In spring or autumn, summer or winter, at any time of the year, we love to bake fruit strudel from different berries and fruits, depending on the season. As soon as cherries, currants, strawberries or raspberries ripen in the country, I delight the household with these fragrant ones. However, it is the cottage cheese strudels with apples that are the most popular in our family, for some reason they are loved most by both adults and children. In addition, apples can be obtained at any time of the year. I bake several portions at once, as this delicacy is sold out with a bang.

Products for such a strudel require a minimum, however, as well as time. This pastry is especially relevant if the guests are already on the doorstep, and there was nothing sweet in the house for tea.

I share with everyone my step-by-step recipe for baking curd strudel with apples, I hope everyone will like it. Well, what kind of fruit-berries to use for the filling is up to you. As the saying goes: taste and color ...

To bake strudel we need the following ingredients:

  • 1 cup wheat flour
  • 100 grams of cottage cheese
  • 100 grams of butter or margarine

For filling:

  • 2-3 apples
  • 1 cup granulated sugar

Grind cottage cheese with butter using a potato press.


Add flour to the resulting mass and knead the dough well, which we send to the refrigerator for 30 minutes, if there is time for 1 hour.


For the filling, rub the apples on a coarse grater.


Take the dough out of the refrigerator and divide it in half into equal parts. Next, roll out a large cake about 0.5 cm thick from each.


Sprinkle the rolled layer with grated apples.


Sprinkle the grated apples on top with granulated sugar, since we do not add sugar to the dough.


We roll it into a roll and pinch around the edges (if the dough cracked a little while rolling the roll, it doesn't matter, the cake will still be baked properly).


We send the cake to an oven well preheated in advance and bake until golden brown appears at a temperature of 180 degrees. At the same time, in the baking process, pour the roll itself with the syrup that flows from the pie.


Cut the roll into small pieces, put on a beautiful dish and sprinkle with powdered sugar through a strainer. Cottage cheese strudel with apples is ready.

How to make apple strudel from ready-made dough

Apples are great for making strudel. It is better to choose firm sweet and sour fruits. Nuts, raisins and spices will add a special flavor to the dish. Lean or yeast dough can be used.

Cooking steps:

  1. Cut the peeled apples into small cubes, pour over the lemon juice.
  2. Pour dried apricots and raisins with boiling water, leave for 10 minutes. Dry well, chop finely.
  3. Fry nuts in a dry frying pan for 2-3 minutes, grind in a blender.
  4. Mix apples with nuts, dried fruits, sugar, cinnamon.
  5. Roll out the dough thinly, grease with soft butter, sprinkle with breadcrumbs, stepping back from the edges by 3-4 cm.
  6. Spread the filling over the breading, roll up the roll, pinch the edges carefully. After each turn, the dough should be slightly greased with butter.
  7. Place the roll, seam side down, on an oiled baking sheet. Bake for 30–35 minutes at 180 degrees.

Cool the finished strudel a little, sprinkle with icing sugar.

The finished dough can be thawed at room temperature. But it is better to put it on the middle shelf in the refrigerator for 5-6 hours. Do not use hot water for defrosting, place frozen food near a hot oven.

Recipe for strudel from ready-made puff pastry with cottage cheese and strawberries

Thanks to the moist filling, the curd strudel is easy to roll. But this must be done quickly and carefully, otherwise the dough will get wet and start to tear. For the filling, you can take any fresh or frozen berries.

Ingredients:

  • yeast-free puff pastry - 500 g;
  • fine-grained cottage cheese - 350 g;
  • apples - 1 pc.;
  • strawberries - 250 g;
  • sugar - 150 g;
  • crackers - 60 g;
  • butter - 55 g;
  • lemon juice - 15 ml;
  • cinnamon, vanilla.

Cooking steps:

  1. Combine cottage cheese with sugar and vanilla.
  2. Cut the peeled apples into small cubes, mix with citrus juice. Cut the berries into 4-6 pieces. Mix fruits.
  3. Roll out the dough into a rectangular layer, grease a little with butter, sprinkle with breadcrumbs.
  4. Grease with cottage cheese, spread the fruit mass on top. Roll up the roll, pinch the edges.
  5. Put the strudel on a greased baking sheet, make several pricks on top with a fork, grease with oil. Bake at 200 degrees for 25–35 minutes.

Sprinkle the finished dessert with icing sugar.

In order for the finished strudel to have a pleasant golden crust, before baking, it must be greased on top with melted butter, milk or a beaten egg.

The ready-made puff pastry allows you to prepare strudel with any fillings very quickly. It is not necessary to put fruit or berry mass; a delicious dish can be prepared with minced or minced meat.

Knead the dough: combine the softened butter with cottage cheese, then with flour. We make a flat square, wrap it in foil and put it in the refrigerator for at least 12 hours (it is convenient to cook the dough overnight). The dough can be stored in the refrigerator for several days.

After 12 hours, we roll out the dough into a 40x50 layer and fold it in three times, rolling one edge to the middle, and covering it on top with the second, then roll it out and then fold it again, only now in four times.

Pre-prepared filling: peel the apples and chop finely. Soak the raisins in cognac for 30 minutes. (can be in rum or any aromatic strong alcohol). Lightly fry the bread crumbs in butter (1 tablespoon of the total). Add cinnamon to taste to the apples, sugar and chopped nuts (you can replace the almonds with walnuts), raisins.

Roll out the dough into a layer, 0.3-0.5 thick. Lubricate it with melted butter, leaving the edges unlubricated. Sprinkle the dough with crumbs, spread the entire filling on one wide edge, wrap the roll (wrap the side edges inward). We make parallel cuts along the entire surface of the roll at a distance of 2 cm. You can roll up the roll with a towel. Transfer the roll to baking paper or a silicone mat, or place it in a non-stick mold.

160 g sugar
50 g bread crumbs + some milk

Pour the raisins with rum and let it brew (from 30 minutes to 12 hours).
In a bowl, combine all the ingredients for the dough. Collect in a ball, put in a bowl, if desired, grease with vegetable oil and cover with foil. Leave on for about an hour.

In the meantime, prepare the filling. Pour a little milk over the bread crumbs and let it soak.
Add cottage cheese, sugar, eggs and soft butter to the crumbs.

Peel the apples and cut into small pieces. Add to the filling with the raisins and mix well.

Roll out the dough lightly on a floured parchment or damp towel.
Then pull out the dough with your hands so that you can see a towel or parchment through it.
Brush the dough with melted butter and sprinkle with breadcrumbs.
Put the filling on one edge.

Bend the sides of the layer inward and gently roll up the roll.

Brush the dough with melted butter again before baking. Bake at 170 degrees for about 40 minutes.

Serve with warm strudel

Viennese cafes are famous for theirapple strudel... It is difficult to say who exactly invented this pastry, but that it comes from Austria, that's for sure. It would seem that the recipe is very simple, however, like most dishes, this one has its own secrets. In addition, there are many types strudel ... Each of them has a special taste. This pastry very harmoniously combines thin dough, apples and other additives. The manufacturing time will take 60 minutes, and even less effort, so you can pamper yourself and your loved ones with such a dessert quite often.

Apple strudel: recipe

We will make a thin crispy dough from 2.5 glasses of flour, ¾ glass of water, 1 egg, 1 tbsp. vinegar, salt and grape seed oil. For a delicious juicy filling, we need a couple of sour apples (large), ¼ stack. brown sugar, half a cup of raisins and 2/3 cup. fragrant almonds.

Combine the egg with water and vinegar. Sift the flour together with the salt directly onto the desktop with a slide. Inside we make a crater and put 3 tbsp there. oils. Pour the egg mixture in three steps, kneading the dough with a fork, and then with your hands. Knead until it stops sticking to the table surface. Roll the dough into a ball, cover with cling film and leave for half an hour.


Steam the raisins in advance with boiling water and let it swell (10 minutes). Chop the apples, chop the almonds. We mix all the ingredients together with granulated sugar.

Lay out a linen towel on the table, sprinkle it with flour. Place the dough on it and use a rolling pin to form a circle about 25 cm in diameter. Now we carefully slip our hands under the dough, palms down, slightly bend our fingers. We begin to pull the dough from the center, moving it in a circle. Thus, we stretch it. Put the dough on the fabric again and gently pull from the center to the edges. Ultimately, you should get a rectangle 50x35 cm.

Lubricate the layer with fat, evenly distribute the filling, roll up a dense roll. We pinch on the sides. Transfer to a greased baking sheet. The oven must be preheated to 200 degrees. Bake for 35 minutes. Cool on the wire rack. Divide it into portions, place on a platter, garnish with cream.

Puff pastry apple strudel

Make a delicious frozen dough dessert. The result is the same, and you will spend much less time. So, we need such a grocery set: 2 sheets of dough, 3 large apples, half a teaspoon of cinnamon, 2 tablespoons. tablespoons of sugar, the same amount of flour, half a glass of nuts, 3 tbsp. brown sugar, one less than usual, 2 tbsp. bread crumbs, egg and 1 tsp. soda.


Let's start making a strudel. We will heat the oven to 190 degrees. Peel and chop the apples. Put them in a separate bowl and combine with cinnamon, two types of sugar and flour. We leave it at 20 so that the fruits let out the juice. In another bowl, mix the nuts, two types of sugar and crackers. Roll out 1 sheet of dough, pour nuts on top, and then apples. We wrap the roll. We repeat the same with the second piece of dough. Note that the filling should be enough for two strudel. We put the products in a heat-resistant form, grease them with an egg, make longitudinal cuts, send them to the oven for 40-45 minutes. Serve warm with scoops of ice cream.

Real strudel can only be tasted in a high-end café or in the homeland of the dessert. You can also cook it yourself, believe me, your strudel will be very different from what is served in inexpensive eateries. Following this recipe, following the necessary steps step by step, you will bake a real masterpiece, which is served only in Viennese cafes.


Let's start by preparing the products. We need: 270 g flour, 1/2 tsp. salt, 50 g white of bread , 100 g walnuts, 1 tsp. cinnamon, 50 ml of vegetable oil, 120 g of butter, 80 g of dark dried grapes, 6 small apples, 150 g of sugar, 40 g of powdered sugar, half a lemon and 125 ml of water.

For the 1st stage, take 1.5 stacks. flour, salt and vegetable oil. Sift the flour, salt, add oil and 125 ml of water. Knead the dough for 10 minutes. The result should be silky and elastic. We roll out a ball from the dough, wrap it in foil and leave it to rest for 40 minutes.


At the 2nd stage of cooking, we will prepare croutons from butter (30 g) and bread. Dry the slices in the oven, grind in a blender and fry in butter.


3rd stage - combine raisins with nuts in a bowl for filling.


During the 4th stage, we will prepare a fragrant filling. To do this, cut the peeled apples, sprinkle with lemon juice. Combine fruits with nuts, raisins, sugar and cinnamon.


Stage 5 is the most time consuming because we will stretch the dough as described in the previous recipe. Be careful not to break the thin layer.


At the 6th stage, grease the dough with fat, sprinkle with crushed breadcrumbs, put the filling on top and wrap the roll.


The edges must be bent so that the inside does not leak out. In the process of wrapping, grease each turn with oil.


We put our trust in the oven in step 7 of our process. Warm up to 180 degrees. We bake for 45 minutes. In the process, it is advisable to grease the strudel with fat a couple of times. We put the finished product on the wire rack, cover with the remaining oil. Crush with powder, chop and serve until warm.


Strudel with apples: a recipe from Julia Vysotskaya

For the dough, we need such a grocery set: 250 g of flour, 1 egg, 3 tbsp. vegetable oil, a pinch of sea salt. We will make a delicious filling from 8 aromatic apples, half a pack of butter, 80 g of dried grapes, 70 g of almonds, 50 g of granulated sugar, 1 egg, half a lemon, 2 tbsp. milk, 30 g bread crumbs or chopped biscuit cookies, 1/4 tsp. cinnamon.


Prudently put the oven on to warm up, the temperature inside should be at around 220. Pour the sifted flour with a slide, make a depression inside. Pour in 1 tbsp. butter, 100 ml of warm water, drive in an egg, salt and knead the dough. Divide it in half, add another 1 tbsp to one half. butter, combine with the second and knead again. Roll up the ball, pour over the remaining oil and leave it alone for 30 minutes.

Squeeze the juice from half a lemon. Cut the apples, sprinkle with juice. Grind the almonds. Pour boiling water over the raisins.

Lay out a cotton towel on the table, sprinkle with flour and roll out the dough on it, as thin as possible. Lubricate the layer with oil, sprinkle with breadcrumbs, leaving one edge, 10 cm wide, clean. Combine sugar and cinnamon. We spread the filling on crackers, crush it with a mixture of sugar and cinnamon, put a few pieces of butter. Beat the yolk with milk with a fork and coat the free edge with this.

We roll up a tight roll with a towel - a reliable and proven method. Place the product with the seam down on a greased and floured baking sheet. Lubricate the top with a mixture of milk and yolk, send to the oven for 40 minutes. In the process, it is necessary to grease the strudel on top several more times.

Apple strudel from curd dough

We need such a grocery set: 800 g of apples, 2 tbsp. lemon juice, 80 g chopped almonds, 100 g butter, a handful of dried grapes, 4 slices of bread, 2 tsp. cinnamon, vanilla and 2 tbsp. powdered sugar. For the dough, take 170 g of flour, butter and sour milk cheese.

Knead the dough from the declared ingredients. We form a flat square, wrap with cling film and remove for 12 hours in the cold. After the time has elapsed, we form a layer of 40x50 cm from the dough, fold it in three, folding one edge to the middle and covering it with the second, and then roll it out again and fold it again only in four. Thus, we get exactly puff pastry.

For the filling, soak the raisins in cognac for half an hour, fry the bread crumbs for a short time in butter. Peel the apples, chop, sprinkle with cinnamon, sugar, mix with nuts, raisins.

Roll out the dough as thin as possible. Lubricate with fat, leaving the edges. Sprinkle with crumbs - this manipulation will help get rid of excess moisture, which will certainly appear in the baking process in the form of apple juice. Pour the filling on top. We make a roll, bend the edges, make parallel cuts. We transfer the product to a baking sheet, on top of baking paper or silicone mat. In the oven at 200 degrees, the strudel will be baked for about 45 minutes. Sprinkle with powder before serving.


Strudel with apples- an excellent delicacy that both children and adults will be happy to eat.
