6. Add fat minced meat and mix continuously until the ingredients are ready.
7. When the potatoes are cooked, you need to drain all the water and crush.
8. Let the potatoes cool slightly, then beat in the egg, add the butter and continue to knead until a dense, uniform and smooth mass.
9. Add salt and pepper to taste.
10. Add 2 tablespoons of wheat flour to the resulting puree and knead the potato dough. The flour will add stickiness to the mashed potatoes and make it possible to form zrazy of the desired size.
11. Wet hands in water, then make a plump cake from potato dough. We put the cooled stuffing of minced meat, mushrooms and onions in the middle. On all sides, carefully close the filling and form a pie.
12. Roll the potato pie in breadcrumbs.
13. Pour vegetable oil into the pan and heat until bubbling. On a small fire, fry the pre-formed zrazy until fully cooked until fully cooked.

According to my observations, meat zrazy is very juicy and tasty if you take pork with fat and add a little beef. Pork is good too. So, we take a piece of meat, twist it in a meat grinder into minced meat, after it we skip the onion and bread soaked in water. We break one egg, season the chopped meat with pepper and salt.
The mixing process is divided into two stages. At the first, we use a spoon, mixing all the products. Then we collect minced meat in the palm of our hand and throw it back. So we do it 10-15 times, beating quite hard so that all the ingredients stick together, stick together. Cover the dishes, leave for 15-20 minutes.
For the filling, hard boil two eggs. They are boiled for ten minutes from the beginning of boiling water, then immediately substitute under cold water, cool. We clean, cut finely, as for salads. For frying, pour oil into a frying pan, heat it up. To check the temperature, we throw a piece of bread or onion into the oil. If it bubbles around a piece, it foams a lot - we slightly muffle the fire and lay out the blanks. If there is no reaction, then the oil is still cold, increase the heat. We spread the meat zrazy at a small distance from one another, fry over moderate heat for about five minutes, until crusty.
Turn over with a spatula, the other side will fry for about the same amount. I have small zrazy, this time is enough for them to reach full readiness. If you are sculpting large ones, then after frying, pour water into the pan to close the bottom by 2 cm and simmer for 15-20 minutes under the lid.
Well, everything is ready. Of course, you need to take care of the side dish in advance or quickly make some kind of vegetable salad with herbs.
If you decide to make a sauce, then cook it not very spicy, meat zrazy with an egg is already seasoned with pepper, excessive spiciness will interrupt the taste of meat and filling.

3. In my case, not only fried onions are put in the eggs, but also fresh dill. Therefore, we prepare the ingredients for meat zrazy further. Finely chop the washed, slightly dried greens. In a bowl, combine chopped eggs, fried onion and dill, pepper, you can also add your favorite seasonings and spices to meat dishes. Mix everything well.
4. Pour milk into a bowl, put bread slices in it.
5. Hold until the crumb swells, squeeze and combine with minced meat. Here you can add a little more pepper, spices and seasonings if you wish, just do not forget that the filling is already seasoned with us (so that the zrazy does not turn out too sharp later). Salt the cutlet mass and mix well.
6. With wet hands, take the minced meat in parts and form palm-sized cakes. Place an egg and onion in the middle of each.
7. Gently make zrazy with egg and onion filling, but so that it does not look out of nowhere. If this happens suddenly, patch the “hole” with a small portion of minced meat. And yet, if the minced meat “stretches” for the palms, sticks, then moisten them with water.
