  • wheat flour 200 grams
  • cottage cheese 200 grams
  • butter (margarine) 160 grams
  • egg 3 pieces

How to make curd muffins

Put three eggs in a deep bowl, add granulated sugar. Using a mixer, beat them into a fluffy foam. The sugar must completely dissolve, and only then we proceed to the next stage of preparation.

Grind the cottage cheese through a fine sieve and add to the egg mixture, mix with a mixer at medium speed. Add vanilla sugar.

Place the butter in a plate and microwave for 30 seconds to melt. Then, without ceasing to beat with a mixer, pour the ghee into the egg mixture in a small stream.

Combine flour with baking powder and add to the egg mixture, sifting through a fine sieve.

Use a mixer at medium speed to knead a thick, homogeneous muffin dough. Put the seedless raisins washed with water. Mix all the ingredients with a spatula.

We do not fill the silicone molds with dough to the end, since during the baking process the cupcakes will rise a little more, and an appetizing hat will form on their surface. For convenience, put the molds on a baking sheet. Preheat the oven to 180 degrees and place the muffins on the topmost wire rack and bake for 45 minutes.

To finally make sure that the cottage cheese muffins are baked, we check their readiness with a wooden match or a toothpick. We take the finished products out of the oven and cool them at room temperature.

After making sure that the muffins are cold, we take them out of the silicone molds onto a plate. The beauty of silicone molds is that they do not need to be additionally greased, and the finished baked goods, after they have cooled down, are easily separated from the walls.

You can sprinkle the cottage cheese cakes with icing sugar before serving. But, in my opinion, they already turned out to be quite sweet and "presentable". We brew aromatic tea and invite everyone to the table!

  • Butter - 150 g.
  • Sugar - 1 tbsp.
  • Raisins - one handful
  • Vanillin - 1 g.
  • Baking powder - 1 sachet

Preparation:

Preheat the oven to 180 degrees.

Rinse the raisins and soak in hot water for 10-15 minutes. After the time has elapsed, drain the water, dry the raisins with a towel.

Grind the softened butter with sugar.


To make the baked goods more tender and airy, wipe the cottage cheese through a sieve or beat with a mixer. If time is short, then you can skip the stage.

Add cottage cheese, eggs, knead thoroughly.
Then put in the sifted flour. Add vanillin, baking powder.


Knead and pour in the raisins again. We mix.


It turns out a thick mass, which we spread in a greased cake pan using a spoon.
We bake in the oven for about an hour.



We check the readiness of the baking with a toothpick or any wooden stick. If the product is damp, reduce the temperature to 150 degrees. We bake until tender.
