This will probably become my favorite apple filling. Now experimenting with additives.

Since it is winter outside - the season for oranges is in full swing, I decided to bake a pie with apples and oranges.
For closed shortcrust pastry pie, with a diameter of 30 cm, I needed 5 medium-sized apples, two oranges and a little brandy. I decided not to add cinnamon, although they say that it is ideal for apple pies. Blogging requires regular replenishment of material, which means I need to bake quite often. Oven with apples. A variety of baked goods with apples are great for pumping my dough skills. But the constant smell of cinnamon .... He's pretty strong. I'm already tired of it. Now, if I started apple pies, as before - a couple of times a year or six months, then - yes! But not twice, or three times a week!))
So - cinnamon aside! Long live the citrus spirit!

Recipe for orange and apple filling for pies.

Apples - 5 - 6 pcs. medium size

Oranges - 2 pcs

Sugar - 100 gr (or to taste)

Cognac -1.5 tbsp. l

Cinnamon (1 tsp) - optional

Cooking the filling

Other i don't peel the orange. I thinly remove the zest from it (from the half - too much from the whole), cut it in half and squeeze the juice out of the halves.

Finely chop the zest with a knife.


I take apples with a rigid structure. With crumbly - when roasted, they fall apart, and you get jam. Delicious, but still, jam. I only clear the seed pods.


Can and peel off the skin, too. But, I think, it will turn out more fragrant and elegant with her.
Put butter on a preheated pan. While the oil is warming up, I cut the peeled apples into cubes, about a side centimeter and a half... I transfer the apples from the board into a frying pan with butter, and, over a fairly high heat, fry for two minutes.


I add sugar and keep stirring. The mass grumbles, hisses, puffs steam. When the liquid evaporates, add the zest and orange slices. I mix gently.

I fill everything with orange juice and cognac.
Everything takes a maximum of ten minutes. It turns out a juicy filling with a citrus aroma, with caramel-creamy taste.

Ingredients:

  • 270 g flour;
  • 95 g butter;
  • 4 eggs;
  • 4 apples;
  • 1 orange;
  • 170 g sugar;
  • 110 ml cream.

How to make an apple and orange pie:

  1. Using a coffee grinder, grind the sugar to form powdered sugar.
  2. Add powdered sugar (50 g) and yolk to the flour.
  3. Remove the oil from the refrigerator and wait until it melts a little. Chop it into cubes and add to the flour.
  4. Knead the dough, adding 3 tbsp. l. cold water. It should be sandy. Wrap the dough in foil and refrigerate for 70 minutes.
  5. Cut the apples in half. Get rid of the pith and stem. It is advisable to use a noisette for this. To prevent the apples from darkening, sprinkle them with orange juice.
  6. Separate the whites from the yolks and beat them to create a persistent foam.
  7. Remove the zest from the orange and grate it.
  8. Squeeze the juice out of the orange.
  9. Place the cream in a bowl and beat until a strong foam forms.
  10. Grind 3 yolks to a white consistency together with powdered sugar. Add orange zest, juice (3 tablespoons), egg whites and cream. Stir until the mixture becomes smooth.
  11. Line the bottom of the baking dish with parchment paper.
  12. Remove the dough from the refrigerator and grate it.
  13. Spread the dough over the bottom of the container.
  14. Pour the prepared filling onto the dough.
  15. The apples should be cut and placed on the cream.
  16. Preheat the oven to 180 ° C and place the mold with the workpiece in it for 35 minutes.

  • 120 ml orange juice;
  • 55 ml of water;
  • 2 eggs;
  • 6 tbsp. l. oils;
  • 12 g yeast;
  • 2 tsp vanilla sugar;

  1. Pour the yeast with water, then stir it thoroughly and leave it for 12 minutes to come up.
  2. Sift the flour.
  3. In a bowl, beat eggs with sugar, add juice, butter and yeast mass. Add flour and salt, then knead the dough. Cover the container with the dough with a towel.
  4. The dough needs to be kneaded when it rises.
  5. To prepare the filling for the pie, you need to wash and peel the apples, cut the cores. Chop the fruit. Transfer the apples to a heavy-bottomed saucepan, add sugar and simmer for 17 minutes.
  6. A small piece needs to be separated from the dough; it will be needed for decoration. Roll out the dough using a rolling pin. The layer should be larger than the shape. Place the dough in a mold, make sides. Lay out the filling, spreading it out in a thin layer. From the remnants of the flour mass, strips should be formed and placed with a mesh over the apple filling.
  7. It is necessary that the cake sit on the table for 12 minutes. Then you need to beat the egg and grease the surface of the workpiece with it. Bake the treat in the oven for 40 minutes at 180 ° C.

Products:

  • 210 g sugar;
  • 240 g flour;
  • 190 g butter;
  • 4 eggs;
  • 1/2 tsp soda;
  • 5 apples;
  • 1/2 tsp cinnamon;
  • 1 tbsp. l. water;
  • 1 orange.
  1. Peel off the washed apples and remove the seeds.
  2. Peel the orange and cut into cubes.
  3. Using a grater, you need to grind the apples, mix them with orange pieces and place the fruit mass in a saucepan, add sugar (50 g) and cinnamon. Add water in the amount of 1 tbsp. l. Cover the container and send to the stove, cook for 12 minutes. In this case, the fire should be small. Open the lid to evaporate excess liquid.
  4. Separate the whites from the yolks and put the container with them in the refrigerator. Add softened butter to the yolks and, using a whisk, beat the mass.
  5. Add sugar (1 tbsp. L.), Salt, soda and flour, sifted in advance.
  6. The dough should be kneaded well, if necessary, you can add more flour. Divide the dough into 2 parts. One should be slightly larger than the other. Send the smaller piece to the freezer, and wrap the larger one with cling film and place in the refrigerator for 35 minutes.
  7. Remove the whites from the refrigerator and start whipping them. A lush white foam should form. Gradually you need to add sugar that has remained unused. Beat until the proteins gain density.
  8. Put parchment on the bottom of the mold. Take out the dough, roll it into a round layer and place it in a mold, while forming a basket with sides, their height should be 3 cm. We turn on the oven and leave it to warm up to 200 degrees. Squeeze the juice from the oranges and remove the zest. Peel the apples, remove the hard center with seeds, and cut the pulp into large slices. Now dissolve the butter in the brazier, add granulated sugar and pour out a tablespoon of orange juice. Next, we begin to boil the butter-sugar mixture until the sugar is caramelized. You can tell if the caramel is ready by the brown color of the sugar. After that, pour in the remaining orange juice, add the zest, stir and remove the brazier from the heat.

Pour the caramel into a metal baking dish and place the apple slices in it. Roll out the puff pastry into a round layer, the diameter of which should be two centimeters larger than the diameter of the baking dish. We cover the apples with this layer and turn its edges down. We put the dish in the oven and bake the cake for 20-30 minutes. Remove the finished cake from the oven, cover with a towel and cool directly in the form for about 15 minutes.

Then put the cake pan on the fire and let the caramel heat up. As soon as the syrup begins to gurgle, remove the form from the heat, cover it with a dish and gently turn it over. And now we leave our cake until it cools completely.

Ingredients:

  • 2 cups of flour
  • Pack of butter
  • 2 eggs
  • Half a glass of granulated sugar
  • 2-3 apples
  • 1 orange
  • A tablespoon of ground cinnamon
  • A pinch of salt

Preparation:

First you need to knead the dough. To do this, break eggs into a bowl, add soft butter and sifted flour mixed with salt. Knead the dough with your hands until it becomes elastic and homogeneous. Now we wrap the dough in cling film and put it in the refrigerator for an hour and a half.

Meanwhile, peel the apples and the tough center with seeds, and cut the pulp into slices. Put the chopped apples in a bowl, sprinkle with sugar and cinnamon, pour over with freshly squeezed orange juice and stir. We leave them to infuse.

Apple Orange Pie

Quite an unusual recipe for making a pie with apples and oranges. The fact is that we will use apples for the filling in two different forms. But first things first.

Ingredients:

  • 300 g flour
  • 3 tablespoons caster sugar
  • 4 tablespoons soft butter
  • 2-3 tablespoons of water

For filling:

  • 10 apples
  • Half a glass of granulated sugar
  • 1 orange
  • A pinch of salt
  • 1 tablespoon butter

Preparation:

To prepare the dough, we need to mix sifted flour with granulated sugar and butter. You should get flour crumbs. Now add water and knead the dough until elastic - it should not stick to your hands when finished. Then we wrap it in plastic wrap and put it in the refrigerator for two hours.

Meanwhile, we are preparing the filling. Remove the zest from the orange and squeeze the juice. We put three apples aside, and clean the rest, cut in half and remove the center with seeds. Then put the chopped apples in a saucepan, add a pinch of salt, freshly squeezed orange juice and zest to them. We put the saucepan on low heat and cook the apples for about twenty minutes. After that, knead the still hot apples in mashed potatoes, add butter, mix and cool.

We turn on the oven and heat it up to 250 degrees. Grease the baking dish with butter and put the dough into it. Now we knead it into a cake along the diameter of the mold and prick it in several places with a fork. We put the form in the oven and bake the cake for fifteen minutes

After that, take out the form, put a layer of applesauce on the cake base, and put fresh apples cut into slices on top. We send the cake to the oven again and leave it there for another ten minutes.
