I already tried to somehow cook the chicken wings as in KFC, it was tasty, but not quite ... and now, after many trial and error, I got this very recipe that will allow you if you don’t recreate the original recipe 100 percent, then at least get the result no worse than in the source, but maybe even better!

First, prepare the chicken. We will cut the wings over the joints, for the KFC recipe we will only need the first two phalanxes, we will not use the outermost ones (the ends of the wings), but we can then use them for the broth.

We figured out the chicken, now you can do the marinade. We will prepare all the products indicated in the ingredients for the marinade. I would also like to talk about water. The water in the marinade needs exactly enough to barely cover the chicken, so I recommend first to use 1.5 cup (300 ml.), And then, if there is not enough water, add as much as needed. Having received reviews about the “over-salinity” of the final dish, I decided to supplement the recipe with this remark: after receiving the salt brine, taste it, and if it seems too salted to you, add more cold water!

Let's send the chicken to the prepared marinade, well, and add cold water, if necessary, so that it is flush with the wings. Now we will marinate the wings in the marinade for 4 hours (I tried to marinate for 2 hours, it also turns out pretty good). By the way, I also noticed that if you hold the chicken for longer, it will be overloaded, but it will not become more aromatic! Therefore, I recommend not to overdo it.

While the bird is infused in brine, let's get a breading for our KFC wings. Hand on heart, I can say that I don’t know for sure what they put there, but my set of breading products indicated in the ingredients is guaranteed to get a very similar result! Therefore, we are preparing these very products,

Combine flour and spices in a deep bowl,

Very carefully mix the breading into a single homogeneous mass, and we can assume that the entire preparatory phase is completed. Now we need to wait for the marinating chicken wings,

after which you can put the frying pan to warm up, and proceed to the breading of the chicken. Now I tell you step by step how the wings are breaded. We transfer a batch of wings (8-10 pieces) from the marinade to a colander, let the excess marinade drain,

then put the meat in bread flour, and carefully roll the wings in the flour,

put the wings boned in flour back into the colander (it is advisable to rinse and dry it each time), shake it to remove excess flour,

after which we release our wings in cold water for 5-10 seconds (at this time we’re not jerking and shaking the colander!),

gently remove the wings from the water, let the water drain

after which we spread the wings back into the bread flour,

carefully roll the wings on all sides in breading.

Put the breaded chicken in a single layer into the fryer grate. If you plan to cook without a deep fat fryer, then just send the wings to the heated oil one at a time, shaking off excess flour from the surface.

So, the oil in the deep fat fryer has heated up to 170 degrees, we will send the wings to the deep fat fryer for exactly 10 minutes.

  • In another container, we mix eggs and milk, usually spices are no longer added there, but you can throw a pinch of salt for taste.
  • Pour chips into the third container or, if you want, cereal without sugar. Then it is good to crush them until crumbs are formed, for example, by a crush or by pre-crushing a packet of chips. However, the best assistant in this case is a blender, which will greatly simplify the task.
  • To prepare the wings for the cooking process, it is necessary to rinse and dry them well. Then you should cut them into 3 parts in the area of \u200b\u200bthe joints, but do not forget that the smallest part is not needed - there is practically no meat, so you can use them as you like, at your own discretion. But the two remaining parts will be needed in the future.



  • Roll in the flour with spices left parts of the wing, then transfer the resulting pieces into a bowl with egg and milk, then back to the first container. Once again, roll the pieces in flour and transfer them to the egg with milk, and after that roll them in crisp chips. We do this procedure with all the wings. Chicken wings - 1 kg;

Wheat flour - 0.5 cups;

Milk 2.5% fat - 150 ml;

Eggs - 2 pcs;

Vegetable oil for frying - 0.5 l;

Corn flakes (unsweetened, without additives) - 250 g;

Ground paprika - 10 g;

Chili pepper - 1 pc;

1. Wings should be thoroughly rinsed under running water. Allow the water to drain, then dry the wings with towels. Armed with a sharp knife, cut off the thinnest part of the wings (there is practically no meat on it, and it can burn up when frying). Then the wings are placed in a deep bowl, evenly sprinkling them with a mixture of salt, paprika and crushed chili pepper (from which all seeds must first be extracted). Place the bowl with wings in the refrigerator for 1 hour.

2. During this time, you need to slightly knead the corn flakes with a rolling pin. The grinding process will become easier if the flakes are poured into a plastic bag, tied, and then rolled with a rolling pin. Do not get too carried away and grind the flakes into powder.

3. To prepare the batter in a bowl, thoroughly mix milk, eggs, wheat flour, chili and cayenne, salt. The batter should have the consistency of thin sour cream.

4. Pour cornmeal into a large plastic bag, put the wings, tie a bag and shake it until the flour covers each wing evenly. The same operation can be performed, instead of a bag, in a pan with a lid.

I always thought that the wings just need to be breaded in special “breadcrumbs” and branded spices and deep-fried. I tried it for everyone, but either the chicken inside near the bones remained moist and stiff, or the breading tried to char, I lowered the deep-frying temperature - it seemed normal inside, but the crisp oozed butter.
  And the first secret was surprisingly simple - before you fry the chicken, you must first boil it!

1. For starters, we cut chicken wings along the joints into 3 parts - forearm, shoulder and “brush”. Firstly, it’s more convenient to work with such pieces; secondly, it’s easier to eat, and thirdly, the very last part of the wing is absolutely not needed for this dish.

You can do this “unnecessary” spare part in a humane way - sprinkle with lemon juice, add salt and pepper, some fragrant herbs and leave to marinate for half an hour, and then fry very, very hot in very hot oil so that it crunches and is eaten on your teeth all without a trace. It is delicious, and for certain lovers it is a real delicacy!

2. We put the divided wings in salted water, put on fire and bring to a boil. Here, too, have their own tricks.
  As soon as the water boils, remove the foam and remove the pan from the heat. Now, right in the broth, completely cool the wings to room temperature.
  Think not cooked? A fig there! I have never tasted more tender boiled chicken in my life! The fact is that such small pieces do not require long cooking, and in the hot broth they themselves will reach the desired readiness.
  By the way, this stage can be done on the eve of the party, leaving a saucepan with wings in a cool place. Just do not be surprised when the next day you find a real chicken jelly in the pan - there are a lot of gelling substances in the wings))

3. Next we prepare the rest of the ingredients - flour, lezon and corn flakes.
  I won’t say anything about flour - ordinary wheat flour.
  A lezon is a beaten egg with salt and a small amount of water (you can even without it). If you just want the taste of chicken - don’t add anything more during the season, you want spiciness and piquancy - feel free to throw garlic, hot pepper or a few drops of Tabasco, fragrant herbs - whatever your heart desires. Beat with a blender until a homogeneous structure and we will be happy for you.

It is advisable to search for corn flakes with addiction on a supermarket shelf. The fact is that almost all of them are sold in icing, but why do we need sweet chicken? With little persistence, unsweetened flakes can be found in departments with healthy diets and foods for diabetics.

  Put the wings in deep fat and fry for about 3 minutes. Do not try to put the maximum number of wings into the pan - the oil temperature will drop sharply and it will take longer to fry and more oil will be absorbed. 5-6 pieces at a time - fine.

Fast food restaurants, as you know, do not bring benefits to our health. In addition, we cannot reliably know from which products our favorite dishes and snacks are prepared.
