4. Onion cut into small cubes, grate the carrots.

5. Cut the mushrooms into small pieces. You can use both fresh and frozen mushrooms. The variety of mushrooms can also be different. This can be any forest mushrooms, and champignons and oyster mushrooms.


6. In a pan, warm the vegetable oil and put the carrots in it, fry for 1 minute.


Then add onion to it. Fry over low heat all together until vegetables are tender.

Cooking:

1. Wash fresh mushrooms and cut into small pieces. If you use frozen mushrooms, then get them out of the freezer in advance. They can be slightly thawed to make it easier to fry later.

But it is not necessary to defrost much so that the mushrooms do not become watery.


2. Onion cut into small cubes. Grate one potato.


3. In a pan, warm the butter and fry the mushrooms in it. Then add the onions and fry them all together until they are soft.


4. Add grated potatoes, reduce heat to a minimum and fry until potatoes are cooked. It should not be very fried.

5. Cut the two remaining potatoes into cubes, add 2 liters of water and cook until tender. Salt the water in which it will be boiled.

6. Cream cheese can be used soft, such as "Hohland", or you can buy our traditional processed cheese "Friendship".

To make it easier to work with, it is best to rub it on a grater. And it will be easier to do this if you freeze it in the freezer.

7. When the potatoes are boiled, add the frying, pepper to taste and bay leaf. Cook for 5 minutes.

8. Then add the grated cheese, mix until it is completely dissolved and pour the cream last. Bring to a boil, but no longer boil.

Just cover tightly with a lid and leave to insist for 10 - 15 minutes.

Optionally, the contents can be mashed, and in this case you will get the most tender soup - mashed potatoes.

9. Serve sprinkled with chopped fresh herbs.


Perhaps this is my favorite recipe, especially in a pureed state. Delicate, airy, with a forest scent and incredibly tasty.


Excellent and just fabulously obtained with porcini mushrooms, oils or strong boletus. But if there are no such mushrooms in the freeze, and the summer is still far away, then even having prepared the soup with mushrooms, you must be careful not to eat a spoon inadvertently.

  With chicken in a slow cooker

It’s as simple as cooking a soup with a slow cooker. All that needs to be done is to cut all the ingredients and put them in the bowl. Everything else is a miracle - the technique will do it for you.

  • chicken fillet - 400 gr

1. Grate half the carrots, cut the other half into circles. Onions can be cut into small cubes, but if you do not like it in the broth, then leave it whole.

2. Wash the chicken meat, place in a saucepan and pour in two liters of water. Put on fire and cook for 20 - 25 minutes until tender. Periodically remove the foam during its formation.


You can use any meat. It can be either fillet or boneless meat. If you cook the broth on the bones, be sure to strain it at the end of readiness.

3. Together with the chicken, put carrots and onions in the broth, if left whole. When cooking, carrots will give color to the broth, and onions will give all their juice. At the end of cooking, the onion from the broth will need to be removed and discarded.

With carrots, you can also do it, or you can leave it in the broth.

4. Fried grated carrots in butter. If you chopped onions, then fry it.


5. After the chicken is cooked, remove it from the broth. If necessary, strain the broth, and then send potatoes cut into cubes or slices into it. And to make it tastier and more fragrant add bay leaf. Cook until cooked in salted water.

6. Knead a rather thick dough of flour, eggs and salt in advance. Let stand a little and disperse. And after they put the potatoes in the broth, roll the dough into a thin layer, as we roll out when we cook the homemade noodles.
