Cut herring fillets into strips approximately 1 cm wide.
Cut the onion into thin rings and marinate for 5 minutes in 3% vinegar mixed with sugar.
Boil beets, potatoes and carrots, cool, peel and grate separately from each other. Leave two boiled carrots to decorate the salad with a New Year's dial.
Wash the apples, peel, core and grate.
Boil eggs, grate 3 eggs on a coarse grater.
Lay out the food in layers:
1 layer - pieces of herring
2nd layer - pickled onions
3 layer - greens
4th layer - beets
5 layer - mayonnaise
6 layer - sliced ​​cucumbers
7 layer - grated carrots
8 layer - apples
9 layer - cheese
10 layer - potatoes
11 layer - mayonnaise
12th layer - grated eggs (this is the layer of "snow")
Put the dial out of 12 halves of hard-boiled eggs, and the hands and numbers from the boiled carrots.
Decorate the dish with cranberries and finely chopped herbs.

Candle salad

Ingredients :
boiled potatoes - 2 pcs.

Boil the potatoes in their uniforms, peel, rub on a coarse grater, add a little salt and put on a plate in the form of a salad - see the photo on the left.
Brush with mayonnaise on top.

Put a layer of minced meat, previously fried in oil, along with finely chopped onions.
Brush lightly with mayonnaise.
Sprinkle with grated egg whites. (Leave one white and half of the yolk for salad dressing.)

We make a "wick" of a candle from a strip cut from a prune. Ingredients :
300 g dry-cured sausage,

200 g cheese
250 g mayonnaise
1 red bell pepper
1 yellow bell pepper

salt to taste.

Put the salad in layers on a flat dish, coat each layer with mayonnaise:
- crackers,
- diced sausage,
- diced tomato,
- diced cucumber,
- 1/2 each red and yellow pepper, diced,
- grated cheese.
We make the markup and start decorating, as shown in the photo: we make candles, a bow and a rim from the remaining halves of peppers, lay out the herbs.

Christmas wreath salad


Ingredients :
1 can (200 g) tuna
2 boiled carrots,
3 boiled potatoes
1 fresh cucumber
2 eggs,
mayonnaise,
For decoration:
green onions,
Cherry tomatoes,
strips of white radish.

On a round plate, place a smaller jar or cup in the center.
Lay out the layers around the jar:
1 potato,
tuna,
mayonnaise (light mesh),
carrot,
eggs,
cucumber,
remaining potatoes.
Coat with mayonnaise and garnish with finely chopped green onions, cherry tomatoes and strips of white radish or daikon radish (see photo).

New Year's salad "Wreath"


Ingredients
chicken breast - 700 g or chicken fillet - 600 g
onions - 2 pcs.
boiled eggs - 4 pcs.
bulgarian pepper - 2 pcs.
mayonnaise - 250 g
vegetable oil - 2 tbsp. l.
salt
For decoration:
parsley - 2 bunches
olives
red bell pepper
boiled carrots

On a large dish or plate, place the sides from a split form (for example, with a diameter of 20 cm). Place a round jar in the center, filled with water for stability, about 8 cm in diameter.
Boil the chicken until tender (within 30-40 minutes after boiling), cool, cut into cubes and place on a dish around the central jar, forming a ring. Brush with mayonnaise.
Wash the peppers, core them and bake in a hot oven for 15-20 minutes. Put the baked peppers in foil, wrap them carefully and hold for about 5 minutes, then peel the peppers. Cut the pulp into medium-sized cubes, place on the chicken.
Cut the onion into cubes and fry in vegetable oil until golden brown, salt. Cool the onion and put on top of the pepper. Brush with mayonnaise.
Boil eggs hard-boiled, cool, grate on a coarse grater.
Carefully remove the sides of the split form, remove the jar from the middle.
Drizzle with mayonnaise and coat the sides and top of the salad "wreath".
Tear off the leaves from the dill sprigs and place them tightly on the sides, in the middle and on top of the "Wreath".
Peel the carrots, cut into thin long strips and arrange them in a ribbon. Decorate the carrot ribbons with droplets or a pattern of mayonnaise.
Cut circles out of the pepper and randomly arrange them along with the olives on a wreath.
Chill the salad in the refrigerator and serve with New Year's or Christmas table

"Rainbow" salad


Put the salad on a dish in an arc, decorate on top with strips of coarsely grated sweet peppers, carrots, yolk, chopped herbs, protein and beets.
1st layer - diced bell peppers

3rd layer - boiled chicken fillet, diced
4th layer - boiled eggs, grated on a coarse grater

Shape any suitable salad or pâté (including cottage cheese) into a cone shape. Cover on all sides with a layer of grated processed cheese mixed with sour cream or mayonnaise.

You can take rosemary or pine twigs as decorative greenery.

New Year's mask salad


An original layered salad in the form of a masquerade mask.
The set of products is simple, but thanks to the nuts and cheese, the salad turns out to be hearty.
In the form of such a "MASK" you can also make everyone's favorite "herring under a fur coat" or salad "Olivier", or pate.

Ingredients :
1 boiled chicken breast (finely chopped)
100 g cheese (finely grated)
1 medium-sized boiled carrot (finely grated)
1 medium boiled beetroot (finely grated)
For refueling:
200 g thick mayonnaise
2 tbsp. l. chopped walnuts
2 cloves of garlic (skip through a press or chop very finely with a knife)
salt, pepper to taste
For decoration:
pomegranate seeds
parsley
Dill

Put 2 piles on an oval dish and lay them around them in layers:

Omelette snack cake
"Snow Champion"


Ingredients :
chicken egg (10 pcs. - for omelet, 1 hard-boiled egg - for decoration) - 11 pcs.
wheat flour - 4 tsp.
cream - 4 tbsp. l.
hard cheese (200 g - for cream, 4 tbsp. l. - for omelet)
sauce (tomato) - 3 tbsp. l.
salt
mayonnaise - 4-5 tbsp. l.
garlic - 3 cloves
greens - 2 tbsp. l.
frozen spinach - 80 g
bitter red pepper - to taste
pitted olives - 40 g
boiled carrots - 1 pc.
boiled beets - 1 pc.
cloves to taste
green radish - 1 piece

First, prepare 4 omelettes of different colors. Colors in the order of stacking in the cake from bottom to top: red-orange, yellow, green, white.

The top omelette of the snack cake will be white.
Separate the whites of 4 eggs from the yolks. Set aside the yolks, they will be used for the yellow omelet. Beat the whites into a foam, while continuing to beat, add 1 tbsp. l. grated cheese, 1 tbsp. l. cream, 1 tsp. flour, salt.
At the end of whipping, put the olives cut into circles.

Bake a white omelet in a skillet, covered, until tender.
We set aside to cool.

Cooking a yellow omelet.
Beat 4 eggs separated earlier yolks, add 1 tsp. flour, 1 tbsp. l. cream, 1 tbsp. l. grated cheese, salt.
Beat the mixture again.

Bake the yellow omelet in a skillet, covered, until tender.
We set aside to cool.

Cooking a green omelet.
Add 1 tsp to three eggs. flour, 1 tbsp. l. cream, 1 tbsp. l. grated cheese and spinach, salt, beat.

Bake a green omelet in a skillet under the lid until tender.
We set aside to cool.

Cooking a red-orange omelet.
Add 1 tsp to three eggs. flour, 1 tbsp. l. cream, 1 tbsp. l. grated cheese, ground red pepper (bitter, to taste) and 3 tbsp. tomato sauce.
Beat and bake in a skillet under the lid.
We set aside to cool.

Preparing the cream for the layer.
Rub the cream cheese on a fine grater, chop the garlic and add mayonnaise. Mix everything thoroughly.
Add crushed greens to 2/3 of the cream - with this cream we will sandwich the omelets.
Leave 1/3 white (no greens) to coat the cake on top.

We collect the cake.
Put the red-orange omelet on the dish. Lubricate the top with green cream.
Then put in a yellow omelet and grease with green cream again.
Next, lay out the green omelet, grease with green cream.
Put a white omelet on top.
Cover the top and sides of the cake with white cream.

Decorating the cake.
Separate the white and yolk of 1 hard-boiled egg. Three apart on a fine grater.
From grated yolk we form the base of a snowman figurine.

Put the grated protein on top of the figurine.

We rub the boiled carrots on a fine grater, form a cap, a scarf, mittens and boots for a snowman from it.

We rub the boiled beets on a fine grater, make skis and a mouth out of it.
We make eyes from a carnation.
Cut the nose out of boiled carrots.

PAPILLOTS(fr. papillote - paper wrapper). Used in the restaurant kitchen, paper tubes with various cutouts and scallops, with the help of which they hide the ends of the bones of animals or poultry protruding from the meat. The papillotes also play the role of a handle, by which you can hold the portion without smearing your hands on the fat, and make it easier to divide the portion into smaller pieces.
Papillotes first appeared in the 19th century in French restaurant cuisine, from where they quickly spread to many cuisines of the world, incl. and into Russian restaurant cuisine. Papillots were especially widely used in Soviet restaurants and in the communist Kremlin cuisine.

To decorate fried game, cutlets and chops with bone, hams on the bone, paper papillots and rosettes are used.
For papillotes, a sheet of paper is folded three times in length, then the edge of the paper is folded with a width of 1-1.25 cm and strips are evenly cut across the entire width of the paper with a sharp knife or scissors. The paper is cut into 4 strips, wrapped on a round stick, giving the appearance of a flower, and its ends are folded.
To make a rosette, paper with a size of 12:12 cm is folded in 4 layers (in half and again in half), cut obliquely and corrugated using a thin cloth. Then cut off the sharp tip of the rosette, unfold the rosette and put it on the papillote and on the bone (see below).

"... I have never written about how to cook fish in papillotes. Papillote, dear dull-headed, in cooking is a twisted cut piece of paper that is usually put on the bones of cutlets or fried poultry. Well, except that Gedrius managed to cook catfish in a papillote. his lady who was screwed into her hair. "

The scheme for making the simplest papillote:

1. The paper should not be very thin — printer paper is best.
2. Take heavy white paper and cut a strip about 8 cm long and 4 cm wide.
3. Fold the strip in the middle along the length.
4. Cut the folded paper along the fold with scissors into even notches - you get something like a fringe.
5. With cut paper in a spiral wrap a round stick, the diameter of which coincides with the diameter of the bone.
6. Glue the end of the paper strip with food glue made of boiled starch or flour, or gelatin, or attach with tape.
NOTE. Although recently, for simplicity, papillotes are often glued together with tape, but it must be admitted that scotch tape does not agree well with edible products, therefore food glue made of flour or starch, or gelatin is always more preferable.
7. Trim the bottom of the cuff with scissors.

It's good that the chefs have come up with another way - to decorate with herbs a variety of dishes, including salads, soups and desserts. As a result, we get an aesthetic and healthy dish. It is not necessary to be a master of table decoration. It is enough to put the cutlets on terry lettuce leaves - this will already be attractive. For other ways of decorating, you will have to learn and spend some time with a magazine in your hands. And then handling any greenery will become a habit, and your table will become a work of art.

What should be the greens

Before experimenting, you need to pick the freshest greens. Dried parsley and yellow dill are more likely to make the salad unattractive, and all efforts will be in vain. You will not get any pleasure from such food. So, the most common way to give food a livelier and more vibrant look is to sprinkle it with finely chopped herbs. It's simple, fast, effective. One has only to take into account that the greens should be finely chopped - without pieces of stems or stubs of leaves. If you decide to decorate the dish with leaves or twigs, they must remain intact. Otherwise, all products for decoration need to be cut finely.

We decorate with twigs

Even the usual onions and parsley can become actors in filling the aesthetic qualities of a dish, if you use them skillfully. If you don't want to constantly chop the herbs, try splitting the dill into small twigs for us and sprinkle them on a large plate. The result is the basis for many dishes: here you can put just halves of eggs sprinkled with mayonnaise, sand baskets with salad, stuffed tomatoes and much more. This is already enough to give the dish a special charm. And if you add more lemon or apple slices, you get a whole still life. Likewise, you can use sprigs of parsley, lettuce, or other greens that you like. Therefore, there should always be a bunch of dill and parsley in the refrigerator - this is the smallest set that will allow you to add a touch of novelty to the usual design of the table and give it completeness.

Greens for children's meals

Likewise, you can decorate children's dishes, only here it is worth a lot more invention. Greenery can be used as a basis for whole landscape sketches that mom and baby will make together. On the basis of finely chopped dill, you can lay out trees, figures of animals and insects, mushrooms and bushes. Tomato ladybug, carrot, cucumber and cheese butterflies, bread stump and mushroom-fly agaric from egg and tomato, olive mushrooms and much more can be done on this green carpet. And twigs from greenery can be used as parts for making animal faces - mustaches or eyebrows from dill look amazing. Even simple sandwiches laid out on a lettuce or parsley base will make your child look differently. After all, an appetizing dish makes you want to eat it faster, which is what we achieved with our efforts to decorate the dish with herbs.

Decorate with green onions

Covered with stereotypes, we do not want to look for something new, and it is even in the decoration of dishes with herbs. This is a chives, which have long enjoyed a good reputation among professional chefs. These thin green straws are a very handy item to pair with any dish. They especially love to put it on canapes or other similar sandwiches - it gives them a more sophisticated look. It is very simple to use it at home, especially since no special techniques are required here. The chives are simply cut into slices and randomly laid out on top of any dish. And in children's fantasies, it can be used most successfully - no one has yet come up with the best mustache, if parents want to lay out the muzzle of a cat or a tiger from porridge. Among other things, this onion is delicious.

Decorate with rosemary

How to decorate snacks? If you are using canned vegetables, then you can also garnish them with sprigs of herbs or onions, and not just put them on plates. This will give the table more brightness and diversify the design. If you are a champion of everything new and love to experiment, try decorating the table with a rosemary wreath. This is an unusual piece of jewelry, and it will surely surprise and delight your guests and loved ones. This herb is very effective in itself, and it can decorate any dish, but the wreath will become a more amazing and non-trivial decoration of the table. Arrange the rosemary on a flat plate in the form of a wreath, you can even twist the branches slightly. The middle should be empty. Put olives, small mozzarella cubes, gherkins, cherry tomatoes and any other small products on the wreath. In the middle, you can put any canned vegetables or an assortment of them. This is how you get a wreath appetizer. You will get an unexpected memory of the New Year, because a rosemary wreath looks like a New Year's tree decoration.

The second decoration option with rosemary is even more romantic. It is suggested to decorate with rosemary a cake or a cupcake with a hole in the middle. To make the cake look more attractive, it is better to fill the middle with something to make it look like a finished work of culinary art. Often they put a candle there, and it looks pretty nice. Keep the candle small with a low candlestick. Scented candles are not used here - rosemary will play the role of a fragrant filler. We put its twigs around the candle, and while it burns, its warmth will warm up the fragrant herb, and you will feel the delicate scent of cake and the delicate scent of rosemary. Together they will create a unique bouquet that none of the guests can forget.

Decorate with mint

Mint has been known for a long time, it is used in a variety of situations - for making tea, cocktails and for decorating dishes. Moreover, you can decorate with its filigree leaves and soup-puree, and mousse, and drinks. And everywhere it will be in place. Therefore, it is so easy to brighten up any dish if you have fresh mint at home. Now many housewives simply grow it on the site, and in winter in pots and flowerpots. So this is a decoration for the whole year! What can be decorated with mint sprigs:

  1. fruit salad;
  2. beverages;
  3. ice cream;
  4. desserts.

And if you add berries to the mint, you get a cheerful multi-colored assortment that will increase the mood of the guests. Any child will not resist yogurt if they see a mint leaf and raspberries on top. A homemade cake? Here mint may well play the role of a savior, if there is nothing to decorate with or there is no time left for all sorts of delights. We simply cover the top cake with white cream or whipped cream, put a mint circle in the center, and sprinkle all the splendor with cinnamon. No one would think that the idea was completely different. And the aroma will delight the most capricious sweet tooth.

Some advanced housewives make a completely new and unusual decoration from mint: chocolate coins. They can be used to decorate desserts, ice cream, pastries and cakes. In addition, in such coins, mint is kept fresh for three days. And there is no need to talk about the original taste of the decoration. Take as many mint leaves as you need to decorate the dish and place them a short distance apart on baking paper or foil. Melt a bar of dark chocolate in a water bath and pour into a pastry bag.

Now you need to carefully put out of the bag so much chocolate on each leaf that it would be enough to cover one leaf. Place another sheet of parchment on top and press lightly on the table. After that, the chocolate should completely cover the mint leaves to make the chocolate coins. If they are uneven, you can trim them with a knife or round cookie cutter. Now the leaves on the tray need to be placed in the cold, and after an hour they can be separated from the parchment and immediately used as decoration. They can also be stored in a container for several days. After a little workout, you will have some great coins and will certainly surprise your guests.

Decorating with basil

The handsome basil is perfect for decorating dishes. They, like mint, can be used to decorate meat dishes, salads, pizza, and desserts. Professionals consider the salad of mozzarella, tomato and basil to be the most successful combination, however, it goes here not as a decoration, but as a full-fledged ingredient. And yet, the basil hue gives this salad a new look every time. And also the way of stacking products. They can be cut into flat slices and laid out in the form of a pyramid tapering upward in layers. You can put cherry tomatoes, cheese and basil in a spiral on a flat dish, rounding it to the middle. Some put in layers in a circle, and inside the circle they lay out sprigs of basil - also beautiful. Sometimes they just line the plate with basil leaves, and put canapes of cookies, cheese and cherry tomatoes on top.

As you can see, decorating the table with greens is not as difficult as it might seem at first. And all the greens are quite accessible, you just need to remember that they must be fresh. And the most important thing here is that this is not just a whim, because decorating dishes with herbs, we also make them healthy, and this is very important.

  • Mushrooms: 200-300 g
  • Onion: 1 pc
  • Vegetable oil: for frying
  • Chicken eggs: 4 pcs.
  • Mayonnaise: to taste
  • Salt: to taste

Preparation:

Boil eggs hard-boiled. Refrigerate.

Boil the chicken leg (or breast) until tender in salted water (about 30 minutes after boiling). Refrigerate.

Peel, wash and cut the onion into small cubes.

Wash the mushrooms and cut into small cubes.

Preheat a frying pan, pour in some oil. Put mushrooms and onions in a frying pan. Fry over medium heat, stirring occasionally, for about 10 minutes.

Separate the chicken meat and cut into pieces.

Wash the cucumbers (or bell peppers) and cut into cubes.

Separate the whites from the yolks. Grate the protein on a fine grater.

Grate the yolk on a fine grater.

Cool the mushrooms.

Combine prepared meat and cucumbers in a bowl.

Salt to taste, season with mayonnaise.

Mix well until smooth.

Combine the yolks with mayonnaise, mix well. (Bring to the consistency of thick sour cream.)

Put the salad on a flat dish (black or burgundy will look more impressive), shaping the horse's head with a knife. You can prepare a pattern in advance.

Lubricate the silhouette of a horse with a yolk mixture. Lay out the mane from the mushrooms.

The last layer is proteins. Finally shape the head and ears.

Make eyes and nostrils (for example, from olives), decorate the New Year's salad as you wish. Let the salad sit in the refrigerator for at least 1-2 hours. New Year's bacon t "Horse" is ready.

Crab stick salad "Mice"

Ingredients:

  • 150 gr of hard cheese (can be processed)
  • 240 gr crab sticks
  • 2 cloves of garlic
  • 250 gr mayonnaise
  • 1 carrot
  • parsley
  • peppercorns

Preparation:

1. Grate cheese, crab sticks and garlic.

2. Cut the carrots into slices.

3. Combine cheese and garlic with mayonnaise, mix well.

4. Put the prepared mass in the refrigerator for 1 hour.

5. Form oval molds from the curd.

6. Then roll them in grated crab sticks on all sides.

7. Make ears from carrots, tails from crab sticks, and eyes from black pepper.

The salad is prepared in a drop-down baking dish. If there is none, you can use a simple cardboard tape, fasten it in the form of a ring, and wrap it with foil. In this ring we lay out in layers, smearing each with mayonnaise:

1. grilled or smoked chicken, cut into pieces;

2. prunes, cut into strips;

3. champignon mushrooms, fried with onions;

4.cucumbers, cut into strips (let them stand before laying out and drain the excess liquid),

5. Korean carrots.

For decoration: radish is used, which is soaked in beet juice.

If you want lilac flowers - in red cabbage juice.

Free the salad from the contour, put unsweetened crackers around the "pot", decorate with leaves of greenery, which will be at hand. In the photo, the salad is decorated with sorrel.

Lay out the flowers, decorate the middle with yolk, and in between spread the white grated on a fine grater.
