    4. Heat 2/3 cup sugar in a heavy saucepan over medium heat. After a few minutes, it will start to melt. Stir it so it does it evenly. Continue cooking until amber color and then remove from heat. Gently fold in the cream, a little at a time. If the sugar starts to set, return it to slow fire and keep cooking.

    5. Let the caramel cool slightly and then add 1/4 teaspoon vanilla and salt. Caramel can be stored in a glass container in the refrigerator for up to a week. Before use, it is better to heat it to the desired consistency.

    6. In a large bowl, using a stand mixer, beat 1/2 cup cream with 1 tbsp sugar until soft peaks form. Gently stir in sour cream and 1/4 teaspoon vanilla. Keep them chilled until serving. Mine still held their shape the next day after beating.

    7. Break the peaches into halves and remove the pits. Preheat oven to 190 degrees. Grease a baking dish well with butter. Brush the peaches generously maple syrup and sprinkle with cinnamon. Lay them cut side down and bake for 30-35 minutes.
