How to make delicious homemade ketchup:

We need to grate ripe tomatoes on coarse grater or immediately pass the juice through a special juicer in which the juice comes clean, without skin, stalks and seeds. I put tomatoes through this juicer. Set the resulting juice to cook (boil) on fire at least 2 times. From 10 p. tomato juice should be 5-6 liters.

Sometimes just boiling (how it boils) tomato juice 5-10 minutes, I let it stand and drain upper layer settled "water" and already boil what has settled - thick.

Then we need to add more thick juice peeled vegetables: bell peppers (in halves), onions (whole or in halves), cloves of garlic and hot peppers.

Cook the ketchup over medium and then low heat (or in a multicooker on the BAKING or FRYING mode, then on the STEWING or SOUP mode) until the vegetables are cooked. When the vegetables are soft, the tomato will need to be wiped through a sieve or blended until smooth.

Sometimes I boil vegetables in half of the tomato mass, and then punch with a blender, rub through a sieve and combine with the second half of the pure tomato mass, which is being boiled down at the same time.

Salt the resulting tomato mass and sugar, be sure to taste it and set it to boil down to the consistency that you think is necessary. I have from the original volume of tomato juice (10 liters. + Rubbed boiled vegetables) it turns out about 3 liters. ready-made, medium density tomato ketchup... You can make the ketchup even thicker - this is at your discretion, the most important thing is that the tomato does not burn during cooking. Already at the end of cooking, you can remove the cheesecloth with spices from the tomato.
