I continue to try recipes for thin waffles for the recently purchased electric waffle iron. The first sample was wafer rolls made from shortcrust pastry, crunchy and melting in the mouth. Now I'm trying to bake waffles with milk. They are not so crispy, but also very tasty, and the calorie content is lower.

You will need:

  • 2 eggs,
  • 100 grams of sugar
  • 240 ml of milk
  • 200 grams of flour
  • 1 tablespoon of refined sunflower oil
  • 3 grams of vanillin (2 sachets) or any other flavoring,
  • a pinch of salt.

Recipe

  1. Let's make the waffle dough. Beat eggs with a mixer with sugar and a pinch of salt.
  2. Add milk and mix again.
  3. Sift flour, put vanillin and knead the dough.
  4. Now add a tablespoon of vegetable oil, mix. This is done so that later the finished waffles are well removed. The dough for thin waffles in milk is ready. This time we have it thinner than it was in the recipe for crispy wafer rolls.
  5. Lubricate both halves of the electric waffle iron with vegetable oil. We turn it on and give it time to warm up. I heat for about 5 minutes.
  6. Pour 1-2 tablespoons of dough into the center of the waffle iron. Depends on what size and how thick we want to bake the waffles. I baked small tubes, so I poured 1 tablespoon each.
  7. We press the second half of the waffle iron and wait. Attention! During this period, a large amount of steam is released, you can burn your hands.
  8. The baking time of waffles depends on the power of the electric waffle iron. My waffles redden quickly enough.
  9. To make the waffles in milk crispy, they need to be baked until they are quite dark. Light waffles will remain soft.
  10. When the waffle is browned, quickly remove it with a spatula and twist it into a tube.
  11. In addition to tubes of waffles, you can make horns, baskets, well, leave them in the form of cakes without folding.
  12. From the specified amount of ingredients, 15 to 30 wafers are obtained, depending on their size and thickness.
  13. So many waffles turned out!
  14. Ready-made wafer rolls, horns and baskets can be stuffed with your favorite cream, ice cream. The cakes can be greased with cream or condensed milk, you get a very tasty cake.

Waffles are a delicious, flour-based dessert. Waffles can be crispy, soft, fluffy and thin, with vanilla or rum flavors. But whatever you cook them, this dish will in any case be eaten in the first minutes after serving.

Where did this dish come from? Now it is difficult to establish the country of origin, but historians believe that this is a Chinese national dish, which was based on egg, flour and milk. In the modern world, waffles came from the Netherlands, and in the fifties of the last century, a real "waffle boom" took place around the world. What does the word waffle mean? One version suggests that this is the French word wafla, meaning "honeycomb". This was the drawing that the Americans chose for the press before they launched the waffles into mass production.

What to serve waffles with? This dessert is delicious both in pure form and with sweet fillings. Pour the ready-made homemade waffles with condensed milk, jam, sour cream, whipped cream, jam and honey, hot chocolate. While the dessert is hot, the waffles can be rolled into a tube or envelope, or you can let them cool in a round "classic" shape.

In addition, not all ingredients are basic - waffles can be prepared without eggs and without milk, it will be a lighter version of the classic dessert for vegetarians.

Homemade waffle recipes:

Recipe 1: Waffles in a waffle iron (option 1)

If you have a waffle maker, making a dessert will be a snap. Waffle makers were especially popular in the eighties, they were heavy and uncomfortable. You need to bake homemade waffles in them carefully, turning the waffle iron over to the other side after 15-20 seconds so that the dish does not burn. Before you start baking the waffles, brush the honeycomb of the waffle iron with butter.

Now you can buy a modern waffle iron, lighter and more convenient.

  • Wheat flour 400 grams
  • Fat sour cream (you can use homemade) - 200 ml
  • Egg 3 pieces medium
  • Sugar 250 grams

  2. Beat the egg with a mixer, add sugar to them.

Recipe 2: Waffles in a waffle iron (option 2)

For this recipe, we will not take sour cream, because the waffles are not so fatty and less high in calories.

  • Sugar 1.5 cups
  • Flour 1.5 cups
  • Butter 150 grams
  1. Beat the egg, gradually add sugar to it, without stopping whipping. The finished mass should be like a thick foam in consistency.
  2. Melt the butter and pour it into the mixture, add salt. Continue whisking.
  3. Pour flour into the egg mixture in a thin stream, stir so that there are no lumps.
  4. Pour the dough onto a hot waffle iron and fry the waffles for 30-40 seconds.

Recipe 3: Waffles in an electric waffle iron (option 3)

If you consider eggs as the main ingredient in a crunchy treat, then this recipe will dispel that myth! Such homemade waffles will turn out to be no less tasty, thin and crunchy, even if they are made based only on flour and sugar!

  • Flour 400 grams
  • Sugar 200 grams
  • Vegetable oil 100 ml
  • Soda, slaked with vinegar ½ teaspoon
  • 1.5 cups water
  • Vanilla
  1. Mix all dry ingredients (except baking soda) and vegetable oil to make a gruel from crumbs.
  2. Add water to the mixture and stir until smooth, with a consistency reminiscent of rare sour cream. It is best to use a mixer or blender at this stage.
  3. Add vinegar slaked soda to the dough, mix.

This is not to say that there is one exact recipe for Belgian waffles that must be followed exactly. In Belgium, various ingredients are used to make waffles, which significantly affect the taste of the finished product. We bring to your attention exactly the recipe by which street vendors in Brussels bake waffles. A special ingredient for the dough is sparkling mineral water.

  • Milk 1 cup
  • Flour 300 grams
  • Chicken egg 3 pieces medium
  • Butter 150 grams
  • Sparkling mineral water 100 ml
  • Sugar ¾ glass
  • Baking powder ½ teaspoon
  1. Break the eggs, separate the whites from the yolks. Beat the whites immediately with a mixer until a dense foam, adding a little salt to them. Place the protein foam in the refrigerator.
  2. Melt the butter, heat the milk to room temperature.
  3. Combine the yolks with sugar, stir. Pour oil to the mixture, salt, mix again.
  4. In a separate bowl, mix the flour and baking powder, pour in a thin stream of milk, and then the sugar-yolk mixture. Add protein foam and mineral water to the dough. When the mixture is homogeneous without lumps, you can bake homemade Belgian waffles.

Recipe 6: Crispy Waffles

You can make the waffles crisp if you don't use eggs in the recipe. This recipe is described above, so here's another secret for crispy waffles - put more flour than you need for "regular" waffles, and a little soda.

Thin, like a spider web, homemade waffles are especially tasty when cooled. The dough is simple and quick to prepare, and the secret is equal amounts of flour, sugar and butter.

Recipe 9: Chocolate Waffles

Ready-made homemade waffles can be poured with melted chocolate, or you can immediately make chocolate. Of course, the secret ingredient in this case is cocoa. Do not buy cheap confectionery cocoa powder, as the taste of finished chocolate wafers depends on the quality of this component. On sale you can find French cocoa with vanilla or imported cocoa made from 90% cocoa beans. Of course, such a product costs several times more, but you won't need a lot of cocoa for your waffles.

  • Medium egg 4 pieces
  • Cocoa 1.5 tablespoons
  • Flour 250 grams
  • Sugar 200 grams
  • Butter 150 grams
  • Rum (or rum essence)
  1. Melt the butter in a water bath.
  2. Mix the egg, sugar, salt with a mixer. Without turning off the mixer, pour the melted butter to the mixture.
  3. Add flour and cocoa into the dough in a thin stream. Stir well until the dough is smooth.

Bake homemade chocolate waffles bake for half a minute and roll up.

  1. If your recipe uses sour cream, you can substitute homemade mayonnaise for it.
  2. The secret to the golden color of the waffles is the turmeric in the recipe. Use 1/2 teaspoon for 2 cups of flour.
  3. When heating the butter for the dough, it is best to use a water bath. However, do not bring the oil to a boil.
  4. In addition to rum, cognac can also be added to the dough, the waffles will be more aromatic and with a pleasant light aftertaste.

After removing the waffle from the bottom of the waffle iron, immediately twist it using a knife and a towel so as not to burn yourself. As soon as the tube has cooled, fill it with thick boiled condensed milk or protein cream.
  7. Before you start baking your waffles, prepare your waffle iron. To do this, heat it about ten minutes before starting the process, grease it with oil. If the coating in the waffle iron is non-stick, then you do not need to grease it, since the oil in the dough will prevent the product from sticking.
  8. If you put ready-made hot waffles on top of each other, they soften and stick together. Place them separately - on a plate or board, and stack them back to back when the waffles have cooled.
  9. To reduce the calorie content of the waffles, or if you follow a vegetarian diet, milk can be replaced with water in the same proportion. These homemade waffles will taste more bland. Milk wafers are softer and darker in color.

Melt margarine. Add egg, sugar, vanillin, mix with a mixer.

If the dough becomes liquid - again flour, diluted with milk.

And so, until about 0.5 liters of milk are consumed.

The dough should turn out like thick sour cream (but not rustic, where the spoon is).

8. Waffles on condensed milk

✓ margarine 200 g;

✓ condensed milk 1 can;

✓ eggs 2 pcs;

✓ starch 1 cup;

✓ flour 1 glass;

✓ soda (1/3 tsp), slaked with vinegar.

Preparation

Knead the margarine, mix all the ingredients, the dough should not be liquid.

Put a little dough on the base of the waffle iron, make sure that the waffles do not burn.

Before the first waffle, grease the waffle iron (both surfaces), then no butter is needed.

So that the waffles are the same color, I follow the clock with a second hand.

As soon as the waffle is ready, I roll it into a tube.

I tried different recipes, but I didn’t like it, if you don’t eat it at once, the waffles became soft, and these remained crispy for a long time.

9. WAFFLES WITH SOUR CREAM

✓ Eggs - 5 pcs.

✓ Sugar - 5 tbsp. l

✓ Butter - 1 tbsp. l

✓ Sour cream - 1/2 cup

✓ Flour - 1 glass

Preparation

Separate the whites from the yolks and refrigerate.

Grind the yolks with sugar to white, add melted butter (not hot), sour cream to them; mix, add flour and stir well until smooth.

Add chilled whites whipped into a thick foam and gently mix from top to bottom.

10. CREAM WAFFLES

✓ butter - 125 g

✓ sugar - 3-4 tbsp. spoons

✓ flour - 1/2 cup

✓ eggs - 4 pcs

✓ cream - 4 tbsp. spoons

✓ water - 1 glass

✓ vanilla sugar - to taste

Cooking method

Mix softened butter with sugar and vanilla sugar.

Divide the eggs into whites and yolks.

Beat egg yolks with salt into a homogeneous mass and transfer to softened butter with sugar.

Beat the resulting mass with a mixer until foam forms.

Mix the sifted flour with baking soda and a little water. Then transfer to the egg-oil mixture and mix everything thoroughly.

Then pour in the remaining water, cream and mix until smooth.

Whisk the cooled egg whites into a fluffy foam, gently insert into the dough and mix gently with a wooden spatula.

Fry waffles in a preheated electric waffle iron for 2-5 minutes.

11. WAFFLES "MOTHER"

Add milk, eggs and vegetable oil, mix thoroughly.

Lightly grease the waffle iron or sprinkle with oil spray.

Pour the required amount of dough onto the hot waffle iron.

Bake until the waffles are golden brown.

12. WAFFLES "ROYAL"

✓ 200 g butter

✓ 75 g sugar (1/3 cup)

✓ 1 bag of vanilla sugar

✓ a pinch of salt

✓ 300 g flour (2 cups)

✓ 2 tsp baking powder

✓ 200 ml cream

✓ some sparkling water

✓ oil for lubricating the waffle iron

Cooking method

Beat softened butter, sugar, vanilla powder until fluffy.

Introduce the eggs one at a time while continuing to beat.

Mix flour and baking powder. Add to the egg-oil mixture alternately with cream, in small portions.

At the end, add a little mineral water with gas to make a dough with the consistency of thick sour cream, a little thicker than for pancakes.

13. WAFFLES ON YOGHURT

✓ 1.5 cups (375 g) vanilla or fruit yogurt

✓ 1.25 cups (150 g) flour

✓ 2 tsp baking powder

✓ 1 tsp soda

✓ 1/2 tsp. salt

✓ 100 g butter, melted

Cooking method

Preheat the waffle iron according to the manufacturer's instructions.

Whisk the eggs in a large bowl, then add the yogurt, flour, baking powder, baking soda, salt, melted butter, mixing until smooth.

Pour a small amount of dough onto the hot waffle iron.

The dough will disperse slightly under the lid.

Bake until steam stops coming out, about 5 minutes.

14. GENTLE WAFFLES WITH CHEESE

✓ 1 cup flour

✓ 1/2 tsp. baking powder

Cooking method

1. Separate the whites and yolks.

2. Whisk the protein until firm peaks.

3. Mix flour with salt and baking powder.

4. Beat the yolk with sugar, add melted butter, milk and cottage cheese.

5. Mix the yolk mixture with flour.

6. Gently add whites, stirring from top to bottom, so that the mass does not fall off.

15. WAFFLES FOR BREAKFAST

✓ 2 1/2 cups flour

✓ 200 g butter

✓ 1/2 cup sugar

✓ 1 tsp vanilla extract

✓ a pinch of salt

Cooking method

1. Mix flour with salt. Beat eggs lightly with sugar. Add vanilla extract to the eggs.

2. Melt the butter. Add eggs with sugar to the butter, knead well with a spoon.

3. Add flour a little. Mix well until smooth.

16. BELGIAN WAFFLES

Beat butter, sugar, vanillin, yolks and salt until sugar dissolves.

Combine flour and baking powder. Pour milk into flour and add butter-sugar mass.

Then add mineral water and whipped egg whites.

Mix everything well

When serving, sprinkle with cinnamon and powdered sugar.

17. LIEU WAFFLES

✓ Flour - 400 g

✓ Egg - 2 pieces

✓ Milk - 140 ml

✓ Sugar (large) - 180 g

✓ Butter - 200 g

✓ Yeast (dry) - 1.5 tsp.

✓ Vanilla sugar - 1 packet.

✓ Salt - 0.2 tsp.

Preparation

Heat half of the milk / in the microwave or on the stove /. Add yeast, cover and leave to rise for 10 minutes.

Break 2 eggs into the remaining milk, add salt, beat everything well with a whisk.

In a deep bowl, knead the flour and butter. Add sugar, milk with yeast and milk with eggs, stir well with a wooden spoon or mixer at low speed until sticky. Cover and leave to rise for 30 minutes.

On a well-dusted work surface, divide the dough into 12 pieces.

Roll each part into a ball, roll in large lumps of sugar.

18. VIENNA WAFFLES.

✓ Sugar (more, if you want sweeter) - 100 g

✓ Flour - 350 g

✓ Milk - 1 tbsp.

✓ Butter - 200 g

✓ Egg - 3 pieces

✓ Lemon juice - 1 tbsp. l.

✓ Baking dough - 2 tsp.

Preparation

Grind butter and sugar, add milk and eggs, then add flour, baking powder and lemon juice, mix everything. The dough is ready!

Gently spoon the dough onto the waffle iron and bake for 3-5 minutes until golden brown.

19. GOLDEN CHEESE WAFFLES

✓ Cottage cheese (low-fat) - 125 g

✓ Butter (melted) - 60 g

✓ Sugar - 3 tbsp. l.

✓ Lemon zest (grated, 1 lemon)

✓ Flour - 150 g

✓ Milk - 1/8 l

✓ Egg - 3 pieces

Preparation

Mix cottage cheese with melted butter, add sugar and lemon zest. Add flour and milk gradually.

Separate the whites from the yolks and add the yolks to the dough.

Beat the whites into a very strong foam and mix gently into the dough.

Bake waffles until golden brown.

20. CORN WAFFLES

✓ Corn flour - 150 g

✓ Chicken egg - 2 pieces

✓ Butter - 50 g

✓ Milk - 200 ml

✓ Liquid honey - 4 tbsp. l.

✓ Chopped almonds (a little)

✓ Baking dough - 1 tsp.

✓ Rum (without it) - 1 tsp.

Preparation

From corn flour, eggs, butter (melt), milk, baking powder.

Then, honey and rum (if you add), knead the dough and let it brew for 10-15 minutes.

Add almonds and mix.

Heat the waffle iron (if necessary, grease with oil) and pour the dough.

Bake until golden yellow.

21. STARCH WAFFLES

✓ Butter (melt) - 100 g

✓ Granulated sugar - 150 g

✓ Chicken egg - 3 pcs

✓ Wheat flour - 100 g

✓ Starch - 100 g

✓ Baking powder for dough - 1 tsp.

Preparation

Mix melted butter with sugar

Add eggs, beat with a mixer

Add flour, starch and baking powder. The dough is thick. Let it stand for 30 minutes

Spread 1 tbsp on a greased waffle iron. l. test

Bake waffles until golden brown.

The output is about 12 waffles.

22. COCONUT WAFFLES

✓ Butter (margarine) - 150 g

✓ Flour - 300 g

✓ Coconut flakes - 100 g

✓ Sugar - 100 g

✓ Vanillin - 1 package.

✓ Egg - 3 pieces

✓ Baking powder - 1.5 tsp.

✓ Salt (pinch)

Preparation

Melt the butter, add sugar and vanillin, mix with a mixer.

Add eggs one at a time. We mix everything.

Add salt and coconut to our mixture. We mix.

Now add flour mixed with baking powder. Mix everything thoroughly.

We heat up our electric waffle iron, spread the dough.

23. WAFFLES "LAKOMKA"

Wafers are baked for no more than 3-5 minutes (it all depends on the power of the electric waffle iron). After 3 minutes, the top cover can be lifted up to watch the process progress.

Remove the finished wafer with a spatula and quickly roll it up with a tube or horn. The finished straws can simply be sprinkled with powdered sugar.

You can fill with any cream - custard, butter, protein, boiled condensed milk, jam, jam, jam.

  • 3 eggs,
  • 100 g butter

You do not need to distribute the dough over the surface, it will spread itself when you press down with the lid of the electric waffle iron.

Large amounts of dough on the frying surface should be avoided as excess will leak after covering.
