How to cook cucumbers

I cut cucumbers into rings, a step of about 1 cm. It turns out such large washers, it is very convenient to put them in jars. There is practically no free space left, which means that the space is used to the maximum.

I pass tomatoes through a meat grinder - this technique allows you to get delicious juice on the brine that will soak our cucumbers will give them an awesome taste. Some advise simply cutting the tomatoes into rings, but this will deprive the cucumbers of some of the taste, I checked.

I peel the garlic and cut it into simple thin rings.

Chopped cucumbers and ground tomatoes, I put in large saucepan, I add salt there and granulated sugar. I mix and let the composition stand for about an hour, then bring the mass to a boil and simmer on low heat for about 7 minutes on a timer, if you simmer longer, then the cucumbers will not be crispy.

About one minute before turning off, I add chopped garlic and vinegar to the mass, mix everything and turn off the heat.

I immediately lay out the mass in prepared, sterilized half-liter glass jars. They are simultaneously languishing in boiling water, along with metal lids so that the seaming process goes quickly and without problems.

I roll up all the cans and turn them over for a day to check the degree of tightness of my seaming. After a day, the jars can be stored in the pantry or in the basement.

It turns out incredibly tasty pickled cucumbers in tomato with garlic. The beauty of the recipe is in the combination of tomato juice and marinade. Well, okay, what is there to argue, roll yourself up according to my recipe and enjoy the yummy!

Cucumbers in tomato sauce: the easiest way

There is a simpler recipe for cooking cucumbers in a tomato.

Put cucumbers in sterilized jars.

Then they need to be poured over with boiling water (it is important to measure how many milliliters of water are added to each jar).

There you also need to put spices, which each hostess chooses to her taste.

The most common are parsley, bay leaf, cloves.

Also, in each jar you need to put 0.5 medium heads of garlic, you can add chopped into thin strips. It is important to note that the more spices there are in the marinade, the more spicy the cucumbers will be.

After 15 minutes, the water from the cans must be drained and boiled.

At this time, in another container, you need to prepare a marinade, which consists of 100 grams of table vinegar, the same amount of tomato paste and 2 tablespoons of salt.

Bring the marinade to a boil, then keep on fire for 5-7 minutes. At this time, you need to repeat the procedure for pouring boiling water with cucumbers. The water then needs to be drained and the jars filled with the resulting tomato sauce marinade.

Banks roll up and place in a warm dark place.

Experienced housewives recommend pre-soaking cucumbers before rolling for about 1 - 2 hours. This will help get rid of possible nitrates, you can also add water and a pinch of salt, it will help this process, while not giving a salty taste to vegetables.

And, of course, do not forget that you need to roll up vegetables for the winter only in the season of their natural ripening, in other cases the vegetable can be dangerous. Having tried such cucumbers once, they will always be present in the culinary arsenal.
