Bolognese pasta ready-made.

Pasta can easily be called the product that even the smallest household inhabitants prefer more than others, including the capricious, fastidious and unwilling to eat adult food.

It is pasta that attracts children with both its appearance and taste, and no matter how you cook them, lunch will be a success. But if you want not only to feed the kids, but also to give their growing organisms all the necessary trace elements, prefer Bolognese pasta, in which there are tomatoes, carrots, and various greens and meat.

Ingredients:

  • 400 g pasta
  • 1/2 kg ground beef
  • 2 carrots
  • 1 small onion
  • 1 sprig of celery
  • 1/2 l tomato paste
  • olive oil
  • basil
  • parsley

If the dish is intended for adult eaters, then the list of ingredients can also include:

  • white table wine
  • black pepper

How to cook pasta with minced Bolognese

1. Chop the onion and cut the carrots into small pieces, then sauté them in a deep skillet or saucepan with a little olive oil.

2. If only adult household members are to have dinner, then it's time to add a little white table wine to the contents of the pan and mix everything.

3. When the vegetables are golden, add tomato paste and basil to them, and then leave it all over low heat for 10 minutes.

4. Meanwhile, cook the pasta following the directions on the package. In most cases, this will take you about 8-10 minutes. Keep in mind that undercooked pasta tastes less pronounced and resembles chewing gum when eaten. If they are overcooked, they become too soft and also lose their flavor. In the absence of proper experience, but wanting to get the best pasta consistency, just try the pasta as often as possible when cooking.

5. Drain and rinse the finished pasta.

6. Take the minced meat, salt it and, if there are no younger family members at the table, pepper, and also add any spices to taste.

7. Fry the minced meat in a skillet with the addition of olive oil, and when the meat is ready, add it to the previously obtained tomato sauce. Stir the sauce with the meat and leave to steep for 5 minutes.

8. Put the sauce pan on low heat, add the pasta and mix everything thoroughly.

Spaghetti Bolognese is one of the most famous dishes of Italian cuisine, distinguished by its simplicity, satisfying and unique taste. Neither family gatherings nor a festive dinner in a restaurant can do without them in Italy.

This dish has long won the love of gourmets outside their homeland, thanks to the combination of simple ingredients, an uncomplicated cooking process and unsurpassed taste characteristics. Therefore, today we will talk about how to cook it at home.

What is the difference between this dish and other pasta with minced meat?

The cooking process includes two main stages: boiling the spaghetti and making the sauce directly based on minced meat and tomato paste.

Unlike other similar pasta and minced meat dishes, the traditional bolognese recipe implies a long stewing time of the sauce (from two to four hours), due to which a uniform and elastic consistency and a bright, rich taste are achieved.

There are many variations that offer ways to express this sauce in 30-40 minutes. Many of them really allow you to get good results. But if you want to experience the classic taste of an Italian dish, do not regret spending time on it at least once, because it will be worth it.

The good news is that the bolognese can be prepared for future use and stored in the freezer for a long time. The flavor characteristics of the sauce are not lost after defrosting. In this case, you can very quickly please your guests and family with a hearty and beautiful dinner. By the way, you can use it not only with spaghetti, but also with futiccini and other pasta.

Little tricks to help the hostess

Before you start cooking, you should get acquainted with a few simple secrets. They will help to avoid common mistakes that can lead to a loss of the taste of the finished dish.

  1. Use only spaghetti made from durum wheat. In this case, they will not boil over and stick together. By the way, this is precisely the secret of the beautiful figures of Italian women who remain slim, despite the love of pasta.
  2. Place the spaghetti in boiling salted water and strictly adhere to the cooking times indicated by the manufacturer. You can add a spoonful of vegetable oil. Properly cooked pasta should be firm and tough on the outside.
  3. After cooking, place the spaghetti in a colander and drain. It is not recommended to rinse them with cold water, as this will negatively affect the taste.
  4. For the sauce, you will need two types of minced meat: pork and beef. It must be kneaded very well with a fork and stir constantly during frying to avoid the formation of lumps. Moreover, it is necessary to achieve a homogeneous consistency until the moment the wine and milk are poured, otherwise it will not be possible to eliminate the lumps.
  5. Cut the vegetables for the sauce as small as possible so that they are almost completely dissolved during stewing.
  6. Pour milk and wine in the Bolognese only one by one, and milk first. Only after it is completely absorbed and evaporated can wine be added. Otherwise, the taste of the dish will be irreparably spoiled.
  7. Simmer the sauce for at least two hours over low heat with the lid closed or slightly open. Ideally, the sauce should barely boil with no large bubbles on the surface. In this case, it should be thoroughly mixed every 10-15 minutes.

Observing these tricks, you can easily cook spaghetti the first time with a sauce invented in the small Italian town of Bologna.

Traditional way of cooking

Let's start with cooking bolognese, for which we need:

  • pork and ground beef - 250 and 400 grams, respectively;
  • pancetta (or any bacon) - 100 gr;
  • butter - 10 grams;
  • olive oil - 4 tablespoons;
  • ripe tomatoes - 0.5 kg;
  • tomato paste - 7-9 tablespoons;
  • half a glass of milk;
  • half a glass of dry red wine;
  • 1/2 cup boiling water or broth
  • one medium-sized carrot;
  • one large onion;
  • celery root;
  • garlic - 2-3 cloves;
  • a mixture of Italian herbs - 2 teaspoons;
  • Parmesan cheese - 150-200 grams;
  • salt and pepper to taste.
  1. Place the olive oil and butter mixture in a heavy-bottomed skillet or pan.
  2. Cut the pancetta into thin slices and add to the butter, letting cook for 15 minutes.
  3. At this time, chop all the vegetables very finely: onions, garlic, carrots and celery.
  4. Place the vegetables in a preheated skillet to brown until golden brown, stirring to avoid strong caramelization.
  5. Turn the heat to maximum and quickly add the minced meat, intensively kneading the lumps that form. Constantly stirring, wait until all the juice is absorbed and evaporated, and the minced meat begins to fry. Our task is to achieve the formation of a uniform golden crust, then reduce the heat to medium.
  6. Pour in milk and simmer until completely absorbed. Provided that you have taken fresh product, do not be alarmed if curd flakes appear. They will subsequently dissolve. Remember to stir the contents of the pan all the time.
  7. Pour in the wine and, stirring again, wait for it to evaporate until the honey mushrooms begin to fry.
  8. Move the minced meat to the side and add the tomato paste to the skillet. In principle, the pasta can be fried in another pan, but why dirty a lot of dishes? Fry it a little and mix with the minced meat, seasoned with pepper and a mixture of Italian herbs.
  9. Peel the tomatoes. To do this, make a cross-shaped incision on top and lower it in boiling water for 7-10 seconds. Then abruptly place in cold water. After such manipulations, the skin will come off instantly.
  10. Chop the peeled tomatoes finely with a sharp knife to avoid losing excess juice.
  11. Add the tomatoes to the mixture and stirring vigorously, try to crush the tomato pieces into smaller pieces. Wait until the tomatoes are soft.
  12. Pour in half a glass of water or broth. An excellent result will be obtained from a broth cooked on beef bones with the addition of vegetables (parsley root, onions and carrots). Season with salt to taste and reduce heat to the lowest possible level.
  13. Cover the sauce with a lid and simmer for at least two hours. Make sure that in no case the contents of the pan do not boil violently. Subtle bubbles should form on the surface. Periodically, as needed, add water or broth so that the bolognese is not fried, but stewed. Also remember to stir the dish every 15 minutes.

After a few hours, you should have a shiny, homogeneous mass of dense consistency. Before serving the sauce on the table, let it brew. To do this, remove the pan from the heat and let the bolognese “rest” under the lid.

How to cook spaghetti bolognese - a simple recipe for pasta with minced meat bolognese sauce with step by step photos

INGREDIENTS:

  • 450 - 500 g minced beef
  • 3 - 4 cloves of garlic
  • 250 g tomato sauce or ketchup
  • 250 g spaghetti
  • 50 g parmesan
  • 2 tbsp. l. olive oil
  • salt, pepper, Italian spices

COOKING METHOD:

1. To prepare spaghetti bolognese, peel and cut the garlic into very thin slices.

2. Heat the vegetable oil (preferably olive oil) in a frying pan and fry the garlic until golden brown and strong aroma. It is important not to overexpose the garlic on the fire so that it does not burn, but undercooking it is also bad, since in this case the dish will not have a characteristic aroma.

Many Italian pasta recipes start with the garlic roasting step, after which it is recommended to remove the garlic and continue cooking without it. But it is quite acceptable to leave the garlic, since if it is not burnt, then it does not interfere in the dish at all and, on the contrary, is beneficial like any normal vegetable.

3. Add the minced meat to the garlic and fry for about 10 minutes, stirring occasionally and breaking the minced meat with a spatula until all the meat turns from bright red to brown.

4. Add salt, spices and tomato sauce to the meat, mix everything thoroughly and simmer over low heat for 15 minutes. Aromatic rich tomato spaghetti bolognese sauce is ready!

5. While the bolognese sauce is stewing, boil the spaghetti.

Choose spaghetti only from durum wheat, as they are not only very healthy, but also easy and quick to prepare, do not boil or stick together.

Pasta is always boiled in a large amount of boiling water - it is recommended to take 1 liter of water per 100 g of spaghetti. But these are, of course, approximate proportions, it is not necessary to make such accurate measurements at home, you just need to take a large saucepan and fill it to the brim with water.

6. In Italian culinary traditions, spaghetti is never broken into pieces, and to make it easier to cope with long products, and not to stuff them with difficulty into the pan, the following technique is used. All pasta is collected in one tight bunch and placed vertically on the bottom in the center of a pot of boiling water.

7. Then the spaghetti is abruptly released and they are immersed in a fan into the pan. Using a large spoon, gradually heat the pasta in water and cook for 9 to 10 minutes, as indicated on the package.

8. At the end of cooking spaghetti should be thrown into a colander, it is not necessary to rinse them with water.

9. Now we serve the dish: put spaghetti on a plate, sprinkle them generously with sauce and be sure to sprinkle with grated parmesan (you can also use any other cheese). Delicious spaghetti bolognese with rich meat sauce is ready!

How to make dietary spaghetti bolognese

In fact, spaghetti bolognese is not a very high-calorie dish. Unlike most other types of Italian pasta, bolognese sauce does not contain heavy cream, which significantly reduces its calorie content. But it contains a large number of tomatoes, which contain a unique substance - lycopene, which prevents the formation of tumors (especially prostate cancer in men). What's more, foods made from processed tomatoes, such as tomato paste, ketchup, and tomato sauce, contain even more lycopene than the tomatoes themselves. That is why you should cook spaghetti bolognese more often for your men, especially since they will surely like this dish.

In order to make spaghetti bolognese more useful and less nutritious, you can use the following recommendations:

1. Use pasta only from durum wheat, as they contain a lot of healthy fiber and one and a half times less calories than spaghetti made from ordinary bread flour.

2. Prepare minced meat yourself from lean beef or veal.

3. Use fresh or canned tomatoes instead of cooked tomato sauce or ketchup.

4. Fry meat in a minimum amount of vegetable oil, giving preference to olive oil.
