Butter (margarine) - 180-200 grams.

Preparation

For the best frozen berry pie recipe, it's best to use butter to make the dough. It always makes great baked goods. But do not confuse spread and real butter, so carefully look at the packaging before purchasing this product.

So, we grind the pre-softened butter with granulated sugar to white. This is best done with a mixer - this way the sugar grains will "disperse" better, and the consistency will come out more uniform.

Next, you need to add one chicken egg to the mass. I advise you to drive it first into a separate bowl and only then send it to the general mass to avoid getting the shell or, even worse, a rotten egg into the dough. Do not forget to continue beating after adding one egg.

Thus, you need to add all four eggs to the butter-sugar mixture, beating it continuously with a mixer. The mass is airy, light and without lumps. And if you add yolks instead of eggs, then the dough will turn out to be even more beautiful and tastier. You can drive in 5 yolks. And from the remaining proteins, you can always make a delicious meringue.

The next step is adding flour. Pour a teaspoon of baking powder into the amount of flour we need in advance. Mix and add in portions to the oil mixture. It is important to know that only sifted flour is introduced. This avoids the ingress of impurities into the dough, and by sifting, we enrich the flour with oxygen. Baking powder is always mixed with flour. We continue to beat the mass with a mixer with flour until we get a thick dough.

The finished dough can be easily picked up with a spoon, and it does not fall off. Since we have a pie with frozen berries, which, when defrosting, will definitely give juice, you can add not 200 grams of flour to the dough, but 210-220 - look at the eye. This will allow the dough to maintain its shape when the juice of the berries gets on it.

Put the finished dough into a mold. You can use a silicone container. It does not need to be oiled. Other forms are best covered with baking paper.

Now let's start preparing the berries. You can use any, fresh or frozen. A frozen berry pie is no different from fresh fruit baked goods. Choose any fruit or berry according to the season. You can mix apples with currants (both red and black, white), plum, cherry plum. Cherries and apricots are also ideal for this cake. Just do not forget to rinse and dry the berries in advance to prevent excess water from getting into the dough.

I added frozen cherry plum to this berry pie recipe. I removed the bones and laid them on the surface of the dough, slightly pressing the filling. It turned out to be quite a lot of juice. But he did not interfere at all. In general, the seeds are best removed from any fruit used (of course, the one in which they are). If the berries or fruits are large, you can cut them in half or even into quarters.

We send the cake blank to the oven, preheated to 200 degrees. It will take us about 20 minutes to bake.

An open pie with berries can be considered ready when it is browned. But given the juicy filling, which can slightly "slow down" the baking process, it is still worth checking the dough by piercing it with a special wooden stick or a match. If it remains dry, without pieces of dough sticking, then everything is ready. We take out the pie from the oven. Let it cool and, separating it from the baking dish, carefully move it onto the dish. Sprinkle with powdered sugar through a strainer or sugar. You can decorate the pie with the remaining berries, but for this purpose it is better to use whole, flawless fruits.
