Stuffing for hedgehogs. As for minced meat, it can be different. Depends on your preference and product availability. I have completely ground pork. Chicken, turkey, pork and beef are excellent. I usually do not recommend using ground beef alone, it is dry, crumbly, products made from it do not hold their shape well and can easily fall apart. I never add an egg for gluing, the balls turn out perfectly without it.

Rice. You can use whatever you have on hand. It can be pre-boiled until cooked or half cooked in salted water, then cool a little and mix with minced meat. You can also put raw rice, but then the cooking time is significantly extended, the minced meat will be ready for a long time, while the rice will still be raw.

Vegetables. They are best added to red gravy. It can be tomatoes, carrots, onions, celery stalk, zucchini.

Spices. Do not avoid spices and spices, they go very well with both gravy and meat. The only thing to consider is that some spices are good in tomato sauce, while others are better in sour cream or cream:

Side dishes. Most garnishes will go with hedgehogs, except for rice, of course, since it is already inside. And so: potatoes in any form, vegetable salad, cereals, pasta, etc.

  • spices for meat - 0.5 tsp;
  • salt - 1.5 tsp;

  6. Rice is poured with water. It should cover the grits by about 2 fingers, but in this case more is possible, then salt. We throw 0.5 tsp into the water. salt, wait for it to boil, then reduce the heat to a minimum. We cook for 20 minutes. Then we recline it in a colander to drain the water and let it cool slightly. Mix the cooled rice with minced meat.
  7. We put half a teaspoon of salt and spices. Roll the balls from the resulting mixture. You should get 10-12 hedgehogs. While we put them on a cutting board to start preparing the ingredients for the gravy.
  8. We clean the carrots, wash and rub on a coarse grater. Remove the husk from the onion, cut it with a knife into large cubes. My tomato and cut into pieces. Peel the garlic and finely chop with a knife.
  9. Pour vegetable oil into a frying pan, put on a large fire, warm it up well. We lay out the blanks. If they do not fit, we will fry in several stages.

  15. Pour in boiled water. Stir, cover with a lid and simmer on moderate heat for 30 minutes. Don't forget to stir occasionally. Our hedgehogs were previously fried, so now they already retain their shape well. The rice has been boiled, and therefore it will not delay us now. Half an hour is enough for the minced meat to cook, the vegetables to stew, become soft and, together with water, tomato and spices from the meat, form a delicious, thick gravy.

How to make sour cream sauce for hedgehogs

  1. Transfer the sour cream to a bowl large enough to hold 1 cup of water later.
  2. Add salt, pepper and flour. Mix until smooth.
  3. Pour warm boiled water. By no means hot! From it, the flour will turn into a paste, and the sour cream will curdle. Cold is also better not to pour, it will increase the cooking time.
  4. Pour the mixture into the pan with the already fried hedgehogs. Simmer over low heat until cooked through, stirring often so the gravy does not burn to the bottom of the pan.

Hedgehogs with rice in a saucepan in bechamel sauce


Bechamel is a thick milk sauce. It will wrap the meat balls around and they will turn out very tender. Perfect with minced chicken hedgehogs. The preparation of such gravy requires some skills, so if you are a novice cook, first carefully familiarize yourself with the preparation process, and then follow it step by step.

List of products for bechamel:

  • milk - 0.5 l;
  • butter - 50g;
  • flour - 50g;
  • salt - a pinch;
  • ground nutmeg - a pinch.

How to make béchamel sauce for rice hedgehogs

  1. Melt the butter in a small saucepan with a thick bottom.
  2. When it melts, pour in the flour and, stirring constantly, fry it for 1 minute. You will have a thick yellow paste.
  3. Remove from the stove, pour in 1/3 of the milk. Stir thoroughly with a whisk, trying to break up all the lumps.
  4. We return to the stove, heating is small. Pour in the remaining milk and, stirring constantly with a whisk, cook until it begins to thicken. We take it off the stove. Salt and put nutmeg.
  5. Bechamel sauce should be added to hedgehogs at the end of cooking. To stew the fried hedgehogs in a saucepan, pour 0.5 cups of hot water from the kettle into it. When they are completely ready, pour in the bechamel, mix and cook on a very low heat for a very short time, just to warm the sauce.

Rich tomato sauce (gravy) for hedgehogs


To keep the tomato sauce its bright red color, there is one trick. This is what we will focus on in our recipe.

List of ingredients:

  • tomato paste - 2 tablespoons;
  • sunflower oil - 1 tbsp;
  • salt - on the tip of a knife;
  • dried basil, ground black pepper, paprika - 1 pinch each;
  • potato starch - 1 tsp with a hill.

How to make delicious tomato sauce for hedgehogs

  1. And the secret, in fact, is that the tomato paste must be well fried. Butter-sauteed pasta not only remains red, but becomes even brighter, due to which the sauce will be beautiful and rich in color, taste and aroma.
  2. To do this, pour oil into a clean frying pan, put the pasta and, stirring, pass it for 5 minutes.
  3. Add salt and spices.
  4. Stew hedgehogs with rice after frying in hot water (2/3 cup). 10 minutes before the end of the stew, dilute the starch with cold water (3-4 tablespoons) and pour it into the pan. Stir, wait for the boil and then add the tomato. We reduce the fire and extinguish the hedgehogs already in tomato sauce.

Step 1: prepare minced meat.

Minced meat, scroll twice in a fine meat grinder. Salt, pepper to taste, mix with a spoon. Rinse the rice in a colander under running water. Add rice to minced meat and mix with a spoon.

Step 2: prepare "hedgehogs" from minced meat.


Take the finished stuffing with a spoon and form balls in your hands. Put them in a saucepan. Fill the "hedgehogs" with cold running water, put on medium heat. Simmer the hedgehogs until the rice is cooked, about 30 minutes.

Step 3: prepare the bow.

Clean the onion. Cut with a knife on a cutting board into small cubes. Heat a frying pan with vegetable oil and fry the onion until golden brown over medium heat for about 7 minutes.

Step 4: prepare the carrots.


Peel the carrots and rub on a fine grater. Add to the onion, stir with a spoon and simmer for another 2-3 minutes.

Step 5: Prepare the pepper.


Peel the sweet pepper from seeds and partitions and cut with a knife on a cutting board into small cubes. Add to the fried onions and carrots and simmer for 2 minutes.

Step 6: Prepare meat hedgehogs.

Spoon the vegetable mixture into the bowl with the hedgehogs. Add a clove of garlic, bay leaf, salt a little. Simmer over medium heat for approx. 10 minutes.

Step 7: serve meat hedgehogs.


Remove meat hedgehogs from the pan with a slotted spoon. Serve hot, drizzling over the remaining sauce in the pot and topping with fresh herbs. Bon Appetit!

If you are afraid to cook hedgehogs with raw rice, then add semi-cooked rice. If you add boiled rice, then rice will not stick out in different directions in the finished hedgehogs.

It is advisable to take Basmati rice, since with round rice there will be no effect of protruding needles from hedgehogs.
