  • 2 eggs
  • 4 rounded tablespoons semolina
  • sour cream 5 tablespoons (or any fermented milk product - kefir, razhenka, bifidok, but tastier with sour cream)
  • 3-4 tablespoons of sugar, depending on the taste of the curd
  • raisins or other dried fruits 1 handful (about 50 g)
  • vanilla sugar 1 sachet
  • 1 pinch salt
  • butter for lubricating the mold

1) first mix semolina with sour cream or kefir. If the sour cream is thick, you can add a couple of tablespoons of milk. Leave to swell for about half an hour. During this time, mix the semolina several times.

2) while the semolina swells, prepare the cottage cheese. If it is grains, it must be wiped through a fine sieve or you can pass it through a meat grinder with a fine grid. If this is not done, the finished casserole will have lumps and will not be as smooth. Try to buy soft cottage cheese right away. If you have a blender, then you can not wipe the curd.

3) beat eggs with sugar, add vanilla sugar and salt. Do not be afraid to add salt to the dessert, it is not enough and it will make the taste of the finished dish brighter.

4) mix cottage cheese, swollen semolina and beaten eggs. Mix all this with a blender

5) then add well-washed raisins and mix the whole mass with a spoon, otherwise the bledder will grind the raisins into pieces. Before adding to the dough, the raisins must be steamed so that they are not dry. But if you pour hot water for a long time, then it will become like a mess. You just need to rinse in hot water and pour over boiling water, then pull out small sticks.

6) grease a baking dish with oil and sprinkle with breadcrumbs. If they are not there, you can sprinkle with semolina. I bake more often in a silicone mold, you don't need to lubricate it, just rinse it with cold water, nothing sticks to it.

7) put the curd mass into a mold, level the top with a spoon or a silicone spatula and put 2-3 tablespoons of sour cream on top and distribute over the entire surface. This will prevent the top from cracking and will be soft. We take out the form and leave for a few minutes, then take out the casserole. better served chilled, but we lack patience and eat warm

The classic recipe for cottage cheese casserole in the oven (from the Soviet book home economics)

In Soviet times, this book was probably in every home. We have not had the book for a long time, but the cut out recipe is carefully kept. The casserole on it always turns out delicious.

Many adults still remember this taste from childhood. The casserole is soft and tender, and the cottage cheese is not felt at all, so the little ones eat it with pleasure. It is prepared very easily, the main thing is to take quality products.

It is best to take cottage cheese soft, fresh, with a slight sourness. Rustic cottage cheese is great. And in no case do not try to bake a cottage cheese casserole with palm oil - you get a pancake of an incomprehensible taste and very fatty, sheer disappointment.

  1. the butter should be softened at room temperature, but not melted in a skillet. Just do not heat it in the microwave, it explodes there (checked, I was in a hurry too, I still had to wash everything)
  2. pour semolina with milk and leave for 30 minutes
  3. pass the cottage cheese through a meat grinder or just mix everything in a blender, it's more convenient.
  4. stir the eggs well with sugar, it is not necessary to whip them into a foam
  5. put cottage cheese, soft butter, eggs, swollen semolina, vanillin, salt in the blender bowl and beat all this until a paste. If you cook without a blender, just mix everything well with an ordinary potato crush
  6. if you add raisins, then rinse them well and soak in hot water for 1-2 minutes, so it becomes soft, but does not get very wet. Mix the raisins with the finished mass, just not with a blender, but with a spoon
  7. preparing a baking dish - grease the sides and bottom with a piece of butter and sprinkle with semolina or breadcrumbs. It is most convenient for me to cook in a silicone baking dish, just rinse it with cold water. In glass tins, the casserole always sticks to the walls. It is convenient to use molds with a non-stick coating.
  8. we shift the dough and smooth the surface. The casserole should not be very thin, it is best to make it 3-4 cm thick.
  9. now we send our future casserole to an oven preheated to 180 degrees for about 40 minutes, until golden brown. At the end of cooking, you can safely open the oven to check that the casserole is cooked.

Oven cottage cheese casserole with semolina and banana

For a change, sometimes I make a casserole according to this recipe, it turns out very tender and soft.

Ingredients:

  • a pound of regular fat cottage cheese
  • 1 ripe banana
  • 2 eggs
  • half a glass of milk
  • 3 tablespoons sugar
  • 3 tbsp m anki

The cooking process is similar to all previous ones, it is better to take cottage cheese soft, not grains and normal fat content.

Step by step cooking:

  1. pour semolina with milk and leave to swell for about half an hour. During this time, mix the semolina several times. If you pour it in hot milk, it will be enough to leave it for 10 minutes.
  2. put cottage cheese, eggs, sugar, prepared semolina in a blender bowl and beat everything until smooth
  3. add the chopped banana and beat everything again
  4. if you cook without a blender, then just mash the banana in mashed potatoes with a fork and mix everything well
  5. grease a baking dish with butter and sprinkle with breadcrumbs. If they are not there, you can sprinkle with semolina. I bake more often in a silicone mold, you don't need to lubricate it, just rinse it with cold water, nothing sticks to it.
  6. put the curd mass into a mold, level the top with a spoon or a silicone spatula and put 2-3 tablespoons of sour cream on top and distribute over the entire surface. So the top will not crack and will be soft
  7. put in a hot oven 180 degrees for 40-45 minutes. As the top is browned the casserole is ready.
  8. take out the form and leave it for a few minutes, then take out the casserole
  9. better served warm

Curd casserole without flour, without eggs

The flourless and egg-free cottage cheese casserole is perfect for vegetarians, or rather lacto-vegetarians, since it does not contain eggs. It uses agar-agar (seaweed extract) instead of gelatin, you can use pectin.

This casserole is very similar to souffle jelly.


Ingredients:

  • Curd - 1 kg
  • Yogurt (or sour cream) - 200 g
  • Butter - for greasing the mold
  • Oranges - 2-3 pieces
  • Condensed milk (sugar is possible) - 2 tbsp. spoons (to taste)
  • Agar-agar (pectin, gelatin) - 2 tbsp. heaped spoons (12-15 g), plus 1 teaspoon for the orange filling

Cooking casserole:

1. Pour yogurt into the curd, mix.



2. Also add orange zest.



3. Pour in condensed milk - a couple of spoons, if desired - it can be replaced with sugar.



Agar Agar is a natural product made from seaweed. Gelatin is of animal origin, there is already synthetic one, which is very harmful to health, in my opinion ...

4. Add agar-agar and beat our curd mixture. It can be dissolved in hot liquid, poured into curd and stirred. But so that there are no lumps, it is better to warm it up in the oven, then the curd dough will turn out to be more homogeneous.


If agar is not used, the casserole will not hold its shape. It can be substituted with pectin, cake jelly, or gelatin (but this is not a vegetarian product).

At a concentration of 1200 agar, 8 g will be needed, and if it is less concentrated, then maybe all 20 g. So you can experiment first 🙂

3. Soak the semolina for 20-30 minutes in milk and add to the curd. The amount of semolina is determined by the density of the curd mass. The result should be a mass of thick sour cream consistency.


4. If desired, add washed and then dried raisins to the curd dough. Stir well. If dry semolina was added to the dough, then leave our mixture to stand for 20 minutes so that the semolina swells.



5. If desired, starch can be used in the recipe.

You can cook curd casserole in the microwave very quickly - within 6-10 minutes, depending on the microwave power. This dessert is perfect for breakfast, lunch, dinner. Especially when you are running out of time or guests are on the doorstep.


Ingredients:

  • Cottage cheese - 1 pack
  • Eggs - 2 pieces
  • Semolina - 2 tbsp. l
  • Sugar - 2 tbsp. l
  • Sour cream - 2 tbsp. l
  • Salt - 1/3 tsp (to taste)
  • Soda - 1/2 tsp
  • Vanillin - to taste

How to make a casserole:

1. Put the cottage cheese and eggs in a microwave oven.


2. Add 2 tbsp. spoons of semolina, 2 tbsp. tablespoons of sugar, salt - to taste, a pinch of soda and 2 tbsp. spoons of sour cream. You can add cinnamon, raisins, any dried fruits to the dough.



3. Mix our dough until smooth. It is advisable to let it brew a little.



4. Cover and microwave for 6-10 minutes. As you noticed, you don't need to grease the mold with oil.

The caramel apple casserole resembles delicious candy. This is, of course, a very aromatic dish. It is very simple and quick to prepare.


Ingredients:

  • Sugar - 0.5-1 glass
  • Salt pinch
  • Curd - 1 kg

  • Lemon juice - 1 tbsp. l

1. Put a small piece of butter (20-30 g) in a frying pan, add a couple of tablespoons of brown sugar (you can use regular sugar) and 1 tbsp. a spoonful of water.



2. We spread our apples and cook over medium heat for at least 5 minutes. We leave them to cool.
