Absolutely everyone loves them - from the smallest to the oldest. Sweets are easily digested by our body, are stored for a long time and well, contain a lot of carbohydrates that provide us with a lot of energy.

Sweets are often served for dessert - along with a cup of aromatic coffee or tea. At celebrations, weddings, corporate parties, certain types of sweets are served on separate tables, being an ornament and an obligatory component of the holiday.

Depending on the ingredients used in the preparation process, sweets can be sugary and floury. The basis for sugary sweets is sugar, honey and various syrups. The basis of flour sweets is flour with all kinds of spices and fillers.

Sweets are, first of all, a variety of home-made sweets. There are a whole lot of varieties of sweets - these are bars, sweets, caramels and candies, sweets with different fillings, truffles, toffee, grillage, waffle, chocolate, milk and fruit sweets and many, many others.

As a rule, the main component of all sweets are carbohydrates (glucose, fructose, sucrose, lactose, etc.), quite a few proteins, fats, a drop of vitamins and minerals. Although, this applies to most candies. However, if you and I prepare homemade sweets from dried fruits, honey and nuts, then, of course, their nutritional value will be completely different.

Useful low-calorie sweets made from dried fruits, nuts, with pieces of carrots, pumpkins, with all kinds of spices and honey do not contradict the main principles of healthy and proper nutrition.

desserts- These are delicious sweet dishes, which, as a rule, end the meal. It was this order of serving sweet dishes that was finally formed only in the nineteenth century. However, at present, no one so strictly adheres to this sequence. At home, dessert appears on the table exactly at the moment when it is appropriate.

Until recently, dessert was considered a luxury and in most cases only wealthy people or people with modest incomes could afford it, but only on holidays and special occasions. Today, the value of sweet dishes is not so high. People with any income level can afford dessert. The difficulty is rather the choice of sweet dishes, because their variety is simply amazing. Moreover, difficulties arise not only at the time of purchasing a dessert, but also when choosing a recipe for preparing it at home. Even one particular confection has dozens, if not hundreds, of preparation variations.

The question naturally arises, what are desserts? Lots of types! So, for example, you can divide desserts depending on the products that underlie them. Thus, desserts can be fruit, berry, nut, chocolate, milk, flour, etc. In addition, sweet foods can be served cold, such as ice cream, or hot, such as hot chocolate. Desserts are also divided into types on the basis of whether baking is required for their preparation or not. Also, sweet dishes are often divided into simple and complex. This sign concerns both the preparation procedure itself and the composition of the dessert (a one-component dessert, respectively, is considered simple, and a multi-component dessert is complex). Desserts can also be quick to prepare, as they say, in a hurry, or long. You can continue the list of types of desserts indefinitely, so we will stop here, but we will consider desserts with and without pastries, cold and hot, simple and complex, in a little more detail.

With and without pastries

Dessert recipes that involve baking are, as a rule, flour products, for example, muffins, cookies, pies, pies, cakes, cakes, rolls. At the same time, the word “baking” itself should not be frightened. It seems that behind it lies a long and tedious cooking process. But this view is not entirely correct. Today, there are many devices that facilitate and simplify the baking process. So, for example, using a microwave, you can bake delicious cupcakes in no more than five minutes.

As for desserts without baking, there are no less of them than desserts with pastries. These include jellies, mousses, candies, ice cream, fruit salads, and even sweet dessert soups. Of course, this list is far from complete. There are many more desserts without baking. But the time of their preparation, despite the lack of heat treatment, can be much longer than that of sweet dishes that need to be baked.

Cold and hot

According to the serving temperature, desserts can be divided into those served cold and those served hot. Sweet dishes served cold represent the vast majority. These include not only ice cream and jelly, but also many types of pastries, which are also usually served chilled. The brightest representative can be called a cake. Even those versions of this dessert that are subjected to heat treatment are invariably served after many hours of exposure in the refrigerator.

Hot desserts include some dessert drinks (cocoa, coffee prepared in a special way, as well as hot chocolate), baked fruits, and also some flour products that are usually served warm.

Simple and complex

Desserts are simple and complex to prepare. Even a person with no experience in the field of cooking can cope with the creation of simple sweet dishes, but to prepare complex desserts, you will have to “arm yourself” with some tricks and secrets, and besides, with enough free time. However, having studied the recipes for preparing one and another type of desserts, you will understand that the indicator of complexity is conditional. Both one and the other type can be prepared without difficulty. In addition, desserts can be divided into simple and complex according to the number of components that are included in them. So a simple dessert is usually a sweet dish consisting of one or two components, and a complex dessert is a multi-component sweet dish.

In this section of the site you can find all the listed types of desserts. Choose the recipe of the sweet dish you like and start cooking it. It will not be difficult if you act in accordance with all the recommendations of a specific step-by-step recipe with a photo. By the way, the textual description of the cooking process is accompanied by step-by-step photos, which means that not a single nuance of cooking will escape you!

All recipes for the preparation of desserts contain very specific instructions regarding a particular cooking process. However, if you really want to master the art of confectionery, then you need to know some dogmas of working with a particular product. These are the tricks that must be in your "arsenal"!

  • A component of many desserts is chicken eggs. They must be fresh, otherwise you will not see a delicious dessert like your own ears. To determine the freshness of eggs, you can use a fairly simple method. It lies in the fact that the eggs should be dipped in a ten percent salt solution. Fresh product will immediately sink to the bottom. By the way, not the first freshness eggs are beaten very badly.
  • If you have to work only with chicken yolks, then you should remember that it is best to grind them, preheating. When warm, they will be more pliable than when cold.
  • But whipping whites is better when chilled. In this case, do not use aluminum utensils. Upon contact with it, the whites begin to darken.
  • If for dessert it is necessary to whip cream, then they must, like proteins, be pre-cooled. In addition, only fat cream is suitable for this purpose.
  • In the event that gelatin must be used to prepare a dessert, then it must be diluted in a ratio of one to ten, that is, one tablespoon of gelatin is poured with ten tablespoons of liquid. To dissolve the crystals of the above substance, it must be soaked for up to one hour. The liquid should be at room temperature. Only after this manipulation, gelatin is used for the further cooking process.
  • When choosing a biscuit as the basis for dessert, remember that you need to cut it only after it has completely cooled. A hot and even warm biscuit will crumple and break.
  • When baking something on a baking sheet, do not be too lazy to cover it with baking (parchment) paper. This will make it easier to separate the baked product, and you won’t have to wash the baking sheet.

Good luck with your homemade desserts! And if you doubt your abilities, then be sure to check with the desired step-by-step photo recipe.

Ingredients:

Chocolate - 100 gr.
Chicken eggs - 2 pcs.
Strongly brewed coffee - 30 ml. Brewed coffee must be left to stand until cool.
Sugar - 0.5 tbsp.
To taste, you can use strawberries as a dessert decoration.

Cooking step by step:

First you need to melt the chocolate in a steam bath and mix thoroughly with coffee. Wait until the mixture has cooled down. While the mixture of coffee and chocolate is cooling, you need to separate the yolks from the proteins.

Beat egg whites, gradually adding sugar. Whisk the yolks. In the chilled chocolate, first add the beaten yolks, and then the proteins mixed with sugar.

Pour the resulting mousse into 4 glasses and set to harden. The frozen dessert can be decorated with strawberries or other fruits to taste.

Dessert from cottage cheese

Such a dessert will not require a lot of expenses, but the taste exceeds all expectations.

Ingredients:

300 gr. sour cream.
80 gr. cottage cheese.
75 gr. granulated sugar.
10 gr. gelatin.
80 gr. purified water.
Vanillin can be added to taste.
As a decoration, you can use fruits, berries, mint, nuts, jam, etc.

Step by step preparation:

Place sour cream in a deep container, add cottage cheese, sugar and vanillin. Mix all components well. Heat water in a small saucepan. Its temperature should be above room temperature. Add gelatin to water.

Add the swollen gelatin to the rest of the ingredients, mix and pour into glasses. The resulting dessert must be kept in sub-zero temperatures for at least 3 hours.

It is better to prepare a curd dessert in the evening and leave to cool overnight. After the dessert is frozen, it remains to decorate and serve. From this product you can cook.

Dessert with caramel and bananas

Ingredients:

Banana - 2 pcs.
Caramel sauce.
Whipped cream - 1 cup.
Sugar - 1 tbsp.
Cracker crumbs - 1 small plate.
Melted butter - 1/3 cup.
Vanilla flavored custard.

Vanilla Cream Ingredients:

Sugar - ½ cup.
Corn starch - ¼ cup.
Salt - 0.5 tsp
Milk - 750 ml.
Chicken eggs - 2 pcs.
Butter - 2 tbsp.
Vanilla - 0.5 tbsp.

The ingredients are for 6 servings.

Step by step preparation:

First of all, the main part of the dessert is prepared. It is necessary to place crumbs from crackers, granulated sugar and melted butter in a deep plate. Mix and put in the oven to bake for 10-15 minutes. Once the cake is golden brown, take it out and leave to cool.

While the base is cooling, prepare the custard. Pour salt, sugar, corn starch into a metal container, pour milk and mix. Place over low heat and bring to a boil. Keep boiling until the mixture thickens.

Gradually add beaten eggs to the corn-milk mixture while stirring constantly. Leave on low heat in a boiling state for 5 minutes, then the container must be removed from the heat.

Add vanilla and butter, mix thoroughly. Leave to cool. After the container has cooled down, you can place it in the refrigerator.

Dessert assembly scheme

1 layer: about two tbsp. Pour cracker crumbs into glasses and press down with another glass of smaller diameter as shown in the photo below. This is done in order to get a solid layer.

2 layer: on top of the cracker, you need to put a not very thick layer of custard, but on top of a banana cut into rings.

Spread whipped cream in 3 layers.

Layer 4: Sprinkle the cream with a thin layer of crackers and pour over the caramel.

5 layer: repeat the second layer.

Layer 6: The last layer needs to be decorated beautifully so that the delicacy looks attractive. Spread a layer of whipped cream, sprinkle with cracker crumbs, arrange banana rings nicely and drizzle with caramel.

Custard cakes with whipped cream

Dough Ingredients:

180 gr. sifted premium flour.
100 gr. butter or margarine.
4 medium sized chicken eggs.
1 glass of milk or warm water.
0.5 tsp salt.

Cream Ingredients:

150 ml. cream with a fat content of 33-37.
0.5 cups of powdered sugar. You can use regular sugar.

Powdered sugar can be used for decoration if desired.

Test preparation:

Pour milk into a saucepan with a thick bottom. You can replace with water, but the dough in milk is obtained with a more delicate texture and taste. Add butter (margarine) to the milk and cook over low heat until the butter dissolves.

Pour all the flour into the pan at the same time and immediately start stirring, while the pan does not need to be removed from the heat. Flour should "brew". Until this point, you will need to mix the flour for 2-3 minutes.

Then remove the pan from the heat and leave to cool until the dough reaches room temperature. In the cooled dough, add 1 egg, each mixing well with the dough. The process of mixing eggs with dough is quite laborious, but using a mixer is not recommended.

Place the resulting dough in a pastry bag for baking, you can use almost any nozzle, but it is better to give preference to the “large open star”. Line a baking sheet with parchment paper and squeeze out the rings.

Put to bake in the oven preheated to 180˚C for 10 minutes. Next, the temperature must be reduced to 160 and left to bake for another 15 minutes. Do not open the oven during cooking. Remove the baked rings from the oven and leave to cool.

While the rings are cooling, you should prepare the cream. Pour cream into a deep plate, add sugar. Using a mixer turned on at medium speed, beat until a thick homogeneous mass is obtained. This can take up to 5 minutes in time.

Cut the cooled rings lengthwise into two halves and fill with cream using a pastry bag, connect the two parts of the ring. The nozzle can be used alone. Ready-made cakes should be put in the refrigerator to cool, and sprinkle with powder before serving. Optionally, you can cook for custard cakes.

Making your own marshmallows

The dessert is similar to marshmallows, just as airy and tender. The preparation of the dessert is quite simple and does not require prior preparation or any professional skills. Such a dessert will be a great option for a festive table or addition to a cup of tea. Also, marshmallows can be used as a decoration for confectionery.

Ingredients:

2 proteins from chicken eggs.
75 gr. Sahara.
25 gr. instant gelatin.
110 ml. warm water.
1 tsp vegetable oil.
Food coloring can be used if desired.

Step by step preparation:

Pour gelatin into a plate (prefer glassware). Pour in water and leave to swell for about 15-20 minutes. Place the egg whites in a bowl and beat with a mixer at medium speed. It should be foam.

If natural products are preferred, then carrot, beet or spinach juice can be used as a dye. For a more saturated color, the amount of dye must be increased. After adding the dye, continue to beat for a couple more minutes.
