It is important to know the history of fasting and the importance of lean cuisine in Russia.

  • Great Lent begins 49 days before Easter.
  • His goal is to prepare for Easter within 7 weeks.
  • The first 40 days are considered to be a type that Jesus fasted in the wilderness for 40 days after his baptism.
  • Subsequent: 1 day is Lazarev Saturday, the second day is Palm Sunday and Holy Week - the final 6 days.
  • The last week is the most important, as it helps to refresh the memory of the last week of our Lord's life. These are the resurrection of Lazarus, the entry of Jesus into Jerusalem on the donkey and the Last Supper and the sermons of Jesus.
Right balanced diet helps a person to restrain aggression. By following all the rules of fasting correctly, it is easier to fulfill the spiritual precepts associated with fasting. All this will be well reflected in all areas of human life. Priest Alexander Ilyaschenko spoke well on this occasion: “No matter how important fasting is, it must be observed in such a way that it does not harm physical health, since a physically weakened person is inclined to show bad traits and aggression, and this, in turn, can spoil him. relationships with people ".

According to the rules, during fasting, you must adhere to rather strict restrictions on food, and not everyone can withstand this, so you can start small, for example, fast on Wednesday or Friday. It is worth remembering that on such days you cannot eat any dairy products, meat and eggs, it is also advisable to refuse vegetable oil, since it is allowed to be consumed only on weekends.

But even taking into account such strict restrictions, you can eat not only healthy, but also tasty food, because today it is known quite a large number of a variety of simple meatless dishes.

Vegetarian borscht

During Great Lent, it is forbidden to eat meat, but you can cook no less tasty vegetarian borscht... The recipe for such borscht is very simple, besides, it cooks much faster, and the ingredients practically do not change. However, for the preparation of this borscht, vegetable oil is used, which, according to the rules of the fast, is allowed to be eaten only on weekends. But this recipe is also suitable for those who are not very strict in fasting.

Ingredients:

50 g cabbage
200 g tomato juice,
1 bunch of dill
1 tsp mustard (if desired, can be replaced with wasabi),
1 tbsp. l. flour,
2 garlic cloves
1 medium beet
1 medium carrot
1 onion
4 medium potatoes
spices and salt - a little, to taste,
vegetable oil - a little, for frying.

Preparation:

First, take a saucepan and pour 2 liters of water into it, put it on the stove. Using this lean recipe, you can easily cook delicious vegetarian borscht in a multicooker.

While the water is boiling, let's start preparing other products. We take the potatoes, peel them and cut them into relatively small cubes. After the water boils, put the chopped potatoes in a saucepan, tighten the fire to a minimum and cook for a quarter of an hour.

Now we are preparing the frying. Peel the garlic and onion, wash well and chop finely. We peel carrots, wash, three per coarse grater... We put a frying pan on the stove, pour a little vegetable oil (about 2 tablespoons). As soon as the oil is hot, put the onion, garlic in the pan, and then fry until the vegetables acquire a pleasant golden hue.

Then add carrots to the onion with garlic, cover the pan with a lid and fry the vegetables over low heat for about 5 minutes. Now we take the beets, peel them, wash them and grind them on a coarse grater. Put the prepared beets in a pan for vegetables, mix everything well and simmer under closed lid another 5 minutes (it is important that there is a minimum fire).

After about 5 minutes, remove the lid and sprinkle the whole mass with a small amount of flour, and then add mustard (you can use wasabi) and mix everything again.

Now add to the pan tomato juice, season the frying with salt and a little pepper, cover the pan with a lid again and leave for 10 minutes.

By this time, the potatoes should be half cooked. Now lightly add water in a saucepan with potatoes and put all the frying in the broth, mix well and let it boil for about 10 minutes.

We wash and grind fresh dill... Put chopped cabbage into a saucepan with borscht. Cook the dish for about 3 more minutes, then turn off the stove, cover the pan with a lid and leave for half an hour so that the borscht can brew well.

Vegetarian borscht is completely ready, we can pour it into portioned plates, add a little fresh herbs and sour cream, serve it to the lean table.

Cabbage with mushrooms

On Saturday and Sunday, when it is allowed to eat vegetable oil during fasting, you can prepare not only a tasty, but also quite satisfying dish, besides, it is not only very quick and easy to prepare, but also contains minimal amount calories, that is, it is dietary. That is why it can be cooked not only during fasting, but also on any day, if there is a desire to lose a little weight.

Ingredients:

1 large onion
300 g of mushrooms
500 g sauerkraut,
1 kg of fresh cabbage,
pepper and salt - a little, to taste,
vegetable oil - a little, to taste.

Preparation:

Thanks to the use of fresh cabbage, the dish is tender and juicy, and sauerkraut adds a little piquancy, making the taste more interesting and savory.

First, we prepare fresh cabbage - finely chop it. Then wash the mushrooms thoroughly with cold running water, and then cut them into thin slices. In the event that pickled mushrooms are used, they must also be cut into wedges.

Now we take the onion, peel and chop finely. Put a frying pan on the stove, pour a little oil and simmer the onion over low heat until it becomes translucent and soft. Next, add the prepared mushrooms to the onion.

Fry the mushrooms and onions until they are half cooked, then season with a little salt and pepper (if desired ground pepper you can not add at all, then the taste of the dish will turn out to be more delicate and soft). Transfer the mushrooms and onions to a separate plate.

Then we take new frying pan, add literally a couple of tablespoons of vegetable oil and wait until it gets hot. Now put fresh cabbage in a frying pan and fry over medium heat, season with salt, cover with a lid (so the cabbage will let juice much faster). Periodically, so that the cabbage does not burn, it must be stirred. Simmer cabbage in this way for 5-7 minutes.

After the specified period of time has elapsed, put all the sauerkraut in the pan, and simmer again for 7 minutes (now you do not need to cover the pan with a lid). Then add to the pan with cabbage and mushrooms, mix everything well and simmer for about 5 minutes, turn off the stove.

It is very important not to overexpose the cabbage on the fire, since only in this case it will be juicy and crispy enough, and will not decay. The advantage of this recipe is not only its taste and minimum calorie content, but also the fact that, under the condition of moderate heat treatment all are preserved in cabbage beneficial features and vitamins.

Lean stuffed pepper

Having prepared this simple and very tasty dish, you can diversify the lean table and pleasantly surprise your loved ones. The advantage of this dish is that it is not necessary to use vegetable oil, so it can be prepared on any day of Lent.

Ingredients:

1/3 part of a small head of cabbage,
100 g of rice
5 large mushrooms,
1 small carrot
3 large bell peppers,
pepper and salt - a little, to taste.

Preparation:

Before proceeding with the preparation of this dish, we take rice and soak it in advance in cold water... Thus, all excess starch will be removed from the rice much faster and easier, making the rice more tasty, tender and crumbly.

Then we take the mushrooms and cut them into small pieces. It is worth remembering that during the frying process, the pieces of mushrooms will curl up, as a result of which they will become several times smaller, so they must be cut into such pieces so that they can be felt in the filling.

Now we take onion, peel and chop it finely. In a frying pan for 20 minutes under a closed lid, simmer onions with mushrooms (vegetable oil can be omitted).

Rice can be cooked in a skillet or double boiler. If we cook rice in a frying pan, it is important to remember that the lid must not be lifted until all the liquid has completely evaporated (water must be poured just enough so that it is only one finger above the rice level).

Chop the cabbage finely, as it should not be too long, otherwise it will be very difficult to mix it with the rest of the filling ingredients. We clean the carrots, wash them and three on a coarse grater. In a skillet, simmer cabbage with carrots for about 20 minutes under a closed lid.

While the cabbage is stewing, let's prepare the pepper for stuffing. First, carefully cut off the top of each pepper, after which I wash them not only from the outside, but also from the inside. We do not discard the cut off hats, as they will still come in handy. Now we take a knife and carefully remove all internal membranes, wash out the remaining seeds with water.

As soon as all the ingredients for the filling are ready, mix them, lightly season the filling with a small amount of pepper and salt. We take a teaspoon and stuff each pepper, then cover each pepper with caps and boil them in water for about half an hour, until full readiness.

Lean stuffed pepper is ready, and this dish can become worthy of respect for any table, not only during fasting, but also on any other day. If desired, the stuffed peppers can be served with herbs and lean mayonnaise.

Lean pea cutlets with rice

Fasting is easy perfect timing to cleanse your body by excluding products of animal origin from your own diet, therefore, you should give up fish, meat, eggs, milk, and also minimize the use of a variety of sweets. You can try making delicious and very healthy lean pea cutlets with rice.

Ingredients:

1 slice of plain bread
4 tbsp. l. flour,
1 tbsp. peas,
1 tbsp. rice,
bread crumbs or semolina - a little,
spices - a little, to taste,

Preparation:

First, we take two saucepans, since we will cook peas in one, and rice in the second. So, take the peas, put them in a saucepan, fill them with water (cold!) And move them to the stove. Simultaneously set to cook and rice. As soon as the rice and peas are completely ready, pour them into one container and make mashed potatoes. Now add a small amount of pre-chopped greens to the rice and pea puree and mix everything well.

Spices play one of the main roles in the preparation of delicious lean dishes, since, thanks to their addition, the dish acquires more bright taste and rich aroma. Add a small amount of your favorite spices to the rice and pea puree, as well as flour, as it gives the mass additional stickiness. Next, add a slice of plain bread.

Stir the mass until it acquires a homogeneous consistency, and then you need to wait a little, since the finished rice and pea puree should cool completely. Now we proceed directly to the formation of the cutlets themselves. Then each cutlet is rolled on both sides in semolina or bread crumbs.

It is worth remembering that you need to fry the pea cutlets in vegetable oil, so it is advisable to cook this dish on weekends, since it is on these days during Great Lent that you are allowed to use vegetable oil.

Pea cutlets are fried in a pan with hot vegetable oil on both sides until fully cooked (cutlets should be fried over medium heat). It is recommended to serve this dish hot with any side dish.

To cook potatoes according to this recipe, you need to add vegetable oil, so this dish suitable for those who are not very strict about fasting.

Ingredients:

1 kg of potatoes,
2-3 garlic cloves,
salt - a little, to taste,
vegetable oil - a little, for lubrication,
fresh herbs - a little, to taste.

Preparation:

We clean the garlic and potatoes. In the event that a large potato is taken, then we cut it into several pieces. Now squeeze the garlic into the potatoes. We wash the fresh herbs and tear them with our hands, as this way it will retain all its aroma.

Season everything with salt and mix well, grease with a small amount of vegetable oil and transfer the potatoes to a prepared baking sleeve.

Tie the sleeve tightly on both sides and place in a preheated oven. We bake the potatoes until they become soft (we check the readiness of the potatoes with a fork).

Ready diet potatoes shifting to beautiful dish, decorate with a few leaves of fresh mint, you can add tomatoes, and serve.

Such dietary potatoes are not only suitable for fasting, but also become worthy decoration any festive table.

Lenten dishes: what are they like? Do I need to stock up on recipes for delicious lean dishes if fasting is the time to limit oneself in bodily pleasures in order to grow spiritually?

There is a time of the church year when the Orthodox are allowed to cook and eat only lean food. Of course fasting imposes certain restrictions... But the Church does not forbid trying to diversify Lenten menu via simple recipes delicious lean dishes. Many fasting people (such as children) may not be able to fast unless they have a delicious fasting menu. It is important not to forget that the main thing in fasting is prayer, dialogue with God and an attempt to get closer to Him. Lenten meals are usually very light and easy to prepare, this helps to think less about the physical and more about the spiritual during the fast.

Many secular establishments, cafes and restaurants, start a special menu of lean dishes during the period of fasting, but vegetable cutlets, dishes from a variety of vegetables and lean borscht can be prepared at home. Also, food lean table usually refers to the number dietary meals... And for many, these recipes can be useful outside of fasting. After all, they are made up of available ingredients will become great side dish and diversify your usual menu.

Do not forget that God does not require us to harm ourselves, and if for health reasons you cannot observe a strict fast, then before switching to lean meals, it is better to consult with your doctor and confessor. In such cases, a relaxation of the fast is allowed.

The portal "Orthodoxy and Peace" has prepared for you an extensive list of recipes and information on cooking during Lent.

In our rational and scientific age, with its abundance of information, shocking shocks of disasters and misfortunes, there is so much a good miracle that brings quiet joy and peace of mind. And we forget that this miracle is always with us, even within us, it is given by God through our repentance and striving for internal change your life, to align it with God's will for us. This miracle is the transformation of a person. Is it not a miracle when a person who is accustomed to living according to the flesh strives to the spiritual, who has never known prayer finds sweetness in church chants, comprehends the joy of goodness, the consolation of repentance in sins. Great Lent propels us to all of this with its entire structure: long biblical readings, prayers of repentance and hymns, the charter about food. During the days of Passion Week of Great Lent, the strictest fast is observed.

Great post. How do we fast?

We fast with a fast that is pleasing to the Lord. true fasting is evil alienation, abstinence of the tongue, rejection of rage, excommunication of lusts, derogation, lies and perjury. This impoverishment is a true fast and auspicious. (from the service of Great Lent)

It is said among the people: “ a good start- half the battle“. This is probably why many Christians fast more strictly in the first week of fasting. Lent implies the exclusion from the diet of meat, dairy, fish food and eggs, but the measure of your fast must be coordinated with your confessor, not forgetting to remind you about your state of health.

And the Orthodox hostess is responsible for how to make the fasting meal varied enough so that the fasting people do not lose heart, and at the same time do not awaken the passion for gluttony. Therefore, it is good if the food is cooked familiar and at the same time does not contain non-fasting components.

Lenten porridge

If you have cooked porridge for your family on a regular basis, then you can also cook it in Lent, just not in milk, but in water, and not season with butter, but serve sauce with it, or sweet: based on jam or jelly, berries, steamed and chopped dried fruits, nuts, honey, cocoa, vegetable corn cream, or unsweetened: vegetable, mushroom; in both cases the spice variations are very interesting. Do not forget about the variety of the main component - cereals: rice, buckwheat, pearl barley, oatmeal, semolina ... whole, crushed, flakes. Play also on the consistency of porridge: from a smudge close to a puree soup to a crumbly “grain to grain”. Additional components can not only be served in the form of a sauce, but also added during the preparation of porridge.

It's great if your family diet soups are common. Most of them are very pleasant lean options or easily adapt to the post. Technology highlight lean soup: timely laying of the components, so that by the end of cooking they are all ready at the same time, first harder, then more tender, for example, for borscht, beets and carrots are laid before potatoes and cabbage. Pleasantly improves the taste soup light toasting vegetables. Most lean vegetable soups acquires best taste and aroma when added at the very end of the minced clove of garlic. Do not forget about other spices, herbs, bay leaves. You can use and ready mix or cubes for broth, you just have to monitor their composition: are there any non-lean components added. It is also possible to separately cook vegetables, chop all or part of the components in a puree soup, serve with croutons or croutons, or even, in an oriental way, with unleavened rice (here it makes sense to cook a soup with a very pronounced taste, spicy or salty).

Thematic excerpt from the Prologue by Archpriest V. Guryeva:

Spiritual fasting

(A word about fasting, and about slander, and about condemnation)

Some of the common Christians think that fasting should consist of abstaining from food and drink, and nothing more. Not eating fish during fasting or not eating oil and wine - this, in their opinion, exhausts the whole commandment about fasting. But is it so? No. True, one must fast bodily, but spiritual fasting must also be combined with bodily abstinence. This is what the Holy Church teaches. "Fasting," she says, brethren, bodily, fasting and spiritually. "

What is this spiritual fast, and why is it necessary?

The Holy Fathers so defined it. “If you are fasting, show it from your deeds. Which ones? Seeing a beggar, have mercy; make peace with the enemy; do not envy a person who is in happiness; do not look at your wife, radiant with beauty. Fasting is unhypocritical; fast with your eyes, and heart, and ears, and hands, and with all your members ... Keep your hands from appropriating what does not belong to you, your feet from going to the games; keep your hearing from hearing slander and lies, and let your mouth also fast, refraining from condemnation ”(Prol., Apr. 9).

Such is the spiritual fast, brethren. We need it, because without it bodily fasting loses all meaning. “What is the use, says to thin the body by abstinence, when the spirit is bursting with pride? What praise can we receive for being pale from fasting when we grow pale with envy? What virtue is it not to drink wine, but to revel in anger and hatefulness? " (Last 14, volume 2). - “There is nothing more, it says in the Prologue, - do not eat meat or fish, but eat the flesh of the brethren with slander” (Prol., Apr. 9). So, when we fast bodily, we fast also spiritually, i.e. the external actions of the post are consistent with the internal ones. Purifying the body with abstinence, let us purify both the mind from vain thoughts, and the heart from the crafty desires. Mortifying the body with fasting, let us also mortify passions: anger, evil lust, greed for profit, and the like evil. Adorning the body with bodily fasting, let us adorn the soul with virtues: mercy, meekness, humility, reconciliation with enemies, charity. This will be a true fast, both pleasing to God, and for us, therefore, salvific. Amen. (Archpriest V. Guriev, Prologue, April 9)
