Melon jam, cooked according to this recipe, acquires a very unusual aroma. Provides a spicy touch natural honey, cardamom and almond slices.

For 1 kg of melon without seeds and peels, take:

Recipe 1. Melon salad with chicken breast and grapes

You will need: one small melon, a handful white grapes pitted, 250 g chicken breast, 120 ml natural yogurt, 140 g hard cheese, spices to taste.

For serving this salad, melon halves are ideal, especially if the dish is being prepared for a holiday: make zigzag cuts in the middle of the fruit with a sharp knife, divide the melon in half, remove the seeds, carefully remove the pulp (you need about 300 g) and cut it into cubes. Chicken breast boil in salted water and cut with the cheese into the same pieces as the melon. Cut the grapes into halves. Mix all the ingredients in a salad bowl, add a little salt if necessary, season with yogurt and stir. Serve in melon baskets.

Recipe 2. Melon salad with shrimps and avocado

You will need: 2 avocados, 600 g of melon pulp, a handful pine nuts, 10 large boiled shrimps, on a sprig of mint and basil, 1 orange, 1 lemon, a pinch of salt, 40 ml of olive oil, pepper to taste.

Squeezed out citrus juice(from an orange and half a lemon) combine with spices and olive oil. Rinse the greens, dry them, disassemble them into leaves, chop them finely and add to the dressing. Dry the nuts for 5 minutes, stirring constantly, in a dry frying pan, and chop finely. Peel the shrimp of heads, shells and intestinal veins. Peel the avocado, remove the pits and cut the flesh into slices, then drizzle with the juice squeezed out of the second half of the lemon. Cut the melon into the same pieces, combine with the avocado, put the fruit on nice plate, pour with dressing and decorate with nuts. Let the salad sit for a quarter of an hour, and place the shrimp on top before serving.

Recipe 3. Cold cream soup with melon and ham

You will need: 420 g of ham, 2 melons weighing about 700 g each, 220 ml of cream with a fat content of 10%, salt, nutmeg, a sprig of parsley, a handful of sesame seeds.

Wash the melons, cut them in half, peel them, and carefully remove the pulp from the fruit with a spoon. Do not throw away the halves - they will come in handy as bowls for serving soup. In a blender, grind the melon first, then add cream, a pinch nutmeg and salt to taste. Whisk the ingredients into a fluffy creamy mass and refrigerate for half an hour. Cut the ham into thin slices. Remove the soup from the refrigerator, pour over the melon halves and place the ham slices on top. Garnish with sesame seeds and parsley leaves.

Recipe 4. Melon sorbet with orange

You will need: 1 orange, 70 g of powdered sugar (linden or flower honey), 1 lemon, 0.5 kg melon, a few sprigs of mint and 120 g of almond crumbs (optional).

Rinse the melon, cut in half, peel the seeds. Cut the pulp into pieces. Squeeze the juice out of the citrus fruits. Place the melon pieces in a blender bowl, icing sugar(honey), pour in the lemon and orange juice and beat until smooth. Put the resulting mass in a container and put it in the freezer. After an hour, stir the sweet mass thoroughly. Do this several times. After 5-7 hours, the sorbet can be tasted. 20 minutes before serving, remove the dessert from the freezer, make balls using a special spoon, put them in bowls, garnish with almond crumbs and sprigs of mint if desired.

Recipe 5. Melon ice cream

You will need: 400 g of ripe soft melon pulp, 140 g of sugar, 400 ml of cream with a fat content of 20-35%.

Cut the melon into slices, combine with sugar and use a blender to puree. You can add a little more sugar, and if the dessert is prepared for children, replace it with honey or brown sugar(muscavado or demerara). Adjust the uniformity of ice cream at your discretion: some people like pieces of fruit in the dessert, while other housewives prefer the creamy consistency of ice cream. Whip the cream with a mixer to enrich it with air bubbles, mix with melon puree, put in a mold and send to freeze. Stir the ice cream every hour to prevent ice chunks from forming.

Recipe 6. Vitamin salad melon with honey dressing

What you need: 400 g sweet melon, 140 g fresh cranberries or blackberries, 70 g dried apricots, 1 banana, juice of half a lemon, 50 g liquid honey, a slice fresh ginger the size of a cherry, a handful of pistachios ( walnuts, cashews), a sprig of green basil.

Cut the peeled banana into half rings, washed and dried dried apricots into strips, melon pulp into cubes. Rinse the berries and dry on a sieve. Peel the ginger, grate on fine grater, mix with honey and lemon juice... Chop the nuts with a knife. Combine melon, banana, dried apricots, berries in a salad bowl, add the dressing and mix well. Serve the salad in bowls, sprinkle with nuts and garnish with basil sprigs. This dish can be modified: replace the banana with an apple, instead of honey and lemon use for dressing natural yoghurt, replace dried apricots dried cherries or sweet apricots.

Recipe 7. Melon and strawberry jam

You will need: 1 kg of melon, 500 g of strawberries, 200 ml of water, 5 tablespoons of flower honey, 500 g of sugar.

Wash the melon, peel it, remove the seeds, and chop the pulp into small cubes. Peel the strawberries from green baskets, wash, dry on a sieve and cut each berry in half. Make a syrup from water and sugar: combine the ingredients in a saucepan and cook over low heat until the sugar dissolves. Then add honey and bring the syrup to a boil over high heat. Put the melon with strawberries in a boiling sweet mass, let the syrup boil and cook the jam over low heat for another 30 minutes, constantly removing the foam. Ready jam arrange in jars, seal and wrap overnight. Store in a cellar or refrigerator. For this recipe, other berries are also suitable, you can take raspberries, cherries, from fruits - oranges and apricots.

Recipe 8. Sand cake with melon and cottage cheese

You will need: 1 egg, 1 pack of butter, a pinch of salt, a glass of flour, 120 g of powdered sugar. For the filling: 2 tablespoons of flour, 2 pears, 1 egg, 300 g of soft homemade (non-grained) cottage cheese, 350 g of melon pulp.

Chop the butter into pieces and grind well in a deep bowl with sifted flour. Then add salt, beaten egg and powdered sugar. Knead soft plastic dough and wrap it in plastic, let it sit for a while (you don't need to put it in the refrigerator). Melon and pear, washed and peeled, cut into slices and chop until creamy in a blender. Connect fruit puree with cottage cheese, egg and flour. The filling is ready. Grease the cake pan with butter, roll out the dough, distribute it in an even layer over the shape, making small sides, put the filling on top and bake in a well-heated oven for 30-40 minutes.
