Lazy stuffed peppers are a very tasty and quick dish for every day. It is incredibly simple to prepare, and it tastes exactly like stuffed peppers. By the way, in a plate, the prepared food looks incredibly appetizing. It is ideal to serve this pepper with sour cream, but you can do without it.

Ingredient List

  • minced meat - 500 g
  • parboiled rice - 1.5 cups
  • carrots - 3 pieces
  • sweet bell pepper - 6 pieces
  • large tomatoes - 5-6 pcs
  • onions - 1-2 pieces
  • vegetable oil - 150 g
  • lemon juice - to taste
  • salt to taste
  • sour cream - for serving
  • spices - cumin, black ground pepper - taste

Cooking method

Peel and wash carrots and onions. Wash the tomatoes and peppers. At the same time, peel the seeds from the pepper.


Finely chop the onion, and dice or coarsely grate the carrots.


Cut the pepper into strips.


Pour vegetable oil into the pan (it is better to immediately into the cauldron where the dish will be prepared) and put the prepared vegetables. Stir and simmer until the carrots are tender.


If the rice is not parboiled, I usually wash and heat the rice in oil or simply in a dry skillet.


Pour boiling water over the tomatoes and peel them (you can skip this step). Cut into rings. Finely chop the greens with a knife (I love the combination of pepper and celery, so in the photo he is my favorite).


Transfer the vegetables from the pan to a cauldron or pot (like mine). Add minced meat, herbs, salt and season with lemon juice and add spices to taste. Mix thoroughly and pour 3 cups of boiling water into the cauldron. Add parboiled rice, put tomato rings and cover tightly.

Bring to a boil and simmer, without interfering, over low heat until tender (at least 40 minutes). Wrap something warm and let it brew. Then put on plates, season with sour cream and serve.

The first thing I did was cut the onion into small cubes, grate the carrots on a coarse grater and sauté them together in vegetable oil. It is better to do this immediately in a deep saucepan or in a cauldron. Since the whole dish will be cooked there.

I peeled the bell peppers from the seeds, cut them into arbitrary cubes and sent them to stew with onions and carrots.

I peeled the tomatoes off. To simplify this procedure, I sent them to swim in boiling water for a couple of minutes.

The skin then peels off by itself.

Mixed for the last time, tightly closed the lid, reduced the fire to a minimum and extinguished until cooked.

I didn't notice exactly in time, well, I think you will understand when the dish is ready. Eat hot and always with sour cream. Very tasty.

    Sort the rice, fill it with water and put it on the stove. As soon as it boils, reduce heat to low and cook for 10 minutes. Then discard in a colander, rinse with cold water.

    Free the bell peppers from the tails, peel off the seeds and partitions. Chop coarsely so that the pieces go into the neck of the meat grinder, and pass through it.

    Combine the minced pork, rice and chopped bell peppers. Season with salt and pepper to taste.

    Chop the peeled onions into small cubes, and chop the carrots with a coarse grater. You can also cut it into thin strips.

    In heated sunflower oil, fry the onion and carrot for 5 minutes. Transfer to rice and minced meat.

    Add the egg, mix the resulting mixture well and beat it a little. Cover the container with the minced meat with cling film and put it in the refrigerator for an hour to soak it.

    Take a baking dish with high sides, brush it with sunflower oil. Now, with wet hands, make large cutlets out of minced meat and put them on a baking sheet close to each other, but so that they do not touch.

    Put the sour cream in a small bowl and dilute with a glass of boiled water. Season with a little salt and pepper. You can throw chopped dill. Pour the resulting mixture into the lazy stuffed peppers in a baking sheet and send them to the oven preheated to 200 degrees for 40 minutes. Do not take out the finished dish immediately, let it stand for another half hour in the warmth after the timer signal and serve it to the table.

"Stuffed" lazy pepper. Basic recipe

Yes, people say for a reason: laziness is the engine of progress! So you don't need to stuff anything: just put the ingredients in the pan and the carcasses. But for this we need: a kilo of sweet peppers "from sunny Bulgaria", a kilo of fresh ripe tomatoes, a few carrots, a few onions, a head of garlic, vegetable oil, a spoonful of sugar or honey, 2/3 cup of polished rice. Well, and salt-peppers-spices according to your individual taste - and you can start cooking "stuffed" lazy peppers.

Cooking is very easy!

We wash the rice in cold running water, put it on a sieve. We boil water in a container, salt, add cereal and cook rice almost "until ready", that is, fifteen minutes. We discard it in a colander.

While we cook the rice, peel the vegetables at the same time. Cut the bell pepper into medium strips or cubes, finely chop the onion, and coarsely grate three carrots. Press the garlic with a knife blade and then chop.

In a "family" stewpan with thick walls, heat the oil, put the onion there, fry a little over low heat until soft. Add to the onions and carrots, fry, stirring occasionally, to obtain a golden hue.

Add fresh tomatoes cut into slices or the same cubes into the stewpan (by the way, in winter, when you can't buy fresh ones, you can safely use canned ones, or, at worst, tomato paste), pour half a glass of water there. Bring to a boil, simmer for another ten minutes.

Put the bell pepper in a saucepan. Gently mix the contents and simmer under the lid for a quarter of an hour. Add boiled and sugar. Salt and sprinkle with spices to taste, cook for a couple more minutes over low heat.

Turn off the fire, remove the stewpan from the stove, let it brew under the lid for a while - and you can serve it to the table! Lazy stuffed peppers with rice are excellent eats both hot and cold.

For the winter and for every day

A similar dish - lazy pepper, "stuffed" with rice and carrots with onions, can be prepared for the winter. When there is not enough vitamins in the cold season, we will open and treat our relatives and friends. Moreover, during the season (late summer - early autumn), when the market and the store are full of cheap ripe vegetables, such a dish can be cooked at least weekly until you get bored - but you won't get bored soon! It is also good for those who follow the figure, diet, or are vegetarian by conviction. And during the fast you can eat it - that's how universal!

Lazy Stuffed Peppers: Minced Meat Recipe

But how did we forget about minced meat, you ask? Of course, lazy stuffed peppers can be made with this wonderful ingredient too! And the dish will become even tastier and richer. In addition, the minced meat itself can be chosen according to your own culinary preferences. After all, someone likes light chicken (turkey) options, and someone loves fatter (assorted pork and beef or veal). So, we will need: a pound of minced meat (and it is better to cook it with your own hands, and if you take it in the supermarket, then be sure to read the composition), an egg, a glass of rice, tomatoes - 0.5 kg, a couple of medium-sized carrots, an onion, spices (it will be good to use a mixture of peppers, there is also salt), salt, vegetable oil. Well, and, of course, fresh bell peppers - a kilogram.

Cooking is easy and simple!

Boil the rice and cool it. You can cook until half cooked, as it will need additional heat treatment.

We clean fresh bell peppers from seeds and cut off the stalks. And then cut into strips along the fruit. By the way, you can use a ready-made lecho instead of this ingredient (this will be especially relevant in the winter season), and instead of fresh tomatoes, take tomato paste or tomato juice.

Chop the onion finely, grate the carrots coarsely. Fry both in a well-heated frying pan with a little vegetable oil. Cool it down. If we use fresh pepper, then it must also be simmered first. And if you take a ready-made lecho for our dish, then just drain the sauce - and you don't need to fry.

Add rice to the minced meat, salt a little, pepper a little. We introduce into the mass and onions with carrots, and then - and pepper. Stir and simmer under a lid over low heat - about ten minutes.

We take out our semi-finished product from the container and cool it down. Then - the most important lesson: we form small cutlets from the resulting mass. We put them in a baking dish.

Add sour cream (a couple of tablespoons) to the sauce left over from stewing, stirring. Fill the "cutlets" with this good and send them to the preheated oven. We bake at a temperature of 170 Celsius - about half an hour. So, now we figured out the lazy stuffed pepper (photos are attached).

We take it out of the oven - and onto the table! Serve embellished with fresh chopped herbs - dill, parsley, green onion. Just lick your fingers!

In a multicooker

Lazy stuffed peppers in a slow cooker are easy to cook. No wonder they say that this kitchen appliance was invented exclusively for lazy people. But, be that as it may, but a fact: the multicooker will do everything itself, well, except perhaps except for the preparatory work. We take almost the same ingredients as in the previous recipe. Therefore, we will not list them again. But the way of cooking food has been slightly changed, according to the instructions of the kitchen miracle - the multicooker.

Cooking is the easiest option

We take a kilogram of sweet bell peppers and clean them from the inside of seeds, cutting them around the stalks. Cut into small cubes or strips - as your culinary imagination tells you.

Boil rice until half cooked in a multicooker (the "Rice" mode is available in many models of various companies).

Peel carrots and onions and chop finely. We drip a little lean oil into the multicooker bowl, turn on the "Fry" mode and lightly fry the vegetables. Add the fresh tomatoes cut into cubes. Then there will be minced meat there (even if this time it will be dietary - from chicken fillet). After and fig. Stir and simmer ("Stew" mode) for 15-20 minutes.

Pour chopped bell peppers on top, salt and add spices. Instead of tomatoes, you can use natural tomato paste.

Simmer for another 5-7 minutes. After that, turn off the device and let the dish brew a little.

How to serve

We serve this dish to the table, spreading it out in portions, hot, decorating with fresh herbs: parsley and dill. For such a dish, you don't even need a side dish. It is prepared quite easily, and the delicious food is notable. It is recommended as an "everyday", everyday dish (especially in the season), but it can also be used as a festive one.
