    • pork liver - 400 g;
    • oat flakes (the usual "Hercules" is suitable) - 100 g (about 7 tablespoons);
    • carrots - 1 root crop of medium size;
    • flour - 2-3 tablespoons;
    • spices (preferably "Provencal herbs"), salt and pepper - to taste.

    Cut the liver, carrots and onions into small pieces and scroll through a meat grinder. Add oatmeal, spices, salt, pepper to the mixture and mix well. Put the minced meat in the refrigerator for at least 30 minutes. Then it can be formed into patties and fry in vegetable oil for about 10 minutes.

    Pork liver cutlets with rice

    Everyone has long been accustomed to meat patties with rice. Pork liver pancakes are also made with the same grits. Fiddle with them a little more than with previous recipes, since you must first cook rice. As for calorie content, in this version it also does not go far off scale. So, you need to prepare:

    • pork liver - 500 g;
    • rice - 150 g;
    • onions - 1 medium-sized head;
    • egg - 1 pc.
    • starch - 2 tablespoons;
    • basil, salt and pepper - to taste;
    • vegetable oil - for frying.

    First you need to cook and cool the rice. It is better to cook the grits a little longer than for a regular side dish, so that it turns out to be slightly sticky. Experts recommend keeping rice on fire for about 30 minutes.

    Then everything is according to the standard. Peel and cut the onion into 4 parts. Cut the offal into pieces and mince with onion. Beat the egg with a whisk or fork and pour into the dishes to already prepared foods. Add rice, starch and spices there. Stuff the minced meat thoroughly. And immediately you can sculpt small cutlets, which should be fried on both sides for about 2-4 minutes each.

    Nutritious liver pancakes with buckwheat

    As mentioned above, liver pancakes can be prepared with almost any cereal, in particular with buckwheat. The method of cooking them is not much different from the same dish with rice. But there are still some discrepancies. First, check out the list of products:

    • pork liver - 500-600 g;
    • buckwheat - 150 g;
    • onions - 1 medium-sized head;
    • egg - 1 pc.
    • flour - 2 tablespoons;
    • salt and pepper to taste.

    Sort the groats, rinse thoroughly and boil until tender in slightly salted water. Finely chop the onion, fry in vegetable oil until golden brown and mix with the finished buckwheat.

    Rinse the liver in a large amount of water and dry slightly with napkins. After that, it must be cleaned of films and veins, and then cut into pieces and pass through a meat grinder.

    Combine the resulting mass with buckwheat and onions, salt, pepper, add the egg, flour and knead well.

    Stuff the minced meat with a spoon into a pan, forming a patty and fry in vegetable oil for about 4 minutes on each side.

    Pork liver cutlets with potatoes

    For example, potatoes can serve as a good complement to offal. There is no need to talk about low calorie dishes. But the taste is wonderful. To prepare such a culinary masterpiece, you have to stock up:

    • pork liver - 300 g;
    • potatoes - 3-5 medium-sized tubers;
    • onions - 1 medium-sized head;
    • egg - 2 pcs.
    • salt and pepper - to taste;
    • breadcrumbs and vegetable oil - for frying.

    Peel, boil, mashed potatoes and leave to cool. Cut the liver and onion into small pieces (the last, of course, previously cleaned) and pass through a meat grinder. Mix the minced meat with mashed potatoes, add the eggs and carefully beat them into the resulting mass. Stuffed meat must be salt, pepper and mix thoroughly again. Just a little advice: if the minced meat turned out to be liquidish, then you can add a little flour to it.

    It remains only to stick patties, roll in breadcrumbs and fry in vegetable oil for 3-5 minutes on each side. By the way, you can slightly reduce the calorie content of this dish by cooking it for a couple. It takes a little more time - about 30-40 minutes.

    Homemade pork liver patties with gravy

    Despite some uniformity in the recipe and methods of preparation, pork liver pancakes should not be considered an everyday dish. A chic dinner can be arranged if you cook them with the appropriate sauce or gravy. This is not difficult to do, and exotic products are not needed:

    • pork liver - 400-500 g;
    • brisket - 100-150 g;
    • oatmeal (Hercules) - 3 tablespoons;
    • onion - 2 heads of medium size or 1 large;
    • milk - 100 ml;
    • sour cream - 50-70 g;
    • butter - 50-70 g;
    • tomato sauce - 2 tablespoons (you can use ketchup);
    • peppercorns, bay leaves, salt, pepper.

    Pour oatmeal with milk and leave for 20-30 minutes. To clear a liver of films, cut and pass through a meat grinder or grind in a blender. With the brisket, do the same, and mix with minced liver. Drain the milk from the dishes with oatmeal, and squeeze the remaining milk by hand. Swollen flakes to send in a bowl with minced meat. The mixture is salt, pepper and mix thoroughly.

    Heat a small amount of vegetable oil in a frying pan, put the minced meat with a spoon, form patties and fry for 2 minutes on each side. Transfer to pan for further stewing.

    Serving ready-made liver pancakes with gravy is not worth it right away. It’s better to let them stand for another 10-15 minutes. The finished dish is in perfect harmony with such side dishes as mashed potatoes or crumbly boiled rice.

    As you can see, cooking pork liver patties is easy enough. There are no special secrets in this matter. The main rule: use only fresh liver and thoroughly clean it of the films. Otherwise, the taste of the finished dish will be slightly different. By the way, if you pre-soak the liver in milk, then the patties will turn out more tender.

    And one more nuance. Hepatic pancakes cook quickly enough. If they nevertheless overcooked and became dry, then you can return them to taste and juiciness by holding them in a double boiler for some time.

      Liver cutletsfrom beef liver, the step-by-step recipe of which is presented below, is in some ways very similar to the recipe for liver pancakes. Many mistakenly believe that liver fritters  and liver patties are one and the same dish. In fact, these are two completely different recipes. Biscuit pancakes can be cooked with milk, yogurt, kefir or yeast, while liver cutlets are cooked with meat, lard, cereals, loaf (bread), vegetables or fresh herbs. Recipes for liver cutlets with buckwheat, semolina, rice, oatmeal are popular. Of vegetables, onions, carrots, potatoes, beans, zucchini, eggplant, and cauliflower are most often used.

    Today I want to show you how to cook beef liver with loaf and minced meat.

    Ingredients:

    • Beef liver - 400 gr.,
    • Onions - 1 pc.,
    • Baton - 100 gr.,
    • Milk - 150-200 gr.,
    • Eggs - 1 pc.,
    • Minced meat - 300 gr.,
    • Vegetable oil,
    • Salt, black pepper or any other spices to taste

    Beef liver cutlets - recipe:

    1. After all the products have been prepared, you can start cooking beef liver patties. It is advisable to use half-frozen or half-frozen liver for cutlets if you just bought it fresh. The fact is that in this state, the liver is easiest to grind both in a meat grinder and in a blender. The structure of a frozen liver becomes more dense, in contrast to the structure of a fresh liver, so it will be much easier to remove the film from such a liver.
    2. Beef liver before cooking cutlets from it, rinse with cold water and remove the film from it. Cut large veins. For ease of chopping, the liver must be cut into small pieces.
    3. Pass the liver through a meat grinder with onions or twist in a blender bowl.
    4. Soak the baton in milk.
    5. In the mashed liver, beat the egg.
    6. Stir with a fork until a homogeneous liver mass is obtained.
    7. Add minced meat to the liver bowl. Crush the slices of the loaf, squeezed from excess moisture.
    8. Stir all the minced meat ingredients for liver patties.
    9. Add salt and spices to taste. Of spices, you can use only black pepper.
    10. Stuff the beef liver patties again. As you can see in the photo, the mass for the cutlets turns out to be quite liquid, about the same as for liver pancakes.
    11. Hepatic cutlets  will be fried by pouring them into a pan according to the principle of liver pancakes. Heat vegetable oil in a pan. Once it becomes hot, take a tablespoon of liver mass and spread it in a pan in the form of small pancakes.
    12. As soon as the bottom of the liver patties has seized and fried until golden brown, turn the patties to the other side with a spatula.
    13. It is recommended to lay out the finished recipe which we examined immediately after frying on a plate with napkins, so that the patties are not so greasy.

    Great liver patties. Step by step recipe

    1. To make great liver patties we need two fresh carrots (I used medium sized carrots).
    2. We clean the carrots for cutlets, wash them well and rub them on a coarse grater.
    3. Onions (according to the recipe) are peeled, washed and cut into small pieces (for the preparation of chicken liver cutlets, I used medium-sized onions).
    4. Now we need a frying pan in which we will steam our prepared vegetables (chopped onions and grated carrots).
    5. In the prepared pan, transfer the carrots and onions, pour 150 grams of water and send to the fire.
    6. The contents of the pan must be steamed for 10 minutes.
    7. After this time, remove the pan from the stove, transfer the steamed vegetables to a separate container and leave them to cool.
    8. Next, we need a meat grinder, through which we will pass all the ingredients for excellent liver patties.
    9. For cutlets, we need a pound of chicken liver.
    10. Tip: it’s very good to use fresh chicken liver, not frozen chicken, to make cutlets from the liver. Since chicken liver is very tender, and fresh, it has a special taste. As you know, during defrosting, the liver loses its taste.
    11. We clean the garlic (according to the recipe) and wash it (more garlic than the recipe should not be added: three cloves of garlic for this amount of ingredients is exactly what you need).
    12. When the carrots and onions have cooled slightly, we pass them along with the liver and garlic through a meat grinder.
    13. Now we need a container in which we will combine and mix all the ingredients for amazing liver patties (for this I use a deep plastic bowl).
    14. In the prepared container we transfer the liver mass scrolled through the meat grinder and add one teaspoon of salt (if you want the salt to feel good in liver cutlets, add a little more than according to the recipe).
    15. We break two chicken eggs into a separate container and beat them, until the protein is completely combined with the yolk, using a fork.
    16. We beat the beaten eggs into the liver mass, and mix everything well until smooth.
    17. Then add four tablespoons with a hill of wheat flour, and once again mix everything well.
    18. Tip: during the preparation of liver cutlets, wheat flour can not be used, but replaced with semolina. For this amount of ingredients, we need 6-8 tablespoons of semolina. But if you use semolina, then the liver mixture for cutlets will need to be left for 30-40 minutes to swell.
    19. You can add ground black pepper to the liver mass, but I do not add. If you want, add black ground pepper to taste.
    20. We will fry home-made liver patties in a pan.
    21. Pour vegetable oil into the prepared pan and send to the stove to warm up.
    22. Put the cutlets on a preheated oil with a tablespoon and fry over medium heat on both sides until cooked.
    23. Tip: I fry the liver patties with thin little pancakes.

    2. At this time, you can do vegetables. Peel the garlic and onions, rinse under running water. Then chop the onion into 8 pieces each. Remove the chicken egg from the refrigerator in advance so that it is not cold. Pour milk into a saucepan, put on a fire and bring to a boil.
    3. When the liver is wet, throw it in a colander so that the glass is extra water. Scroll it through the meat grinder. Together with onion slices. Stir the prepared minced meat for liver patties, pepper and add a pinch of salt.
    4. Beat the chicken egg in the mincemeat for liver cutlets.
    5. Pour boiled milk there and mix to make the mass homogeneous.

Chicken liver cutlets turn out to be unusually tasty and juicy, and the cooking process is simple and quick, which is important. In order to fulfill the recipe for burgers with lard, you will need:

    • 1 kg of chicken liver;
    • 2 chicken eggs;
    • 1 onion;
    • 100 g of salted or smoked bacon;
    • 4–5 Art. tablespoons of flour;
    • 4 tbsp. tablespoons of vegetable oil;
    • salt, pepper, seasoning to taste.

    As mentioned above, the first thing to do is to separate the liver from the vessels and the film, and then grind it with a meat grinder or blender. Grind fat and onions and add to the liver.
