Coffee culture was not born in our country: we know that latte is an Italian invention, while pourover or hario is Japanese. It is easy to imagine that raff coffee, which is on the menu of almost every Moscow coffee shop and is increasingly found in other cities of Russia, originally came to us from other countries. However, the editors of The Village have never seen raf on the menu of European, American or Asian coffee shops. In addition, the name itself is not found in other languages.

So who first came up with this coffee drink? Raf is a purely Moscow invention. It was invented in 1996–1997 at Coffee Bean, the first coffee shop in Moscow to be opened according to the American model. When one of the regular guests, Rafael, asked him to come up with something, three baristas - Gleb Neveykin, Artyom Berestov and Galina Samokhina - prepared coffee with cream and vanilla sugar. The drink began to be called "raf". After that, the first Coffeemania opened in Moscow, and the barista team moved there. Raf continued to cook in a new place. The recipe hasn't changed.

Gleb became the director of the barista department and the chief roaster of the Coffeemania coffee shop chain, now I don’t know anything about Artyom, and Galina works in the coffee industry. We didn’t really keep track of when and in which coffee shops raf began to appear, but now it is available almost everywhere, and not only in Moscow.

One of them (Rafael, or Raf) did not drink our coffee, and we were so proud of our creations. Especially for him, they began to whip coffee + cream together

Now this recipe is known throughout the country, although, unfortunately, sometimes the original name is changed.

Despite the fact that our country is large, the coffee world is quite small. For example, Tatyana Elizarova, who taught us how to roast coffee, started her career at Coffee Bean, where this drink was invented. And, most likely, we learned about Rafa from her. But at the same time, we regularly visited Moscow and, perhaps, saw him in Caffeine or Coffeemania. Now it is almost impossible to find the ends where we first met this drink. We decided to introduce it into our menu for a simple reason - we liked it. And we thought that the tastes of Omsk residents do not differ much from the preferences of Muscovites. And in general, that's how it happened. In our brew bars, raff is as popular as latte or espresso.

I heard this story - just like everyone who deals with coffee: there was a certain guest, after whom the drink was named. I learned about raf when I was still working at Caffeine and brewing coffee there. From there, variations of raf went - citrus, lavender and so on.

But I try not to cook raff on my shifts in coffee shops - I am for the natural sweetness of milk or other ingredients that emphasize the taste of espresso, and sugar is added to the raff. I prefer cappuccino or flat white, which has already become a cult in Good Enough. They have different cooking techniques but are sweet without sugar due to the delicious milk and the sweetness of the espresso.

There was a Coffee Bean coffee shop for a long time, and Rafael was a regular guest there.

He drank cappuccino, but once asked to use cream instead of milk, add sugar and whisk everything together (cappuccino is prepared separately: milk is whipped separately and poured into espresso without adding sugar). Subsequently, many of his friends appreciated this drink and began to call it “like Rafu”, but it sounded strange, so they simply shortened it to “rafa”. The result is a coffee drink that tastes like melted creme brulee ice cream (if we talk about the classic raf based on vanilla sugar). There are also varieties of raffes in which experiments are being made with the composition of sugar: lavender - white, vanilla and dried lavender flowers, citrus - cane with orange and lime peel.

"Raf" coffee, the recipe of which, at first glance, came from abroad, is an original Russian invention. Lush structure, delicate milky-vanilla taste make the drink a favorite for visitors and elite coffee houses, and roadside trailers. Plus, it's easy to make at home.

In 1996, for the first time in history, a network of elite coffee houses "Coffee Bean" appeared in Moscow. The range of coffee here was truly impressive, which at that time was new for Russian consumers. However, one of the visitors of the institution named Rafael quickly got tired of the proposed variety and asked to come up with “something new” for him. The barista team that worked in the coffee shop that shift did not invent anything complicated… The young people just whipped up a shot of espresso with cream and vanilla sugar!

The picky customer liked the cocktail so much that other visitors soon became interested in it. The drink “like Rafu” became the most popular drink in the coffee shop, and therefore it is highly expected that its name was soon shortened to the laconic “Raf”. A few years later, a new type of coffee appeared in many coffee houses in Russia, and later in Belarus, Ukraine, and other CIS countries. However, the novelty never went beyond the borders of the Commonwealth.

Some do not see the difference between "Raf" and cappuccino or other types of coffee with milk. The difference lies in the technology of preparation.

Usually, cream is whipped separately and then poured into the drink, which causes different layers to form in it. For "Raf", espresso and cream are whipped in one container, which makes the structure of the cocktail softer and more magnificent. And this drink is complemented by the taste of vanilla.

Classic recipe at home

To create "Raf" coffee, it is not necessary to have a coffee machine. It is enough to stock up on Turkish and the desire to please yourself with a delicious drink.

The classic composition of "Raf" coffee includes:

  • vanilla sugar - 0.5 - 1 tsp;
  • espresso - 50 ml;
  • cream - 100 ml.

First you need to prepare an espresso:

  1. 2 teaspoons of finely ground coffee, sugar (optional) and a whisper of coarse salt are sent to the Turk, which is held over the fire for the next 2-3 minutes.
  2. The mixture is thoroughly stirred, and then poured with clean water (50 ml), previously heated to room temperature.
  3. The drink is brought to a boil and removed from the heat. It remains only to cover it and wait 5 - 10 minutes.

In the coffee machine, the basis for "Raf" is prepared easier. You should take the same amount of ingredients, mix and pour into a coffee maker. Coffee is used very fine grinding to obtain the most intense taste.

The key to perfect coffee is high-quality beans, optimal grinding and the correct brewing technique.

The classic "Raf" is prepared like this:

  1. Espresso should be carefully strained, completely getting rid of the ground beans.
  2. Pour in vanilla sugar.
  3. Heat the cream to a temperature of 60 - 70 degrees, but do not bring to a boil. Add to coffee.
  4. Beat the resulting mixture with a cappuccinatore / whisk / mixer until a thick foam forms on the surface.

You can experiment with the amount of sugar (both vanilla and regular) at your discretion.

It is better to take low-fat cream - 10% or 15%. A more nutritious product will have to be diluted with water in equal proportions. In extreme cases, milk is also suitable, but a natural fatty product should be preferred.

Citrus "Raf" coffee

For a light sourness and fresh aroma, a citrus component is added to the classic Raf.

Ingredients:

  • espresso - 50 ml;
  • orange juice - 2 - 3 tbsp. l.;
  • orange sugar - 1 cube;
  • vanilla sugar - 5 g;

Prepare a drink according to the recipe:

  1. Mix strong coffee, warmed cream, vanilla sugar.
  2. Pour in orange juice and stir.
  3. Beat the resulting mixture until a dense foam.
  4. Throw a cube of orange sugar.

The orange component is easily replaced by any other - lime, tangerine, lemon. In the case of the last ingredient, it is recommended to add more sugar, and reduce the volume of juice by half or dilute with water.

Honey flavored drink

Honey coffee has a specific taste, but in combination with vanilla, a unique “velvet” drink is obtained.

To prepare it, you will need the following components:

  • strong coffee - 50 ml;
  • low-fat cream - 100 ml;
  • vanilla sugar - 0.5 tsp;
  • liquid honey - 1 tsp

Cooking method:

  1. Pour vanilla sugar or vanillin with powdered sugar into coffee, pour in a spoonful of honey, mix thoroughly.
  2. Add cream, preheated.
  3. Beat with a blender or other device.

The drink acquires a special taste in winter.

Cooking with Vanilla

To enhance the sweet vanilla flavor of the cocktail, you can use natural vanilla essence.

But you should be careful with this element - with an excess of such a liquid, the drink will acquire an unpleasant bitter aftertaste, uncharacteristic of coffee beans.

Required Ingredients:

  • espresso - 50 ml;
  • vanilla essence - 0.5 tsp;
  • cream or fat milk - 100 ml.

Natural vanilla essence - an infusion of vanilla beans in alcohol. It will spice up the coffee. But if there is no such ingredient, then it is easily replaced with vanilla liqueur (50 - 60 g).

How to cook "Raf" with vanilla extract:

  1. Prepare espresso according to the proposed method, get rid of the crumbs of coffee beans.
  2. Pour in the essence, cream, sugar as desired.
  3. Beat thoroughly, cool slightly.

Coconut "Raf" coffee

A popular addition to coffee is coconut syrup or milk. It will be especially tasty in combination with a mild creamy taste.

To prepare, take:

  • vanilla sugar - 1 tsp;
  • cream or milk - 80 ml;
  • coconut milk - 20 - 30 ml;
  • espresso - 50 ml.

Cooking method:

  1. According to the classic recipe, cook a portion of espresso, strain.
  2. Add sugar and stir until completely dissolved.
  3. Mix the cream, preheating it on the stove for a few minutes with the coconut milk.
  4. Pour in the milk mixture, beat for 4-5 minutes.
  5. Decorate with coconut flakes.

It is better to add one or two tablespoons of sugar for a richer taste.

lavender drink

Exotic lovers and those who want to try something new can try the "eastern" version of "Raf" - with the addition of lavender. Despite the specific taste, drinks with this additive are becoming more and more popular, and it is not difficult to make such coffee on your own.

For this you will need:

  • strong freshly brewed coffee - 50 ml;
  • vanilla or regular sugar - 1 tsp;
  • 15% cream - 100 ml;
  • lavender inflorescences - ½ tsp

Cooking method:

  1. Using a coffee grinder or blender, grind the lavender flowers and vanilla sugar.
  2. Add the sugar-flower mixture to the hot espresso and stir.
  3. Pour in the cream and beat until foamy.

Decorate lavender "Raf" coffee with whole lavender flowers.

Everyone is able to make such cocktails, while you can use both a Turkish and a coffee machine.

The main thing is to adhere to the method of preparing espresso and the indicated proportions.

If you want to cook a larger amount of "Raf", the volume of ingredients must be proportionally increased. You can experiment with the proportions of vanilla sugar and other additives.

You can serve the drink not only as a cappuccino - in small porcelain cups, but also poured into tall glass glasses. Decorate the cocktail with a vanilla pod, orange slice, coconut flakes, chocolate or almond chips.

Despite the large number of types of sweet coffee with milk, Raf coffee occupies a special place in the coffee cards of specialized establishments and in the hearts of coffee gourmets. This is largely due to the delicate creamy taste of the drink with a pronounced coffee tint. In addition, there are more authentic flavor combinations - Raf coffee with honey, lavender, citrus.

Origin

Raf coffee looks and tastes a lot like latte or cappuccino, but it is a fundamentally different coffee drink. It is prepared from espresso, involves the addition of milk and, of course, two types of granulated sugar - regular and vanilla. Thanks to this, the taste becomes softer and more tender, it has shades of creme brulee.

The origin of the drink is very curious, since it was invented in Russia, more precisely, in Moscow. Recall that the birthplace of most types of coffee is Italy, and the world owes the appearance of drinks with a lot of water (americano) or the addition of milk to the Americans.

If we talk about Raf coffee, it was first prepared by the barista of the Coffee Bean chain of coffee houses in the early 90s for a foreigner named Rafael. The visitor was not a big fan of cappuccino and latte, so he asked for a drink specially prepared for him, in which the taste of espresso would not be felt so clearly.

The staff prepared an espresso for the guest and whipped it with low-fat cream and sugar. The guest liked the result of such an experiment, and then all Raphael's friends who ordered "coffee like Raphael's" appreciated it. In the end, the name was transformed into a more convenient Raf coffee, and then (like the drink itself) migrated to other profile establishments.

Currently, Raf coffee is offered by most coffee houses not only in Moscow, but also in other cities of Russia, while it is almost never found in foreign establishments.

Composition and calories

The composition of the classic Rafa is quite simple - a portion of espresso (25-30 ml), 100 ml of cream with a fat content of not more than 11% and 2 teaspoons of sugar. The latter is represented by ordinary sand and vanilla sugar, taken in equal amounts.

The energy value of a serving of 130 ml is 135-150 kcal. However, it is more convenient to calculate the calorie content each time, taking into account the ingredients of the drink. A serving of espresso is the most non-caloric in it - only 2 kcal. The main load is given by cream, the calorie content of which is 120 kcal per 100 ml, and sugar. The usual one has an energy value of 377 kcal per 100 g (19-22 kcal per teaspoon), vanilla - 288 kcal (about 14-20 kcal per teaspoon).

If supplements are used, this usually results in an increase in calories. The most nutritious is, of course, honey - 312 calories for at least 100 g of product, or 30-35 kcal per teaspoon. The calorie content of orange fresh is about 36 kcal, lavender is 23 kcal per 100 g of product.

If caramel, toppings, chocolate chips are used for decoration, this also affects the total calorie content of the drink.

Raf coffee, especially in coffee shops where it is served in large glasses, can hardly be called a diet drink. If you are watching your figure, it is better to immediately include it in your daily calorie intake and not use it at unplanned times. The drink itself is sweet, rich and high-calorie, so it does not need additional desserts.

Difference from cappuccino and latte

Raf coffee, latte and cappuccino are prepared on the basis of espresso with the addition of milk or cream and sugar, but these drinks are very different from each other.

Unlike cappuccino, Raf coffee is prepared with cream, which makes its taste softer, creamy notes are more clearly felt in it. The preparation technology is also different - for cappuccino, milk is whipped separately, which is poured into espresso. Raf involves the simultaneous whipping of espresso, cream and sugar, so that its structure is more airy.

If we compare latte with Raf coffee, then first of all it should also be noted that the recipe involves the use of milk, not cream. Some of the milk is simply heated, while the other is frothed with the help of a steam wand. Latte is usually laid out in layers - first, warmed milk, then gently (along the walls of the glass) a layer of espresso is poured, after a cap of whipped milk. It is logical that such a drink is served in a glass goblet to demonstrate the transition of layers.

For latte, it is important that the ingredients do not mix, while for Raf coffee, the ingredients are mixed in one container. It turns out that the difference is due to the technology of preparation, which, in turn, entails differences in the serving of drinks.

Classic recipe

The classic recipe is the one used to make coffee in the early 90s at Coffee Bean. It will be possible to repeat the drink only if you have special equipment for whipping and a coffee machine. The latter will help you prepare the “right” espresso with a 25-30 second extraction time. The whipping device will allow you to achieve a uniform drink, get a light, airy, foamy texture.

To prepare one serving of Raf coffee according to the classic recipe, you will need the following components:

  • 50g espresso (essentially double the traditional 25ml espresso;
  • 100 g of cream, the fat content of which is not more than 11% (if only a fatty product is available, it must first be diluted with milk);
  • 1 teaspoon vanilla and regular sugar.

First of all, you need to brew espresso. The flow sheet indicates that 7-8 mg of ground coffee beans are required per 25 ml of water. While the coffee machine is preparing a drink, you need to warm up the dishes for serving Raf coffee. It can be a ceramic mug or a transparent glass with a low stem.

Cream should be used at room temperature, cold cream will not whip well and will cool the drink. The cream is put into the pitcher, sugar is added there, after which the prepared espresso is poured into the same place. Now you need to use the steam outlet of the coffee machine to beat the resulting mixture. The drink is ready, it remains only to serve it beautifully.

Varieties

You can also cook Raf at home in the absence of a coffee machine in a cezve. First you need to prepare coffee from 50 ml of water and 1 teaspoon of ground coffee. To make the taste of the drink brighter, grinding the beans immediately before preparing coffee will allow. For the same purpose, you can throw a pinch of salt on the bottom of the cezve or preheat the ground grains at the bottom of the cezve for several seconds.

It is better to pour coffee with cold unboiled water, the fire should be moderate. It is important to warm the coffee beans, getting useful substances, taste and aroma from them, but not to allow the drink to boil. As soon as you notice the rising foam, you should remove the cezve from the heat and strain the coffee.

At the same time, heat the cream. You can do this in a water bath or put them in the microwave for a couple of minutes. Next, combine 2 teaspoons of sugar (it is better if it is vanilla and regular sugar taken in equal proportions), warmed cream and brewed coffee and beat the composition well with a blender. When lush foam appears on the surface, the coffee is poured into serving dishes. It is desirable to preheat it over steam.

You can decorate the drink with chocolate or coconut flakes, topping.

Raf coffee is a real field for culinary experiments. You can add alcohol, citrus juice, honey to it. From this, the taste of the drink only benefits.

Orange Raf coffee is very popular. The recipe for its preparation is in many ways similar to that of the classic drink, but instead of vanilla sugar, 20 ml of orange fresh is taken. It should be without pulp. Instead of juice, you can use orange sugar, then the citrus flavor will be felt to a lesser extent.

This version of Raf coffee quenches thirst, has citrus freshness, and in addition, speeds up metabolism and helps to eliminate toxins.

To make the drink more viscous in taste, spicy and fragrant, as well as more beneficial for the immune system, the replacement of sugar with honey will allow. It will take 1 or 1.5 teaspoons of natural honey. This method involves the preliminary connection of 50 ml of freshly brewed espresso and 100 ml of cream. Only after that honey is introduced and coffee is whipped.

The preparation of Raf coffee according to this recipe usually involves serving it in ceramic cups. Ground cinnamon is used as decoration. Honey drink has a warming effect, so it is rightfully considered more winter.

Fans of nuts or Snickers bars will appreciate the nut Raf. The recipe includes a fairly high-calorie nut paste, so the cream is replaced with milk. For 50 ml of espresso, you need 100 ml of milk, a tablespoon of peanut butter, as well as cane sugar or caramel syrup to taste.

First of all, the paste must be diluted in a small amount of milk to the consistency of thick sour cream, and then pour the resulting mixture into a pitcher. Add warmed milk, sugar or syrup there.

Brew espresso and pour it into the pitcher in the same way, then beat the composition with a steam vent or blender. After the drink is poured into cups and decorated.

For this recipe, it is important to choose a quality pasta. It should be as natural as possible, and nuts should be the main component.

Instead of vanilla sugar and vanilla, you can use lavender. Lavender Raf has a pronounced calming effect, perfectly relieves stress. This recipe uses lavender flowers instead of vanilla sugar. It will take half a teaspoon of dry raw materials.

Lavender flowers must first be ground in a coffee grinder with a teaspoon of ordinary sugar to a state of homogeneous fragrant powder. The rest of the process is identical to the classical one. Espresso is brewed (in a coffee machine or a Turk), combined with cream, lavender sugar is added. All ingredients are whipped until foamy.

The decoration of this drink is traditionally lavender flowers. They pair well with an orange slice.

Fusion cuisine offers an unusual Raf cheese coffee. From the name it is clear that the drink will have not only creamy, but also cheesy notes.

To prepare it, coffee is brewed in cezve from 2 cups of water and 2 teaspoons of ground coffee. Usually spices are added to coffee - cinnamon, ground ginger, nutmeg, cloves. But you can refuse to use them or adjust the amount to your taste.

In 100 ml of warmed cream, add 50 g of soft cheese and beat the mixture thoroughly with a blender until smooth. After that, it remains to combine coffee, 2 teaspoons of sugar (regular and vanilla) and cheese-cream mixture in a warm pitcher and beat.

A little advice from professionals will help you get even more delicious and aromatic Raf coffee.

  • It is better to put vanilla sugar in cream before heating it, so it will dissolve more qualitatively, completely give up its taste and aroma.
  • If the fat content of the cream is high enough, and there is no milk on hand to dilute them, you can even do this with boiled water. Interestingly, more and more often, when milk and cream are added to coffee, it is called Rough coffee in English.
  • Vanilla sugar in a drink, unlike baking, can behave quite aggressively, making coffee cloying and tasteless. It is recommended to start adding it with 3 g per serving, if necessary, increase to 5-6 g (just a teaspoon).

If you do not like vanilla, you can replace it with cane or orange sugar, use honey or lavender.

Raf coffee is served in a cappuccino cup. In this case, the sprinkle on the surface of the cup looks harmonious. You can present the drink to guests in a transparent glass for latte macchiato. In this case, an air cap and a delicate cream shade of the drink will cause delight.

As a rule, a double shot of espresso is used for a large (from 180 ml) glass, and the amount of other ingredients is also increased accordingly.

Vanilla Raf coffee must be served in a warm bowl, so the taste of the drink is better revealed. The temperature of the glass should be such that it is comfortable to hold in your hands.

There is also a variety of double Raf coffee. In this case, the volume of espresso and cream increases by 2 times, but it is better to adjust the amount of vanilla sugar to taste so as not to get an overly sugary and spicy drink.

Raf coffee should be served immediately after preparation, until the foam has settled on its surface and the drink has had time to cool.

  4. pour slightly warmed cream into the drink;
  5. grind sugar to the state of powdered sugar;
  6. grind lavender flowers and add to powdered sugar;
  7. pour powdered sugar with lavender flowers into a drink;
  8. with a blender (or cappuccino machine), beat the lavender raff until foam is formed;
  9. pour into a glass and serve to the table (or try without leaving the stove).

Did you know? To prepare Raf coffee without a coffee machine (at home), mix a shot of espresso, 100 ml of hot cream and a teaspoon of vanilla and regular sugar. If you do not have a coffee machine or cappuccinatore, then whip the drink with a blender or whisk. You will get a delicious drink, very close to the original. -When preparing coffee in a Turkish or French press, carefully strain it - small particles of coffee can spoil the drink.

  • If you want to experiment, then try replacing the vanilla sugar in the recipe with a spoonful of liquid honey or your favorite syrup - lavender, caramel, blackberry or coconut (or whatever you like).
  • It is advisable to preheat a cup or glass for a drink with steam.
  • If you only have fat cream, 30-33%, dilute it with milk (1:2).
  • Vanilla sugar can be replaced with vanilla in a small amount (at the tip of a knife). Remember that if you overdo it with vanilla, the coffee will be very bitter.
  • Try other variants of delicious coffee - "with cognac" and non-alcoholic, very unusual "coffee with cinnamon".
