How to cook pies with cabbage in a pan - recipe step by step

1. To make everything juicy and satisfying, it is important to make the filling for them correctly, so we will deal with it first.

2. We process the cabbage head, removing the dirty and rotten upper leaves, wash and chop it small. The white-headed one is chopped, carefully grind with your hands, mash a little and put it in a saucepan.

3. Fill the product with boiling water, about one liter, put on the stove, cook on a small flame for 7-10 minutes.

4. While the cabbage is cooking, clean the onion, chop it into half rings or quarters of rings, fry in oil until it becomes golden and soft in consistency. You can, if desired, put out the onion under the lid and then fry.

5. Throw the cabbage in a colander, drain the water, mix with the onion, add a little butter, pepper, salt, fry in a pan for a few minutes. Everything is almost ready. Now it remains to chop the boiled eggs and mix them with vegetables. All.

Heat slightly and pour both glasses of milk into a bowl at once. Pour yeast there first.

Stir everything well and leave the bowl for 15 minutes. There is no need to add flour to this mixture! I don’t know if it’s the milk or the lack of flour, but during this time the yeast grows into a decent sized frothy cap.



And add some salt. It is important to always add salt to the dough after the yeast has "activated", because it has such an unpleasant feature as inhibiting the yeast, which can make the dough unsuccessful.


Finally, add flour to the bowl. Better to do it gradually. First we sift 2 tbsp. flour, stir them as well as possible.


Then add a couple more glasses and stir again. It is no longer very convenient to work with a whisk, and it is too early to knead with your hands, because the dough is still too liquid and sticky. The spoon will be just right.


Introduce the remaining 1.5 cups and knead the dough until smooth. At first it may seem that there is little flour, but this impression is deceiving.


After vigorously kneading the dough for at least 10 minutes. it will become completely soft, homogeneous and practically not sticky. Now you can hide it in a film or under a towel on the rise.


2. Cabbage filling for pies.

In the meantime, the dough will grow, let's make the cabbage filling. To do this, first peel and chop the onion and carrots in any way convenient for you, put them in a frying pan, seasoning the vegetables with a little oil. I grated the carrots on a coarse grater and diced the onions.


After a few minutes, add chopped cabbage to the vegetables. Next, add some salt to the vegetables, add a little sugar - this will make the taste of the filling richer and brighter.


Add seasonings and spices as desired, mix vegetables and send to stew under a lid, adding water.


When the liquid has almost completely evaporated, add the tomato paste.


Mix and keep the filling on the stove for another 5-7 minutes, then remove and let it cool. To make things go faster, we transfer the filling to another vessel.

Meanwhile, the dough is already quite ready. We pinch off a small piece from it with greased hands, roll the piece first into a ball, then knead this ball directly with our hands into a cake, if possible, so that the middle of the cake is thicker than the edges. The dough is very, very soft and easy to sculpt, so the rolling pin is completely useless here (although you can use it with it if it's more convenient for you). The size of the cake depends on how large or small you want the cake to be.


We spread the filling in the middle of the cake and pinch the edges, forming a pie.


Put the finished pies on a greased or parchment-lined baking sheet. Let them grow for 10 minutes, grease them with an egg and send them to the preheated oven for baking. Baking temperature: 200 ° C.
