  3. Finely chop the onion (pre-scald with boiling water)
  4. Drizzle with some refined vegetable oil

  11. Beet.

Gently remove the skin, divide the fillets into small pieces and arrange in the tins, adding the vegetables. Soak gelatin in cold boiled water. When it's ready, drain off excess water and combine the gelatin with the broth. Bring to a boil and strain. Combine mayonnaise and jelly, pour the resulting mixture over fish and vegetables. Remove the filling in the refrigerator until it solidifies completely. Decorate with herbs.

"Hen"

Themed and very tasty meat salad, which you can use to diversify the New Year's menu by 2017.

Products:

  • Boiled champignons - 150 g,
  • Boiled eggs - 8 pcs.,
  • Boiled veal - 400 g,

Preparation

Separate the whites from the yolks from 5 eggs. Cut 2 yolks and 3 eggs, veal and mushrooms into small cubes. Cut green olives or cucumbers into 4-6 pieces. Combine the cubes and chopped olives. Season with mayonnaise.

Grind 5 proteins on a grater. Put the chicken-shaped salad on a dish, sprinkle evenly with proteins. Put 3 yolks under the hen, make a nest of potatoes. Cut black olives into strips and half rings, depict with them a wing, an eye and a tail. From slices of tomato or pepper - a scallop and a beard.

"Snowmen"

A portioned salad in the form of funny snowmen will add enthusiasm to the New Year's menu for 2017. It will also delight you with its taste - the rich cheese aroma and sweetness of prunes are set off by smoked chicken.

Preparation

Lay aside the whites of 4 eggs. Cut the olives and shrimp into slices without mixing. Grind the apple pulp, 3 eggs, 4 yolks separately on a grater. Set aside half of the olives.

Lay on a plate in layers in the shape of a bullfinch, smearing each with mayonnaise: shrimp, olives, yolks and eggs, apples.

Cover the wing, tail and head of the bird with chopped olives. Lay out the belly with a layer of caviar. Make an eye and beak from eggs or pieces of bell pepper.

Combine serving appetizers and salads in portions. For example, a snowman, canapés, and cheese slices. On common plates, dishes can linger, lose their appearance and taste. It is better to leave some of the prepared dishes in the refrigerator and serve as needed.

Hot dish

Meatloaf with cranberries

Products:

  • Pork / turkey fillet - 1 kg,
  • Meat broth - 300 ml,
  • Marzipan - 50 g,
  • Boiled rice - 200 g,
  • Cream 23% fat - 150 ml,
  • Rum / cognac - 150 ml,
  • Chicken egg - 1 pc.,
  • Cranberries - 150 g
  • Salt.

You will also need cooking or thick cotton thread.

Preparation

Soak the cranberries in alcohol for 2-3 hours. Drain alcohol, mix with broth. Cut the fillet into thin plates and beat off slightly. Form a single sheet on cling film, salt.

Whisk the egg and cream with a blender, stir in the rice and marzipan. Spread the resulting cream on a sheet of meat over the entire surface and distribute the berries evenly. Roll up the roll tightly, tie carefully with a thread.

Bake the meat in the oven, preheated to 200 ° C, for 1.5-2 hours, periodically pouring it with a mixture of broth and alcohol. Remove the threads from the finished roll.

"Chocolate eggs"

A light and aromatic dessert with a very original serving imitating an egg. The delicate cream will look like white, half of the apricots - the yolk and the chocolate mold - the shell. Amounts shown are for 4 servings.

Products:

  • Canned apricot halves - 12 pcs. (8 will go to cream, 4 - to "yolks"),
  • Mascarpone / whipping cream - g / 150 ml,
  • Cottage cheese - 250 gr,
  • Sugar - 1/3 cup
  • Bitter chocolate without additives - 1 bar.

In addition, you will need four balloons to create the chocolate molds.

Preparation

Melt the chocolate in the microwave on low power or in a water bath. It is important to heat it up to no more than 40 ° C. Fill the balls with very cold water and tie them well. Dip the balls in chocolate, leaving empty in a small circle around the strings. Hang up or hold the balls until the mixture hardens. Then pour a tablespoon of chocolate onto portioned plates to form a stand and fix. Put balls with molds on them. Leave until the chocolate hardens completely.

Whisk the cream / mascarpone with cottage cheese and sugar with a blender until all the lumps are gone. Add peaches, except for the four halves.

Pierce a ball in the center of the free part and drain the water, remove from the chocolate egg. Fill the molds with ¾ of cream, carefully lay the half of the peach and add the cream, covering the rim. Chill before serving for at least an hour.

You can decorate in this way any cream, pudding or white jelly.

1. Traditionally, in many families, fried poultry is the highlight of the New Year's table. Duck in orange sauce is amazingly tasty and always delights guests. Let's try to cook? Thoroughly wash the medium-sized duck, towel dry and rub with a mixture of salt and black pepper. Use wooden toothpicks to stab the incision in the duck's abdomen. Cross the duck's wings and press tightly to the carcass, tying it with culinary thread. Turn the carcass over on its back, cross the thread at the legs and, twisting the ends and slightly pulling the legs, tie the thread in a knot. Preheat oven to 190 degrees. Place the duck breast side down on a wire rack and place in the oven. Place a baking sheet with water under the wire shelf with duck. Roast the duck for an hour, adding water to the baking sheet as needed. After an hour, turn the duck on its back and carefully pour the fat that has melted onto a baking sheet. Cook for another hour, periodically pouring melted fat on the duck. Then increase the oven temperature to 220 degrees and roast your duck for another half hour. Do not forget to water with melted fat and juice! While the duck is roasting, prepare the sauce. Wash 4 oranges thoroughly. From two of them, remove the zest in thin strips and squeeze the juice. Cut one orange into thin slices. Disassemble the remaining orange into slices and free each slice from the outer films. In a small saucepan, melt 2 tbsp. tablespoons of sugar and heat it until you get a slightly golden caramel. Remove the caramel from heat, add 2 tbsp. tablespoons of white wine vinegar, orange juice and half of the whole zest. Mix everything thoroughly, return the pan to the heat and, stirring constantly, cook the sauce in half. Remove the cooked duck from the oven, add the remaining duck juice and fat to your sauce and bring to a boil. Add 40 gr. To the sauce. butter, orange pulp, salt and black pepper. Heat until thick, stirring constantly, and remove from heat. Put the finished duck on a dish, pour over the sauce, garnish with slices of oranges, the remaining strips of zest and parsley.

2. An unusual and delicious festive dish can be prepared with chicken and beef tongue. Wash the tongue, boil in salted water, peel and cut into thin slices. Chop the chicken carcass (about 1 kg.) Into portions, fry in a pan in butter until golden brown and remove from the pan. Cut four onions into 4 parts, lightly fry in vegetable oil and put in the pan in which the chicken was fried. Add 100 gr. finely chopped champignons and 1 chopped garlic clove. Top with fried chicken pieces, sprinkle with 2 tbsp. spoons of flour, salt, black pepper and ground thyme, add 50 gr. brandy and simmer over low heat for 10 minutes. Then add 2 cups of dry red wine and 1 teaspoon of sugar. Simmer everything together for another 45 to 50 minutes over medium heat. Put slices of boiled tongue on preheated plates, place slices of stewed chicken on top.
