Excellent aromatic homemade puff pastry with an incomparable filling of fried mushrooms and onions. What could be tastier? Puffs with mushrooms and onions it is very simple to cook, and most importantly, they turn out beautiful and look very appetizing, that you certainly want to try them as soon as possible.

    Products composition:
  • Ready-made puff pastry - 500 g,
  • Champignons - 400 g,
  • Onions - 1 head,
  • Chicken egg - 1 pc.,
  • Spicy herbs - 1 tsp. Spoon,
  • Salt and black pepper to taste
  • Vegetable oil - 2-3 tbsp. spoons.

Cooking time: 40 minutes.

Before placing the baked goods in the oven, be sure to grease with egg yolk for ruddy, and add a mix of herbs for aroma.

Pre-defrost the finished puff pastry, about 40-50 minutes before baking. Peel the mushrooms, rinse in cold water and cut into small pieces.

Heat the oil in a skillet and fry the chopped mushrooms over low heat until they noticeably soften, about 6-8 minutes.

Peel the onion head, first divide it in half, cut into half rings, and then half rings into small cubes.

Place the onion in a pan with the mushrooms, add a small amount of salt, a variety of herbs and ground black pepper. Stir and continue sautéing the mushroom puff filling over medium heat until the moisture evaporates. After that, turn off the stove and let the roast cool slightly.

In the meantime, divide the dough into even 2 pieces and roll each piece as thinly as possible.

After rolling out the dough, divide it into 2 long rectangular pieces, put the mushroom filling on one half, and make cuts on the other half.

Pull the empty half of the dough for the filling, fasten the edges of the product with your fingers and cut the dough along the edge with a special curly knife. Do the same for the second half of the dough.

Place the onion and mushroom puffs on a greased baking sheet, brush the surface with egg yolk and transfer the baking sheet to the preheated oven. Bake the puff pastry pies at 200 degrees - 20-30 minutes, until the surface of the homemade baked goods is lightly browned.

When the fragrant puff is ready, transfer the sheet with pastries from the oven, let cool for a short time and serve with sour cream for breakfast, lunch or dinner.

In many families, puff pastry is very popular. And this is not surprising, because you can make many delicious desserts from puff pastry: pastries, cakes, pizza, pies, pies, cookies ...

Today I propose to make puff pastry pies with mushrooms. Time for cooking will take nothing at all, and as a result, on the table are ruddy appetizing puff pastries with mushrooms.

Let's prepare products according to the list.

Mushrooms for the filling can be taken fresh or frozen. Defrost frozen mushrooms in advance. Boil fresh forest mushrooms for 10-15 minutes.

Finely chop the mushrooms and fry in a preheated pan until the liquid evaporates, about 4-5 minutes.

Add the onion chopped into a small cube. Fry over low heat until the onion is soft, about 4-5 minutes.

Salt and pepper to taste. Add finely chopped herbs and sour cream, stir. Warm up over low heat for 1-2 minutes, stirring occasionally. Remove from heat and cool.

Defrost the finished puff pastry.

Sprinkle a little flour on the working surface. Roll out a layer of puff pastry to a thickness of 2 mm, about 40 by 20 cm in size. Then we cut it into 4 identical rectangles.

We grease each workpiece along the edges with protein. Put 1 tablespoon on one side. mushroom filling and cover with the other side.

With a fork, press the edges of the workpiece well. Pies can be "fastened" with a fork from one edge, as in the photo on the left, or on three sides, as in the photo on the right.

We make pies from the remaining layer of dough in the same way.

Pour a little water or milk to the yolk, mix and grease the surface of the pies. Sprinkle sesame seeds on top, if desired. On the pies, "fastened" on 3 sides, we make several punctures with a fork to release the steam.

We put a baking sheet in an oven preheated to 200 degrees and bake until golden brown.

Puff pastry pies with mushrooms are ready. Now is the time to drink tea with delicious puff pastries with mushroom filling.

Step 1: Prepare the mushrooms.

Fresh mushrooms should be soaked for 40 minutes - 1 hour in cold water. Then rinse them, clean if necessary, and rinse again, then dry them with a towel. Chop the mushrooms finely or coarsely, as you like (the smaller you cut, the faster they will fry). Pour sunflower oil into a hot frying pan, heat a little of it and put the prepared mushrooms on the brazier. They need to be fried almost until tender ( 10 minutes).

Step 2: Fry the mushrooms with onions and cream.

Peel the onion, rinse and chop very finely. When the mushrooms are almost ready and when the liquid has evaporated, add the onions to the pan. Stir all this well, cover and cook for a few more minutes, until the onions are tender. Add cream to the resulting mass, stir well again with a wooden spatula and simmer covered for 10 minutes... Wash the egg, break it into an egg separator installed on a glass, separate the yolk from the white.

Step 3: Add cheese and herbs to the mushrooms.

Grate the cheese on a fine or coarse grater, rinse the parsley in cold running water, then pour over hot water heated in a kettle, this will give the parsley a bright green color and rich aroma. Chop the herbs very finely with a sharp knife. Add cheese, salt, pepper to mushrooms with cream and wait until all the liquid has evaporated. Then add the chopped greens there and stir, turn off the heat and cover.

Step 4: Cut the puff pastry into squares and form puffs.

To save time, I cooked from pre-prepared puff pastry. The recipe for its preparation is quite simple. And if you have time, why not cook it yourself ?! Spread the finished layer of dough on the table, roll it out a little with a rolling pin, if necessary, cut it into squares about 6X6 cm in size.One tablespoon of the filling must be placed on each square. Fill the dough squares with filling in the form of triangles, as shown in the photo.

Step 5: Bake the puffs.

Place the baking sheet in the refrigerator for a few minutes, preheat the oven to 180 degrees, grease the baking sheet with a piece of vegetable oil or put baking paper on it. Put the puffs on a baking sheet, brush them with protein using a brush and sprinkle with sesame seeds. You need to bake them at least 20 - 25 minutes.

Step 6: Serve the mushroom puffs.

Puffs with mushrooms are served not only for breakfast, but also as a second course for lunch, or for dessert. Place the puffs on a flat dish or in a towel-lined basket. Puffs with mushrooms will be an excellent snack for alcoholic beverages, as they are very hearty and high in calories. Enjoy your meal!

If the filling turned out to be more than the dough, it can be served as a side dish for fish, meat or other dish.

You may not need to sprinkle the puffs with sesame seeds or sprinkle them with caraway seeds instead.

It is better, of course, to prepare puff pastry yourself. To do this, you need 2 glasses of flour, a pack of butter,? glasses of boiled water and? a teaspoon of salt. All this needs to be mixed, then kneaded, rolled out and placed in the refrigerator for a while.

So, to make puff pastries with mushrooms, we need:

Puff pastry - 500 grams (2 sheets per pack)

Mushrooms - 450 grams

One large onion

Milk - 0.5 cups

Cheese - 100 grams (I have Tilsiter, but I think you can experiment with other types, the main condition is the ability to melt)

Egg yolk for coating

Flour for bedding

First you need to cook the mushrooms. I only had frozen forest mushrooms. In my rating, these mushrooms are in third place after porcini and limbs, for their amazing taste and awesome mushroom aroma. Many mushroom pickers leave the forest mushroom unattended, perhaps because it looks like a toadstool, but if you know how to distinguish edible mushrooms from its poisonous congeners, you can pick up a whole basket from one meadow, as they grow in rather large families. There is only one condition, when processing forest mushrooms, it is necessary to remove the skin from the cap, then you can do anything with them - fry, stew, boil, freeze and, of course, make puff pastries with mushrooms.

My mushrooms are already peeled, so I gave them the opportunity to thaw a little and added to the onions fried in vegetable oil, diced. Now you need to stew the mushrooms with onions until the liquid evaporates. Then salt, pepper and pour in milk. Then we simmer for some time until the mushroom mass is obtained, in consistency suitable for filling pies.


On a table sprinkled with flour, you need to roll out the defrosted dough in a square, 0.5 - 0.7 centimeters thick, cut into four strips. Cut each strip, in turn, into four squares, and cut each square diagonally.



Put 1/4 teaspoon of mushrooms in the middle of each triangle (somewhere you can do more, it all depends on the size of the dough piece).

On the mushrooms we put cheese, cut into squares, 0.5 centimeters thick. The corners of the cheese squares are directed to the sides of the dough triangles.

We form pies, as shown in the photo. Be sure to make "tails", so the pie will not lose its shape when baking, and these “tails” look pretty pretty - the pie becomes like, either like a bird, or like a kite.

You can try a different shape. But here you need to grease the corners with a yolk talker (see about it below), otherwise the shape will not be preserved during baking.




Add a tablespoon of water to the egg yolk, shake and coat our pies with this talker, put them on a dry baking sheet and place in a preheated oven. The oven temperature should be 180 degrees.


After 20 minutes, we take out our wonderful ones and take a sample.

Roll out the dough over the surface into a thin crust and grease with butter, which must first be melted.

Fold the layer three times and roll thinly again. Repeat the process 3 more times and you can start cooking.

Puff pastry for pies

You can also bake a delicious mushroom pie from yeast-free puff pastry. To do this, we suggest that you familiarize yourself with the recipe for making the dough.

  • Butter (chilled) - 380 g;
  • Flour - 0.5 kg;
  • Salt - a couple of pinches;
  • Eggs - 1 pc.;
  • Cold boiled water - 230 ml;
  • Vinegar 6% - 2 tsp

I must say that in this version the dough is made very quickly and easily.

Combine egg, vinegar and salt in water, beat lightly with a fork.

Sift flour onto the prepared surface and rub ¼ part of the oil. Mix with flour, grate oil again and stir again without pressing down. In this case, make sure that the butter does not melt.

Pour water in portions and collect the dough, but you do not need to knead it. Try not to melt the butter, but to remain in pieces, for this, hold it in the freezer first.

Collect the dough, put in a bag and send to the refrigerator for 1 hour. Then take out the mass, knead and return to the refrigerator for another hour.

The classic recipe for puff pastry with mushrooms and onions

According to the classic recipe, a puff pie with mushrooms and onions is prepared. The last ingredient adds a special flavor and richness to the dish.

  • Puff pastry - 0.5 kg;

  • Onion - 1 large head;
  • Vegetable oil;
  • Salt, spices.

As for puff pastry, you can choose one of the two options above, or use your favorite recipe.

Puff pastry with forest mushrooms is quite simple to prepare, however, there are some nuances in the preparation of the filling. So, any forest fruit bodies must be boiled in salt water for 20 minutes in advance.

  • Puff pastry - 0.5 kg;
  • Forest mushrooms - 0.5 kg;
  • Olive or vegetable oil;
  • Green onion - 10 feathers;
  • Salt pepper;
  • Egg - 1 pc.;
  • Garlic - 1 wedge.

It is worth noting that you can make a pie with mushrooms from ready-made puff pastry, which is freely sold in supermarkets or convenience stores.

We remove the liquid from the boiled mushrooms to the maximum, you can even crush them a little with your hands.
