of warm water, beat in eggs, salt. Knead the dough and pour in vegetable oil... Knead the dough again until tight, then wrap with cling film and leave warm for 30 minutes.
2. Boil potatoes in salted water. Mash on potato water (you can add milk or butter), pepper.
3. Roll out the rested dough thinly and squeeze out circles with a glass. Put the filling in the middle of each (a tablespoon without a slide), then close the edges tightly.
4. Dumplings should be boiled in lightly salted boiling water. Once they come up, cook for about 7 minutes.
5. Meanwhile, sauté in a frying pan finely chopped onion and bacon until caramelized.
6. Before serving, garnish the dumplings with crispy frying, fresh herbs and generously top with melted butter. It is good to serve homemade sour cream with dumplings.

Krucheniki

Old-style New Year celebration was not complete without hot snack - kruchenikov with buckwheat and mushrooms. Such delicious recipe lost among the recipes european salads and steaks, but in vain, because our ancestors were famous for rich cuisine with very hearty dishes.




The recipe will require the following ingredients from you:

Veal fillet - up to a kilogram;
sour cream - 150 g;
flour - 1 large spoon;
butter - 2 tablespoons;

buckwheat grain - 6 tablespoons;
dried forest mushrooms - 4-5 tablespoons;
onions and carrots - 1 each;
garden greens;
spices (laurel leaf, salt and pepper, other seasonings to taste).

1. Steam dry mushrooms in boiling water (do not drain the water), then chop finely.
2. Chop and fry half the onion.
3. Boil the buckwheat and egg.
4. Mix porridge with chopped mushrooms, fried onions and finely chopped egg.

6. Fry the croutons in lard or butter until golden brown, then transfer to a saucepan. Pour mushroom water there, add laurel leaf and spices, the second half of the onion, chopped carrots. Simmer until tender (about 40-60 minutes).
7. From the saucepan, add the twists and remove the thread.
8. In a saucepan with the remaining juice add flour and butter, sour cream, boil until smooth.
9. Ready-made krucheniks are traditionally served with sour cream sauce and garnished with fried potatoes.

Uzvar with cherries and raisins

Like the generous kutia, uzvar is traditional dish on Old New Year and must be rich to bring happiness to the family and visiting guests.




To prepare a real hearty uzvar, take the following products:

Dried fruits (apple, apricot, plum, pear) - 100 g each;
raisins - also 100 g;
cherries (dry or frozen) - 100 g;
sugar - half a glass;
cinnamon stick and star anise (as needed).

It is not difficult to prepare a festive uzvar.

1. Wash all dried fruits and raisins well, soak in water for 15 minutes.
2.In three-liter saucepan boil water, add all dried fruits and cherries. After boiling, reduce heat and cook the uzvar under the lid for 20 minutes.
3. Add sugar and stir five minutes before the drink is ready.
4. The finished uzvar must be infused (traditionally at least 12 hours). Strain the drink and add a cinnamon stick and a couple of star anise stars to the decanter before serving. These oriental seasonings will decorate the drink and give it a delicate spicy aroma.

Ingredients:
400 g pork ribs;
200 g white bread,
50 g lard
2 medium onions;

Recipe for dumplings with potatoes and cracklings:

1. Sift flour. Add warm water, eggs, oil and salt. Stir in a tough, uniform dough. Cover the dough with cling film and leave in a warm place for half an hour.

2. While the dough is "resting", boil the potatoes. Make a puree and add a creamy mass or warm milk (optional). Also add salt to the filling, but keep in mind that the dough is also salty.

3. Roll out the dough and cut out small circles. This can be done with a regular glass. Place a spoonful of filling on each circle and form into dumplings. The amount of filling depends on the size of the dumpling.

Homemade sausage is very satisfying and delicious food... This sausage is well preserved, especially if the finished sausage is placed in a ceramic pot and filled with melted lard. For the holiday, the sausage needs to be cooked the day before, and you need to fry it before serving - it will be tastier this way.

Ingredients:
2-2.5 kg pork (neck, shoulder, back)
500-700 g lard without meat veins;
1 head of garlic;
pork small intestines;
salt, ground black pepper, dry herbs (basil, thyme, oregano), ground coriander.

1. Pork small intestines should be washed very thoroughly. Turn the intestines inside out and rinse again. It will not be superfluous to scrape out the intestines with the back of the knife, remove mucus from the intestines.

2. Pork meat can be used on any part of the carcass. Considering that homemade sausage is made with lard, the fat content of the meat does not matter. Neck, shoulder blade, back part are perfect. 3. Peel the lard. Set aside 100 grams of lard. Cut the rest into the same pieces as the meat. The ratio of meat and lard is approximately 1: 6. If the meat is fat, then less fat is needed and vice versa.

4. In a large bowl, combine chopped meat and lard. Season with salt and pepper. Add dry fragrant greens: basil, oregano and thyme. Add ground coriander to taste. Stir the meat very thoroughly. Add chopped head of garlic to the minced meat to make the sausage more flavorful.

5. Prepared intestines need to be filled already minced meat... For this, meat grinders have a special nozzle in the form of a tube. The intestine must be put on the nozzle, and the tip must be tied with cotton thread. It is not necessary to fill the intestine very tightly so that it does not burst during cooking or frying. If there is a hole in the gut, then you need to divide it into smaller sausages.

6. The stuffed sausage should stand in the refrigerator for at least 5 hours, and preferably all night. After that, roll the sausage into rings, so it is easier to cook and fry. Pierce the sausage with a toothpick in several places, the excess air will come out. Boil the sausage in boiling water for 5-7 minutes. It's best to use a large saucepan for this. Let the sausage cool.

350 g lard
100 g of meat;
3 onions;
200 g milk
1 bay leaf;

500 g lean pork;
2 onions;

Jellied meat recipe for the Old New Year:

1. Pour the beef shank with cold water, bring to a boil, reduce heat and cook for another 5 hours. Remember to skim off the lather. Add remaining meat (beef and pork) and cook for another hour and a half.

2. Wash, peel and coarsely chop the carrots and onions. Add to broth. Also put there a bundle of herbs tied with thread, bay leaf and pepper and cook for another half hour. Season the broth with salt and strain.

3. Remove the meat from the bones and chop finely enough. Squeeze the peeled cloves of garlic over the meat.

4. Divide the meat into molds. Pour the broth so that the meat is below the surface (about two fingers). Leave to cool at room temperature, and then place the molds in the refrigerator until the jelly hardens.

Pork rolls and mushrooms
