Whisk the yolks together with 150 g of sugar, vanilla sugar and lemon zest until a frothy mass is obtained. Grind the protein with salt. Stir in the yolk mixture, add flour, cocoa powder, starch and baking powder.
Fill the baking dish evenly with the dough, bake for about 25 minutes. Remove from the mold and let cool.
Cut the biscuit into two cakes: one should be 2 times thicker than the other. Brush the thin crust with jelly. Thick cut into cubes and saturate with sweet tincture.
To prepare the filling, mix 125 ml of milk with 3 eggs. Bring the remaining milk to a boil and stir in the egg mixture while stirring. Bring to a boil again and cool.
Mash the butter with sugar and gradually add it to the beaten egg mixture (1 teaspoon each). Mix the resulting mass with the biscuit cubes soaked in the tincture.
Decorate the cake with chocolate cream and sprinkle with chocolate chips on top. Refrigerate the cake for 1 hour.
