This article provides a universal method for preparing dough and filling for khachapuri, as well as a description of the two main methods of preparing this dish.

Ingredients for the recipe

For the test:

  • matsoni - 2 tbsp. (500 ml)
  • eggs - 2 pcs.
  • vegetable oil - 40 ml.
  • salt - 0.5 tsp.
  • fast-acting dry yeast 1 tsp.
  • wheat flour - 4 tbsp. + 1 tbsp. for kneading dough on the table
  • sugar (sand) - 1 tsp.
  • sesame seeds 1 tsp for sprinkling.

For filling:
  • feta cheese - 500 g
  • parsley (greens) - 1 bunch

You can also add cottage cheese to the cake (optional).

“If the feta cheese is too salty, then it can be pre-soaked a little in water or diluted with another less salty cheese.”

Step by step recipe

  1. The yeast should be “awakened” first. To do this, you need a third of a glass of yogurt (not cold, but at room temperature or slightly warm), add yeast, sugar and 2-3 tablespoons of flour here. Mix everything well until smooth and leave to come.
  2. Next, you need to prepare the filling. Grate cheese on a coarse grater. Wash the greens, dry well and chop finely, then mix everything together. The minced meat recipe can be changed depending on personal preference.
  3. As soon as the yeast rises to the edge of the glass, pour it into a bowl, add the remaining ingredients for the dough here - yogurt, eggs, salt and vegetable oil. The flour should be sieved first and added gradually so that the dough is not too steep. Leave the dough for 15-20 minutes in a warm place so that it fits properly.
  4. On a floured table, divide the dough into portioned pieces, from which the flat cakes should be rolled out. The diameter of the cakes should not be less than the standard plate size (more acceptable).

Boat-shaped khachapuri

This form is more typical for Adjarian pies. Their classic recipe is khachapuri with feta cheese and cottage cheese.

The filling is laid out over the entire surface of the prepared cake. The dough is rolled from two edges (right and left) towards the center, but so that the middle remains free. Then it is pinched from above and below - it turns out the shape of a boat (as in the photo)

In the middle, if you wish, you can add a little more minced meat, so it will turn out to be satisfying and tasty.

Such khachapuri are baked in the oven at 180 degrees for 15 minutes. Beforehand, grease each portion with vegetable oil and sprinkle with sesame seeds, and rub a little butter on the contents in the middle.

Another distinctive feature of the recipe for these pies is the egg, which is broken in the middle on top of the contents and baked until tender (the yolk must remain intact and runny, as in the classic fried egg recipe).

Closed khachapuri

As in the previous recipe, spread the filling on the surface of the cakes and press down a little.

"It should be remembered that the standard for a real closed khachapuri is thinly rolled dough and minced meat, which should be so soft that it is almost imperceptible by weight."

Then the cake is turned over and rolled into a thin layer.

Ready-made cakes are greased with vegetable oil, sprinkled with either sesame seeds or cheese, after which they are either baked in the oven or fried in a pan.

Khachapuri is a complete dish that is suitable both for a hearty breakfast and as a second course.
