Pour the hot syrup over the berries and let the mixture cool. Then remove the berries with a slotted spoon. Put the syrup on the fire and cook for 5 minutes. Then add the berries and simmer for another 5 minutes. Set aside the resulting mixture in a cool place - let it infuse for 4-5 hours. Then put the jam on the fire again and simmer for 15 minutes.

Ready "Emerald" jam is poured into dry sterile jars and sealed.

How to make classic gooseberry jam


To make the classic gooseberry jam, we need the following ingredients:

- gooseberries 1 kg.

- sugar 1 - 1.2 kg.

- water 2 glasses.

The berries are sorted out as expected, washed and, of course (the most beloved one), peeled from the stalks and pricked. Sprinkle the prepared gooseberries with vodka, mix a little and put in the freezer for 20 minutes. Then put it in the refrigerator for 6 hours.

Boil sugar and water syrup. Pour berries into it. Without interfering, bring to a boil and remove from heat. Let the jam cool and remove the berries from it with a slotted spoon. Bring the syrup to a boil again, add the berries and bring to a boil, remove from heat. Leave on for 5-6 hours. Then put on fire and cook until tender. We check whether the jam is ready by a drop of syrup - it does not spread.

Pack the finished jam in sterile jars and seal.
