Today we will replenish the collection of simple pastries - we are preparing an attractive grated apple pie. Add a small amount of sour cream for shortbread dough for softness, more delicate texture and pleasant rich taste. We divide the resulting mass into two parts, from one to form a cake-base, and the second by rubbing on the surface of the product.

Ingredients:

For the test:

  • sour cream - 2 tbsp. spoons;
  • egg - 1 pc.;
  • butter - 100 g;
  • sugar - 50 g;
  • salt - a pinch;
  • baking powder - ½ teaspoon;
  • flour - about 200 g.

For filling:

  • sweet and sour apples - 500 g;
  • sugar - 50 g;
  • ground cinnamon - ½ tsp;
  • ground crackers - 2 tbsp. spoons.

  1. Cooking the dough. Combine butter, salt and sugar softened at room temperature in a convenient bowl. We grind the components to a pasty state.
  2. Add the egg and sour cream, stir.
  3. Combine flour with baking powder, gradually add to the rest of the ingredients.
  4. Knead a soft, very elastic dough that does not stick to your hands. If necessary, increase the flour rate slightly. We separate the third part from the dough and, wrapping it with cling film, put it in the freezer for 30-40 minutes - the flour mass should harden for further rubbing. To speed up the process, before sending to the freezer, the dough can be divided into 3-4 koloboks.
  5. Put the rest of the flour mass into a mold with a diameter of 22 cm. Stretch it with your palms, forming a thin crust with a side about 2 cm high. Remove the mold with the base of the cake in the refrigerator for 30 minutes.

  6. We remove the core, peel the strong, juicy apples with sourness. Cut the fruits into medium-sized pieces and put them in a bowl.
  7. Sprinkle with sugar and cinnamon, mix thoroughly.
  8. We take out a mold with chilled dough. Sprinkle the crust with ground breadcrumbs, which will absorb excess apple juice and prevent the base of the cake from getting wet (we choose the breadcrumbs without spices and flavorings).

It is possible to involve brutal male hands in solving the issue or exploit child labor - the process, of course, in such cases may take a little longer (the apples will darken accordingly), but to facilitate your own kitchen life, this option of joint creativity is considered quite acceptable. However, even if you do the task yourself, you will have to spend no more than 5-6 minutes.

    We rub peeled fruits on a coarse grater. A couple more minutes if you do it by hand, and only twenty seconds if you get a food processor.

    Grease the baking dish with butter, the bottom can be lined with baking paper to facilitate further removal and transfer of the finished cake to the dish. Half a minute maximum.

    Pour about a third of the dry mass into the bottom of the mold in an even layer. You can move the form back and forth to distribute the "dough" evenly.

    We spread half of the apple mass. Carefully so as not to move the first, dry "cake". Lightly tamp the apples with your fingers. Minute.

    We take out the butter from the freezer and rub about a third part over the apples. If the oil is not icy, it will "go away" more: the freezer guarantees economical consumption of the product.
