For closed shortcrust pastry pie, with a diameter of 30 cm, I needed 5 medium-sized apples, two oranges and a little brandy. I decided not to add cinnamon, although they say that it is ideal for apple pies. Blogging requires regular replenishment of material, which means I need to bake quite often. Oven with apples. A variety of baked goods with apples are great for pumping my dough skills. But the constant smell of cinnamon .... He's pretty strong. I'm already tired of it. Now, if I started apple pies, as before - a couple of times a year or six months, then - yes! But not twice, or three times a week!))

Put butter on a preheated pan. While the oil is warming up, I cut the peeled apples into cubes, about a side centimeter and a half... I transfer the apples from the board into a frying pan with butter, and, over a fairly high heat, fry for two minutes.
I add sugar and keep stirring. The mass grumbles, hisses, puffs steam. When the liquid evaporates, add the zest and orange slices. I mix gently.
I fill everything with orange juice and cognac.
Everything takes a maximum of ten minutes. It turns out a juicy filling with a citrus aroma, with caramel-creamy taste.
