  3. Soft, pasty curd. Discard dry, grainy product. Choose a mass with a delicate, uniform consistency, white with a light creamy shade. There should be no impurities and separation into solid and liquid parts.
  4. Fresh cottage cheese has a pleasant, slightly sour taste and aroma.
  5. Make sure that the packaging says "Curd" and not "Curd product". The latter contains a minimum of benefits and chemical additives.
  6. Be sure to check the expiration dates, storage conditions.

Diet curd soufflé

Diet nutrition can be both a means of losing excess weight, and part of the prevention or treatment of many diseases. Diet soufflé, as part of medical nutrition, is a traditional thing. Lightweight and highly digestible, it is suitable for those who will do more harm than good from regular food. But a well-cooked soufflé is also delicious.

Soufflé can be prepared from various ingredients - meat, fish, rice, dairy products. By adding spices or other ingredients to it, you can get a new interesting dish every time.

When soufflé is part of the diet due to illness, it is impossible to load it with such additives, but it is not at all forbidden for people to lose weight.

For a soufflé, the main product is usually boiled, then a homogeneous paste is made from it in a blender and, combined with several egg whites, or other foods allowed by the diet, are baked. This is how you can prepare both the main course and the dessert.

Curd soufflé: preparation

Cottage cheese soufflé is very suitable for dessert. By the way, this is the most delicious soufflé, and you can cook it in many ways. Curd soufflé will give strength and satisfy the need for sweets, the dish contains few calories (if the cottage cheese is low-fat or low-fat), but a lot of protein necessary for every person.

Cooking curd soufflé is not at all difficult, there are many recipes.

The basis of any recipe for soufflé from cottage cheese is cottage cheese, eggs, sugar and filler (fruits, vegetables, bran, semolina, flour, oatmeal, almond crumbs, etc.).

Oven curd soufflé

If the goal of the diet is weight loss, then in the recipe for curd soufflé, the main thing is to reduce the number of calories per serving. Then the recipe might look like this:

  • 300g of cottage cheese (low-fat or low-fat)
  • 2 eggs
  • 1 tablespoon sugar (honey or sugar substitute can be used)
  • 1 tablespoon bran
  • 1-2 tablespoons milk

Cottage cheese needs to be grinded until smooth, add sugar or substitute. The most convenient way to do this is in a blender: the smoother the texture of the curd paste, the better the dish will turn out.

Mix the bran with milk and let stand for a few minutes so that they swell, and then mix with the curd mass.

Separate the egg whites from the yolks to reduce the calorie content. Whisk the whites until they are firm and gently stir into the cottage cheese. It is better to stir the mass with a spoon with movements from the bottom up, trying not to disturb the airy structure of the whipped proteins.

Pour the finished mixture into a mold greased with odorless vegetable oil. It is best to distribute the resulting "dough" into portioned molds, so the dough is better baked in the oven, and it is much more convenient to serve. On top of each portion, before sending to the oven, you can add a pinch of brown sugar or cinnamon, a spoonful of milk or low-fat sour cream to the curd soufflé. This will make the low-calorie curd soufflé more pleasant both in appearance and taste.

The best way to bake the curd soufflé is to put the molds in a deep baking sheet, pouring water into it to half the height of the molds, and preheat the oven to 170 degrees. Baking time is 20 minutes. The finished dish is best eaten hot, served with milk, and is especially good for breakfast.

Curd soufflé in a multicooker for a couple

Curd soufflé can be cooked not only in the oven, but also steamed, then it will be much softer. It is convenient to do this in a multicooker in the "Steam cooking" mode for 30 minutes. In this case, the forms can be placed on the bottom of the multicooker bowl, watching the water level, which should not pour over the dish itself when boiling.

The recipe above is a base recipe that you can play with with additives. There are several important points to keep in mind when doing this:

  1. When adding flour, wheat or rice, oatmeal or semolina, you need to remember that the structure of the dish will become denser. The more of these components, the more in the end it will look like a casserole. For flour and semolina, the most common ingredients, the amount in the recipe is a quarter of the mass of cottage cheese: for 300 g of cottage cheese 75 g. But if fruits, berries or vegetables (for example, grated carrots), which contain a lot of water, are added to the dish, dry ingredients are needed in greater quantities, otherwise the dish may turn out to be liquid.
  2. If the curd is too dry, it is best to add a little milk to it. In no case, not kefir or yogurt, most likely, the dish will not work with them.
  1. The higher the fat content of the cottage cheese and the calorie content of other ingredients, the less dietary the dish will be, but, most likely, more delicious.

Cottage cheese soufflé with gelatin without baking

For such a souffle you will need:

  • 300g of cottage cheese (here it is advisable to take the cottage cheese unfat, 7-9%)
  • Sugar, honey, or other sweeteners to taste
  • Half a glass of milk
  • Fillers (fruits, berries, chocolate)
  • 20-25g gelatin or 2-2.5 teaspoons of agar agar (based on 500g soufflé mix, including all fillers)

Gelatin should be soaked in cold milk for half an hour. Mix cottage cheese and sugar (or honey) in a blender until smooth. Heat gelatinous milk, but in no case overheat or boil, and mix with curd mass. This is also convenient to do in a blender. For solidification, pour the mixture into prepared forms. The soufflé with gelatin hardens for several hours, usually 3-4, and then it can be tasted.

Curd soufflé with agar-agar

If the soufflé is prepared with agar-agar, then this component should be dissolved in a small amount of water, add milk to it and heat until it boils, remembering to stir all the time. The resulting mixture must be mixed with cottage cheese quickly and immediately poured into a mold, as agar solidifies much faster than gelatin. After that, it will be enough to let it stand in the refrigerator for ten minutes and the dish will be ready.

Such a curd soufflé has a very delicate structure, and if made without many flavors, then it is suitable even for small children. It is also good to add vanilla sugar, or natural vanilla, fresh or frozen berries and fruits (it is best to beat them with cottage cheese before adding the milk-gelatin mixture), cocoa powder, pieces of cookies, almond flakes. You can decorate the finished dish with whipped cream, berries, pieces of fruit. You will get a delicious, beautiful and healthy dessert.

Curd soufflé

Curd from ufle

  • Beat the whites in a glass, porcelain, enamel bowl. Aluminum cookware is not recommended as it gives a gray color to the proteins. Plastic dishes have pores that are not properly cleared of grease and this prevents the whites from whipping.
  • The dishes must be clean, without traces of grease and perfectly dry. A drop of water or poorly washed off fat from the dishes will extinguish the foam, the protein will be more difficult to whip, and the resulting foam will be fragile and unstable.
  • The whites whisk better if you add a pinch of salt to them.
  • Fresh egg whites do not beat well, use one week old whites

What you need to cook: the right ingredients

To make a delicious, healthy and nutritious dessert, you need to know which ingredients to use. It is better to take cottage cheese with medium fat content, since the fat-free recipe does not contain milk fat, which is needed for the absorption of calcium.

The dessert includes eggs. It is better to limit their number to 2-3 pieces.

Sugar is best replaced with honey or a natural sweetener like stevia. Dried fruits also add sweetness to the dessert. Some housewives add jam to the dish, but this sweetness is not useful.

Important! It is better to choose milk and sour cream for a diet soufflé with medium or low fat content. Cream is recommended to use 10% fat. Use coconut oil instead of butter.

A dietary dish can be supplemented with vegetables, fruits, berries, herbs, dried fruits. Nuts, seeds, orange peel are often used for decoration.

Vanillin and cinnamon give the dessert a special aroma and taste. Rice flour, potato starch, and oatmeal will reduce the moisture in the dish.

How to choose the right cottage cheese

For a dietary soufflé, you need to choose the right cottage cheese, for this, pay attention to its following characteristics:

  1. Fat content: 5 to 9%. The product retains more fatty acids, calcium, protein and other substances necessary for the body.
  2. Buy cottage cheese in sealed containers. A homemade product has more nutrients, but may contain harmful microorganisms. If you opted for the last option, then heat it before use.
  7. Give up buying curd mass, it contains vegetable fats, emulsifiers, stabilizers.

High-quality cottage cheese without preservatives has a shelf life of no more than 7 days.

Curd soufflé recipes

To get the perfect dietary soufflé, you need to remember the rules for its preparation:

  1. Choose the right ingredients, observe their proportions. Use only fresh, high-quality ingredients for your meal.
  2. Separate the whites from the yolks. Whisk the protein portion thoroughly in a clean, deep glass, ceramic, or enamel bowl. The dishes must be dry and clean. For a fluffy foam, place the eggs in the refrigerator before beating, and then add some salt to the whites. Beat some of the whites first, and when they turn into a strong foam, add the rest. They are connected to the base gradually, neatly at the end of cooking, so as not to disturb their airiness.
  3. It is recommended to wipe the cottage cheese through a sieve or beat with a blender in order to achieve an ideal pasty consistency.
  4. For heat treatment, silicone molds are used, and for soufflé with gelatin, you can take any dish (except aluminum).

Attention! The diet dish can be supplemented with fruits, berries, dark chocolate, cocoa, cinnamon, vanilla, nuts, seeds, mint leaves, etc. There are also savory dish options. Diet meat, mushrooms, herbs, vegetables are used for snacks.
