The effect of such cookies is that they are crispy on the outside and very tender on the inside.

Usually, I get pastries the first time, without a “test version”, but somehow everything didn’t work out with cottage cheese cookies. perfect recipe not the first, not the second, not the fifth time. That cottage cheese cookie turned out to be “rubber”, then raw inside, then hard.

And now, thanks to a series of experiments, culinary observations and, of course, the accumulated experience - the perfect recipe for delicious curd cookies has been found.

This is exactly how a real cottage cheese cookie should be: crispy on the outside, and with a soft puff structure inside. But all in order, all the secrets of cooking are described below.

If you still have not changed your mind about making cottage cheese cookies, write down the recipe. At first glance, it may seem that the portion is large, but it is not, and there are not so many cookies.

Ingredients:

  • Cottage cheese 400 grams
  • Butter 200 grams
  • Flour 300 grams
  • Baking powder 10 grams (1 sachet)
  • Sugar 7-8 tablespoons

How to make cottage cheese cookies:

We cut the butter into pieces, and send it to the oven, or microwave, so that it becomes soft.

I don't have a microwave, so I put the butter in the oven for 20 minutes at 40 degrees.

We choose cottage cheese for cookies of medium fat content, but not very dry.

If you mix cottage cheese and butter with just a spoon, then in ready-made cookies grains of cottage cheese will come across on the cookie crust. Which in the process of baking will become hard, and greatly spoil the taste of cookies. Ideally, for this recipe, you can use curd mass. But I natural curd from the market, so you need a blender.

Add flour and baking powder to the cream cheese mass. Flour is best added in small portions, you may need a little more or less flour from the amount indicated in the recipe.

We knead not a steep dough, divide it into two parts and send it to the refrigerator for 1 hour.

We do this so that the butter in the dough cools, the dough becomes elastic and easy to work with.

We take the dough out of the refrigerator, and roll one ball into a thin layer no more than 3 mm thick. It turns out quite thin, but we will fold it in 4 layers, so it’s quite a normal thickness.

With the help of a glass or a cup, we cut out blanks from the dough. I used a cup with a diameter of 9 cm. A glass of a smaller diameter did not fit: the cookies are too small.

Thanks to this method, the cookies will turn out with beautiful smooth edges, and the same thickness.

Pour sugar into a plate (I used a little cane, for greater clarity, because white sugar merges in color with the dough). Dip one side of each circle in sugar.

Then fold the circle in half, sugar side inward.

Dip only one side of the semi-circle in sugar again.

Again, fold the sugar inside, dip again in sugar on one side only and lightly squeeze the curd cookies with your fingers so that they do not “open” during baking.

We put our cookies on a baking sheet covered with parchment paper sugar-free side down.

Regarding sugar: because of such a layering, the cookies seemed too sweet to me. Therefore, you can do the topping at the "semicircle" stage. For a child, I sprinkled cookies only on top, and this did not affect the quality of the cookies themselves. After all, we are preparing homemade cookies, and decide how much sugar to put.

It should be noted that when the baking sheet is completely filled with cookies, do not rush to fill the second one. If cottage cheese cookies sprinkled with sugar stand for a long time at room temperature, the butter will begin to melt, and sugar will flow after it. In the oven, such cookies will “float”, sugar will flow onto the baking sheet in the form of caramel, and as a result, the cookies will turn out to be tasteless.

Therefore, we remove the rest of the dough in the refrigerator. And we will continue to make cookies when the first batch of cottage cheese cookies is on the way.

In the case of cottage cheese cookies, it is very important to observe temperature regime ovens. Since we are dealing with one of the types of puff pastry (yes, yes, please don’t be scared), you need to bake cookies at t of at least 210 degrees. At this “shock temperature”, the moisture from the cookies will quickly evaporate, the layers will rise, the dough will bake evenly, and the cookies will turn out crispy and soft. layered structure inside.

If you make the temperature lower, for example 180 degrees, the moisture from the dough will not have time to evaporate, and you get cookies with a crispy crust - raw inside.

The oven temperature briefing has been received, and it's time to send our cookies out to bake. Preheat the oven to 210 degrees. Turn on the top and bottom heat at the same time. Bake cottage cheese cookies until golden brown for 10-15 minutes.

Even if you do not like to eat cottage cheese in in kind, cookies from curd dough you will definitely like it. If you add this product to any homemade dessert, then it will definitely be airy, tender and nutritious. Moreover, cottage cheese itself is universal, it combines well with any ingredients.

In addition, it contains many vitamins and minerals, which, by the way, are not destroyed by heat treatment. Also, in home baking, naturally there will be no dyes and other "chemistry" that are included in almost all confectionery that are sold in grocery stores.

Well, let's start making cookies right now. Fortunately, there will be no difficulties with cooking, and besides, no expensive components will be required, everything the right ingredients found in any refrigerator.

I'm sure these sugar ears or as they are otherwise called Triangles, will become your favorite homemade cookies. Everyone loves them, especially kids. It is better to add flour in parts so that it is convenient to knead the dough.

When you knead, it may not hold its shape and fall apart. Therefore, it should be put in the refrigerator for 1-2 hours (the longer the better) so that it becomes pliable.

3. After the time has elapsed, remove the dough from the refrigerator and divide it in half. First, we will work with one part, and put the second back in the refrigerator.

4. So, thinly roll out the dough and cut out identical circles with a diameter of 7-10 cm using a cookie cutter. By the way, you can also form other circles from the rest of the dough.

5. Pour sugar (5 tablespoons) into a small plate. Next, take a circle and dip it in it with one side. Then fold in half with the sugar side inward and press down a little. Dip one side again with sugar and fold inward again. The resulting triangle is dipped in sugar for the last time. The same process must be done with the rest of the circles.

6. Put the ears on a baking sheet covered with parchment paper, sugar side up. Bake at 180 degrees for 25 minutes until golden brown or golden brown. Before serving baking on the table, of course, you need to let it cool down.

We continue the theme of small pastries on hastily. Today we will bake very tasty cottage cheese cookies, the recipe is simple, familiar to many from childhood - it came to us from Soviet times with almost no changes (except that we now replace margarine with butter, because it is now not in short supply). If there are children in the house, be sure to involve them in the process of molding cottage cheese cookies. I personally do not know a single child who would not like to cut out circles from the dough, sprinkle them with sugar and put them in pillows. The dough is not sticky at all, pleasant to work with. In the process of baking, the cookies rise, become covered with an even golden crust, look so appetizing that the whole baking sheet is eaten at such a speed that you don’t have time to blink an eye. So if your family has a lot of cookie lovers, double the amount of food, then cottage cheese cookies from the second baking sheet have a chance to make it to evening tea.

Ingredients:

  • egg - 1 pc.;
  • cottage cheese from 9% fat - 300 g;
  • flour - 1.5 cups (glass = 250 ml);
  • sugar - 0.5 cups;
  • butter - 70 g;
  • baking powder - 1 tsp

How to make delicious cottage cheese cookies

Add one egg to the curd and mix roughly.

Melt the butter in a saucepan, let it cool slightly, pour it into the cottage cheese and quickly rub it with a spoon. Then add baking powder. You can replace it with soda (in this case, it does not need to be extinguished, because cottage cheese is a fermented milk product containing acid, which will act as a catalyst).

Sift flour into curd. For such a volume of cottage cheese (300 g), an average of 1.5 cups of flour is needed. But keep in mind that the humidity of the cottage cheese may vary. For example, store-bought cottage cheese contains more whey than homemade cottage cheese. And flour for store-bought cottage cheese a little more may be needed. When determining the "sufficiency" of flour in the dough, you should focus on whether the dough sticks to your hands or not. This curd dough should be absolutely non-sticky.

Note that we did not add sugar to the dough. We will need it in the next stage of preparation.

We divide the dough into 4 parts, so it will be easier to work with it. We roll each part alternately into a layer, 3-4 mm thick. work surface, on which we work with the dough, should be crushed with flour. Using a glass or mug (about 8 cm in diameter), cut out circles from the dough.

Dip one side of each circle in sugar.

We fold the loan in half so that the sugar remains sealed inside. Dip the half again in sugar with one side. And again fold in half (sugar inside).

The final step is to dip the "quarter" in sugar with one side. This will be the top of the cookie.

We put the blanks with the non-sugared side on a baking sheet covered with parchment. Do not forget that the sugar side should be on top. Before you send cookies to the oven, you need to make one small step. Using a wooden spatula, press down on each cookie so that it flattens slightly.

The oven is preheated to 180 degrees, and we just have to send a baking sheet with cottage cheese cookies into it and wait 25 minutes. The finished curd cookies should acquire a ruddy golden surface and slightly increase in size.

Immediately after baking, remove the cookies that have not yet cooled down from the parchment until they stick to it tightly (the sugar melted and formed caramel, which could come into contact with the parchment).

I also use one secret if the butter has softened and started to stick to the grater. Just periodically dip it in flour.

Add salt, sugar, vanilla sugar and baking powder. If you use soda, extinguish it with vinegar.

When baking soda is combined with vinegar, carbon dioxide is released, which “loosens” the structure of the dough, that is, makes it more magnificent.

Beat the egg a little and send to the dough.

We knead the dough with our hands, but without fanaticism. We will not knead for long, otherwise the oil will heat up from our hands and break the entire structure. 5 minutes of kneading is enough.

We form a ball from the dough, wrap it with a film and send it for 20 minutes in the refrigerator.

In the meantime, we will prepare the filling for our delicacy. The butter here can be slightly softened, cut it into pieces, mix with flour and sugar. We knead with our hands so that crumbs form.

We take the dough out of the refrigerator and roll it out in a thin layer, and pour the crumbs from the cottage cheese with flour on top. Optionally, you can add nuts or poppy seeds for example.

Roll up the dough and cut into portions.

It remains to put the cookies on a baking sheet covered with parchment and grease the top with an egg. Optionally sprinkle with nuts or poppy seeds.

Bake in the oven for 40 minutes until a nice golden color. The temperature should be around 180 degrees.

Cottage cheese cookies "Goose paws" without eggs

I would also call this cookie “It doesn’t get easier”. A suitable recipe if you want to quickly prepare delicious pastries for tea. And if there is cottage cheese at home, then once or twice and the family will gather for tea.

Ingredients:

  • cottage cheese - 400 gr.
  • flour - 350 gr.
  • butter - 200 gr.
  • sugar - 1 tbsp. l.
  • baking powder or soda - 1 tsp

Pour the flour into a deep bowl and grate the same butter on a grater. Let me remind you that you need to put the oil in the freezer for 20 minutes beforehand. After grating some butter, mix it with flour and knead with your hands. Then grate again and combine with flour again. It turns out the dough in the form of crumbs.

Now the cottage cheese needs to be crushed with a blender to a homogeneous soft mass.

Combine flour and cottage cheese and knead the dough with your hands. Moreover, this must be done quite quickly, until the oil begins to melt. The dough is crumbly, not perfectly homogeneous and rather sticky.

Wrap the dough in cling film and refrigerate for 1 hour. After that, it becomes more elastic.

Roll it out in a thin layer on a table sprinkled with flour. Cut out circles with a glass.

Cut off only a small piece of dough, which you roll out immediately, and keep the rest in the refrigerator for now.

Now we dip each circle with one side in sugar, fold it in half and again dip one side in sugar. And once again dipping, we get a triangle.

We do this with all the tests. By the way, if it seems to you that there are enough cookies, you can store the remaining dough in the freezer, and defrost if necessary.

We spread the cookies on a baking sheet and bake in the oven at a temperature of 180 degrees for about 40 minutes.
