Carefully place the hot sticky mixture on a baking sheet covered with lightly oiled foil and cool. After cooling, the mixture will turn into a hard glassy lump, which must be crushed in a mortar and passed several times through a meat grinder with a fine mesh. Skipping the mass for the penultimate time, add cocoa powder to it (I did not use cocoa).

Transfer the finely pounded praline mass to a tightly sealed glass jar, from which to take the mass as needed.

Biscuit:

Preheat the oven to 200 0 С.

Separate the white from the yolk. Beat the yolk with praline and hot water. Beat the protein with a pinch of salt into a stable foam. Now put the yolk mixture in a bowl with protein, add flour and starch.

Gently but confidently mix and spread the resulting dough into a mold (20 cm in diameter) covered with parchment.

We bake for 8-10 minutes. Let it cool. Ideally, the biscuit should stand for 8 hours (wrapped with cling film to prevent drying out), then it will not crumble when cut.

We cut the biscuit into 2 parts.

Caramelized bananas:

Cut the banana into large pieces and place it in an empty mold (18cm in diameter) to measure the required number of bananas. I got 5 bananas. We take another one, since during caramelization they diminish slightly in volume.

Put butter and sugar in a frying pan. As soon as the sugar dissolves, put the bananas and fry for literally 30 seconds on each side. While you have flipped all the bananas, you need to flip again to the next side. You need to fry from all sides. Set aside and let cool.

Curd yoghurt cream jelly:

I make vanilla sugar myself. To do this, I put a split vanilla pod in a jar of sugar. All used pods (without seeds, I mean) I also put in this jar.

Dissolve gelatin in milk.

Collect the caramel from the bananas.

Mix all the ingredients (including the milk and gelatin) for the cream and whisk with an immersion blender or food processor. It is better to beat with a nozzle with knives, and not a whisk, so the mass will be more homogeneous.

Assembly:

I cover the form with parchment, and the sides cling film, so it will be easy to remove the cake from the mold.

Cut the sponge cake around the edges to the diameter of the mold (18cm). Do not discard the cuttings. Set aside and while we cook the cake, they will dry out. Put 1 sponge cake on the bottom of the mold.

Now fill in 1/3 of the curd cream and put it in the refrigerator so that the cream grabs (for about 30 minutes). Store the remaining cream at room temperature so that it does not freeze.

We cut 1 large banana (it is indicated in the ingredients for decoration) into circles 4-5mm thick. They will decorate the sides of the cake.

We take out the cake form from the refrigerator. We spread circles along the walls fresh banana and fill the form with caramelized bananas.
Fill in the remaining cream.


Gently place the remaining cake on top. And put it in the refrigerator so that the cream grabs (for about 30 minutes).

Topping:

Dissolve the gelatin in water.

We clean the banana. We crumple it with a fork. And simmer with sugar in a frying pan until the banana acquires a beautiful beige-brown hue.

Caramelized banana puree we send it to the blender bowl and add the loose gelatin. Beat with an immersion blender until smooth. If there is no hand blender, then puree can be rubbed through a sieve and mixed with gelatin using a whisk.

Cover the cake with topping. And put the cake in the refrigerator for 3-4 hours so that the cream hardens well.

Decoration:

Before serving the sponge cake and praline trimmings, grind into crumbs in a blender. Sprinkle over the edges of the top of the cake. So that the sprinkling lies evenly, the center can be covered with a plate smaller or a piece of paper. But do not press it against the cake, otherwise marks will remain on the topping. If this happens, dust the unevenness with crumbs.

Optionally, the cake can be decorated with physalis berries.
