Do you have recipes that you really want to try, but still not? So I have such. One of them for a long time was the "Royal cheesecake". I have long wanted to cook this Cheesecake, O magic taste whom I have heard and read more than once. And just recently I finally made it! From the very first bite, it became clear that I had been putting off in vain - this is really unrealistically tasty. I liked the taste and the easy way of cooking. My family grinded it up in an instant, saying that it hadn't done much. So I recommend increasing the amount of ingredients by at least one and a half times, or better, bake 2 servings at once.

You can cook a cheesecake like a king even without a culinary experience, everything is so simple. The most difficult thing is to wait until it cools completely, because both the aroma and the appearance of the baked cake are very appetizing. I advise you to do everything in the evening and serve in the morning.

Ingredients for cooking

The products for the royal cheesecake need the most common ones. It will take

For filling:

  • 500 g of cottage cheese;
  • 1 cup of sugar;
  • 4 eggs;
  • vanillin or vanilla sugar;
  • 1 tsp baking powder;
  • zest from half a lemon;

for the test:

  • 2.5 tbsp. flour
  • 1 incomplete glass of sugar;
  • 1 tsp baking powder;
  • 0.5 tsp salt;
  • 150 g butter.

How to make a royal curd cheesecake

First, let's make the filling. We combine all the ingredients in a deep and convenient container. It is advisable to take homemade, fat cottage cheese. Lemon zest should be grated on a fine grater.

Beat all this with a mixer or in a blender until the mass becomes homogeneous. In consistency, it is quite liquid - like dough for pancakes.

Prepare the dough in another bowl. In general, it is difficult to call it a test - it turns out to be a crumb. Mix dry ingredients. The flour can be sieved. If there is no baking powder, then regular baking soda (0.5 tsp) will do.

Now we take out the butter from the refrigerator and three of it on a coarse grater directly into a bowl with flour and sugar. Periodically dip a piece in a mixture of dry ingredients - this will prevent the grated oil from sticking together into one lump.

With our hands we quickly grind everything into crumbs.

Cover the form with parchment or baking paper, grease with a little butter. We spread the big half sand crumbs in shape, level and make small sides around the perimeter.

Pour out the curd filling and sprinkle it with the remaining dough on top.

We send this beauty to bake in an oven preheated to 200 degrees. The cheesecake will stay there for exactly 45 minutes.

Well, now we turn to the most difficult part. We get this tender fragrant miracle and leave it in the cold for 6 hours. In just a baked cheesecake, the filling will be watery - do not be afraid, after cooling it will thicken.

Serve the Royal cheesecake with a cup of green tea, and I like to brew aromatic tea with mint and lemon. You can even cook for a festive table. Hopefully this pie becomes one of your favorite cottage cheese baking recipes.

Cooking can be roughly divided into 3 stages. First you need to prepare the flour crumbs and curd filling, lay them out one by one and bake in the oven until golden brown. Then pour hot pie sour cream and condensed milk. And finally decorate chocolate patterns so that the cheesecake royally gains festive look... A minimum of effort, and the result is always excellent!

It would seem that it is the simplest bulk cottage cheese pie, and the pouring of "sour cream-condensed milk" and the chocolate ornament turn it into an elegant cake that will become a real decoration of the table. Very tasty! It is better to cook the royal cheesecake a day before serving - on the second day, this wonderful curd casserole, steeped and frozen in the cold, becomes much tastier. How to cook a royal cheesecake with cottage cheese in the oven

First, prepare the "dry" mixture. I combined flour, sugar, salt, baking powder and butter in a deep bowl (you need to get it out of the refrigerator in advance so that it softens to room temperature).

I rubbed everything with my hands in small crumb... Visually divided into 2 parts.

Next you will need large form- I used a split, with a diameter of 26x26 cm.I covered it with parchment paper, greased the bottom and sides vegetable oil(there is fat in flour crumbs, but there is relatively little of it, so it's better to play it safe). I laid half of the dry mixture on the bottom and smoothed it out with my hands. There is no need to ram it with a spoon.

I made a curd filling. Combined eggs, salt, sugar and vanilla sugar, lightly beat with a whisk until foamy and the sugar grains dissolve. Then I added cottage cheese, grated through a sieve (fat content at least 9%, I recommend taking very dry cottage cheese, not wet, it turns out to be airy and tender). I mixed everything until smooth. Attention! We don't use a blender and other kitchen appliances, otherwise the mixture will turn out to be too liquid, creamy and poorly baked.

Spread the curd filling in an even layer, spreading it with a spoon or spatula.

Sprinkled on top of the remaining flour crumbs... I sent the form to the oven, preheated to 180 degrees. Baked for 50-60 minutes, until lightly golden brown.

While the cheesecake is baking, I prepared the filling. I mixed sour cream and condensed milk until smooth (do not beat!). I put the filling in the refrigerator, let the sour cream thicken a little. Do not take homemade sour cream, she "floats" on a hot cheesecake! Shop 20% is best. Try to buy condensed milk good quality(or cook condensed milk yourself).

The royal cheesecake should turn rosy, golden, rise slightly. We check the readiness with a wooden stick.

I took the cheesecake out of the oven after 50 minutes and immediately, without removing it from the mold, while still hot, covered it with pouring. It is very important that it is hot - then the fill will set slightly and thicken faster.

Melted dark chocolate in the microwave, keeping it from boiling. I added a piece of butter, stirred until smooth. Poured chocolate ganache v pastry bag and decorated the surface of the dessert (you can use a stationery file if there is no bag). Patterns can be applied arbitrarily, for example, with lace. I painted with a toothpick - like classic decoration Esterhazy cake, that is, at first she put thin strips of melted chocolate on the cheesecake, and then connected them together in different directions (from herself to herself).

It is best to remove from the mold after about 30-40 minutes after you have applied the fill. To make it easier to take out the dessert, I walked around the edge with a knife, and then removed split form. Bottom sheet parchment leaves easily. Ready dessert sent to the refrigerator (you can on a cool balcony) until next day... When infused, it will become even tastier, it will be easy to cut, it will keep its shape well. Enjoy your tea!

  1. Take a large baking dish, 25-26 cm in diameter, in it the cheesecake will bake well and quickly. If you have a small 22 cm mold, then divide the dry mixture into not two, but three parts. Alternate layers in next order: 1/3 dry mix - cottage cheese - 1/3 dry mix - curd - 1/3 dry mix. The baking time will increase to 60-80 minutes, be guided by the top of the cake, it should brown.
  2. If you bought wet cottage cheese, then freeze it - put it in freezer overnight and then thaw at room temperature... At low temperatures, excess moisture will be “drawn out” from the curd, it will be more crumbly, it will not clump.
  3. Take black bitter chocolate, high quality, high in cocoa beans. Porous, white and milky are not suitable.

Royal cheesecake resembles a pie in shape, tastes like an airy curd casserole with a crispy crust. From an ordinary cheesecake, similar to open pie with filling, it differs not only in size and shape. The main difference lies in the composition of the dough, and the filling also usually turns out to be more tender, reminiscent of a soufflé. If such a dessert is prepared for breakfast or an afternoon snack, even those who are indifferent to cottage cheese can hardly refuse it. On festive table this delicacy also looks quite dignified. One has only to taste the royal cheesecake, as it immediately becomes clear that this dish was "titled" for a reason.
