Recently, I came to visit where the ready was already being thawed. puff pastry, which the owners have conceived to use for making pizza. There was no choice and I baked pizza on a regular puff pastry.

Friends! The result exceeded all expectations! Pizza came out thin, juicy and very tasty. Baked for 15 minutes. I advise everyone!

And I will give a pizza recipe from homemade dough from what was on hand + from the leftover dough - a recipe for a pie with apple filling and oranges. Everything is very delicious!

Composition

on 1 baking sheet

  • Frozen puff pastry - 1 pack (400-500 g);
  • Olive or vegetable oil - 2-3 tablespoons;
  • Tomato paste - 2-3 tablespoons;
  • Tomatoes of medium size - 2-3 pieces;
  • Smoked sausage (we had a Moscow sausage) - 150-200 g;
  • Mushrooms - 6-8 medium pieces (can be smaller);
  • Hard cheese (we had Poshekhonsky, Suluguni will be delicious) - 70-100 g.

Flour for rolling dough and baking pan - less than 0.5 cup.

How to cook

1. Prepare all the pizza ingredients

  • Defrost dough  according to the instructions on the package.
  • Cut the ingredients for the pizza toppings: tomatoes and sausage - in thin slices, mushrooms - thin, in profile. Cheese grate on a fine grater.
  • Flour flour on the dough table, rolling pin and baking sheet. Oven put warm up strongly to 250-260   degrees C.
  • Roll out the dough to thin (but so that it does not tear. But if holes are created, you can seal the dough with a piece of dough, it will stick well). I had 2 layers. The first was enough for most of the pan. From the second rolled layer I cut off the piece so that it was enough to cover the empty part of the pan, and the edge of the first layer 1-2 cm (dough layers will overlap, into a single cloth). And the remnants of the second layer cut into strips and paved or bezel around the pizza (made ribs).

2. Collect pizza

  • Lubricate the bottom of the dough with vegetable oil. Top with tomato paste and spread over the entire surface with a spoon.
  • Put the mugs of tomatoes, and then the sausages, evenly across the bottom of the pizza. So that in each portion then it turned out its tomato and sausage. Sprinkle with mushrooms (evenly over the entire surface). I sprinkled a pinch of dried basil for flavor.
  • Sprinkle the pizza with grated cheese. And put it in the oven to bake until the crust is browned (I had 15 minutes, if not less). The temperature in someone else's oven was first a maximum at all (I didn’t immediately find a thermometer). She put the baking sheet somewhere at 260-270 degrees, and immediately reduced it, it was baked at 240-250. But very quickly.


Ready pizza on the baking sheet

Any yeast homemade dough that rolls well will do. It will be required on 1 baking sheet at the rate of 250 g of flour (that is - a little). Yesterday I made a dough out of 500 g of flour, so I baked both pizza and apple-orange pie. I will write the recipe in terms of only 1 pizza.

Ingredients for 1 pizza (baking sheet size)

  • Yeast - based on 250 g of flour (I had dry, fast-acting, at the rate of 1 package per 500 g of flour = 25 g of live yeast. Look at the package for how much flour your yeast has);
  • Sugar - 0.5 tablespoon;
  • Warm water - 1/4 cup;
  • Salt - 0.5 tsp;
  • Butter - a small piece (or vegetable - 1-2 tablespoons);
  • Egg - 1 piece;
  • Flour - 250 g. This is a little more than 1.5 cups. (Look not so much in weight as in whether the dough sticks to your hands. If it sticks, add more). + flour required for rolling and sprinkling baking sheet.

Dissolve the yeast in warm water with sugar (water should not be hot, just pleasantly warm). After 5 minutes, the yeast will revive and foam will begin to form. Then combine all the components of the dough in a saucepan. Add flour if necessary. If suddenly the dough was too steep, add a little water. Knead. Cover and place in a warm place for 1.5 hours to lift.

Roll out the dough thinly to form a baking sheet (sprinkle with a flour and the surface of the table with flour, and if the dough sticks, then it too). Transfer the dough to a baking sheet (floury), grease the dough (pizza bottom) with butter and tomato paste, put the stuffing, sprinkle with cheese. And bake in a very hot (preheated to 250-260 degrees C) oven for 10-15 minutes. As soon as the delicious smell of baking goes, and the edges are slightly browned - ready.

We grease the pizza base with butter and then with tomato paste (for juiciness). Pizza on the baking sheet before being sent to the oven. Pizza is baked very quickly at very high temperatures.

Meat Sausage

The meat portion of the filling may consist of bacon / bacon, ham, even boiled sausage (but better - in fat). You can put and chicken fillet  (boiled, fried, stewed), but if it is breast fillet, then it is rather dry, in my opinion. In the pizza tastes something more juicy.

Pork with fat (bacon) with pineapple slices will be deliciously combined. Or pork with apples. Mushrooms, meat (chicken or pork) and apples are also a good combination. But apples must be sour.

If there is no meat and mushrooms

Suitable canned fish in oil (such as sardines, tuna, pink salmon, etc.).

Where to put extra dough

I had homemade dough for 2 pizzas, from the second part I baked a pie with stuffing that was on hand. 2 large apples grated on grated, added there half of the peeled orange (each lobe transversely into 4 parts). Apples (without a core and peel) - rubbed on a coarse grater. Mixed with oranges. All without sugar, just sweet and sour such a filling. And there is little sugar in the dough, by the way. And it came out very tasty, juicy.

In short - rolled out the dough, in the center - filling a hill. Above the hill she gathered the edges of the dough into a bundle, tweaked it. And leveled palm up cakes.

It is necessary to bake at the same high temperature of 250-260 ° C for 15-20 minutes (until browning). Do not grease the baking sheet, just sprinkle with flour.

The finished cake can be greased with a piece of butter or a small amount. vegetable oil, it will become brighter, rouge and shine.

About 200 years ago, in Naples, bakers began to cook on a quick hand  dish for poor people. These were flat cakes from dough, on which a layer of tomatoes was put, sprinkled with dried marjoram, sprinkled with vegetable oil, and cheese was put on top. So there was a pizza that we love so much. Into pizza by all means enter: tomatoes, mozzarella, basil and other ingredients at will. In Italy until today, they are very sensitive to the quality of the dish, including - puff pastry pizza.

Ingredients for making puff pastry pizza:

  1. Ready puff pastry 500 grams (in the store a wide selection of yeast and without yeast briquettes);
  2. Tomato paste or ketchup 4–5 tablespoons;
  3. Sausages (or meat, ham, sausage, etc.)  300–350 grams;
  4. Tomatoes 2-3 pieces;
  5. Bulgarian pepper  1-2 pieces;
  6. Marinated mushrooms (ceps, mushrooms, mushrooms, etc.)  100–150 grams;
  7. Olives 10 pieces;
  8. Hard Cheese  100–150 grams.

Cooking puff pastry pizza:

Step 1: Cut the tomatoes into circles.

Step 4: Cut the olives.



Fresh olives are cut into rings, after removing the bone from the core. The thickness of the ringlet is about 0.3 cm. Attention! You can also use marinated olives. Some manufacturers prefer to leave bone  in the berry, some are removed. In any case, cut the olives into circles and get rid of the excess.

Step 5: Cut the mushrooms.



   Mushrooms cut into slices, approximately 0.5 x 0.5 cm.

Step 6: Rub the cheese.



   Three cheese on a fine grater. Attention! To better rub the cheese, immediately before it is recommended to put it for a few minutes. in the fridge.

Step 7: Roll out the thawed dough.



   Thawed layer of dough (instructions for defrosting, see the instructions on the package), put on a lightly sprinkled with a flour table. Roll out the dough with a rolling pin, to a thickness of approximately 2-3 millimeters.

Step 13: We bake pizza.



   Put the pizza tray in the oven, preheated up to 180 degrees. Bake for 20-25 minutes.

Step 14: Serve a puff pastry pizza.

  From this number of ingredients, I got 4 pizzas, about 18 by 25 cm in size (2 pizzas for 1 baking tray), just for 4 servings.

Ingredients

0.5 kg puff pastry
  200-250 grams of sausage
  150-200 grams of cheese
  2 medium tomatoes
  1 medium onion

Now add salt and 1 cup of flour to the yeast and, stirring well, pour another 1 cup of flour. Put the resulting dough on the table, sprinkled with flour, and start to knead it, gradually adding to it the remaining flour. Knead for 8-10 minutes until the dough becomes elastic.

Form a ball out of it and put it in a bowlgreased with vegetable oil. Cover it with a damp towel and leave in a warm place for 40 minutes. When the dough rises, mix it for another 1-2 minutes and roll it. From this dough you will make 1 thick or 2 thin pizzas. Roll out the dough with a rolling pin to a thickness of 5-7 mm and put in the form. Now you can add any stuffing.

Puff pastry for pizza (recipe)

Puff pastry pizza is crispy on the outside, but soft and tender on the inside.  Many people prefer just such a pizza, but the preparation of puff pastry is quite a laborious process. To prepare the dough, you will need 2 cups of flour, 0.5 cups of cold water, 250 g butter, yolk, citric acid and salt.

Mix all the ingredients except butter and knead the dough, then remove it in a cold place for half an hour.  Mix the butter with 3 tablespoons of flour, roll in the shape of a square and clean in a cold place.

The main advantage of this test is that it   prepares quickly and preserves better.  You will need 2 eggs, 2 tablespoons of margarine, a glass of sour cream, a tablespoon of sugar, half a teaspoon of salt, 3 cups of flour.

Pour the flour on the table in the form of a hillock, make a well in the center and put the margarine, eggs, sour cream, salt, sugar and knead the dough. Roll a ball out of it, cover it with a towel and put it in the cold for half an hour.

Egg dough for pizza (recipe)

This elastic dough is perfect for making pizza.  For the preparation you will need 500 g of flour, 4 eggs, 1 tablespoon of dry yeast, 4 tablespoons of butter, half a cup of warm water, and salt.

Pour flour with a knoll and place eggs in the cavity, softened butter and yeast diluted in warm water. Salt and mix thoroughly until smooth. Knead the dough for about 10 minutes, then cover with a towel and store in a warm place for 1 hour.

Pizza cooked on cottage cheese dough has a unique, unusual taste,  which you will definitely like. To prepare such dough, take 1 cup of flour, 1 egg, 125 g of low-fat cottage cheese, 3 tablespoons of vegetable oil and a teaspoon of salt.

Mix cottage cheese, egg, salt and olive oil thoroughly with a mixer. Then gradually add the curd mass to the flour, kneading the dough until the dough becomes elastic. Roll out the dough and place on a baking sheet.

  Today I want to offer you to cook. But not quite the usual - on puff pastry. It is very comfortable and quick recipe: after all, cooking pizza this way is a minute thing. It always turns out: to spoil it is almost impossible. And each time such a pizza on puff pastry in the oven, a recipe with a photo of the preparation of which is offered today to your attention, will be both beautiful and very tasty. As a filling, I suggest you use fresh tomatoes and ham.

Ingredients:
- 200 g puff pastry;
- 100 g of ham;
- 50 g of hard cheese;
- 1 tbsp. l tomato sauce;
- 0.5 tsp. dried basil or a mixture of Mediterranean herbs;
- 1 small tomato or 3 cherry tomatoes.

  Let's start with the main thing - with the test. As you already understood, for this pizza we will use puff pastry. You can cook it yourself, at home - this is not such a complicated process. But if you, like me, are always in a hurry somewhere, and time is of great importance to you, then you can successfully use ready-made puff pastry. It is of two types - yeast and yeast-free. For pizza is suitable both. So we only need to buy such a ready puff pastry and defrost it at room temperature. It usually takes 1 hour for the frozen dough to be completely defrosted, and you can make pizza out of it.



  Pizza on puff pastry - not classic recipeas you understand. Still, traditional pizza is cooked on. Well, since we have already decided to retreat from the rules in this matter, I propose to do the same regarding the shape of the pizza. It could have been made round, but in that case it would have to be tricky - puff pastry is usually sold square or rectangular. Therefore, I propose cutting pizza dough into squares: it is very easy to do. and you do not have to cut anything, as it would be if we decided to make a round pizza. In addition, such squares can be made small - 10 cm in size, then it will be convenient to take them and immediately eat them.



  We lay out the squares of puff pastry on baking paper, pre-greased with a small amount of vegetable oil. You can use not paper, but a silicone mat. Or even spread the pizza on a greased baking sheet (if you are sure of the quality of its coating and you know that the pizza will not sink to the bottom).





  We squash the puff pastry squares with tomato sauce and sprinkle with half of the total dried basil. You can use not only. Perfect your favorite ketchup or tomatoes in own juice, pre-cut and seasoned with salt and pepper. The most important thing is that on the dough you put some kind of spicy tomato base, and what exactly it will be is up to you.



  Then we rub hard cheese on an average chick. And half of it spread on the squares of puff pastry. We will use the second half of the cheese later. Cheese. By the way. Maybe any - inexpensive, such as Russian, or Parmesan, which is very good in pizza. Mozzarella lovers can, of course, use it.



  Then put the tomatoes on the cheese, cut into small pieces (slices or circles, to your taste).





  Then turn the ham, which we previously cut into small squares. By the way, the meat component of pizza may be different - children, as a rule, prefer boiled sausage, and men - hunting sausages.



  The final touch is the remaining cheese and dried basil. Now the preparatory process of pizza on puff pastry is completed. Carefully transfer the parchment on a baking sheet and send the pizza to the oven, heated to 220 degrees.



  After 15-20 minutes, the pizza on puff pastry in the oven will be ready: the most important thing is to make dough, and the filling is good for food.
