I advise today's article not only to novice hostesses, but also to experienced ones, since I myself, having prepared a fur coat for the hundredth time and going to make it in 101, read a way to make it even tastier. Boil beets, potatoes, carrots and eggs, cool, peel. Peel the herring and cut into small cubes. Finely chop the onion.
Put in a salad bowl in layers: potatoes, herring, onions, carrots, eggs, beets. Coat with mayonnaise. I repeat the layers one more time.

During this time, we will prepare the herring. The last times I tried to do it with already cut and boneless, packed in a vacuum, I must say it is also good, especially since the herring in these packages is already with salt and vinegar, that is, delicious.
This time I bought a 300 gram Matthias fillet, it turned out to be just as much as needed. Cut the fillet into small squares.
Peel and rub the vegetables on a coarse grater. It is most convenient to make this salad in a salad bowl with high sides, but it so happened that I put everything in a herring maker, to arrange a fur coat in it is another task, but what can I do just like that for me a traditional herring under a fur coat))

Several years ago, I came across an advice that grated vegetables should be salted and added with a little sunflower oil. I tried it and, indeed, it turned out to be tastier, at least for this New Year, the herring under a fur coat was eaten one of the first.

So do not like eggs - feel free to remove them from the recipe. I tried to cook this way, but returned to the usual version, I personally like it more.

A beautiful, juicy traditional version without eggs (they began to be added a little later). He came to me from childhood, and he remained the most beloved.

So, pre-boil vegetables (except onions, of course). For potatoes and carrots, 20-25 minutes of cooking is usually enough, but beets take longer - 40-45 minutes for a medium-sized beetroot. If vegetables are easily pierced with a knife during cooking, then they are ready.
We take them out and cool them under cold water, or wait for them to cool down ourselves. Usually I do this, cook in advance so that I can make a salad the next day, because on a holiday there is not always time for cooking.
Try to choose bones as much as possible from herring. Herring is a very bony fish, its bones are thin as a cobweb, but then they are felt in the finished dish, and this can be unpleasant, so you will have to try during cleaning and cutting. I myself really do not like this activity, but there is nothing to be done.
We cut the fish into small cubes (I got a skinny and tortured one today, at least enough for a layer! 🤔).
It is very convenient to use such a sliding form, as if it was created for puff salads. The layers are laid down very evenly and a perfect circle is obtained. This is much more difficult to do on a plate.
In the traditional Soviet version, the herring is always the first layer. The idea to lay it out on potatoes appeared much later.
And it was connected with the fact that when taking a portion from a large tray in a canteen, the fish crumbled all the time and ended up mostly in the tray, and not in the consumer's plate. Therefore, at home, many began to adhere to laying out herring in a second layer on potatoes. This is actually more convenient.
And it does not affect the taste at all. Do you remember the rule that the amount does not change from a change of place? So, it also applies to salads. In general, I am showing a classic recipe, and you can, if you wish, independently change the layer of potatoes and herring in places.
The weight of my fish is about 400 grams. This was enough for 1 layer for a small 16 cm mold.
The second layer I have is onion, it is also mixed with a drop of mayonnaise. In fact, when you mix it right away, it allows you not to make a "mayonnaise grid" and as a result, there is a minimum of mayonnaise in the finished dish.
There shouldn't be a lot of bows. In no case is it a thick layer, otherwise it will clog all the components with its taste.
I took a red, salad onion. It is softer than regular white onions. If you do not have red, and you want to take white, then at least scald it with boiling water or marinate in water with vinegar (1: 1) so that it is not so harsh.
I spread it in a thin layer on the fish.
The next layer is potatoes, grated on a coarse grater. It does not need to be mixed with mayonnaise in advance because you will get a dense puree. To prevent this from happening, lay out a layer and make a mayonnaise mesh on top.
This is easy to do if you cut off the corner of the pack and squeeze it out through a small hole.
Another plus, when you mix it with mayonnaise in advance, is that the salad does not need to stand and soak - it is ready to eat right away.
Rub the beets in the same way on a coarse grater and mix with a smear. We spread it with the last bright layer. Beauty!
You see, it immediately turns out to be red and elegant, there is no need to wait until it is saturated.
I remove the sliding form very carefully so as not to damage my artwork. It remains only to arrange it somehow beautifully.

By the time of cooking, all vegetables should be boiled until tender. This time I took an ordinary white onion, cut it and pre-marinated it in a mixture of water and vinegar (1: 1) so that it would not be so hot.
For cooking, I will use a detachable dish with a diameter of 27 cm. I immediately mix the fish with a small amount of mayonnaise, let it be juicier. And immediately spread the onion on top with a thin layer.
Coarse grated potatoes are next on the list, and I cover them with mayonnaise mesh.
The next layer - I also rub the carrots on a coarse grater and coat. It seems to me that when you rub on a large one, it turns out tastier.
And beets, also large, complete our "fur coat". I even out this layer as much as possible, I smear it well.
It turns out this is such a light pink color. A little more time will pass, the salad should be infused and then the mayonnaise will become a rich bright pink color.
It's time to decorate. Another traditional decoration option is egg flowers. You need to fill your hand a little, but in general it is not difficult to do them, but it turns out very nice and gentle.

In order to make the middle of the flowers, I decided to use a mixture of mashed yolk and cream cheese, about 1: 1. I simply rub the yolk with a fork, add a spoonful of cream cheese and stir with a fork.
It turns out a homogeneous pasty mass, from which it is easy to sculpt anything. I take a little and roll the balls, put them in the center of each flower.
Also, the middle can be made from carrots, or dripped with ketchup. You could add paprika to my mixture, then the middle would turn out to be orange.
It turns out unusual and beautiful! When the salad is soaked, it will be even more beautiful. But, unfortunately, I was eaten before it happened, so I could not capture this moment for history. 😊
Why not? And such a combination takes place, and has already firmly entered the list of variations of this salad.

This time I have herring from the pack, it was already cut into pieces. Well, somehow I was too lazy, and I did not cut it, I just laid it out. Now, looking ahead, I can say that it was nevertheless necessary to cut it into small pieces, because it was not very convenient to eat.
I finely chopped the onion and pickled it in a mixture of water and vinegar in a ratio of 1: 1 + 1 tsp. sugar for 5 minutes. Then she drained the water and squeezed it out.
I like the way pickled onions behave in this salad, its sourness is well felt. But, since we also have a sour apple (I have a Semerenko variety), it may seem to someone that there is too much acid. Although, for my taste, this is not so and it turns out crazy yummy.
Therefore, if you are afraid or you do not really welcome vinegar, then you can simply scald the onion with boiling water. But I would definitely not recommend leaving it fresh, the taste is too harsh.
So, we laid the herring, then cover it with a fine mesh of mayonnaise and spread the pickled onions. Then comes the potatoes. This time I cut it into cubes, that's okay too.
I cover the potatoes with a mayonnaise net.
I remove the skin from the sour apple. And I rub it on a coarse grater. Something like this.
I spread it on top of the potatoes. I have a variety that contains a lot of iron, so the apple shavings begin to darken quickly. It's okay, that's okay. Distribute it and add some more mayonnaise.
The next layer is grated carrots, I had them very large, so 1 piece was enough.
I grated the beets in advance and mixed with mayonnaise, distribute it evenly over the salad.
And here's an interesting trick, when the grated egg is placed very last and remains fluffy. Many people do this, the fur coat turns out to be even more luxurious!

In the meantime, I was preparing gelatin, I prepared all the ingredients. When I start collecting the salad, there will be no time to rub something, because you need to work quickly with gelatin, it tends to harden.
I rub beets, carrots, potatoes on a coarse grater (at your discretion, on a small one), I cut the fish into small pieces, mix with finely chopped red salad onions. I squeeze the mayonnaise into a separate container. Fuhh, I'm ready for the funnest part! 😎

Now do you understand why I distributed all the components in different containers? In order to make it more convenient to immediately mix them with jelly mayonnaise.
According to the original recipe, we must add 4 tablespoons of jelly to each ingredient and mix. On the way, I got 5-6 spoons, 4 were somehow not enough (I will say in advance that this expense was enough and even more was left).
I mix the beets with the gelling mayonnaise, stir well. The order of the layers in this recipe is interesting, they will not just go topsy-turvy and the beets will be our first, but in general the whole order differs from the traditional one. This is done to visually make the salad more beautiful, you will see for yourself later.
So, I spread the beets to the bottom, level them with a spoon, tamp them if possible. By analogy, I do the same with potatoes. We do not take it all at once, but divide it in half. The first half goes to beets.
The next layer is fish with onions and a gelling base. I also level and tamp with a spoon.
Then comes the second half of the potatoes, and grated carrots with jelly closes the list of layers. On top I cover it with another piece of cling film, level it additionally with my hands, put a cutting board on top to ensure even pressure.
And I put it in the refrigerator overnight. Or at least 4 hours. Tomorrow we'll see what happened.
So, the next day, I carefully take my herring bar out onto a large glass dish. The mold is silicone and it comes out of it very easily.
The first sensation is a complete delight at how bright and elegant it is! Look: a herring in the center, a bright hat and a beautiful orange carrot base, this arrangement of layers fully justifies itself.
Decorate with grated egg white and yolk, slices of figuratively cut cucumber, parsley and dill.
This option is incredibly beautiful, it is easy to cut it into slices of the desired size - convenient! And, of course, the taste ... It is quite traditional "herring-fur coat" in my opinion, it is practically not felt that it is jelly.

It is no coincidence that I put this option at the very end. Quite a laborious recipe that requires two circular split forms of different diameters.
Well, the result is accordingly delicious, look, on top is a bright and beautiful beet mousse, and inside is our favorite salad.
It all looks like a fruit and berry cake, gorgeous of course, but you have to work hard. Although, if you cook in the evening and insist at night, then everything can be done in time and surprise the guests!
Ingredients:
First, we need two round split baking dishes of different diameters. And, look, what a thing: we take the bottom from the large form, and the walls from the small one. And we begin to lay out the layers of salad.
All ingredients for this option are diced. So the taste will be better felt, I tried and grate, but for some reason it seemed to me tastier with cubes. All layers will need to be lightly pressed with a spoon so that they lay down more tightly.
The first layer is potatoes with a fine mesh of mayonnaise.
Then diced herring.
The next onion and again a fine mesh of mayonnaise.
We put some of the beets inside the salad. In the same way, cut into cubes, like the rest of the components and lay out in a thin layer.
On top of it, a layer of carrots and again a little mayonnaise. In this form, we put it in the refrigerator for 3 hours to "grab".
Do you see about 1.5 cm of space left around? We will now pour the beet mousse there.
To make it, soak the gelatin in cold boiled water, when it swells, heat it in a water bath so that it completely dissolves and disperses. Peel the boiled beets and beat with a blender until they are mushy, add salt and pour in the gelatin. Stir the mousse well. And pour it into the free space around the salad and just above it so that it completely covers it.
Shake the mold gently for two minutes to distribute the mousse better and cover the filling more evenly. We put in the refrigerator overnight.
During this time, the gelatin will completely solidify. Remove the shape ring.
Then carefully remove the parchment paper. It turns out just super!
It looks like a cake indeed. We do not remove it from the pallet. It remains only to decorate with mayonnaise and herbs.
Guests will be simply stunned when they find that there is a favorite salad inside the "cake"! 😍
