The first day.

1. Purchase of products.

2. Pushing food into the refrigerator

3. Dough and green beans in the freezer, the rest - in the refrigerator

4. Peel the garlic (whole). Use some part for boiled pork, the rest - in the refrigerator.

5. Marinate the boiled pork. Stuff a piece of pork with garlic, making punctures with a small knife and inserting garlic cloves into these punctures. One head of garlic should be enough. Then coat a piece of meat with mustard on all sides. Transfer to a bowl or container, cover with foil, make a few holes in the foil and refrigerate.

6. Beef for salad. Pour with water, salt, cook for 45 minutes after boiling. Remove from the stove and cool without removing from the broth. When it cools down - take it out, wrap it in foil and put it in the refrigerator. Strain the broth and cook the soup on it.

7. Salmon salmon. Cut 1/5 part from the salmon. Salt it with a tablespoon of salt, sprinkle with red pepper, finely chopped dill. Cover with lemon slices. Wrap in parchment (baking paper). If there is no parchment, grease several A4 sheets with vegetable oil and wrap the fish in this oily paper. Leave for a couple of hours at room temperature, then put in the refrigerator.

8. Go through the liver. Watch carefully so that there is no bile. If you come across such a piece, it is better to cut it off, or immediately throw it away from the chicken liver. Rinse the liver well, cut into smaller pieces (if beef or pork). Transfer to a bowl, cover with plastic wrap, make a couple of holes in the plastic wrap and put in the refrigerator.

Second day .

1. Cook potatoes, half of the purchased one. Fill with water, salt and cook until tender. Then we drain the water. Put the cooled potatoes in the refrigerator overnight. We'll clean it tomorrow.

2. Cook carrots. Almost all. We leave one carrot on the pate. We cook in the same way as potatoes.

3. Cook the beets. So are potatoes and carrots. Cook all vegetables separately and be sure to salt them when cooking.

4. Bake the boiled pork. Wrap the marinated piece of meat in several layers of foil and bake for 1 hour 20 minutes at a temperature of 150 degrees in the oven. Cool the finished boiled pork without expanding and put it in the refrigerator.

5. Transfer the salted fish from the refrigerator to the freezer.

6. Cooking roulade for cold cuts. We cut the chicken on the back, you can cut out the spine. Expand the skin down. We remove the bones. Cut off the wings, chop off the bone at the leg. We also cut the legs. You should get a layer of chicken meat on the skin. If, when removing bones, you injure the skin somewhere, it is not at all scary. Beat the meat a little, salt. Stir 5-6 eggs separately with a fork and fry a thin omelet in a wide skillet. Transfer the omelet to a layer of chicken meat and roll. Wrap the roll with a cloth or gauze in two layers. Sew or tie. Put the wrapped roll in a saucepan. Fill with water so that the water covers the roll by 2-3 centimeters. Bring to a boil, then reduce heat to very low. Cook for an hour and a half. Remove the pot from the stove and leave to cool with the roll. When it cools down, take out the roll, transfer it to a bowl, pressing down on top with something heavy. The remaining broth can be filtered and the soup is cooked - it is still far from the new year, do not let your family die of hunger. Do not throw out the bones from cutting chicken, put them in the refrigerator until tomorrow.

7. Cook pears for dessert in advance. Peel the pears by cutting them thinly with a potato peeler. We leave the cuttings. We put pears in a saucepan. We mix 300 grams of sugar, 300 ml of water and the same amount of wine. Pour the pears with this mixture, bring to a boil and cook for 20 minutes. Remove the pan from the heat, leave the pears in the syrup to cool. When it cools down, we take it out, put it on a plate, wrap it with foil and put it in the refrigerator.

8. Wash the remaining potatoes well with a dishwashing sponge. And put it in the refrigerator.

9. Cook eggs. 10 pieces hard boiled.

Day three. The most haymaking!

1. Peel boiled potatoes

5. Cut vegetables and meat on Olivier. Potatoes-carrots in one bowl. Pickles separately. Meat (sausage) separately. Cover with foil. We pierce the film in several places. We put it in the refrigerator.

6. Pour green beans with water, bring to a boil, cook for 1-2 minutes, put in a colander. Cool, put in the refrigerator under the film.

7. Chicken breasts. Cut the meat off the bone and cut it into strips. We remove the meat in a bowl under the plastic wrap in the refrigerator. Bones are separate.

8. Bones from chicken breast and bones from cutting a whole chicken, fill with water, salt and cook after boiling for 40 minutes. Then fold the bones in a colander, when cool - gently peel off all the remaining meat from the bottom and chop finely. This chicken meat will be used in pancake filling. And from the broth, you can cook the soup again or freeze it for hangover days.

9. Two hens, or a duck or a goose, marinate. Stir honey with a jar of mustard. We wash the bird, dry it, blotting with napkins. And we grease it well with a honey-mustard mixture outside and inside. We transfer the bird to a bowl, cover with foil. We poke holes in the foil - this should already become a habit - they shook them with a tyk-tyk-tyk knife. We put it in the refrigerator, let it marinate there.

10. Dumped. We take out the puff pastry from the freezer and leave to defrost. It thaws very quickly - in an hour. While you are doing points 12 and 13 it will already thaw out. Unfold the roll of dough. Cut out circles with a glass. Each piece of dough makes about 14-16 circles. Put them on a baking sheet and bake for exactly 8 minutes in an oven preheated to 180 degrees. Cover the finished ones with foil, rather than "puff substrates" and leave until tomorrow.

11. Wash the zucchini and paprika, cut into a Hatay salad, put in a bowl in the refrigerator under a plastic wrap.

12. Pate. Take out the liver. Add to it onions and carrots, cut into pieces. Season with salt and pepper. Bake in oven for 40 minutes (stir during baking). Cool it down. Add butter, 1 pack. Pass through a meat grinder 2 times. Then mix well. Divide with wet hands into 20 pieces. Roll each part into a ball and sprinkle with finely chopped herbs. Place the balls of pate in the refrigerator under plastic wrap.

13. Wash the apples.

14. Grate the head of garlic on a fine grater. Pour in vegetable oil, stir, put in the refrigerator.

15. Gherkins 3 pieces or one ordinary pickled cucumber, rub on a fine grater and put in the refrigerator.

16. Cut fresh salmon into large cubes without skin. For kebabs. Place in the refrigerator under plastic wrap.

17. Expand the boiled pork, cut, and put in stacks in the refrigerator under the film.

18. Unfold the roulade from the fabric, cut into thin slices, wrap with plastic foil and refrigerate.

19. Peel the sausage, cut it, put it in the refrigerator under the plastic wrap.

20. Carefully examine the remains of vegetables. Maybe they will be enough to make a vinaigrette or a salad of beets with cheese, for example.

21. Tomato sauce. Punch the tomatoes in their own juice with a blender or scroll in a meat grinder. Add salt, sugar, vinegar. Bring to a boil, season with garlic (grated from the refrigerator, not all). Cool the finished sauce, put it in the refrigerator.

22. Pancakes. Start dough, bake pancakes. Remove and place a stack of pancakes under plastic wrap in the refrigerator.

Day four. Festive. We do everything slowly, without straining.

1. We set the table - tablecloths, plates, cutlery, wine glasses. We cover early, we are not afraid. Will not fall asleep with dust.

2. Cook caramel sauce for dessert. Melt two or three tablespoons of sugar in a dry frying pan or in a saucepan until caramel color. Then pour in the cream, slowly stirring the sugar. When we pour in all the cream, we continue to boil it until it thickens, and a little more. Stir constantly with a whisk. Then remove and cool. You can immediately take a wide and slightly deepened plate and pour the caramel sauce into it. When the sauce has cooled down, put the pears boiled in wine directly into the sauce. Ponytails up. Here, in fact, a gorgeous dessert is ready. Can be put on the table immediately.

3. Pancakes. Stir pieces of chicken with bones with Viola cheese. We lay out the pancakes, put the filling on the edge. We roll the pancakes into tubes, cut in half obliquely. Put it on a plate. Done.

4. Remove the herring under a fur coat from the refrigerator, sprinkle the top with the yolks of boiled eggs, through a grater. All.

5. We take out a piece of salted fish from the freezer. After 15 minutes, it will thaw enough for slicing. Cut into thin slices, lay out on a plate. Decorate with lemon wedges and herbs.

6. Dumped. We take out the puff cookies. Carefully cut off the top of each shaft with a sharp knife. We put 10 valovans on one dish. Put a small piece of butter in the center of each. Add two-thirds of a teaspoon of red caviar on top of the oil. One can of 120 grams is enough for 10 valovans.

Put 20 other valovans on another dish, also cutting off the tops. Put a ball of pate in the center of the valovan. Poke the pate with a decorative skewer, with a half cherry tomato strung on it. All.

7. Meat platter. Spread boiled pork, roulade and sausage in a fan on a large flat dish. Garnish with leftover cherry tomatoes and herbs.

8. Fish kebabs. Sprinkle the pieces of fish with salt and dry paprika. Sprinkle with lemon juice, vegetable oil. Stir and leave for 5-10 minutes. Then string it on skewers. Place the skewers on a baking sheet. You need to bake them for 10 minutes at 200 degrees in a preheated oven. Therefore, I advise you to put them in the oven when the guests are already at the table. And don't forget to set the timer !!! In order not to overdry the kebabs.

9. Tar-tar. The easiest sauce option. Served with fish kebabs. Combine grated cucumbers, sour cream and mayonnaise. Add the grated garlic and finely chopped dill.

10. Marinate the potatoes in advance, but not too early. Cut the peeled potatoes into large slices, salt, add paprika, pour over with vegetable oil and stir well. Before baking, store in the refrigerator under a plastic wrap to prevent darkening.

11. Cook the hatei in two pans. In one, fry the chicken fillet with soy sauce in strips. On the second, fry the zucchini with paprika (salt), pouring lemon juice. At the end of frying, add the green beans to the zucchini so that it has time to warm up with all the vegetables. Then combine the vegetables with the chicken and place the salad on a plate. Done.

12. Olivier. Mix vegetables with meat (sausage), pickles. Add green peas, boiled eggs (cut), mayonnaise. Stir and place on a plate.

13. Don't forget to put the tomato sauce on the table. It goes very well with hot potatoes.

When guests come, you will be left with:

1. Quickly bake and serve salmon skewers

10. Potatoes are cooked for an hour, maximum - one and a half. The chicken is cooked for an hour and a half. Duck and goose - a little more. But not so much more that your guests faint in hunger))

11. Everything. We are resting, having fun.

You can buy tartlets in any store, the price is affordable, the taste is neutral, you can put any salad, sour, sweet, meat and fish in such mini-dishes. You can serve berries and a sweet appetizer in tartlets, but let's start with the classic salty one.

Vinaigrette with boiled sausage

It will only take you a quarter of an hour to prepare a delicious vinaigrette, and you should not think that this is too everyday a dish. No one has ever tried such a miracle with sausage!

  • Cooked sausage, dense consistency 200 g
  • Boiled potatoes, cook in "uniform" - 3 pieces
  • Boiled carrots, not large, 1 piece
  • Pickled or pickled cucumbers - 3 pieces
  • Canned green peas - 100 g
  • Onions - 1 piece
  • Boiled beets 1 piece
  • Provencal mayonnaise

While vegetables are boiling, you can have time to cut sausage, cucumbers, onions. Cut into small cubes. Peel the boiled vegetables, judge and cut into small cubes. The New Year must be celebrated in a royal way, for this you do not need royal chambers and golden dishes, but the salad can be made unusual, tender and original.


Products for salad preparation:
  • One orange (can be replaced with tangerines, they are always bought for the new year)
  • One chicken egg, but it is advisable to use five quail eggs
  • Clove of garlic
  • Crab meat - it tastes better than sticks, but you can get by with chopsticks - only 150 g

The salad will take 15 minutes to prepare, while you peel and dice the orange (tangerines) and crab meat, set the eggs to boil. We open the corn and drain the liquid, it is better to crush the garlic with a knife or garlic press. Peel the eggs and chop finely. We put all the products in a bowl in layers, the first layer is crab meat, then corn, oranges and eggs, pour sour cream into which crushed garlic has already been added. The decoration of the dish depends only on your imagination.
For a festive table, a dish is also suitable, on the preparation of which you will spend at least two hours, but the result is delicious! So this salad will become the "nail" of your appetizers, believe me.

Salad "Delight"

Products for salad preparation:

  • Veal tongue 300 g
  • One large carrot
  • White onions, not bitter, 2 pieces
  • Olive or refined vegetable oil
  • Pickled or pickled cucumbers - 4 pieces
  • Mayonnaise
  • Chives - four feathers

The tongue will cook for about an hour, check the readiness with a skewer. Peel off the film and chop into straws. We cook carrots and onions like frying for borscht, only cut the onion into half rings, and do not chop it.
Chop the cucumbers finely and put them on straws from the veal tongue. Put the fried vegetables on parchment so that the oil does not get into the salad. Products for making a roll:

  • Chicken breasts - 300 g (2 pieces)
  • Cheese 150 g

The process of preparing the snack itself will take 20 minutes. Cut the breast into the fibers and beat off to get a flat surface. Mix the filling, you can make different fillings, for example, brisket with herbs, mushrooms with cheese. Form a cylinder from the prepared mass and place it on the brisket, roll it up. The finished semi-finished product is stacked on foil and transferred to a baking sheet. Preheat the oven to 200 degrees, bake for about 40 minutes - half an hour. For lovers of something bright and unusual - put a few pieces of prunes in parallel to the filling, the dark sweet filling will look beautiful on the cut.   • Olive oil or refined vegetable oil for frying
  • Cheese - Dutch, Russian - hard for grating
  • Sour cream 300 g
  • Crispy buns - 8 pieces

Cut the onion into strips and fry lightly, add the chopped mushrooms and fry until tender, sprinkle with flour and then slowly add sour cream. It turns out to be a delicious julienne. If chanterelles harvested from the summer are used, then you just need to fry the onions, the mushrooms are already ready.
The "cap" is removed from the buns, the crumb is taken out, the void is filled with julienne, cheese is sprinkled on top, covered with a cap.
The finished buns are laid out on a baking sheet, and the blank is sent to the oven, the baking temperature is 200 degrees, just keep in the oven for no longer than 5-7 minutes, the cheese will have time to melt, the snack is ready!

"Salty" cake


"Salty" cake is the pride of any housewife, why not include it in the menu of the New Year's table in 2018. What kind of salty cakes are not invented by craftsmen - from black and white bread, with meat and fish filling. We offer an original version of the shrimp cake. It only takes you an hour to prepare this dish, but the result is perfection itself!
Cooking dough, products for making a cake:

  • Chicken eggs - 4 pieces
  • Wheat flour of the highest grade - 500 g
  • Butter 50 g
  • Granulated sugar - 30 g
  • Baking powder
  • Salt - a quarter teaspoon

Filling:

  • Shrimps - 150 g
  • Cream - 100 g
  • Salt - a quarter teaspoon
  • Lemon juice or citric acid half a teaspoon
  • Curd cheese - 100 g
  • Sour cream - 120 g
  • Lightly salted trout
  • Leaf salad
  • Sesame seeds for sprinkling

Divide the eggs into whites and yolks, beat the whites into a cool foam, mix the yolks with sugar and butter, grind them white. Add half of the whipped proteins to the yolk mass, add flour, add the remaining proteins, mix gently. Put the dough in a mold, wrapped in advance from the inside with foil or baking paper. Put in an oven preheated to a temperature of 170 degrees, bake for about half an hour. Put the finished biscuit on a large plate, free from paper, let cool.
Cooking the filling: boil the shrimps for 5 minutes, cool, remove the shell, take out the meat. Grind the shrimp meat in a blender, add cream, lemon juice and salt to taste. Beat until fluffy. Cooking curd mass from cottage cheese, sour cream, salt. We spread the shrimp mass on a biscuit, the finished curd cream is applied as a decoration, for this it is best to use a pastry syringe. Decorate the center of the cake with pieces of trout, lettuce, sprinkle with sesame seeds.

Hot dishes on the festive table


Hot meals should match what you have already served as a snack to your guests. We will use both fish, which the Yellow Dog respects very much, and a bird that was not recommended to be served last year.

Roshti (potato pancakes) - such a dish is rarely prepared


Products for cooking can be the simplest, think how interesting a delicious dish of potatoes and herring will look on the New Year's table.

Put the mixture in a frying pan with melted butter, fry the cakes on both sides - put the finished rösti on a plate. This delicious dish is served with herring and sour cream. You can also sprinkle onions - green or onions, finely chopped.

Oven baked potatoes with smoked or fresh brisket


The second fragrant dish is prepared for about an hour, served hot, so just calculate the time when to put the baking sheet in the oven to serve it hot.

  • Potatoes - according to the number of guests, this recipe is for 8 people
  • Vegetable oil, refined - 50 ml
  • Smoked or fresh brisket - 100 g
  • Spices to taste - salt, pepper, seasonings.

The rest of the ingredients are for the sauce:

  • Sour cream - 150 g
  • Green onions
  • Garlic - clove
  • Vegetable oil - 30 ml

Peel the potatoes, carefully cut out the eyes to make nice round tubers. Brush each potato with vegetable oil. Cut the prepared potatoes into slices up to 5 mm thick. Spread the foil on a baking sheet, put in layers with brisket, cover with the remaining oil. Preheat the oven to 200 degrees, bake for half an hour.
While the potatoes are baking, prepare the sauce - put finely chopped onion in the sour cream, add the squeezed garlic, add vegetable oil, spices to taste. Pour sauce over the finished dish and serve.

Spicy pork - baked ham


Products for cooking:

  • It is better to buy pork carbonate with skin - cut it into beautiful rhombuses - 1-15 kg
  • Mayonnaise - a couple of tablespoons
  • Dijon mustard, cadca - 1 tablespoon
  • Two cloves of garlic
  • Ground ginger
  • Ground rosemary
  • Spices
  • Vegetable oil - 30 ml

Rinse the pork, dry it, cut the skin into neat rhombuses. Sprinkle with seasonings, coat the pork with garlic and mayonnaise. Leave for an hour in a cool marinating place. Transfer the pork to a fireproof dish, add 100-200 ml of water and bake in the oven for about an hour, regularly pouring the juice over it. Products:
- pork 400 grams;
- pickled cucumbers 2 pcs.;
- red onion 1 pc .;
- mustard beans 2 tbsp. spoons;
- salt pepper;
- flour for breading.

Preparation:
Cut the meat into thin plates, cover with foil and beat well, season with salt and pepper. Cut the cucumbers and red onion into strips. On each piece of meat, put grain mustard, pieces of cucumber and onion.

This sauce is very easy to prepare, and most importantly, quickly, but you need a blender for this. Cut all the ingredients, put everything except the mustard in a blender, and beat until smooth. Herring under a fur coat in a roll

Products:

- herring - 1 pc .;
- potatoes - 4 pcs.;
- carrots - 1 pc.;
- beets - 1 pc.;
- mayonnaise - 200 g;
- onion - 1 pc.;
- vinegar for pickling onions.

Preparation:
Pre-cut the onion at random and marinate in vinegar for 2-3 hours. But you can put it raw, at your discretion.

Boil potatoes, carrots and beets, cool, peel and grate or cut into small cubes.

Peel the herring, separate from the bones, cut into small pieces.

It is better to squeeze the beets through cheesecloth to remove excess moisture. If your carrots are also juicy, then it is better to squeeze them out.

To make a roll, we spread cling film, a cut plastic bag or foil on the table, whoever has what. Mix the beets with mayonnaise and spread evenly on a film. Cover with foil again and tamp the layer well. We remove this top film. You can add a little salt to the beets. Try to make each subsequent layer a little narrower in width than the previous one. We do the same with carrots, only we smear it now on beets. The third layer is potatoes with mayonnaise, smeared on the carrots, respectively. Do not forget to salt it. Next, put the onion, if you marinated it, then you need to let it drain so that it is not too wet. And the last layer is herring. It is better to lay it not over the entire surface of the roll, but with a long log in the middle. We compact all layers in the same way using cling film.

Gently roll the roll around the herring log. We tamp the edges well. We wrap it in the same film. We put the appetizer in the refrigerator until the guests arrive. Before serving, remove the film and cut into portions.

Products:
- small, 200 grams, a piece of turkey meat;
- a jar of canned peaches in halves;
- a can of canned corn;
- any spicy cheese, 200 grams;
- mayonnaise or homemade sauce;
- salt, pepper to taste.

For the sauce:
- a jar of yogurt;
- lemon;
- mustard.

Preparation:
Boil the meat in salted water, cool.

Stir the oil, salt and seasoning well and pour the potatoes on top, not forgetting to fall into the holes. Now we place the finished potatoes together with the form into the baking sleeve and fix it on both sides.

Remove the wire rack from the oven so that it is cold. Preheat the oven itself to 200 degrees. Now put a dish with potatoes and a dish with meat on the wire rack. Bake for an hour.

When they have cooled down a little, transfer the finished potatoes and meat to a dish, having previously torn off the sleeve and cut the meat into portions.

Cut the meat into large pieces, season with salt, pepper and fry in a hot pan on both sides until golden brown. Fold into a saucepan.

Cut the onion into half rings and fry until golden brown in the oil that remains after frying the meat. Place the cooked onion in a saucepan on top of the meat.

Top up with hot water so that it does not slightly cover the meat. Simmer for an hour over low heat.

Fry the walnuts in a pan or in the oven for about 3 minutes.

Add tomato paste to the stew, diluted in a glass of warm water, seasoned with salt - a tablespoon without a slide and sugar - a tablespoon with a slide, and pepper to taste.
