I've been baking these bagels since my student days. Delicious and easy-to-prepare puff pastry. A feature of the dough is the absence of sugar in it, therefore, if desired, the bagels can be made not sweet by adding cheese or ham to the filling and sprinkling with sesame seeds. Our favorite is the berry jam filling, although it is also very tasty with chocolate.
The bagels remain tasty the next day after baking, the only thing is to renew the dusting with powdered sugar.

1 dough:
sour cream - 200g
flour - 200g
baking powder - 0.5 tsp.
2 dough:
butter - 200g (room temperature)
flour - 200g
baking powder - 0.5 tsp.
Filling options: berry jam, chocolate, raisins, prunes, nuts, dried apricots, cheese, ham, etc.

For dough 1, sift flour and baking powder into a bowl, add sour cream and knead the dough.


For dough 2, sift flour and baking powder into a bowl, add softened butter and knead the dough.

Separately roll out each dough into a layer about 1.5 cm thick, fold the layers one on top of the other.

I cooked a double rate of dough, so after the refrigerator I slightly rolled the dough and cut it into 2 layers, while I made bagels from one layer, the second waited in the refrigerator.

After taking out the dough from the refrigerator, roll it into a rectangular layer 0.5 cm thick, cut into 2 long strips and cut each of the strips into triangles with a base of about 4-5 cm.


At the base of the triangles, lay the filling and fold it into a bagel, while slightly stretching the corners of the base of the triangle to the sides so that the middle of the bagel does not turn out to be too thick.


Place the rolls on a baking sheet at some distance from each other and bake in an oven heated to 200 degrees C until golden brown (about 12-15 minutes)


Cool completely and sprinkle with icing sugar.

This time I decided to experiment and added caramel ground in a blender to the chocolate. the caramel is very finely ground. I think you could have tried the caramel just coarsely chopped with a knife.


For bagels, I needed 75g of chocolate (I have with nuts) and 8 caramel candies in chocolate.

Croissants with condensed milk

The algorithm below is ideal for absolutely any puff pastry bagels with or without filling, but since this is an Austrian recipe, it is better to work with very liquid ingredients - for example, jam or condensed milk.

  • Put the dough on a floured surface, roll it out to a thickness of 1.5 cm, spread the layers of the remaining butter on top, so that they occupy only 2/3 of the area. Cover with the free edges of the dough, roll out a rectangle with a rolling pin. Fold to center 2 times, roll again. And fold and roll one last time to the original (1.5 cm) thickness.
  • Chill the layer in the refrigerator for 4-5 hours, during which you need to make the filling. Peel and chop apples, put in a pan, warm. Add brown sugar, simmer over low heat, covered for 30-40 minutes, turning into a uniform mass. At the end, add the jam and another 2-3 minutes. darken.
  • Place the chilled dough on a board, cut into triangles (do not roll out so as not to become too thin). Put the filling in the center of each, closer to the base, and then twist the triangle in a semicircle.

Bake in a hot (180 degrees) oven for 45-50 minutes, monitoring the surface condition: as soon as it becomes dark, turn off the oven and leave the baking in it for another 5-10 minutes.

  • apricot jam or any other thick consistency (and if only liquid jam is available, add 1-2 tablespoons of starch to 0.5 liters of jam and slightly heat until thickened);
