Bean soup is included in dietary, children's, gerontological and sports nutrition, and if it is also with meat, it will be especially useful. And you can cook it all year round.

What is required

Beans

Cooking time depends on the dryness of the beans. In winter, when it is dried, it will need to be soaked in cold water the day before. Best for the night. For the soup, you need medium-sized white beans. A dark bean broth will dye the soup an ugly brown color. If there is only one, it must be cooked separately, rinsed and put into the finished dish at the very end. However, it will not be so tasty and healthy.

If you are using ready-made canned beans, you should also put them at the very end, along with the bean broth from the jar. Then its color will not matter.

The most delicious meatballs are small - about the size of a walnut. They are always made from raw meat.
Any variety will do, preferably pulp without tendons.

It will turn out very well if you take its different varieties in any proportions.

The meat must be washed and minced twice.

For 3 liters of soup, you need about 400 grams of meat.

Other ingredients

This recipe also includes:
• Egg for minced meat.
• 3-4 cloves of garlic.
• Onions - 1 pc.
• 2-3 small tomatoes.
• 1 bell pepper.
• Carrots, parsley, celery (root vegetables) - 1 pc.
• Parsley and celery (herbs) - 2 teaspoons each.
• Dill - 2 teaspoons.
• Lean oil - 2-3 tablespoons.
• Salt and pepper to taste.
• Beans - 1 cup raw or 1 can of canned beans.

Let's start cooking

The minced meat recipe can be varied, but the main component is minced meat. Before cooking, any meat must be thoroughly washed.

1. Grind the meat twice through a meat grinder.
2. Add the egg, finely chopped onion and herbs to the minced meat.
3. Squeeze the garlic, salt and pepper.
4. Mix everything thoroughly.
5. We make small balls from the whole mixture, roll them lightly in flour.
6. Set the plate of meatballs aside for now.
7. Put the onion and whole carrots in boiled water.
8. Then put in one meatball. Cook for 2-3 minutes after surfacing.
9. We take out the meatballs and set aside for now.

To make the minced meat more tender, you can not chop the onion, but grind it through a meat grinder along with the meat.

Vegetable dressing

1. Heat vegetable oil in a frying pan.
2. Cut the onion into small cubes, put in the pan. Simmer until translucent.
3. Grate carrots and celery on a coarse grater. Add to onion.
4. Chop the tomatoes, add to the pan.
5. Peel the bell peppers from the seeds, add to the vegetables.
6. Simmer on low gas for about 15 minutes. If moisture is not enough, add a few tablespoons of broth.

We connect the components

1. Peel the potatoes, cut them into small cubes, about twice the size of the beans, or so that they are the same size as the meatballs. Put in broth.
2. We fill the broth with soaked and washed beans. If you take a ready-made, canned one, then you need to put it five minutes before cooking.
3. When it's half cooked, add the meatballs and vegetables.
4. Cook for about 10 more minutes and turn off.

It will be tastier if there are no peels on the tomatoes. Removing it is simple - dip the tomatoes in boiling water for a few seconds and peel them while they are still warm. The skin is easily removable.

Calorie content and cooking time

This soup turns out to be very satisfying, as it contains a large amount of protein. Beans and meatballs are great combinations and mutually emphasize the taste.

And you can reduce its calorie content by replacing the potatoes with a large number of vegetables. You can take chicken instead of pork.

One serving (300 ml) contains only about 75 kcal (if without potatoes) and 120 kcal if with it.

Note that it contains celery, and the body needs to spend more calories to process it than it gives.

It is also not brewed for long. Providing well-soaked or fresh beans, everything will take you about an hour, along with the preparatory work.

Good luck and bon appetit! We wish the meatball soup to become your favorite dish. Especially the bean recipe!

We start by boiling potatoes in a liter of boiling water. First, peel off the entire peel from the potatoes, rinse them well and cut them into cubes familiar in size. Time - about 10 minutes after the foam appears as a result of boiling. If you like the soup to be thicker, you can increase the number of potatoes to 3 or 4.

In parallel, we prepare the frying: cut the onion into small or medium-sized cubes, and simply rub the carrots. In a hot frying pan (oiled), first throw the onion, and when it becomes soft, throw the carrots. It will take 3-4 minutes to fry vegetables to the desired state.

After the required amount of time has elapsed, add small pieces of pepper to the pan, sauté everything together for about a couple of minutes. Vegetable frying is ready! We send it to the pot for the potatoes, and after 5 minutes we put the canned beans in the dish with the rest of the products. There is nothing complicated to do here - we just open the jar and dump its contents directly into the pan.

Following the beans, put fresh and high-quality tomato paste and spices - salt, pepper, lavrushka - into the soup. You can add a couple of pinches of the Italian herb blend to add a spice to the everyday meal, and the chili pepper to spice it up. However, even without these spices, it will turn out incredibly tasty.

When the soup boils again, you can safely remove it from the stove - it's ready! Bean stew prepared according to this classic recipe is perfect even for a lean table. If you want to get an even more satisfying dish, add fried hunting sausages at the end, or cook this soup not in empty water, but use a broth based on meat or poultry for this purpose.

Advice: If, shortly before removing from the heat, add a little flour (1 tablespoon) to the vegetable frying, the soup will become thicker in consistency. A pinch of sugar, in turn, will help get rid of the sourness that tomato paste gives to the dish.

Ingredients

• water - 2.5 l;
• canned red beans - 1 can (420 g);

• ground black pepper - 1/2 tsp;
• lavrushka - 1-2 pcs.

Step by step cooking

1. First of all, we set the chicken to cook. While it is preparing, there will be enough time to deal with the rest of the ingredients. We thoroughly wash the taken parts of the carcass, put them in a saucepan, fill them with water and put everything on the stove. Also at this moment it is necessary to put the lavrushka. When the foam appears, remove it with a slotted spoon and, slightly reducing the heat, cook the chicken for half an hour.
2. Then we transfer the finished meat to a separate plate and leave to cool. We also take out the lavrushka and throw it away.
3. Pour chopped potatoes into the boiled liquid. It can be cut as you like: cubes, cubes, or any other way to your taste.
4. While the potatoes are successfully boiling, finely chop the onion and fry it so that the color changes slightly (darkens). Add grated carrots. Naturally, everything must first be washed and cleaned. Saute the vegetable mixture for 3 minutes, and then add tomato paste and a couple of tablespoons of chicken broth from the pan to the pan. Stir and simmer for another 3 minutes.

6. After 5 minutes, we throw in the chicken meat, which must first be removed from the bone and cut into pieces. At this point, it is the turn of salt and pepper.

Advice: For a similar but more dietary soup, replace chicken with turkey. The breast is best suited - this part of the carcass is not so fat. For such a dish, white beans are better suited, since they are more suitable in terms of calorie content. And to make the soup light, you don't need to fry the vegetables. It should only be borne in mind that fresh onions and carrots should be thrown in first before the potatoes, and only then, when the broth boils again, you need to add chopped tubers.

• fats - 2.59 g;
• carbohydrates - 4.04 g.

Ingredients

• water - 2.5 l;
• canned beans - 1 can (420 g);
• homemade mince (a mixture of beef and pork) - 300 g;
• onions - 2 pcs.;
• carrots - 1 pc.;
• potatoes - 400 g;
• chicken egg - 1 pc .;
• garlic - 1 clove;
• vegetable oil - 1 tablespoon;
• ground black pepper for minced meat - 1/2 tsp;
• mince salt - 1/2 tsp;
• soup salt to taste;
• greens - 1 bunch.

Step by step cooking

1. First, set the potatoes to boil. We clean the potatoes, cut them, put them in a saucepan, fill them with water (preferably boiling water) and put everything on the stove.
2. Now we are preparing the meatballs. We take one onion (the second is needed for frying), remove all the husks from it, cut off the tails, and chop as small as possible. We transfer the onion mass to a saucepan or deep bowl in which we will cook the minced meat. Now you need to sprinkle the onion a little with salt and pepper and mash it with a special device or just with your hand - this will help make the vegetable softer. Add meat to the onion and mix.
3. Now, directly into the bowl of potential meatballs, you need to break one egg (raw) and add the garlic passed through a press. We mix. If it turns out to be watery, you can add a little semolina. The minced meatball is ready.
4. We mold small neat balls from the resulting mass. It is best to do this directly into the soup, that is, formed and - straight into the pan, and thus you need to move all the minced meat into the soup. To make the meatballs smoother and more beautiful, moisten your hands with plain tap water every 2-3 pieces - this makes it much easier to make even balls, and the minced meat, in turn, will not stick to your hands.
5. Are all the meatballs in the soup already? Fine! It's time to cook the fry. Clean and chop onions and carrots. There is not much difference in how to do this: onions can be chopped into quarters, for example, and for chopping carrots, it is permissible to use both a grater and an ordinary kitchen knife. Pass the vegetables until tender
6. Put the beans from the jar in the soup directly with the juice. After boiling, reduce the heat and boil for a couple more minutes.
7. Now we transfer the vegetable frying to the pan, salt, simmer for another 5 minutes and remove from the stove. At the end, add a chopped bunch of dill or parsley, you can even use a platter.

Delicious soup with beans and meatballs is ready, feel free to serve it on the table, season with sour cream and decorate with fresh herbs.

Advice: no less tasty and easier to prepare is bean soup with minced meat, which you just need to simmer along with vegetables; it can also be replaced with ordinary stew - then the dish will cook even faster.

Features of cooking in a multicooker

We turn on the "Baking" mode. Pour a couple of tablespoons of oil into a bowl, and when it warms up, add onions, and after 3 minutes - carrots. As soon as they become soft, add a spoonful of tomato paste. To enhance the taste, in addition to the store-bought concentrated puree, you can add some chopped fresh tomatoes. After that, pour the potato slices into the bowl and pour out the beans directly with the juice from the jar. Fry the resulting mixture for 10 minutes. Then we turn on the "Cooking" or "Stewing" mode for half an hour. Add boiling water, salt, pepper and close the lid.

After the appointed time, the soup will be ready. To make the dish more rich, you can cook it in broth. Adding meat, of course, is not prohibited. However, in this case, it is better to boil it first. But the chicken can simply be stewed at the very beginning along with the vegetables. Bacon fried in butter or smoked is perfect. Among other things, in a multicooker you can cook an excellent bean soup with mushrooms; in combination with them, it is better to use a white variety of legumes.

It is interesting: Bean soup is popular in many countries, however, it is prepared differently everywhere. For example, the first dish in Georgian is cooked with lamb, and the Arab dish is not complete without honey, tomato and many spices (paprika, zira, ginger, cinnamon). Italians, on the other hand, prefer bean cream soup, or in other words, puree soup. In most cases, they use exactly white beans, and also add celery, thyme (thyme). In Russia, a soup made with noodles, noodles, pasta, rice or buckwheat is very popular.

How easy and quick it is to make a delicious soup! This dish will delight you and your loved ones. And if you fill it with sour cream and add a little fresh herbs, you will just lick your fingers. Beans go well with cabbage and beets, so they are often added to borscht, which looks so delicious in the photo that you definitely want to cook it. Enjoy your meal!

• Parsley and celery (herbs) - 2 teaspoons each.
• Dill - 2 teaspoons.
• Lean oil - 2-3 tablespoons.
• Salt and pepper to taste.
• Beans - 1 cup raw or 1 can of canned beans.

Let's start cooking

Minced meat

Advice

Advice

It will be tastier if there are no peels on the tomatoes. Removing it is simple - dip the tomatoes in boiling water for a few seconds and peel them while they are hot. The peel is easily removable.

The first dish offered for cooking - soup with meatballs and canned beans - we would classify as "quick soups", since it takes about half an hour to realize such a meal. The main condition for speed and the desired taste is that the ground beef, from which we will make the meatballs, must be prepared in advance (meaning thawed), and the beans are used canned without adding tomato sauce. We will "enhance" the taste of the soup with a meat cube. A step-by-step recipe with a photo will show all the subtleties of making a simple but very tasty bean soup with meatballs and potatoes.

Ingredients:

• minced beef - 300 gr;
• water - 2 l;
• potatoes - 4-5 pieces (depending on the size of the root crop);
• carrots - 1 pc.;
• red beans in a can - 200 gr;
• salt as preferred;
• meat cube - 1-2 pcs.;
• fresh greens - to taste.

How to make meatball soup with canned beans

Starting cooking, fill the pan with water, put it on the stove to boil. In parallel, while we are waiting for the water to boil, wash the potatoes from possible contamination, then we clean the tubers. Cut into medium cubes (cubes). We send the sliced potatoes into boiling water, slightly salting it.

While the vegetables are boiling, make small meatballs from the prepared and defrosted beef. Minced meat should be slightly salted (you can throw in a pinch of ground black pepper). Toss the prepared meatballs over the almost finished potatoes. Add the meat cube for flavor.

Throw the canned red beans on a sieve, rinse the juice from the beans under cold water. We send the washed beans to the soup 5 minutes before it is fully cooked.

The bean is ready. It remains only to diversify it with sliced herbs (we have parsley).

Serve in portions with fresh bread or croutons.

I'm sure all eaters will love the delicious and fast food. Enjoy your meal!
