Raspberry Puff Buns

To bake something sweet for tea, you don't have to spend a lot of time kneading the dough. You can use a commercial ready-made puff yeast dough, which makes excellent buns. And very little time and effort is spent.

  • dough - 1 pack. (450 gr);
  • yolk;
  • wheat flour - 50 gr;
  • raspberry jam - 120 ml.

Cooking time: 40 minutes.

Caloric content: 280 kcal.

  2. Put the dough on the surface and roll it in one direction so that all layers do not stick together;
  3. Cut the whole dough into equal rectangular pieces. You can use a sharp knife or pizza knife for this;
  4. For each square, you need a little jam and spread it well over the entire square, leaving about 1 cm at the edges so that it is convenient to pinch;
  5. Pinch each square along the edge, using flour to better hold the dough together;
  6. Beat the yolk well with a fork and gently coat each puff with it;
  7. Spread baking parchment on a baking sheet and put puffs on it so that they do not touch each other;
  8. Bake puff pastry from puff yeast dough with jam for half an hour (temperature no more than 180 degrees).

How to make kefir buns with jam in a slow cooker

With the advent of the multicooker, the life of housewives has become much easier. After all, even a delicious bun can be prepared using this wonderful device.

Ingredients:

  • kefir - 170 ml;
  • margarine - 50 gr;
  • dry yeast - 10 g;
  • jam - 1 glass;
  • egg;
  • flour - 360 gr;
  • sugar - 0.5 cups + a pinch of vanillin;
  • a pinch of salt.

Time required: 1 hour 30 minutes (dough) + 1 hour 20 minutes (bake baking).

Calories: 420.

  1. Making buns begins with breeding dough. To do this, you need to grind dry yeast in kefir, and it should be at least room temperature (you can slightly warm it up);
  2. In addition to yeast, add a tablespoon of sugar and flour to kefir;
  3. Stir the mixture well and put it to rise for 15 minutes in a warm place;
  4. Melt the margarine and mix with the egg and the remaining sugar. Add vanillin there (optional);
  5. As soon as the dough comes up, add butter with an egg to it and lightly salt;
  6. Pour the flour and start kneading the soft dough, which then leave to grow for an hour and a half;
  7. Divide the resulting mass into small balls, from which roll out the cakes;
  8. Put a spoonful of jam on each cake (it is advisable to take a thick jam so that it does not spread) and pinch;
  9. Having formed the buns, place them in a slow cooker for 10 minutes with the "Heating" mode. You should first grease the bowl inside with oil so that the buns do not get hot;
  10. After the baking rises a little, switch the appliance to "Baking" and set the timer for 1 hour;
  11. As soon as the timer signals the end of baking, turn the buns over, grease them with margarine (butter) and bake for another 20 minutes on the same mode;
  12. You can decorate the baked goods with powdered sugar if desired. It should also be noted that the above modes were based on the example of a Panasonic multicooker, so when using another device, you should carefully study the instructions.

Baking is better if:

  1. Slightly warm kefir when added to the dough;
  2. Use dry, not compressed yeast;
  3. Be sure to sift flour;
  4. To prevent the dough from sticking to the rolling pin, you need to roll it out with a bottle of cold water.

Our grandmothers also used these tricks. Didn't their buns turn out delicious?

Nutritionists say that breakfast is not only the key to an effective day, but also a prerequisite for the normal functioning of the digestive system. However, getting my family to eat a full meal in the morning, and not just grab tea or coffee on the run, is very difficult.

What I just didn’t do - I cooked porridge, and “composed” casseroles, and built multilayer sandwiches. Nothing helped, only wasted time. Okay, a friend shared a recipe for delicious buns with jam, which cook very quickly in the oven. On weekends, I do them right in the morning, and on workdays - in the evening, and in the morning I only heat them up in the microwave.

This pastry is prepared very quickly, the most common products are needed, and the result is excellent! My “reluctant” people even get up half an hour earlier so that they can slowly drink tea with these buns. Let's cook them together!

Buns with jam

Kitchen tools:2 bowls, rolling pin and spoon, mixer with butter attachments, kitchen scissors or knife.

Ingredients

How to choose the right ingredients

  • Try to take fresh dry yeast, and if you have not used it completely, store the opened sachet in the refrigerator (up to two weeks) or prepackaged in the freezer (up to six months).
  • If there is no dry yeast, you can replace it with fresh one, but for this, the amount must be multiplied by three. For buns, you need about 20 g of fresh yeast.
  • A good quality butter margarine can be used instead of butter. Keep both products fresh, uniform in color without musty odor.
  • Be sure to check the eggs for freshness. The easiest way to do this is by carefully lowering them into a glass of water: fresh ones will drown, those that are best used in the near future will “stand” without completely sinking to the bottom. Those eggs that float are best discarded immediately.
  • For the filling, it is better to choose a fairly thick jam or jam.

Step by step cooking

  1. You need to start cooking this pastry with dough. To do this, put 6-7 grams of dry yeast in a small bowl. Heat 50 ml of water until warm and pour over the yeast. Add 1 tablespoon of sugar (25 g) there. Cover the mixture and leave in a warm place for a quarter of an hour.
  2. Soften 200 g butter in a large bowl. When it reaches room temperature, add 200 g of sugar there and beat well with a mixer.

  3. Add 5 eggs to the dough (all at once) and beat the dough again.

  4. Pour the prepared dough into the butter-egg mixture (yeast with sugar and water), mix gently, preferably with a spoon.

  5. Add 750-800 g flour gradually. To do this, sift it in portions of 100-150 g, knead the dough after each. At first it is more convenient to do this with a spoon, then with your hands in a bowl. When the dough is cool enough, place it on a rug or table sprinkled with the rest of the flour (50-100 g) and continue to knead until a smooth, elastic ball is obtained.

  6. Roll the finished dough in flour, put it back in a bowl, cover with a towel and leave in a warm place for about an hour to come up.

  7. The next step is shaping the buns. To do this, take out the risen dough, divide it in half. Roll each piece into a layer about 0.5 cm thick and distribute 125-175 g of jam on its surface. After that, roll up the layer with a roll.

  8. Transfer the rolls carefully to a baking sheet lined with parchment. Make deep cuts on each roll using a knife or kitchen scissors. Expand the cuts in different directions - alternately left and right.

  9. Bake the buns in an oven preheated to 180 degrees for about 40-50 minutes.

Enjoy your meal!

Cooking recipe video

To see all the stages of cooking such a muffin, watch the following video. It shows you how to make these buns correctly.

How to decorate a dish

Such pastries look very attractive and do not need special decor. If you want the buns to become even prettier, before baking, brush them with a raw egg (shake it with a fork until smooth, and then apply to the surface of the dough with a silicone brush). This is how they decorate almost any pastry - from to baking - with poppy seeds -.

Another option is to sprinkle the finished hot products with powdered sugar. Do not let them cool down, otherwise the powder will crumble. Spice lovers can mix the powder with cinnamon to give the baked goods an original color. By the way, they often decorate “buns with apples” in this way.

  • To make the dough come faster, put it in a warm place, for example, next to a switched on stove. However, there is no need to put on the stove itself - yeast "does not like" when it is too hot. For the same reason, they need to be poured with warm, not hot water.
  • You can soften the butter faster by grating it on a coarse grater or cutting it into small pieces.
  • To quickly roll out the dough into a layer, dust the rolling pin with flour - it will not stick.
  • If the buns are browned on the top and bottom, but are still damp on the inside, cover them with parchment or foil. So they will not burn while they are baked.
  • You can check the readiness with a toothpick or a wooden stick - pierce the product with it. If there are no traces of dough on the wood, the baked goods are ready.
  • Would you like to use jam, but it's runny? Add chopped nuts to it to thicken the filling and prevent it from escaping.
  • Preheat the oven in advance - the baking will not rise in too cold. It is important not to overheat, because the rolls will not be baked into too hot.

How to serve a dish correctly and with what

Since such buns are baked in a single roll (you remember that the dough is not cut completely), they are carefully divided into portions before serving. After that, the pastry can be folded into a wicker basket or on a wide flat plate, tray. If desired, paint strips of jam syrup or sprinkle with icing sugar and cinnamon on the edge of the plate.

Like other pastries, for example, this pastry is served for dessert or tea, coffee. It is better, of course, to do this while the products are warm, but you can also heat them up in the microwave or oven. To do this, pre-cover the items with a clean cotton cloth slightly moistened with water. So you can warm up almost any pastry, but with - puff pastry rolls - "the number will not work", they will not be crispy.

Offer milk, cocoa, juices or compote to buns.

Other cooking and filling options

  • As a filling, you can use not only jam or jam, but also sugar with cocoa. To do this, sprinkle each layer with two tablespoons of sugar and the same amount of cocoa after you roll it out.
  • Another filling option is thick caramel or thick honey with nuts.
  • According to this recipe, you can also make buns with apple filling: cut sweet apples into small wedges, lightly sprinkle with sugar, add some crushed nuts and spread on a layer of dough.
  • If you love curd, use it for the filling. To do this, grind the cottage cheese through a sieve or mash it with a fork, mix with sugar and steamed raisins (pour a little boiling water over the raisins, let it stand for about seven minutes, then put it in a colander and let all the water drain).
  • To give the dough a more original taste, you can add a bag of vanilla sugar, a little vanillin or cinnamon to it.

These buns are delicious immediately after baking, hot and aromatic. However, even when cold, they are no worse - such a muffin can be given to children to school or taken with you as a snack. It is very simple to cook it, even novice cooks can cope with this task, because it is easier to cook yeast shortbread dough than other types, which include yeast. Experimenting with fillings, it is easy to get a new treat with original flavors every time. How do you bake buns, what fillings do you use, how do you prepare the dough? Let us know in the comments.

Today, the shelves of shops and supermarkets are simply bursting with various sweet products: sweets, cookies, bars, as well as all kinds of baked goodies. However, they are no match for the extraordinary taste of homemade baked goods. One of such unforgettable delicacies for both kids and adults are buns with jam.

Baking stuffing

Getting started with the hassle of making homemade cakes, you must first prepare all the necessary ingredients. And if you cook pies or buns, you first need to take care of their filling. It can be any: cottage cheese, potato, mushroom, vegetable, fruit. But the most delicious delicacy will be For this, apricot, and apple, and pear, and strawberry are suitable. Red currant is also very tasty, vitamin, healthy and aromatic. It is prepared in this way. After preliminary cleaning of the berries, squeeze out the juice of the red currant. When it starts to boil, ripe strawberries are added to it, which are boiled for about ten minutes. Then sugar is added, and the whole thing is cooked for another quarter of an hour. After cooling, the jam can be eaten, and also used as a filling.

An economical recipe for delicious buns

You don't have to have expensive ingredients to whip up delicious ones. They may well be simple products. In addition, the preparation of these pastries takes a little time.

To get the dough, combine one glass of sugar and sunflower oil, one teaspoon of salt and one liter of water in a deep bowl. We mix all this well and put on fire. After the mixture boils, it is set aside for cooling. At this time, yeast (four tablespoons) and one tablespoon of sugar must be diluted in a glass of warm water. After they work well, combine them with the cooled mixture, add flour and begin to knead. Buns are formed from the finished dough and laid out on a greased baking sheet. After that, they go to a well-preheated oven.

Making inimitable yeast buns

Yeast buns with jam are always very tasty. The universal dough is also suitable for Easter cakes.

The method of its preparation is as follows. One liter of milk contains one hundred grams of yeast, a little sugar and flour. The result is a pancake-like dough that should ferment for about an hour. Then half a kilogram of sugar, four hundred grams of margarine, six eggs, vanilla sugar and salt are added to it to taste. All this is thoroughly mixed and left for a while to come up. Now buns of the desired shape are formed from the finished dough, jam or boiled condensed milk is added to them. After the oven has warmed up to the desired temperature, you can start baking them.

For softness and airiness of the yeast dough, just before baking, it is added to the already cooled one, which is rubbed on a fine grater before that (2 potatoes are taken for 1 kilogram of flour).

Buns that always turn out

Many women, despite their great love for homemade flour products, do not want to bother with the dough. Added to this is the fear that the baked goods may not work. However, even the most inexperienced housewife will be able to cook jam buns in the oven according to this recipe.

So, thirty grams of yeast is ground with one teaspoon of sugar. It is better to do this in a deep bowl. To the available ingredients are added seventy-five grams of butter or margarine (melted), one glass of warm milk, half a teaspoon of salt, one hundred and fifty grams of granulated sugar and four hundred grams of flour. The dough is kneaded and placed in a warm place to rise. After this happens, it is rolled out in a thin layer and transferred to a greased sheet for "proofing" in the form of the desired shape. The jam is spread on the risen dough and spread evenly. At the same time, the edges remain uncovered, they are lifted onto the filling and pressed with fingers. Such buns are baked in a sufficiently heated oven until lightly browned.

Making puff pastry buns

They say baking puff pastry is not a job for the lazy. But this is not at all the case. Puff pastry buns can be made very quickly using this recipe. Sift 500 grams of flour on a board, put 300 grams of chilled margarine or butter cut into pieces. All this must be chopped up with a knife until smooth. Next, a deepening is made and 4/5 cup of salted water, 1 egg, 1 teaspoon of lemon juice or vinegar are added. The dough is kneaded in the same way - finely chopped with a knife. After that, it is rolled into a ball and, covered with a napkin, is placed in the refrigerator for half an hour. Then the dough is rolled out and delicious jam buns can be formed.

There is also another little secret that is used when baking various homemade products. To make them bright and shiny, they are smeared with an egg diluted with water before serving in the oven.

Formation of "roses"

Every mother, when she wants to please her kids with pastries, becomes a real sorceress at this time. And from ordinary buns, she can create a real miracle. For example, turn dough into flowers. In fact, there are such methods of forming buns-"roses".

In the first case, a small piece of dough in the form of a ball is stretched by hands into a cake. A circle is cut out with a glass so that the rim around it remains intact. The resulting circle is placed on a prepared baking sheet. Jam is laid on it, and on top it is covered with a rim of dough in the form of an eight. It should be noted that each recipe for jam buns can be combined with such a molding.

In the second version, the cake is created in the same way. Next, the jam is placed in the center, and the dough is divided into five petals with a knife. One of them should be the largest. Pulling the edges slightly, the petal needs to be circled around the jam, and the second is fixed to meet it. This is how we form the bud. The last petal must be stretched more so that it grabs the flower completely and fixes it.

Step 1: knead the dough.

First you need to knead the dough. Since it is yeast, it will take quite a long time to knead. Therefore, it is better to prepare the dough in advance, for example, in the evening.
First, in a deep plate, mix salt, sugar and yeast, fill them with warm milk (its temperature should not be higher than 40 degrees). Leave the yeast to brew in a warm place for 25-30 minutes.
After the specified time, add the softened and cut margarine to the yeast with milk. Now gradually, in small portions, add sifted wheat flour, simultaneously kneading the dough with your hands.
As a result, you should get a soft, but not sticky mass, do not add flour so that the dough does not come out too tight.
Wrap the finished dough with a towel or wrap with cling film and leave to rise in the refrigerator for 8-12 hours.

Step 2: form jam buns.

Remove the dough from the refrigerator, wrinkle and divide it into 20-25 equal balls.
Now the fun begins, we will shape our beautiful buns. Take one ball and roll it into a round cake, but not very flat.
Use a glass or glass to cut a circle in the middle of your tortilla.
Take the part that looks like a donut and fold it in the middle to make a figure eight.
Lay one part of the figure eight over the circle you cut out earlier.
Wrap the second part of the figure eight inward and place it on top, the ring in the ring, so that you get a kind of "rose".
Immediately place the piece on a baking sheet, greased with butter or covered with baking parchment, and start shaping the next bun.
When all the dough has gone into the blanks, put a spoonful of your favorite jam in the center of each bun. Now leave your products for a while so that they fit and spread out a little in all directions.

Step 3: bake the jam buns.

Preheat oven to 180-190 degrees Celsius, brush the jam buns with loose yolk, then send them bake until they are deliciously golden brown. Once the dough is baked and discolored, take out your pastry and set to cool at room temperature. Once cooled, the buns will be ready to serve.

Step 4: serve the jam buns.

Jam buns are great for tea and as gifts. They are beautiful, ruddy, sweet and very fragrant, so they look good on the table and invite everyone to tea. And what can warm you better in cold autumn than a cozy and relaxed atmosphere when everyone is at home? Probably nothing.
Enjoy your meal!

Similar buns can be made with natural marmalade, it turns out very tasty too.

Always look at the expiration date of the yeast. Only with fresh yeast will your dough be airy enough, otherwise all your efforts may be wasted.

To prevent the edges of the buns from falling apart, fasten them together with slightly damp hands.

What does childhood smell like to you? For me - baked goods and vanilla, and also fruit jams and herbal tea. Every time I came to visit my grandmother, she threw up her hands, they say, “only eyes were left from the granddaughter, she lost so much weight”, and took out buns from the closet. I still don’t know which tasted better - the jam, "hiding" inside, or the sprinkle, which is so interesting to pick with a fingernail and put into your mouth, washed down with herbal tea.

As I grew up, my grandmother shared her signature recipe for jam buns that can be made in any oven. Any cook, even a beginner, can cope with this task. The dough turns out to be very elastic, it is pleasant to work with it, and the result literally melts in your mouth. Let's see what culinary tricks are needed to prepare this dish.

Kitchen appliances: very convenient if there is a microwave. Naturally, you need an oven.

How to choose the right ingredients

  • In the recipe, I indicated dry yeast, since it is much easier for me personally to work with it. However, you can take fresh ones, they will need half as much.
  • In the test vanilla sugar can be substituted with vanilla - the taste and aroma will be more intense.
  • Jam, jam or jam is better to take thicker - so the filling will not spread. Canned berries are also suitable.
  • Sprinkling oil must be of high quality, without vegetable fats - their taste will be felt.

Step by step bun recipe

Such a dish is prepared in several stages.

First step

You will need products for the test: egg, sugar, milk, butter, yeast, vanilla sugar, flour.

  1. Heat the milk a little. It should never be hot.

  2. Combine yeast with a spoonful of sugar and pour over the mixture with warm milk. Leave the workpiece for ten minutes.

  3. Melt the butter for the dough. Cool it down.

  4. Beat the egg into a bowl and add the rest of the sugar (regular and vanilla). Add a little salt.

  5. Stir the egg mass well, then pour the yeast mixture into it.

Second phase

You will need jam and starch for the filling.

If the jam is thick enough, you can do without starch. Otherwise, add it to the jam or add to the berries, mix well.

Stage three

Fourth stage

Fifth stage

You need flour, butter, sugar, and vanilla sugar for sprinkling.

Sixth stage

Prepare an egg for sprinkling.

How to decorate and what to serve with buns

Such pastries, like the famous ones, look very beautiful in their finished form, so there is no need to decorate them additionally. However, if you really want to, start decorating: on a large flat plate, draw stripes with syrup or jam, put a few mint leaves or berries around the edges (if you used them for the filling). Place the buns on the plate itself.

These products, like any others, and even more so, rich ones, go well with cold milk, cocoa, herbal or ordinary teas. Complement these rolls and a cup of coffee for breakfast.
