Now back to our recipe. To bake cupcakes on kefir, you will need:

  • 3 eggs;
  • 150 grams of sugar;
  • 100g creamy margarine;
  • 200 grams of kefir;
  • 5 grams of soda;
  • 300 grams of flour;
  • 0.5 teaspoon ground tangerine peels;
  • any jam or jam (I took raspberry).

Place eggs and sugar in a bowl. Break them up with a spoon.

Melt margarine slightly and add to egg mixture. Stir with a wooden spatula.

Pour in kefir, mix again.

Sprinkle flour, soda and ground tangerine peels.

Stir until lumps disappear. The density of the dough should be like a biscuit.

Get your silicone molds ready. Fill each mold 1/3 full with batter.

Put a little jam and add more dough for 2/3 of the volume of the form.

Preheat the oven to 180 degrees and place the molds in the oven. Since in silicone molds the dough cooks faster, then after 20 minutes check the cupcakes with a toothpick. If it comes out dry, the cupcakes are ready. To obtain golden crust, keep the products in the oven for another 5 minutes.

Do not immediately pull out the cupcakes from the molds, let them cool slightly. Usually they come out very well, just a little pressure on the bottom is enough.

Sprinkle cooled cupcakes powdered sugar.

How to cook cupcakes

This cake recipe is very easy to make. I beat the eggs into a bowl and add sugar, then beat them with a mixer for three minutes until foamy.


I melt the margarine and leave to cool slightly. Also, if you want, you can always replace it with butter. I pour cold kefir, warm margarine, baking powder into the whipped mass and mix.


Then I pour in two glasses of flour, which I sifted through a sieve in advance. There are 200 ml in one glass, remember this when measuring all the ingredients to get the same result.


I pour raisins or other dried fruits hot water and leave for 5 minutes, then rinse it under running water, and remove the remaining moisture with a paper towel.



As I said, I will bake kefir cupcakes in silicone molds and there is no need to lubricate them with anything beforehand. I spread the dough in the form of two teaspoons.


I bake muffins in an oven heated to 190 degrees, for 20 minutes, until golden brown. To make sure they are ready, it is enough to pierce one of them with a wooden toothpick, if it is dry after that, I take them out of the oven.


Finished products are very easy to remove from the mold, for this it is enough just to turn it over. I transfer them to a dish and leave to cool. The recipe for this cake is one of the easiest to prepare, even a beginner can handle it. Thanks to liquid dough and exact proportions, you will definitely not have any difficulties in the process.

80 g butter; two eggs; one and a half glasses of wheat flour; a glass of kefir; 10 g baking powder; sachet vanilla sugar; a pinch of salt; half a glass of granulated sugar; fruit or berry jam.

Progress:

  1. Remove the products from the refrigerator, let them all stand at room temperature for at least half an hour.
  2. Rub softened butter with eggs and granulated sugar. If necessary, use a mixer, so the mass will become lush and homogeneous.
  3. Gradually pour in the kefir, constantly whisking the mixture.
  4. In a separate bowl, sift the flour and mix it with vanilla sugar and baking powder. If you run out of baking powder at home, replace it with soda, but before adding it to the rest of the ingredients, extinguish with a little lemon juice.
  5. Combine the liquid and dry mixture in one bowl, add a pinch of salt. If the consistency of the dough resembles biscuit, then you did everything right, and it's time to fill the molds.
  6. Do not lubricate silicone molds with anything; baking in them does not stick to the walls. Do not fill them 100%, otherwise the risen dough will crack, or even “run away” over the edge.
  7. Before baking, stuff the muffins with jam, one teaspoon per serving will suffice.
  8. In the oven, heated to 200 degrees, the dessert will spend 30-35 minutes.

Everyone loves the aroma of cocoa, without exception. Many people know that the taste and smell of chocolate have a positive effect on well-being, and can even cheer you up.

To make a dessert with the addition of this powder, you need the following ingredients:

½ pack of butter; 100 ml of kefir; two eggs; 0.1 kg of sugar; a bag of baking powder; 60 g cocoa; 1.5 cups flour; 120 g dark chocolate.

To make cupcakes successful, use only quality products. This is especially true of cocoa powder and dark chocolate.

The sequence of actions:

  1. Divide the sugar in half, grind one part with soft butter, the other - with eggs.

Now pour in the butter in a thin stream (I remind you that the butter should cool to room temperature by this time). We stir again.

Kefir should be preheated and cooled. Cold kefir add to the dough! But even hot can harm the fact that the eggs curl. Therefore, either take it out of the refrigerator in advance, or heat it in a saucepan on the stove (or microwave) and cool. Pour kefir into the dough and mix lightly.

All dry ingredients: flour (250 g), salt (a pinch), baking powder (2 tsp) are combined together and stirred with a whisk. Don't skip this step if you want fluffy, evenly risen muffins.

Now we combine the dry ingredients with the liquid ones with a spatula, trying not to lose air in the beaten eggs with sugar. Raising from the bottom up movements we achieve a homogeneous dough without large lumps. The dough should not be perfectly smooth, otherwise, in an attempt to achieve such uniformity, you will overkill the dough and it will lose airiness. Muffins are baked at a temperature of 180 C for 20-25 minutes. Readiness start checking from 15 minutes (provided that the caps are already reddened). You can pierce the muffin in the center with a toothpick - it should come out dry. If the surface of the muffin is ruddy, springy when pressed, an appetizing smell comes out of the oven - the muffins are ready.

Cool the cake on a wire rack so that the bottom of the cake does not get damp.
