Purchased dough or homemade dough?

Yeast or yeast-free dough

The fundamental difference between the two types of dough is how they rise. That is, the meatloaf made of puff pastry with yeast will disperse a little on a baking sheet, become taller and acquire a large number of layers. And this is not very good for such a filling. But a puff pastry roll (sweet or with berries) without yeast will turn out too flat and inconspicuous. Therefore, you need to choose based on what kind of filling will be used.

Meat option

Most of all, such a dish is liked by men, who usually do not like baking too much. Meatloaf from puff pastry (purchased) is prepared very quickly if all the components are prepared in advance. We will need:

  • minced meat (it is good if it is made of pork and beef with the addition of onions and a loaf soaked in milk so that the consistency is cool);
  • onion;
  • spices;
  • White cabbage;
  • hard cheese;
  • puff yeast-free dough.

Step 1: filling

It is not difficult to prepare it: the minced meat is fried in a pan with a small amount vegetable oil... Finely chopped onions and cabbage twisted through a meat grinder are gradually added to it. Spices are always used exclusively to taste. Cheese is rubbed on fine grater and gradually introduced into hot minced meat. Add a couple of garlic cloves for flavor. It is better to remove the dough at this time from the freezer so that it thaws. Alternatively, you can defrost it in the microwave according to the instructions.

Step 2: the dough

Of course, a product bought in a store is much more convenient to use than to knead it yourself. Puff pastry rolls, the recipes of which can be very different, are cooked on average in 20-40 minutes at a temperature of 170-200 degrees. And to make them especially tasty, there is little trick... So, ready dough, which is most often sold in the form of frozen sheets, needs to be rolled out with a rolling pin into a small thin pancake, connecting the sheets together. This will make it easier to roll the roll later. If there is no rolling pin at hand, then it can be replaced by a simple Glass bottle... You do not need to sprinkle the dough with flour, it does not stick.

Step 3: rolling the roll

This is the most difficult moment in preparation, since the curling determines how the dish will turn out in the end, how neat it will be. A puff pastry roll is twisted as follows: first, the filling is laid out on the entire surface, stepping back 5 mm from each of the edges, except for one. This is necessary so that you can store it well. The dough with the filling is twisted with a tight block, with the help of a fork, punctures are made throughout the roll.

Step 4: bake

This is the simplest of all cooking. The oven is preheated to 200 degrees, lined on a baking sheet parchment paper, which will prevent the bottom of the culinary product from burning. The puff pastry meatloaf is laid out so that the edges do not touch the walls of the dishes on which it lies. If you are using a simple flat baking sheet, then the product can be put as you like. The baking time is 30 minutes.

Sweet pastries

One of the most popular and simple recipes is a variant filled with apples, cinnamon and sugar. It is not difficult to prepare it, even if there is no experience. We need:

  • apples;
  • puff yeast dough;
  • cinnamon (1 rounded teaspoon);
  • sugar (3 rounded tablespoons).

If you like sweeter baked goods, then the quantity granulated sugar can be increased. Puff rolls yeast dough differ from culinary products based on non-yeast dough in that the former significantly increase in volume during baking. As a result, airy and fluffy layers are obtained, which consist of many thinnest layers. Filling for apple roll it is simple to prepare: the apples are washed, peeled, seeds and core, finely chopped. Sugar is mixed with cinnamon. This sweet mixture is poured over the apples. The filling is ready. The dough is thawed, rolled out to a thin rectangle. Apple filling spread over the entire area so that about 10 cm of free space remains on one edge, otherwise it will not be very convenient to twist the roll. The rolled dough is sent to the oven for 20 minutes, provided that the temperature is about 200-220 degrees.

A puff pastry roll, the filling of which consists of cottage cheese, sometimes turns out to be a little damp inside. On the taste qualities it doesn't affect at all. For cooking, you will need the following products:

  • raw chicken egg;
  • granulated sugar;
  • cottage cheese;
  • raisins or dried apricots (previously soaked);
  • puff yeast dough;
  • powdered sugar.

Beat the egg with a mixer until foamy, then gradually add sugar, beat again. Little by little, cottage cheese is added to the sweet mass. At the same time, the mixer is not turned off, constantly whipping the filling with it. It should turn out curd, similar in consistency thick sour cream... The dough is rolled out to a flat pancake with a thickness of 2-3 mm. A filling of cottage cheese is laid on it, then finely chopped raisins or dried apricots. The roll is carefully twisted so that the filling does not come out at the edges. The dough is coated on the outside egg yolk or butter to brown the baked goods. The roll is baked in the oven for 20-30 minutes at a temperature of 180-200 degrees. Finished culinary product sprinkle icing sugar... It is not necessary to pierce the dough with a fork before placing it in the oven.

It is noteworthy that puff pastry rolls are not recommended to be cooked with frozen berries. Firstly, they spread during baking, so the inside of the baked goods turns out to be very moist. Secondly, when cooking, they give too much juice, which simply flows out. The layers fall off from this, the baked goods turn out to be watery and insipid.

Fresh berries are well suited for a puff roll. They do not defrost during cooking, do not spread. Strawberries, for example, can be finely chopped and sprinkled with sugar just before curling. But it is better to take cherries immediately without pits, letting the juice drain a little. It is better not to peel apricots, peaches, nectarines from the peel, but it is advisable to chop finely before spreading on the dough. Boil water in a separate saucepan, pour a little sugar into it and wait for it to completely dissolve. We coat the rolled dough with the prepared syrup and spread the poppy filling evenly over the entire surface with a dense layer on top.

We turn everything into a roll and cut into small pieces. Preheat the oven to about 200 degrees. Sprinkle the baking tray cold water and put the rolls on it. Separate the yolks from the proteins, beat the yolks with a fork and grease each piece. We send the baking sheet to the oven and bake the treat for 30 minutes.

I suggest unusual option making everyone's favorite Napoleon cake. The cake is prepared quite simply and quickly. And it turns out very unusual and tasty. And also the size of the roll turns out to be quite impressive and such a roll cake will be enough for a large company.

So let's get started. It is probably best to start with a cream, since the cream will be custard from the part, and it will take time to cool. Put starch, sugar and eggs in a saucepan.

Mix everything well. Add half the milk and stir again. Then pour in the rest of the milk, brandy (optional), stir again and put the pan on medium fire and cook the cream, stirring constantly until thickened. When the cream starts to boil, reduce the heat to a minimum, and, if necessary, cook the cream for a couple of minutes.

Remove from heat. Add oil, stir. Cover with foil and set to cool. The cream should cool completely.

In the meantime, the dough needs to be defrosted. Roll out the dough 2-3 mm thick. Next, we cut the dough into strips 1.5-2 cm wide. I got 23 strips, if I'm not mistaken.

We bake the strips in an oven preheated to 20 degrees for about 20 minutes.

It will turn out like this puff sticks... Let them cool completely. A couple of sticks should be set aside for the crumb to decorate the roll.

When custard cool down, take cold cream and beat it with powdered sugar and vanilla sugar... Beat until stable peaks.

Add the whipped cream to the custard and gently with a spoon, bottom-top, mix until smooth. The cream turns out to be more airy and creamy than just custard.

Now we start assembling the roll. For convenience, you can use a rectangular cake pan. But I didn't have a big shape, so I collected the roll right on the plate. Cover plate or form cling film... Lay out the first row of puff sticks. Then we grease well with cream. And so, layer by layer. I got 4 layers.

Do not grease the last top layer. You need to leave a little cream in order to grease the roll from above from all sides. We wrap the roll in foil, try to wrap it tighter. Gently shape the roll. Then put it in the refrigerator and roll and cream for about 1 hour.

Two or three puff sticks that we put aside earlier need to be crushed into crumbs in any way convenient for you.

After an hour, take the roll out of the refrigerator. Remove the film. Grease the roll on all sides with the remaining cream and sprinkle with crumbs.
