Such a dough cannot be kneaded for a long time, especially in warm conditions, as the gas will escape and the dough will become dense again. Therefore, it is cooked in a cool place and, after kneading, is immediately molded and baked.

For 1 kilogram of flour, take half a teaspoon of soda and a quarter of a teaspoon of citric acid solution (a spoonful of crystalline citric acid is dissolved in two tablespoons of hot water; juice from one lemon corresponds to about 5 g of crystalline acid or two teaspoons of its solution). Acid can be replaced with sour milk, kefir, whey, sourdough, or sour fruit juices.

If the proportion of soda is chosen successfully, flour products are airy and have a beautiful golden yellowish color. Excess baking soda gives them a dark hue and an unpleasant salty bitter taste.

TEST RECIPES

If there is no yeast in the house, the pie dough can be made according to the following recipes.

1. Thoroughly mix 150 g softened butter, 250 g cottage cheese, 1 egg, 1/4 teaspoon of baking soda, 1 teaspoon of granulated sugar, add 280 g flour and knead the dough.

2. Mix 4 tablespoons of sunflower oil or softened margarine, 1/2 cup sour cream, 30 ml of kefir, add 1/4 teaspoon of salt, 3 teaspoons of granulated sugar, 1/4 teaspoon of baking soda, then add 6 tablespoons (with riding) flour.

3. For this test, you will need 175 g of low-fat cottage cheese, 1 egg, salt and soda on the tip of a knife, 200 g of flour.

4. Knead a dough of 250 g softened margarine, 1 cup of kefir, 1 egg, 1/2 teaspoon of baking soda, 2.5 cups of flour and put it in the refrigerator for 1 hour.

5. Take 2 cups flour, cut into small pieces 150 g butter and chop it along with the flour with a knife. Pour a mixture of 100 g of sour cream, 1 egg yolk, 1 teaspoon of lemon juice, soda and salt on the tip of a knife into the resulting mass. Knead the dough.

Lubricate the work surface with a small amount of vegetable oil. We dip our hands in butter and, squeezing the dough between the thumb and forefinger, we squeeze balls out of it in size, like a chicken egg. The output is 11 pieces.

Stretch the dough balls with your fingers, forming cakes with a diameter of 10 cm. Knead them so that the middle is slightly thicker and the edges are slightly thinner. (It is convenient to work on a silicone mat or on a floured board.)

We put the filling inside the cakes and form the cakes. Press them lightly so that the height is no more than 1 centimeter. The filling can be sweet or salty (I have potatoes with refried onion and chopped green dill dressing).

We heat refined vegetable oil for frying - you need to take so much so that it reaches the middle of the dough products (approximately 150-170 ml). Put the pies in the pan with the seam down.

Fry for about 3-4 minutes on each side until browning. It is better to take a frying pan with a thick bottom, it does not need to be covered with a lid, the heat should be moderate so that the pies do not burn, but are baked well.

Put the finished pies on one side in a plate with a paper towel so that all the excess fat is gone.
