  • 500-700 grams of blueberries (depending on the desire for saturation of taste)

  • 115 grams unsalted butter, room temperature
  • 330 grams cream cheese, at room temperature (Philadelphia is ideal)
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Cooking:

  1. Preheat the oven to 170 C and prepare a pie dish greased with butter and lined with parchment paper. The size of the mold is 24 cm, you can prepare 2 molds or bake in sequence.
  2. In a bowl, mix flour, cocoa, baking powder and salt.
  3. In another bowl, beat the butter with a mixer until light and fluffy (about a minute)
  4. Then gradually add sugar to the butter, beat until fluffy for about 3 minutes.
  5. Add eggs one at a time without stopping beating, vanilla, then blue dye, adjust the color at your discretion, first add a couple of drops, mix, evaluate the color, add more if necessary, mix and evaluate the color again and so on until the desired result. Keep in mind that you still need to add kefir and flour and the color will be darker as a result.
  6. In 3 passes, add the flour mixture, alternating with the addition of kefir, when all the ingredients except the berries are added, set the mixer aside, add the blueberries and gently mix with the dough, for example with a spatula or spoon.
  7. Divide the dough into 2 parts, pour into molds and bake for 30-35 minutes, readiness can be checked with a toothpick, it should come out dry.
  8. While the cake is cooking and cooling, you can proceed to the filling.
  1. Mix butter, cheese until fluffy 3 minutes
  2. Add powdered sugar, vanilla extract, mix thoroughly and you're done!

Cake shaping

  1. In the original recipe for this cake, from the great pastry chef, there is advice to cut off the top from the cake to make a perfectly smooth surface, but it seems to me that this can be done at the discretion.
