What you need to make caramel on a stick

To make a regular lollipop candy on a stick, you only need 2-3 ingredients: sugar, water and a few drops of vinegar or a little more lemon juice. The acid is needed so that the candy mass does not crystallize. But before, we did it without acid. If the sugar melts and then crystallizes again, it's okay - keep heating and stirring and it will melt again. The main thing is not to overexpose on fire, otherwise the syrup will acquire a bitter taste. Burnt sugar candies are not for everybody's taste.

You also need a wooden spoon or spatula for stirring and a deep cooking container - a small saucepan, ladle or bowl with a thick bottom, or a frying pan with high sides. Many people worry that it will be difficult to clean the container from the frozen syrup. But it should just be filled with water and left to stand. The frozen syrup will completely dissolve in the water.

In order for the caramels to turn out on sticks, you need to prepare them in advance, otherwise, while you are looking for or taking them out, the syrup may freeze (and it freezes quickly). If you do not have lollipop sticks, then they can be successfully replaced by wooden sticks from, kebab skewers, toothpicks or, if there is nothing at all, matches (break off the tip with gray or cut off with scissors).

You will also need lollipop molds. Metal or silicone are suitable for making cookies; if they are not there, then you can use spoons or a baking sheet, just pouring neat little puddles over it. If there is a hazelnut, then this is also a good option: you can make round candy nuts or chupa chups using only the lower part of the hazelnut. But the syrup will have to be done twice. Put the halves already hardened and taken out of the mold on the molds that are still hot, just filled with sugar syrup, and both halves will grab each other. Place sticks between them. Don't forget to grease your homemade candy tins vegetable oil (silicone can not be lubricated).

How to make caramel on a stick

You need to start preparing the mass for caramel over medium heat, stirring all the time; when it boils, reduce the fire by half. When the syrup turns golden brown, heat it for another 20-30 seconds and then remove from heat. In terms of viscosity, the syrup should resemble office glue. To test, drop the syrup into a glass of cold water. If the drop has solidified, then the syrup is ready. After removing the container from the heat, you need to stir the syrup a little more until the bubbles disappear and you can pour it into molds.

To diversify the color and taste of candies, they can be made with milk, cream, fruit and vegetable juice; add to cocoa syrup, cinnamon. On the molds, you can decompose the figures from a, pour sunflower or pumpkin seeds, nuts. Also, caramel is very tasty with fresh crushed fruits and berries or raisins, candied fruits, dried apricots, dried prunes. And already frozen caramel can be dipped in or applied with a brush, rolled (sprinkled with water or smeared with a thin layer of honey) in sesame or coconut.

By the way, lollipops can help with colds if lemon is added to sugar syrup. They will soften your cough. And to relieve a runny nose, it is good to add mint. good for both cough and runny nose. But honey cannot be added to hot sugar syrup, because when heated, it emits harmful substances.

You can decorate Easter cakes with lollipops: make domes using shapes in the form of hearts. Sticks will need to be attached on the other side of the hearts and stick them into the finished cakes. Or, if there are forms with hares, make caramel Easter bunnies.

Lollipop on a stick

To make the caramel on a stick familiar to us from childhood, you need to prepare

10 tbsp. tablespoons of sugar
4 tbsp. spoons of water
4 drops of vinegar (or 1/4 teaspoon of lemon juice)

  1. In an iron bowl, combine water, sugar and vinegar;
  2. put on medium heat and stir;
  3. when the mass boils, reduce the heat slightly, continuing to stir;
  4. remove from heat when the syrup turns golden and runny;
  5. stir the syrup a little more so that the bubbles disappear;
  6. pour the syrup into greased molds;
  7. insert wooden sticks immediately. Done! Wait 10-20 minutes for cooling.

Caramel with fruit or vegetable juice

Caramel will turn out colored from juice, for example, cherry or beetroot. Water can be completely replaced with juice - as you like. Take

10 tbsp. tablespoons of sugar
2 tbsp. spoons of water
2 tbsp. tablespoons of juice

Prepare caramel as described above, but the readiness of the syrup can be checked not by color, but by the viscosity and hardening of the droplet in a glass of water.

Cream caramel

6 tbsp. tablespoons of sugar
2 tbsp. tablespoons of cream
you can add vanilla

Lollipops with cocoa

1 cup of sugar
2 teaspoons of cocoa powder
50 grams of water or milk

Simple sugar candy recipe

This is the most common way to make sugar candies at home. It will not take you much time and will only bring positive emotions, especially if you do this business with your children.

In a ladle or frying pan, mix the water and sugar. On average, we put four times less water than sugar.

Add a couple of drops of vinegar, it prevents sugar crystallization, without it the candy will be cloudy. Citric acid can be added instead of vinegar based on your taste preference.

On low heat, bring the mass to a boil, not forgetting to stir occasionally. Next, cook, without ceasing to interfere, until the composition acquires a caramel color. If you add a flavoring emulsion, you get a colored candy with different tastes.

We coat the pre-prepared forms with oil and pour the resulting syrup into them. After a few seconds, stick the sticks into the still hot lollipops and leave them alone until completely cooled (for about half an hour or an hour).

We take out the products from the mold. And now you can eat delicious sweets.

Burnt Sugar Candy Recipe

This recipe is not much different from the classic version of making "cockerels" (as sugar candies are often called). But the taste is markedly different.

Ingredients:

  • Burnt granulated sugar - half a glass;
  • Plain water - 4-5 tablespoons;
  • Vegetable oil for lubricating molds;

  • Citric acid (a scanty pinch, you can do without it).
  • Vinegar (about 2 tablespoons).

  • Boiled water - half a glass;

It is necessary to prevent the caramel from becoming sugared and acquire a more uniform texture.

The optimum temperature for cooking caramel is 135-150 degrees

Cook the caramel over low heat for 10-15 minutes. Do not stir it in order to avoid the formation of many air bubbles. Nevertheless, do not move far from the stove, so as not to miss the exact moment when the viscous mass is ready. It should not turn dark brown, that is, overcooked, otherwise toffee will turn out instead of hard candies. Take a small amount with a teaspoon and drip it into cold water. If the droplet hardens immediately, then the caramel is ready, if not, cook for a few more minutes.

Homemade lollipops: variety of colors and flavors

If you are using color or flavor, add it at the very end of the caramel preparation. For this, it is not necessary to use factory powders, provided that there are natural products at home that give the color and taste you need. Red and pink shades will appear in sweets from raspberry juice, cranberry, lingonberry, cherry, currant, beetroot. Coffee, burnt sugar and cocoa powder give brown color; white - milk, cream, icing sugar; yellow - pounded lemon zest and saffron; green - spinach broth, etc.

Take the molds, coat the inside with vegetable oil using a narrow cooking brush and gently fill with the hot sweet brew. Cut the sharp edges off the wooden sticks, break them in half and insert them into the slots. If you do not have molds, this is not a problem, you can make lollipops without them. Spread out parchment paper, oil it, and dab the caramel in small specks. Let them harden, then pour a second layer on top of them and immediately put sticks in it up to half the diameter. Fill the cakes with a couple more of the same, pausing for them to harden.

If bubbles nevertheless appear on the surface of the lollipops, quickly rinse them in warm boiled water.

Leave the lollipops for a few hours or from evening to morning, remove and wrap in plastic wrap.

When the mass began to boil, I note the time and cook for exactly 12 minutes, or to a temperature of 150 degrees. All this time, every 10 - 15 seconds, I stirred this mixture so that it would not burn. The mass will foam, but that's okay. When I see 150 degrees on the thermometer, I remove the saucepan from the heat and then everything needs to be done very quickly.

If you have lollipop molds, use them, but I don't have one, so I'll take a Teflon mat, and a silicone mat will work as well. Long skewers should be prepared in advance. Now I take a tablespoon of caramel and pour it onto the rug to make round sweets. I pour three of these circles, then sprinkle them with sprinkles and insert the skewers. Then again I do three circles and everything else, and so on until there is caramel. It is important to pour it in one place, then the correct shape will be. If you immediately fill in a lot of circles, and only then you pour in the powder, then it simply will not stick, since the caramel freezes instantly.
