We offer to bake cod pies in the oven from sponge yeast dough in milk with vegetable oil.


For the test:
- flour - 2.5 cups
- sugar - 3 tbsp. spoons
- salt - ½ teaspoon
- dry yeast - 1.5 tsp
- milk - 1 glass
- egg - 1 pc.
- vegetable oil - 3 tbsp. spoons

For filling:
- cod fillet - 400 g
- onion - 1 pc.
- salt - to taste

Additionally:
- vegetable oil for lubricating the baking sheet - 2-3 tbsp. spoons
- egg for greasing pies - 1 pc.

Cooking cod pies

1. Dissolve yeast in warm milk, adding sugar and 2 tbsp. tablespoons of flour. Leave the dough for 15-20 minutes for the yeast to swell and ferment.

2. Add the egg to the fermented dough ( room temperature), vegetable oil, salt and stir everything until smooth with a whisk.

3. Top up in liquid mass sifted flour and knead soft elastic dough... At the end, knead a lump of dough with your hands and leave, covered with a towel, in a warm place for 30-40 minutes.

4. Cut the fish fillet into pieces (10 or more pieces), add salt. Peel the onion and cut into thin half rings or quarters.

5. Roll out the dough that has come up with a rolling pin into a thin rectangular layer and cut it into 10 squares.

6. On each square of dough, put a salted piece (or several) fish fillet and on top is a bow segment. To form a pie, bend two opposite sides of the dough square over the filling, wrap the second pair of opposite edges on top and pinch, leaving a hole in the middle.

7. Place the teatska pies on a greased baking sheet and let sit for 20 minutes. Then grease the top of the pies with an egg and send to the oven, preheated to 180 degrees, for 25-30 minutes

Fish fish recipe with cod

Ingredients:

  • kefir - 1 glass,
  • eggs - 1 pc.
  • sour cream - 3 tablespoons,
  • baking powder - 1 pack,
  • salt - 0.5 teaspoons
  • flour - how much the dough will take.
  • cod - 500 g,
  • onions - 4 pcs.
  • butter- 80 g,
  • salt, black pepper.

Method of preparation: Knead the dough. Break an egg into a cup, pour out kefir, add sour cream, add baking powder and salt. Stir well and add flour, knead not tough dough. We leave it under the cup to rest.
This time we will cook the fish. Wash the cod, salt and pepper the sirloin.
Cut the onion into half rings. Roll out the dough in an oval shape, cut the edges, put the fish on it in the middle, spread the pieces of butter on the fish.
Close the pie, intertwining the ends. Put on a greased form and send to a preheated oven, bake for 1 hour.

This option is simplified and tastes are slightly unusual for the Slavic soul, but on the other hand, Mediterranean aromas and tastes have entered our life so long ago that you won’t surprise anyone with them ... But no, you will! That's so wonderful, fluffy, fragrant cake with leeks and olives stewed in white wine, snow-white gentle crackling and a hint of thyme.

INGREDIENTS:
½ portion
1 leek (white part)
10 olives
400 g cod fillet
1 tbsp. guilt
1 pinch thyme
salt, pepper - to taste
1 tbsp olive oil
20 g butter

For lubrication:
1 egg
2 tbsp milk
1 pinch of salt

Cooking method:
divide into 2 equal parts. Roll out one with a diameter of about 24 cm. Cut off 1/4 of the dough from the second. Roll out a larger piece of the second part into a circle with a diameter of 20 cm. Roll out the remaining piece and make slits to form a mesh. Cover each part with a damp towel and leave to rise for 30 minutes.

At this time, we are preparing the filling.
Cut the onion into thin rings and simmer in a mixture of olive and butter for 5 minutes until transparent. Salt. Add wine and simmer over low heat for about 5 minutes more. Let the onion cool slightly.

Salt the cod and simmer for 5 minutes.

Place a larger circle of dough in a baking dish covered with parchment (it is simply easier to remove the cake from the parchments from the form), forming the sides. We work with the dough carefully so as not to crush it too much.
We spread the filling on the base. First we distribute the onion, then we tear the olives into pieces (if with seeds, then remove) and also distribute evenly. We disassemble the cod with a fork into small pieces, put on top of the onions and olives, salt, pepper, season with thyme.
Close the filling with the second round of dough (smaller). We put a mesh on top of the dough and pinch the edges of the pie, at the same time with the upper mesh.
Leave it for proofing for another 30 minutes, covering it with a damp towel.

Preheat the oven to 180 ˚С.
Before sending the cake to the oven, grease it with a mixture of eggs, milk and salt.
Bake the cake for 30 minutes until golden golden brown... Cool on a wire rack.

My mom has two signature pies: meat and fish! This evening I just wanted a fish pie!

The products were found by themselves:

1. Yeast dough

I used purchased dough. It turned out to be less than the filling, because left from the preparation of Adjarian khachapuri, so the cake promised to be small.   • Cod liver - 250-300 g.

  • Black pepper - a pinch;

  • Kefir - 200 g.
  • Wheat flour - 240 g.
  • Sugar - 1 tsp;

Preparation

  1. Beat raw eggs with a whisk with salt and sugar, and then pour in kefir. Mix flour with baking powder, add to the egg-kefir mass and mix thoroughly again. The dough should resemble sour cream in consistency.
  2. Peel boiled eggs and chop finely. Add cod liver to them, mash it with a fork, add salt, pepper, and then mix.
  3. Turn on the oven for preheating (180 degrees). Grease a baking dish with oil, pour half of the dough into it. Then lay out the eggs with cod in a layer, and then pour the dough on top.

Cod and cabbage pie

Cooking process

How to bake

  1. Peel the onion, cut into rings and fry in oil until transparent.
  2. Rinse the fish, remove, cut into thin slices and rub with salt and pepper.
  3. Roll out the defrosted dough and divide it into two sheets.
  4. Rinse the potatoes, peel and cut into thin slices.
  5. Grease a baking sheet with oil, put a sheet of dough on it, decorating the sides.
  6. The first is a layer of fish, salt and pepper, then there is a layer of potatoes. Coat with mayonnaise on top.
