Country style potatoes

For cooking potatoes "Village style" we need the following ingredients:

  • potatoes - 600 grams
  • smoked pork belly - 300 grams
  • garlic - 4 cloves
  • vegetable oil

How to cook rustic potatoes in a pan:

For this dish, choose not large potatoes, but rather generally small ones, the size of a ping-pong ball. Rinse the potatoes thoroughly and set them to boil in salted water until half cooked. Then we clean up.

We cut the smoked brisket (it can be safely replaced with bacon or simple lard, it will be no less tasty). Don't cut too thin - we don't want cracklings.

Pork brisket should be lightly fried. To do this, heat the pan well, lightly grease with vegetable oil.
Put the brisket pieces in a hot pan. Fry it until golden brown. Remove from the pan.

Peel four cloves of garlic and crush with the flat side of the knife. In the fat that remains after frying the meat, fry the garlic. Make sure that the garlic does not burn in any way. After frying, discard the garlic.
Fry the potatoes in fragrant fat until golden brown.

How to cook dumplings with potatoes:

First, let's make the potato filling.

If you have yesterday's mashed potatoes - great! This means that the preparation of the filling is simplified in half, and the mashed potatoes will turn into a new dish, as is the case with potato grains.

If there is no mashed potatoes, then peel and wash 5-6 potatoes, cut into pieces and boil until tender. Put boiled potatoes


While the potatoes are boiling, finely chop the onion, pour it into a pan with heated sunflower oil. The most delicious onion for filling and gravy for dumplings is not damp, but not boiled to the state of coals, but ruddy golden. To get this, we are not distracted, but, stirring regularly, fry the onions over a fire a little more than average. Saute the onions


Meanwhile, the potatoes became soft. Pour the broth into a saucepan and turn the potatoes into mashed potatoes. Add a little potato broth so that the filling is not dry.

Add half of the fried onion to the potatoes, salt, pepper and mix. The filling is ready.

In the meantime, it cools down, prepare the dough for the dumplings.
Let's make the dough. I always make boiled water choux dough for dumplings, as well as for dumplings. It is very convenient and pleasant to work with it: soft, elastic, it easily rolls out and molds, and dumplings from it are tender and tasty.
Knead the dough in boiling water


After sifting the flour into a bowl and adding salt, pour a glass of boiling water into the flour and quickly knead with a spoon. When the dough is not hot, but warm, we continue to knead with our hands.

If the dough is too sticky, you can add a little flour - but do not overdo it, otherwise it will be very steep and difficult to roll out.

Normally, the dough is soft, almost non-sticky to the hands. After kneading the dough well, put it in a bowl sprinkled with flour or greased with vegetable oil (so that it does not stick), and cover it with a towel on top, then the dough will not dry out. We give the dough a rest


It's time to make dumplings. The filling is no longer hot, but a little warm - it's time to sculpt the dumplings. Sprinkle flour on the table, separate half of the dough and roll the sausage. We cut it into pieces 1.5-2 cm wide. Roll each piece into a circle with a rolling pin.
Roll the dough into a sausage and cut.


In the center of each mug, put 1 full teaspoon of filling with the top. The exact amount depends on the size of your dumplings - the larger the circle, the more filling.

If you put a little, the dumplings will be "thin", and if you put too much, they can break. But you will quickly understand in practice how many potatoes you need to get a "plump" appetizing dumpling.

Now you need to close the dumplings well so that the filling does not "run away" during the cooking process. And you should close it up quickly, until the edges of the dough dry out in the air - that's when it's time to invite your household to participate in the preparation of a family dinner! I close up the dumplings twice: the first time - "draft", we just blind the edges of the mug together, and the second - with a "pigtail", so that it turns out not only firmly, but also beautifully.

Place the dumplings on a floured board. If you want to freeze, cover with cling film and place in the freezer, and if you are going to eat, put a saucepan of salted water on the fire (about 1 tablespoon for 1.5-2 liters of water). When the water boils, we dip the dumplings into it - enough so that they float freely and do not stick together.

Cook over medium heat until they float up, and another 1-2 minutes, because the filling is ready and the dumplings do not need to be cooked for a long time, like dumplings with raw minced meat (while the first batch is being cooked, we make the second one). We do not allow a strong boil, otherwise they may boil.

We catch the finished dumplings with a slotted spoon in a plate and season with fried onions - remember, we have half left after making the filling. For beauty, you can sprinkle with chopped herbs. Serve immediately, warm!

And the next day you can fry cold dumplings, it turns out delicious. But, of course, freshly brewed is much tastier. Therefore, I advise you to stick dumplings with potatoes for future use and cook them in portions, as needed.

Meat stew with mushrooms

Summer is mushroom time, the time of chanterelles and the time for harvesting for the winter is ahead. Of course, they will be good in the winter when they are pickled. In summer, you can delight yourself and fresh.

Meat stew with chanterelles is just a godsend for those who love varied and tasty food, but do not want to spend a lot of time preparing it.

Products:

  • 500 gr. turkey fillet (veal can be used)
  • 400 gr. fresh chanterelles
  • 2 onions
  • 2 tbsp. l. olive oil
  • 3 tbsp. l. butter
  • 125 ml. dry white wine
  • 125 ml. meat broth (water)
  • 200 ml. cream
  • 1 tsp starch
  • 2 tbsp. l. chopped green onions

Preparation:

Wash the meat, dry it and cut into strips. Prepare mushrooms, finely chop the onion.
Heat 1 tbsp in a pan. l. olive oil and butter and lightly fry the meat. Add salt and pepper, remove from the pan and put in a warm place.

Add the remaining oil to the pan and simmer the onion, add the mushrooms, simmer together with the onion for 7-10 minutes. Add salt and pepper and transfer to the meat.

Pour wine into a frying pan, bring to a boil (to evaporate alcohol). Pour in broth (water) with cream and boil a little.
Dilute starch from 2-3 tbsp. l. cold water, pour it into the sauce, stirring well. Add meat with onions and mushrooms to the sauce, heat everything together and put on plates. Sprinkle with green onions. Serve with rice, potatoes.

Delicious roast beef

What's easier to cook than beef roast? Roast, of course! This dish will always help out when you need something quick and tasty. But even roast can be cooked in different ways. If you add zucchini, cut into circles, potatoes, cut into thin slices, and add pickled plums to the meat, you get a very aromatic and very tasty roast. I cooked it in a multicooker, which significantly reduced my time and it turned out that this is also an option.

Products:

  • 300 gr. beef
  • 2-3 onions
  • 1 large carrot
  • 6-8 pcs. pickled plums
  • 2 small zucchini
  • 6-8 small potatoes
  • 100 ml dry red wine
  • 100 ml juice from pickled plums (you can just water)
  • grated cheese optional
  • salt pepper

Preparation:

Cut the meat into small pieces, lightly fry, add wine and simmer over low heat or slow cooker for 10-15 minutes, until soft. Add salt and pepper.

Add chopped onions and carrots, stew with meat for 5-10 minutes. Pour in the juice from the plums (you can use water), add the plums.
Cut the zucchini into slices, place on top of the meat, cut the potatoes into thin slices and place on the zucchini. Top with salt and pepper, you can sprinkle with grated cheese if desired.

Simmer in the oven or in a slow cooker, until the potatoes are cooked, 20-25 minutes.
Sprinkle with herbs when serving.

Dumplings with cottage cheese in milk

Food (for 6 servings)

  • For the dough: Chicken egg - 1 pc.
  • Water - 0.5 cups
  • Milk - 0.5 cups
  • Salt - 0.5 tsp
  • Flour - 5-6 cups
  • For filling:
  • Fat cottage cheese - 400 g
  • Chicken egg - 1 pc.
  • Sugar - 1-4 tbsp. spoons
  • For serving: Butter - to taste
  • Sour cream - to taste

How to cook dumplings with cottage cheese in milk:

Cooking dough for dumplings in milk. Sift flour. Drive an egg into the flour, add salt. Mix water with milk. Gradually add liquid to the flour, stirring constantly with a spoon. Knead a tough dough. Cover the dough with a towel. Let stand for 20 minutes.

Preparing the filling for dumplings. Grind cottage cheese thoroughly with sugar and egg. Mix well.

Cooking delicious dumplings with cottage cheese for the Old New Year. Take a part of the dough and, adding flour, roll it into a thin cake (about 2 mm thick). Cut the dough into squares (about 5x5 cm) or squeeze the circles out with a glass.
Put 1 teaspoon of curd filling on each piece of dough. Close the edges thoroughly, forming a dumpling.

Boil 2.5 liters of water. Salt the water. Dip a portion of the dumplings into boiling water. Let the dumplings float, then cook the dumplings with cottage cheese in milk until cooked for 2-3 minutes over medium heat.

All this was accompanied by songs, dances, ditties and other merrymaking.

There is another beautiful tradition associated with this holiday. In the morning with wishes of happiness, health and wealth, we went to the homes of relatives and friends to "sow" grain. It is not known where the custom came from, but it has its own rules: only males are sown, since it was believed that girls cannot bring happiness, the houses of godparents were visited first, the grains were carefully collected and stored until spring in order to mix them with sowing ...

A special porridge was also cooked. The oldest woman in the family poured groats for her. The oldest man at home had to bring water from the well. Groats from the barn were received at two in the morning. It was impossible to touch it, so as not to change your future.

Until the oven burned out, the ingredients were ignored. Then when they cooked porridge, all family members would sit around. The woman stirred it, pronouncing special words. Then they put the porridge in the oven and waited for the result: if the porridge came out of the pot, it promised trouble for the whole house, so no one ate it; when the pot was burst, they acted in the same way, since it was a disease, a lot of foam on top foreshadowed empty chores, rich tasty porridge meant harvest and happiness to all households.

The whole family sat down at the table late in the evening, and this dinner was not to be missed. At this time, Christmastide continued, therefore, Christmas divination was also used. walnuts or hazelnuts - 100 gr;

Recipe for generous kutya for the Old New Year

Recipe for generous kutya:

1. Wheat should be soaked for 1-2 hours, then boil until tender. The proportions of grain and water 1: 2.5.

2. Pour poppy seeds with boiling water for 15 minutes, then grind in a mortar. Finely dice the nuts and your favorite dried fruits (raisins, dried apricots, prunes, figs). Mix all ingredients.

3. Dissolve honey in a glass of warm water or uzvare and pour into porridge. Kutia does not have to be runny, so you may not need all of the honey water.

4. At the very end, add cognac and a spoonful of butter to the kutya, if desired. Stir all ingredients well before serving.

Ingredients:
400 g pork ribs;
200 g white bread,
50 g lard
2 medium onions;
salt, black pepper and other spices to taste;
beet kvass.

Ingredients for beet kvass:
0.5 kg of peeled beets;
1 liter of chilled boiled water.

Vereshchaka (pork ribs) recipe:

1. You need to prepare beet kvass in advance. To do this, chop the beets into small pieces and fill them with water. The mixture should be placed in a warm place for 4-5 days until a sour taste appears.

2. To prepare heather, take pork ribs, salt and pepper. You can add other spices as desired. Fry them in a deep skillet until crisp. Add 500 grams of beet kvass to the pan and bake in the oven for 30 minutes.

3. Cut the bread into small cubes, place it in the skillet where the meat is stewed, and leave in the oven for another five minutes. At the end, add chopped and fried onions and lard to the heather.
