We divide the recipe into three stages: preparation of the base, preparation of tomato sauce and, directly, preparation of the pizza itself.

Pepperoni base

The base must be prepared according to the Italian style - not fluffy, so that it looks like a cake.

You will need:

  • Milk - 200 g;
  • Egg - 1 pc.;
  • Boiled chilled water - 150-200 ml;
  • Olive oil - 1 tablespoon;
  • Flour - 1 glass;
  • Salt - 1/2 tsp;
  • Dry yeast - 10 g.

Preparation:

  1. Dissolve the yeast in a little warm milk.
  2. Pour flour in a heap on the table. Make a small hole in it and beat in an egg, add salt and olive oil.
  3. Also add the dissolved yeast to the hole and begin to gradually knead the dough, periodically adding water.
  4. Knead the dough until it becomes smooth and elastic.
  5. The resulting dough is rolled in the shape of a ball and place in a bowl greased with vegetable oil.
  6. Cover the dough with a towel and leave in a warm, dry place.
  7. The dough should approximately double in size - this will take 1.5-2 hours.
  8. After the indicated time, roll out the dough into a thin layer, no wider than 5 cm.

In the dough recipe, you can make changes in the amount of ingredients: if the dough is too tight, add water, if the dough spreads, add flour.

Pepperoni sauce

Tomato sauce can be purchased ready-made, but it is better to make it yourself, with your favorite spices and fresh tomatoes.

You will need:

  • Tomatoes - 5 pcs.;
  • Salt - ½ tsp;
  • Olive oil - 20 ml;
  • Spices: oregano, dried basil - ½ teaspoon each;
  • Garlic - 2 cloves;
  • Sugar - 10 g.

Preparation:

  1. Scald the tomatoes with boiling water, peel and puree using a blender or meat grinder.
  2. Pour the resulting tomato puree into a saucepan and heat over low heat, stirring occasionally.
  3. After 10 minutes, pour olive oil into the puree, add salt and sugar (adjust the amount of sugar depending on the acidity of the tomatoes). Leave the mixture to simmer for another 10 minutes.
  4. Chop the garlic and add it to the mass with dry spices 3-4 minutes before the end of cooking.
  5. Put the prepared sauce to cool.

You can make tomato sauce using your own recipe, the main thing is not to use regular tomato paste for making pizza.

Cooking pepperoni

Before making a pepperoni pizza, decide how spicy you want to make the dish - the pizza recipe and the choice of ingredients depend on it. We are going to make real hot pepperoni with hot chili.

You will need:

  • Tomato paste - 3-4 tbsp spoons;
  • Olive oil - 1 tsp;
  • Green chili pepper - 1 pc.;
  • Spicy salami sausage - 300-400 g;
  • Mozzarella cheese - 6-8 slices;
  • Tomato - 2 pcs.

Preparation:

  1. Sprinkle the base lightly with olive oil and apply a generous amount of tomato sauce on top.
  2. Cut sausage and tomato into thin slices, Mozzarella into slices, chili into small circles.
  3. On the tomato base, place the slices of Mozzarella, then the tomatoes, top with the sausage, and sprinkle with chili pepper at random.

Bake the pizza in the oven for 7-9 minutes at a high temperature of 250-270 degrees. The oven should already be preheated.

Step 1: prepare the dough.

First, heat the water to the temperature 30 - 35 degrees... Then pour it into a deep cup, add sugar and dry yeast with a tablespoon, mix the liquid mass. Then we put the container next to the stove and leave the yeast mixture on 10-15 minutes. During this time, foam should rise to a height of 1 centimeter or slightly less. Next, set a sieve over the plate and pour the required amount of flour into it. Then we sift the flour to get rid of the lumps and saturate it with oxygen. Pour yeast liquid into a bowl, add olive oil and salt. And gradually pour the flour, then mix the contents with a tablespoon until smooth. When it will be difficult to mix with the improvised inventory, we continue to knead the dough with our hands. After we form a dough ball, cover the container with plastic wrap and put it in a warm place. On 40 - 60 minutes, during this time the dough ball will infuse and increase in size.

Step 2: prepare the ingredients.


Now we transfer the pepperoni to a cutting board and use a knife to cut the component into small circles of about 3 millimeters thick. Transfer the chopped ingredient to a plate.
Next, we take the mozzarella cheese out of the package, place it on a cutting board and cut it into pieces of arbitrary thickness. Shredded soft cheese can be left on a cutting board.

Step 3: shape the pizza.


After the required time, we release the bowl from cling film. Sprinkle flour on a flat surface and use a spoon to spread the dough on it. Knead with your hands until smooth. We process the rolling pin with flour and begin to roll the dough into a thin layer 5 millimeters thick. Either we bend the edges nicely inward, or we take a plate with a suitable diameter and press on the dough layer, cut off the excess dough. Next, grease the baking sheet with a kitchen brush with vegetable oil and carefully transfer the pizza base onto it.
Then we grease the resulting dough layer with sauce, on top, in a chaotic manner, lay out pieces of cheese and pepperoni circles on it.

Step 4: bake the pizza.


Into a preheated oven until 200 - 220 degrees Celsius, remove the pizza pan. And bake for 20 - 30 minutes. After helping ourselves with kitchen potholders, we take out a hot baking sheet from the oven. Using a metal spatula, transfer the pizza to a beautiful plate and you can serve the dish.

  • 1.5 cups sifted flour;
  • 30 g French yeast;
  • 20 g granulated sugar;
  • a few pinches of salt;
  • 2 tbsp. tablespoons olive oil;
  • 200 g mozzarella;
  • 250 g salami;
  • 2 ripe tomatoes;
  • 1 chili pod;
  • 50 g tomato paste;
  • under Art. a spoonful of dried basil and oregano.

Cooking details:

  1. Mix yeast, salt and sugar and dilute with a little water at room temperature. When the mixture begins to foam, pour it into a warm liquid and sift the flour there. At the end, add oil and knead until plastic. We keep it warm so that it fits.
