  • Next, knead the dough for lazy dumplings with handfuls. Depending on the moisture content of the curd, you may need a little more flour. As a result, we should have a rather soft curd dough that keeps its shape.
  • Divide the dough into parts. From each part we form a sausage with a diameter of one and a half to two centimeters. Cut into pieces a centimeter and a half thick. Roll each piece in flour, lightly pressing in the center. This is, so to speak, the traditional form of lazy dumplings, but you can come up with something of your own.

How to make lazy cottage cheese dumplings

We take a cup suitable for kneading dough and send cottage cheese into it. I made lazy dumplings with different cottage cheese and, for my taste, they are softer and softer with more fatty - from 5% and more. Excellent dumplings come out of the curd mass, but here it will already be necessary to adjust the amount of sugar.

Pour sugar to the cottage cheese, add some salt to it.


Add eggs to a cup and grind the mass until smooth. I like the grains of cottage cheese in the dumplings to be noticeable, so I just stir everything with a whisk. For a less grainy mass, it is better to use a blender.


To sweet curd mass add vanillin. Do not put more than half the bag - the curd dough will taste bitter.


Following the vanilla, sift the flour into a cup. I do not write the exact amount, because even with cottage cheese from one manufacturer it always turns out differently. This time it took me exactly 1.5 glasses.


The dough should come out soft, grainy (if you haven't used a blender). It will stick to your hands, so you definitely need flour for dustiness when working with it.


As soon as the dough is ready, you can put water for cooking the dumplings, they will form very quickly. Cut off a small piece from the dough, dust it with flour, roll it into a tourniquet. Adjust the width and height of the rope at your discretion, depending on what size dumplings you want to get.


Next, we cut the tourniquet into approximately equal pieces. In principle, already in this form, lazy dumplings can be sent to boiling water for cooking. But if there is a desire and time allows, you can quickly make them a little more accurate. Flip the sliced ​​pieces curd dough cut down and, dusting them with flour on both sides, flatten them a little. The resulting dumplings are oval in shape with a small depression in the middle.
