Now, few people know about the beneficial properties of kombucha. But it helps to make food more complete. Kombucha has a high content of vitamins and microelements necessary for the body. It looks unusual and interesting because it grows in ordinary tea right at home. It looks like a round cake that looks like a jellyfish, and the solution under it is not only useful, but also pleasant, with a sour taste, similar to kvass.

The body of a kombucha (medusomycete) has a jelly-like consistency and resembles a jellyfish. It is formed from acetic acid bacteria in combination with yeast. Kombucha grows in tea. It feeds on purines, an important nitrogen-containing compound. For this, the mushroom absorbs the purines from the tea solution. This "jellyfish" floats on top of the liquid in which it is located. Its upper part is light in color. The lower part is darker, has filamentous processes and is lowered into the liquid.

This infusion is very useful, but the beneficial properties of kombucha will only appear if the mushroom is properly grown and used.

How to grow kombucha at home

To settle the kombucha in the house for a long time, glassware with a wide neck is chosen for it, for example, a 3-liter jar. It is first washed with baking soda (baking soda), then rinsed thoroughly.

Water for growing kombucha must be boiled, filtered or spring water to avoid sediment formation and medusomycete disease. To brew black tea, you will need 2 tsp of tea. per liter of boiling water. The solution is filtered so that there are no tea leaves.

Granulated sugar is added to the solution in an amount of 50 to 100 g, stir well. Tea leaves or sugar grains should not be allowed to stick to the surface of the Kombucha, otherwise rotting will begin. Liquid at room temperature is poured into a jar up to the shoulders.

Kombucha itself can be taken from friends or grown by yourself. You will learn how to grow kombucha from scratch at home a little below.

From above, the jar is closed with gauze for air intake. The jar with the contents is left at room temperature, but protected from the bright sun. After a week, the mushroom will grow up and float up.

The resulting mushroom drink is filtered through cheesecloth. Then the jar is closed with a lid and sent to the refrigerator. In order to protect the mushroom from further transformation into kvass, and so that it does not become moldy, it is washed weekly with non-hot boiled water. To maintain the level of the drink in the jar, sweet tea is poured there in the right amount. If the content of vinegar in the liquid rises, then the drink is not suitable for use.

After it has cooled to room temperature, it is covered with two-layer gauze. The bank is given a place in the kitchen, for example, on the table, away from the direct sun, but not in the dark (the mushroom needs light to develop).

There, the jar is left for a month or a little more. After about 6 days, an oily film will appear on top of the liquid. After 10-15 days, the liquid will begin to exude a sour vinegar smell, but it will quickly disappear. This means that the process of the formation of the fungus has begun.

Self-cultivation of Kombucha

Nobody knows by whom and when the first kombucha was grown. This discovery happened many thousands of years ago and to this day has been successfully used by people in the household.

Before the war, an infusion of it was in almost every home. The shortage of tea and sugar in the post-war period led to the disappearance of this tradition. Now interest has renewed and many would like to know the recipe for growing.

Growing a kombucha from scratch takes patience. This lengthy process takes from one and a half to two months. But to improve their own health and the health of the family, it is not a long time.

Method number 1: from brewing black tea

To prepare a nutrient medium in which our mushroom will originate and grow, you will need the following components:

You need to grow the mushroom by protecting the jar with it from sunlight, but not in the dark.

Since he needs light and air for life, the neck of the can is not covered with a lid, but with gauze, and tea is never poured to the top of the can, filling it only halfway.

Tea leaves are poured into a teapot, insisted, sugar is added.

In a prepared glass jar, washed with baking soda, pour the tea leaves from the teapot, after filtering it, tie the neck of the jar with gauze and put it in a warm, shaded place.

After a couple of weeks or a little earlier, the vinegar aroma will appear from the can, which will disappear after a week.

This means that the successful formation of kombucha has begun.

After a month and a half, a thin slimy "pancake" will appear on the surface of the infusion.

This is a young kombucha.

For further successful growth, carefully, without injuring the body of the fungus, move it into a clean three-liter jar filled with weak tea.

Method number 2: from rosehip infusion

The method of growing kombucha based on rosehip tea has its own characteristics. Rosehip drink will be richer in vitamins and useful in the cold season for colds.

It is necessary to take into account the contraindications to the use of rose hips, such as the tendency to form kidney stones.

Component parts for brewing:

  • Half a liter of boiling water;
  • 4 large spoons of dry mashed rose hips;
  • Brewing large-leaf black tea (1 large spoonful of tea in a glass of boiling water);
  • 5 large spoons of sugar;
  • Thermos;
  • Clean glass jar;
  • Gauze.

4 tablespoons of wild rose are poured into a thermos, half a liter of hot boiled water is added. Insist in a thermos for 4 days.

Pour the resulting rosehip infusion into a clean three-liter jar, filtering it through cheesecloth. A glass of sweet tea leaves is added to the same jar, in which 5 large tablespoons of sugar have been dissolved.

Tie the neck of the jar with gauze and put it in a warm, dark place.

As when grown in a conventional tea brew, a vinegar smell will first appear, indicating the inception of the organism. Then the smell will disappear and after a month and a half a film will appear on the surface of the infusion - the body of the mushroom.

Now you know how to grow a kombucha yourself from scratch and you simply cannot help but use this knowledge, because the improvement of the most valuable thing a person has - health depends on it!

Proper care of kombucha

It is not enough to grow this miracle healer, you still need to be able to preserve it. So, our advice will help you in this difficult matter.

Strange as it sounds, but kombucha is a lover of cleanliness. This grown jellyfish is not just some kind of mold, but a living organism that needs to be monitored.

If the dishes in which he lives are dirty, then the mushroom will start to hurt. Then the drink he produces will be cloudy and not beneficial.

The mushroom lives in tea, floating on its surface in a three-liter jar. The diseased organism sinks to the bottom of the can and the drink it produces is not worth drinking, the mushroom needs to be treated.

They wash the body of the mushroom, dividing it into layers, if it exfoliates, transfer it to a clean jar, pour it with fresh tea.

Using tea kvass, which was formed as a result of the life of the fungus, add a new nutrient solution (for 2 liters of boiled water - 4 large spoons of leaf tea and 1 glass of sugar).

If all the kvass has been drained, the jar is thoroughly washed with baking soda while the mushroom is on a plate of a suitable size, and then sweet tea is poured.

The mushroom itself loves to swim, so once a month it is gently washed in a cup of clean warm water.

Fresh tea for him is prepared in good water purified from impurities.

You can't put sugar on the mushroom, he doesn't like it. Pour it with cooled strained tea with sugar stirred in it.

The normal thickness of an adult Kombucha is about 4cm. If it is thicker, it may begin to delaminate. With their hands, without using a knife, they separate the layers and settle the young mushrooms in new jars.

If you need to leave and there is no one to look after the mushroom, they take it out of the tea, put it in plain water and put it in the refrigerator.

The frequency with which the finished tea kvass is poured is determined by taste. Fans of sour kvass take it 1 time every four days, a less sour infusion is ready 2 days after adding new tea to a jar with a healthy body.

By the way, it is not advised to fill the jar in which the mushroom lives to the top, let it be one and a half to two liters of liquid.

The mushroom is not placed in direct sunlight so that it does not get sick and does not die. The optimum room temperature is 18-25 degrees.

Putting this knowledge into practice and including in your diet "mushroom" infusion for daily use, you will soon feel better health and a great mood will become a constant companion of your life.

Kombucha at home: why is it dying?

How to start the process of growing kombucha at home is now clear. But an important question is how to save it? What secrets do you need to know to protect tea jellyfish from disease and death?

Many diseases of kombucha are caused by poor care:

1. First of all, the kombucha must be given its permanent place. It should be warm and light, but direct sunlight has a detrimental effect on the mushroom;

2. Direct sunlight or indoor temperatures below 18 degrees provide good soil for the development of blue-green algae in a jar of kombucha. With such a violation of the conditions for keeping the mushroom, algae cover it, as well as the walls of the jar and float in the entire solution. It is necessary to thoroughly rinse the mushroom, wash and dry the jar, correct errors in the content of the kombucha, then the algae will no longer return;

3. Contact with undissolved sugar or leaves of the tea mushroom will provoke the appearance of brown spots on it. This is how the affected areas of the tea jellyfish are stained, which will have to be separated from it;

4. Small flies, which often flock to the fruit plate in the summer, are very fond of kombucha. They sit on it and lay their eggs. After that, the appeared larvae of the flies feed on the fungus, destroying it. This is another reason why the jar of kombucha needs to be covered with multi-layered gauze;

5. Young mushrooms with insufficient acidity are more susceptible to negative environmental influences than adult specimens. If the temperature regime is violated or people smoke often in the room, mold appears on the surface of the mushroom. Most often, such a kombucha can only be replaced. But you can try to save the kombucha at home. To do this, it is washed well with water, and then poured over with boiled vinegar. After that, the mushroom must be placed in a clean tea leaves and monitored for its condition. And of course, it is imperative to eliminate the causes that led to this disease.

When caring for kombucha at home, it must be regularly rinsed with cool running water. The older the mushroom, the larger it is. This tea jellyfish grows layer by layer. Each of them is distinctly expressed. When there are many layers, this indicates good health of the living organism. But dealing with such a ward is becoming more and more difficult. Its increasing size makes it difficult to remove it from the can. This often leads to tears and cuts in the kombucha. This can hardly be attributed to the critical damage to his tissues. The mushroom quickly recovers, as it has excellent self-regeneration. But in order to facilitate the process of caring for a Japanese tea companion, it is better to carefully remove a number of layers from him.

The older and larger the mushroom, the faster it copes with the preparation of the drink. The drink is yeast bacteria and acids. Therefore, it is necessary to be on time, to drain the finished infusion. Otherwise, overexposing the kombucha in the juice formed by it, you can ruin it. The acid content in the jar is increasing every day. Having reached a critical point, the acid will begin to eat away at the mushroom itself. He will show this by trying to roll over on his side.

With this basic knowledge, you can easily grow kombucha at home and use its gift for health benefits.

The grown jellyfish is unpretentious, but requires care, cleanliness and lack of bright light.

Growing from rose hips
Rosehip fruits themselves are saturated with vitamins, and a drink made from them is a godsend for enhancing immunity, preventing viral diseases and other disruptions in the body.

Select dense, evenly colored fruits, rinse, dry a little and chop. 6 tbsp. l. pour into a clean thermos, pour boiling water in a volume of 0.6 liters. Close and put on for 6 days. Then strain and pour into a three-liter jar, adding there the tea solution, which is prepared in the following proportion: 1 tbsp. l. tea, 5 tbsp. l. sugar, and boiling water in a volume of 220 ml. Place cheesecloth on the neck of the container and leave in a warm, dark place. Then repeat the previous method.

You can grow your own jellyfish from homemade vinegar on your own.

Dry washed sour apples and grate with a core on a coarse grater. Put the fruit puree (about 400 g) in a clean jar and pour cold boiled water over it. Add 150 g of honey and 15 g of yeast. After that, the container remains open, it must be placed in a dark place. Mix the mass daily.

After ten days, squeeze the applesauce through several layers of gauze, and pour the resulting liquid into a clean jar, cover with a thin cloth and leave for 1.5-2 months to ferment.

At the final stage, the liquid becomes lighter, and a multi-layered jellyfish grows on its surface. It is transferred to a clean dish with sweet tea and then according to the usual scheme.

Kombucha on beer
Mix 100 ml of live beer, 10 ml of wine vinegar, 5 g of sugar. Pour the mixture into a container, covering the neck, and place in a warm place until a film forms on the surface. When it is 2 mm thick, then move it to a bowl with sweet tea. After a week, the drink is ready.

The listed methods are for those who are just starting to master the art of growing kombucha. For those who are more fortunate and have shared a piece of the finished product with them, the process is greatly simplified. And if you connect your imagination, then the healing qualities of the medusomycete increase significantly.

Kombucha with herbs
The cooking scheme is standard, and choose the herbal preparation depending on your disease. Pour 200 grams of herbs with 3 liters of boiling water and leave overnight. Add a little honey to the infusion and place the mushroom in it. After a week, you will get a tea infusion. Thus, you can prepare a hibiscus-based tonic drink.

Growing a kombucha is part of the challenge. Proper care is required for its development and reproduction. First of all, the indicator of health is buoyancy. If he began to sink to the bottom and does not float to the surface on his own, it means that he is "sick" and it is time to save. The optimum temperature should not exceed 25 degrees.

The thickness of the jellyfish should not exceed 4 cm. The extra layer that appears should be carefully separated from the top and laid out in other jars. The bottom is the most productive.

The duration of the healing effect of the finished drink is no more than one month. Subsequently, taste is also lost, it will be more vinegar than an invigorating elixir. Having withstood the liquid for a week, it is half drained and stored in the refrigerator. And again strained tea kvass is added to the jar. When a new portion is ready, pour off a portion again and replenish with fresh tea leaves.

The volume of liquid in the container

During growth, the fungus requires more liquid medium, about 3 liters. And when you pour out the drink, make up for the shortage each time by adding liquid. It can be unfinished tea leaves, which are cooled, sweetened per liter of boiling water, 2 tbsp. l. sugar and stir until the granulated sugar is completely dissolved. The undissolved sugar on the kombucha is one of the causes of jellyfish disease.

Bath days for kombucha

Every two weeks, the jellyfish must be bathed by carefully removing it from the jar. Rinse gently with warm water, being careful not to injure. Then let it sit on a plate for a couple of minutes to breathe some air. Strain the contents of the jar and pour into a clean container. And wash the jar and return the mushroom to it.

The mushroom habitat itself should be clean, without signs of turbidity, and the tea product should be light in color.

Growing a kombucha at home does not require special knowledge and abilities. It is enough to adhere to a strict recipe, step-by-step technology and observe the conditions of its storage.
