And today I will just share a great recipe for banana pancakes, which I now cook almost every day)) If you manage to get rice flour, do not hesitate, take it right away! She has such delicious pastries! In combination with corn, it will delight you with a wonderful breakfast, which both adults and children will be happy about)) If there is no such flour, it does not matter, just replace it with the usual one)
And I'll also give you a recipe for a cool homemade banana sauce, which is made in just a minute!)) And it will be an excellent substitute for store-bought store-bought sauces with additives! And here, everything is natural, as they say)) soft, sweet, thick ... mm ... you will lick your fingers!

Ingredients:

1 large ripe banana
150 ml milk
110g yogurt without additives (or kefir)
1 tbsp without a slide of cane sugar (optional, but tastier with it))
100g rice flour
100g corn flour
2 eggs
1 pinch baking powder

1) Grind the banana with a blender in mashed potatoes. Add 2 eggs and sugar to it, and once again whine with a blender for about a minute - you get a fluffy thick mass.

2) Add yogurt and milk, whisk until smooth.

3) Add both flour and baking powder, and whisk again until smooth.

4) Heat the pan well, then reduce the heat to medium, and spoon the future pancakes with a spoon. As soon as the bubbles appear, wait a couple more seconds and turn over.

Banana Sauce:

1 ripe banana
2 tbsp with a slide of yogurt without additives
I usually take milk "by eye", but approximately it is about 40g (weighed on a scale))
(optionally add 1 tsp maple syrup or agave syrup or honey)

We put all the ingredients in a blender (I put in a high blender bowl and a submersible blender), whip for about 1 minute until completely homogeneous. Then pour into a gravy boat and serve with pancakes, waffles, well, whatever))

I had a bag of rice flour lying around in my closet. Actually, I bought it to sprinkle the proofing baskets so that the bread doesn't stick. But for a number of reasons I do not bake bread yet, and the flour disappears. I caught sight of a recipe for pancakes with this flour, I decided to try it. And here's what happened.

1 egg
130 g rice flour
220 ml milk
75 g wheat flour
1 tsp baking powder (I put the baking powder according to the weight of the flour in accordance with the instructions on the package, it can be different)
1 tbsp sugar (or to taste)
a pinch of salt

I have a double portion in the photo, because there were a lot of eaters

In a bowl, combine rice and wheat flour, sugar, salt, baking powder

Shake eggs and milk separately

Combine flour mixture with liquid mixture, knead the dough. It turns out to be quite thick. Leave for 15-20 minutes.

The recipe didn't say anything about butter, but I still poured a tablespoon of vegetable oil into the dough before frying the pancakes.

I bake all the pancakes in cast-iron pans, grease them with a piece of unsalted bacon. The fire is not very big. For 1 pancake, poured 2/3 of a ladle of dough

Pour the dough and wait until the bubbles stop tightening (it was written 1 minute, but it turned out less for me, be guided by your pans)

Turn over and fry until tender. I fried quickly, so I advise you not to go far from the frying pan.

Ready-made pancakes are porous, but dense enough, it may even seem that they are dry. Therefore, I would advise them to serve them with some fairly liquid sauce, in the original it was cherry. I didn't have cherries, I had apples, sour cream and maple syrup boiled with sugar (not included in the photo)

In general, interesting pancakes turned out, everyone liked

Ingredients:

  1. rice flour - 160 g;
  2. milk - 250 ml;
  3. chicken egg - 1 pc.;
  4. sugar - 20 g;
  5. soda - 0.5 tsp;
  6. salt - 1/3 tsp;
  7. vinegar 9% - 1 tbsp. l;
  8. butter - 30 g;
  9. vegetable oil - 1 tbsp. l.

PP Rice Flour Pancakes - Recipe

In a bowl, combine a chicken egg, salt, granulated sugar. If the egg is large, then one category C1 or C0 is enough. If it is small, then you need to take two eggs of the C2 category.

The amount of sugar is adjusted according to your tastes.

Beat the egg with sugar, add milk. You can use kefir or even sour cream.

We extinguish the soda with vinegar and send it to the kefir-egg mixture.

Add rice flour. It can be purchased or homemade from washed and dried rice. In the second case, you need to sift it.

Mix everything and add melted butter. It must be melted in any convenient way and cooled before use.

Mix everything until smooth.


We heat the frying pan, which is greased with vegetable oil, and spread out a portion of the dough, distribute it so as to get a thick pancake with a diameter of 15 centimeters. Fry for a minute, until the bottom turns golden.

Real pancakes, as mentioned, are fried in a dry pan. But I like it with butter.


Turn the pancake over with a spatula and fry for another minute or less. The time depends on the heating power and the thickness of the product.


Put the finished rice flour pancakes in a stack.

I really liked these rice flour pancakes, they have a completely different texture than regular pancakes. They are snow-white inside, and because they are fried practically without oil, there is absolutely no fat in them, which is also very important! This type of pancake is very suitable for those who follow a gluten-free diet, but if you do not need a diet, I still advise you to try baking them, they are really delicious.

So, for rice flour pancakes, let's take the necessary products from the list. As I already said, you can take any fermented milk product, you can even take stale sour cream, most importantly, not very fatty.

Let's weigh the required amount of fermented milk product from which you will bake pancakes.

Then we break a chicken egg here, add salt and sugar.

Using a whisk, we bring everything to homogeneity.

We measure out the required amount of rice flour.

We sift it through a sieve along with soda.

Pour some of the flour into a bowl with fermented baked milk and mix gently so that there are no lumps.

Stir in the rest of the flour into the dough, making sure that no flour lumps remain in the dough.

This is how the dough should turn out after mixing.

Set it aside for 10 minutes. Then put the pan on fire and grease it with a little vegetable oil using a silicone brush.

Put the dough in a preheated pan with a spoon and fry the pancakes in rice flour, first on one side.

Then turn over and fry on the other side.

This will fry all the pancakes and place them on a serving plate.

Rice pancakes can be served immediately. You can also serve sour cream, honey or jam with them. I had dogwood jam, it was delicious!
